Welcome to April!

W

elcome to April, it certainly looks as though Spring has finally sprung, with lovely daffodils sprouting up all over the lush Sussex Countryside – beautiful.

Here at village living we have been enjoying shrugging off the winter woollies in preparation for warmer days! I must say a big thank you to lynn at the Fox in small Dole for a delicious sunday lunch, after reading louise’s food review in March I went to sample lynn’s food for myself, I wasn’t disappointed! with lots going on this month I hope you get time to make our delicious hot cross bun recipe in time for Easter and enjoy a happy and chocolate filled Easter weekend… I will be celebrating my 40th year this month so fingers crossed for sunny skies and not the usual April showers! TRAGEDY SPARKS PUB FUNDRAISER FOR HART LIFESAVERS

R

egulars at The Fox, Small Dole, raised £200 for HART (Henfield Area Response Team) following the death of one of their regulars. Lynne Short (62) of Wantley Hill, Henfield, died suddenly at her home, but was attended by HART responders after the 999 call was made. She was a close friend of Fox licensee Lyn Baldwin, whose mother Betty Corke (75), of Tottington Drive, Small Dole, has been attended twice by HART responders. Lyn, who has been at The Fox for nine years, handed over a cheque to HART members on Wednesday. She said: “HART provides an essential service to our community in the Henfield area and, as well as my mother, I know of other friends who have been attended by them. “It is such a comfort to have professionals there when you are waiting for the ambulance service to arrive.

Cantatrice Voices

0 ladies from Steyning & Horsham Cantatrice choir took part in the second Choiroke – yes similar to karaoke but with loads of choirs! A brilliant idea carried through by the Bravo team andheaded by the charismatic Kaytie Harding from Horsham. Eight choirs from Sussex & Surrey brought all their different styles of music to the Dorking Halls on Saturday February 11 – music from Rock & pop to jazz, classical and contemporary. As the title of Choiroke suggests it was an all-embracing evening of

“Without HART many of our loved ones might not be with us now.”Dick Nye, chairman of HART, said: “We are very grateful to Lyn and her customers for money which keeps us operating and helps maintain our heart defibrillators and other equipment. “Lyn is planning a fundraising cream tea in Lynne’s memory from 3pm till 5.30pm on Easter Weekend Saturday April 7 at The Fox. All proceeds to HART. The scheme is totally self-funded and relies on kind and generous donations from local people, businesses and organisations and organised fund-raising events. The money raised, helps purchase equipment and keeps the scheme operational. There are 22 heart defibrillators in the Henfield area – seven of them in public access areas: Henfield Hall, Budgens, Dental Surgery, and the Leisure Centre, Swains, Henfield Cricket Club and the Medical centre. A team of trained HART Community Responders also carry defibrillators. When a “999” call is made within the Henfield and surrounding area an Emergency Ambulance is dispatched to the scene. At the same time the Community Responder who is on duty is contacted and asked to attend. Because of the rural location of Henfield community responders nearly always arrive first and can begin to treat the patient. Cantatrice make a journey to London on Friday 27 April where they sing at St Clement Danes Church on the Stand in a concert which is part of the Brandenburg Choral Festival. The concert begins at 2.30pm, and tickets can be brought from choir members or through the website www.brandenburgchoralfestival.co.uk. Please do support this local choir and join them in London and look out for them at the Steyning Festival!

Easy Peasy Hot Cross Buns...

Ingredients • 500g strong white bread flour • ½ tsp. salt • 2 heaped tsp. mixed spice • 50g caster sugar • 50g butter, chopped into cubes • 200g mixed dried fruits • 7g sachet easy-blend dried yeast • 200ml milk • 2 eggs

the dried fruits YUM! Prep 20 minutes Cook 15 minutes (plus rising)

Method 1. Tip the flour into a bowl and stir in the salt, mixed spice and sugar. 2. Rub in the butter with your fingertips. stir in the dried fruit, then sprinkle over the yeast and stir in. gently warm the milk so it is hot, but still cool enough to put your finger in for a couple of seconds. Beat with the eggs and pour into the dried ingredients. 3. using a blunt knife, mix the ingredients to moist dough, then leave to soak for 5 minutes. Take out of the bowl and cut the dough into 8 equal pieces. 4. shape the dough into buns on a floured surface. space apart on a baking sheet, cover loosely with cling film, then leave in a warm place until half again in size. This will take 45 mins-1 hour 15 minutes, depending on how warm the room is. 5. when the buns have risen, heat oven to 220C/fan 200C/ gas 7. Mix the flour with 2 tbsp. water to make a paste. Pour into a plastic food bag and make a nick in one of the corners. Pipe crosses on top of each bun. 6. Bake for 12-15 minutes until risen and golden. Trim the excess cross mixture from the buns , then brush all over with honey.

hen I met stuart he was having a day off from rehearsing an adaptation of `Animal Farm` which will be performed to parents at the end of March. As Head of English and Drama he is passionate about both subjects and ensures that the children understand that Drama can be used as another vehicle of expression. There is the opportunity of having lessons with a visiting specialist speech & Drama teacher and children are invited to take Trinity/ guildhall examination. By the end of Yr. 3 children are working on French scripts. stuart is keen to keep up to date with contemporary and modern learning which ties in beautifully with other subjects such as Music. All the departments at sompting Abbotts work seamlessly together, for example the Music, French and Drama Departments will all be working together on a script of snow white with Yr.4 and translating from French. The fantastic Art Department put together all of the scenes and costumes. It’s another example of the wonderful teamwork within sompting Abbotts school. last year “In the spin”, a romantic musical comedyabout Politics(!), written by stuart, was a great success. The children, from Yrs 5 to 8, worked incredibly hard on the show throughout the term. Many students had challenging songs and dance moves to master, which they achieved splendidly! These varied from modern routines to some greek dancing, the performance was enhanced by a live band of visiting professionals; two of the children accompanied the band with great success! The performance nights were all sell-outs. Older children from the Main school get a chance to perform and are very keen to take to the stage, with teachers busy behind the scenes. The quality of the equipment is second to none at this level, with clip mikes, system lights, infrared and an excellent pa system. The support of parents is invaluable with make-up and costumes. Head of English and Drama, stuart Douch is passionate about reading, he writes his own plays for the school, is an Old Abbottonian, continuing his education at lancing College, Canterbury and Kent universities. He worked for the government for a short time before he trained as a teacher and has worked locally for the last ten years, he is very happily engaged and living in steyning. what a pleasure it was to meet him!

or more than 60 years there has been a thriving market in storrington. It began as a w.I. Market after the war when goods were scarce, and has gone through several since, including being part of the Country Markets organisation. Now reborn as storrington Community Market, it is run as a totally independent co-operative, by local volunteers for the benefit of producers and the community. It gives an outlet for the producers who have a small excess but possibly not enough to warrant a separate stall at a farmers market. some of the volunteers are at the highly respectable age of 90 and are second generation to the market! Most of the goods are home-made or home-grown. Cakes and savouries, preserves including local honey, eggs, vegetables and fruit provided by Rock Farm, flowers and plants, craft items including cards, free-range pork from the local pig farm, scott Free Range, bread from a local bakery, a refreshments area where many local residents meet for coffee and a chat... all are part of this charming market. The quality of all produce is controlled to a high standard with all cooks being required to have the relevant level of hygiene certificate. Open every Friday of the year with the exception of good Friday (the market is held the day before) and a couple of weeks over Christmas, when special Easter and Christmas markets are held. Coffee mornings for charities such as Macmillan’s are well supported. Other delightful additions that make the market so unique are Market vouchers which make an ideal gift. Buy a voucher from the market to be redeemed for market products at a later date, and gift Boxes. If you would like to send a gift they are able to deliver a box of goods in the local area. You can decide how much you would like to spend and chose the contents. This is an ideal present if you don’t live in the area! Come and join in… always on the lookout for new producers and volunteers, this happy and convivial group welcome newcomers. As well as selling goods everyone enjoys getting together each week. Registering as a producer is easy. Packaging and labelling supplies can be obtained from the market. For food producers, fellow marketeers will advise you about the simple procedure for getting the relevant hygiene certificate. Profits, minus a small percentage (currently 10%), are all returned to producers so if you have something you would like to sell at the market you could potentially make a little money. I

have been lucky in life to not have suffered any ailments requiring treatment from a chiropractor or osteopath so my knowledge of what they did was mostly hearsay. Having heard great things about Well Adjusted Health, the local Chiropractic Practice in Ashington and so I was delighted to receive an invite to meet Mark Jones, the resident Chiropractor to find out more about what he does and to experience a consultation and treatment. Well Adjusted Health was taken over by Mark and his wife Jane just over a year ago. Prior to this, Mark had been practicing with a firm in Windsor. But both Jones’ felt that they had reached a stage in their lives when it was time to buy one of their own. The rest is history and very soon they found themselves settled in Steyning and working in Ashington. Mark looks after the treatment of the patients; Jane is heavily involved behind the scenes. This partnership works extremely well and within the first few months, with the business flourishing, they were delighted to employ a Practice Manager. Arriving at Ashington Sports Pavilion, I found the Practice easy to locate with ample parking. Hazel, the Practice Manager welcomed me and we were chatting like old friends in a matter of minutes. She settled me down and gave me a comprehensive questionnaire to complete. With the client before me finished (and looking very relaxed) it was my turn to enter the treatment room. The whole Practice has been newly decorated and was clean and inviting. The treatment room was spacious and the walls were lined with impressive looking certificates bearing Mark’s name and qualifications. Asking how he April 2012 • Village Living

began his interest in Chiropractic, Mark revealed that it stemmed from him having treatment which finally relieved him of neck and shoulder problems that had been haunting him for years. He also found that his overall health improved and he felt more energetic. Mark embarked on a five year Chiropractic Masters degree and additionally, throughout that time, enrolled on many other courses learning different disciplines in Chiropractic and healthcare. That, together with the in-depth medical knowledge he has acquired, has enabled him to choose the methods he now practices, and which he feels are the most beneficial and healing to patients. He continues to keep up to date with new advances and brings these to life in his work where appropriate. Mark treats all age groups from the very young to the very old. Nearly everyone has some misalignment in their muscle framework that can be treated. Conditions most commonly treated are back and neck pain, sports and car accident injuries,

headaches, sciatic nerve pain and general health screenings. Handing over my history questionnaire to Mark, my consultation began. We spent some time discussing this information, with Mark making sure he fully understood past injuries and making sure no underlying problems were lurking. With past information gathered, it was time for the first part of my physical examination. I stood up with my back to Mark who assessed my posture and muscle tone/restrictions. Mark tested the strength of my muscles from my toes through to my hands. This was to discover any specific muscle restrictions. It became apparent that my left leg was weaker than my right. My right side could therefore be compensating for this. As Mark explained this to me, he visually used a plastic spine, pointing out the nerve endings that related to the various areas in the body. My spine was checked and specific points were focussed on. Taking a lie down on the couch, various other points were tested. I felt some

discomfort in the shoulders (known for being rock hard after a day at work) which wasn’t a surprise, but also both my hips. Mark explained that this was no doubt to do with the imbalance in my leg strength but was very treatable. My walking and balance were also given the once over and after a few more exercises to see strength and flexibility. Mark once again visually explained where the treatment was needed and how the information to our brain was blocked up to a certain level of pain, or we adjusted to it. By testing these points past their comfort zone, the brain responded by pain being experienced. Mark used a mixture of ‘hands on’ treatment and a machine called an Arthrostim. This, to the untrained eye, looks like a staple gun or similar. But no, it is actually an instrument that pulses a low amount of regulated

force into the body to realign it. When the body is out of balance it has to compensate to correct this, which can then lead to stresses and strain in the joints and thus the start of your problems can commence. Mark showed me the pulsing of this machine on his hand and then mine. I’m the first to jump at discomfort but I felt none. Before Mark began, he used a method called Koren Specific Technique which helped him know which area to treat first. He also discussed any side effects I may experience after the treatment. With the treatment over, Mark finished by testing the areas where he had found problems and there was a marked improvement in the strength in my left leg, and my shoulders muscles felt relaxed again. The next morning my back and shoulders still felt far more relaxed and

less tense. I do hope this lasts! I thought I was quite aligned and pain free before I saw Mark. It was only when I had done the tests that I realised I had some problems, albeit not life changing, which needed attention. I would recommend an appointment with Mark to everyone; young and old. Prevention is better than cure!

The Red Lion Ashington

was thrilled to be asked to review The Red lion in Ashington. Having been a regular visitor when my children were small I was keen to see how it had changed, having heard about some major transformations in the past few years. I looked at their website (www.redlionashington.co.uk) and was delighted to see that the soft play area had gone and there was a promise of warming seasonal dishes with flavours to ‘knock your socks off! The building itself is impressive and imposing with ample parking, and when you step inside the wow factor continues. The decor inside is modern, stylish and comfortable with a lovely relaxing atmosphere. we were greeted warmly by our waitress Cara who showed us to a lovely sunny table in the window. I could see that on a chillier day the open fire would be appealing and there was also a small garden with benches for warm summer days. we ordered a glass of the house Pinot grigio while we looked at the menu. There was a huge range of options on the main menu, which appeared to be mainly British classics but with a modern, even retro twist in places. Prices ranged from £7.95 for fishcakes to £19.95 for the fillet steak, with an option to also choose from a light lunch menu, with all of the main dishes being either £6.95 or £7.95 April 2012 • Village Living

with all starters and puddings at £3.00. There didn’t seem to be any specials but we were assured that the menus were regularly changing and certainly had a good variety of meat, fish and vegetarian options as well as sharing and tapas style dishes. There was also a very extensive wine list ranging from £12.95 a bottle up to a staggering £79.95 as well as a winter drinks menu, cocktails and a good range of beers, the guest ales changing fortnightly. we decided to treat ourselves and have three courses, it had to be scallops of the day for me which were served with lentils and chorizo, and my companion had portabella mushrooms served with bacon and garlic and chilli oil. The scallops arrived beautifully presented, 3 plump morsels that were perfectly cooked on little piles of delicious smokey lentils, decorated with an intriguing and delicate micro cress that I discovered was called red amaranth. The mushrooms arrived looking simple, rustic and generously proportioned; the only complaint being that the dressing was so good there could have been more of it! when it came to the mains I considered the Barbary duck in honey and black pepper with a plum and roasted beetroot sauce but opted for the lighter sounding chicken in sticky lemon, honey and chilli and my companion chose the salmon fillet served on bubble and squeak with a mushroom and chive sauce. The chicken was tender and juicy with just the right balance of sweetness and chilli heat in the sauce; I would have appreciated some sort of dressing on the rocket salad that accompanied it though. The salmon was nicely grilled with a soft, comforting and well seasoned bubble

and squeak underneath and a rich creamy sauce with a strong mushroom flavour. There was a tempting range of classic sounding desserts on offer including a raspberry crème Brule and lemon meringue pie as well as the ‘shhhhharer’ which seemed to feature a little bit of everything! But in the end we opted for the treacle and ginger tart and a cheeseboard. The treacle tart was sticky and sweet with a warming hint of ginger, and was served with decadent clotted cream and some fresh orange and fruit coulis which livened up the

presentation. The cheeseboard featured cheddar, stilton and brie, a tasty and traditional selection. There were plenty of biscuits, celery and grapes, not to mention fabulous chutney. A coffee and a tea then rounded the meal off nicely. we were really impressed with the Red lion. There really is something to suit every taste and appetite. My friend and I definitely plan to return on a wednesday for ladies night, 3 courses for £15 and their homemade children’s menu and delicious sounding sunday roast make a visit with the family very likely too. I have lived in Steyning for 6 years and have 2 children. Formerly a chef myself I now manage a therapy centre in Worthing. I love French, Middle Eastern and North African food and my favourite restaurant is Al Rouche in Brighton.

Spring is in the air!

pring is in the air! The early bulbs are flowering and there are daffodils a-plenty starting to brighten up the countryside. Things at the nursery are very busy, preparing plants for sale and stocking up our display beds. Bruce has been away in Italy choosing lots of interesting trees and shrubs, it’s a tough job but someone has to do it! Buying directly from the growers and arranging all their own transport keeps costs down. This ensures you get very high quality plants at the best prices. Bruce is also off to Northern Italy for the second buying trip of the year, to bring home more fantastic trees and shrubs and will shortly be off to spain sourcing palms! If you can visit Bigplant in person, please do – there are so many more plants than can be included on the website, many in much larger sizes, and plenty to see, even at this time of the year. If not please do ask about stock they are happy to photograph plants, email you or offer advice. with a large range of hardy palm trees, to choose from, it really is hard to decide which one to go for! Most are suitable for outdoor cultivation in the uK. By far the hardiest of these palm trees is the Chusan Palm, Trachycarpus fortunei, which originates from China, and can tolerate temperatures down to -12°C or even less. The Blue Needle Palm, Trithrinax campestris makes a majestic specimen palm suitable for most sunny situations with incredibly stiff, blue foliage. The jelly Palm, Butia capitata is an often under-used palm but is proving to be hardy in the milder regions of the uK, but may need to be wrapped for the winter months in colder areas. For more

e were all born with self confidence. listen to a group of young children describe how they want to be astronauts or the prime minister. Then the effect of prolonged interaction with peers, family, teachers etc can, for many of us, introduce self-limiting beliefs that replace that confidence with thoughts such as ‘I am not good enough’,’ I am not deserving’, ‘I am not capable’. The therapist will identify the factors which have led to the lack of it and with careful and considered treatment, will provide changes of mindset to alter the ego in a way that improves self esteem and confidence; coupled with providing coping mechanisms to deal with what would otherwise be stressful situations. I often find that simple questioning gives my clients an opportunity to reevaluate themselves. For example I might ask people who believe themselves to be a failure, but

who have stated that they have an excellent relationship with their family ‘what is the most important thing in your life?’ The answer is invariably ‘the spouse and children ‘, so I follow up with ‘doesn’t it take a lot of effort to create harmonious relationships and so isn’t this a measure of success? would you swap your life with the jones’s down the road, who have all the material trimmings, but don’t get on together? Now, how successful do you feel? Hypnotherapy is used to help clients to change behaviour, attitudes and beliefs in ways that will boost self esteem and confidence.
