e are a family run shop servicing the village of washington (sussex). You will find us next to the Franklin Arms public house, in what used to be the old Post Office run by David gregoire, quite a few years ago! It is thanks for the support of the landlady of the Frankland Arms that we have been able to open the shop again taking over from David and liz Horwood of the village larder. Thanks also to the Franklands Arms there is ample parking for the odd motorist visiting the shop. we have received a lot of support from the villagers since opening on Friday 15th June and also enjoy the visits from the walkers, as it seems the shop with the public house is listed on the southdown way walkers’ map. In stock are cold drinks and snacks and ice creams to help them on their way! Our stock includes almost everything the housewife might need plus a little bit more! The little bit more, being our own produce of appleDown paddock such as homemade jams, marmalades and chutneys, cordials and squashes all made from local grown vegetable and fruit as much as possible, even plucked from the hedgerows in the country. Also Malcolm, who is an expert ex-chef, is busily cooking sausage rolls, scotch eggs, quiches and washington pasties. All made to his own recipes even down to the sausage meat in the sausage rolls and scotch eggs! In addition to the shop we have a small smallholding where we have saddleback pigs and Chickens, Runner ducks and Aylesbury ducks! All to be used in our little shop. As you will have noticed perhaps, that we are trying to use locally produced products, for example our bread is from Mr B the Baker in worthing, we have milk from southview Farm Dairy in Bury (sussex of course), the fresh meats from RCE Meats of washington and lamb and pork from Tedfold Cottage Farm near Billingshurst, also locally grown fresh fruit and vegetables when in season. ith so many exciting things going on this month I can only hope that the sun is shining, wherever you are! Its been a bit of a rubbish start to the summer but at least we can be grateful that here in Sussex we are not being as badly affected as other parts of the country.

Class of 2012 Steyning Grammar School’s Sixth Form College class of 2012, Year 13 leavers celebrated their formal Prize Giving Dinner at Avisford Park Hotel, near Arundel. The evening was attended by 210 sixth formers, along with learning mentors, teachers, members of the school management team and governors. Students arrived looking magnificent in their formal attire. They were greeted Deputy Heads Mr John Young and Mr Dominic Kenrick and the Director of Sixth Form College and Assistant Head Mrs. Sally Randall. Students enjoyed a glass of Pimms before photographs were taken in the grounds. The evening’s formal proceedings began with prizes being awarded to students in recognition of their approach to learning as positive, independent and engaged young people. The prizes were presented by Dr Barry Morgan who also joined the Class of 2012 leavers as he embarks on retirement after 32 years at Steyning. Students were also recognised for their contribution to fundraising events for charities having raised over £11,000 in 2011/12. Howard Ayscough received the prestigious award for overcoming significant difficulties during his academic career, showing perseverance and determination to succeed in the form of The Millennium Trust Award. This young man has been stoical and resolute, showing undoubted courage, bravery and endeavour to the best he can be despite enormous personal and health setbacks.A final award was made to Katherine Swan from Steyning Grammar School, a very special member of

our Sixth Form College family, an absent friend this evening who is still very much in our thoughts. Since her accident in February she has defied and amazed her health professionals with her courageous fight and determination. We are thrilled to see the brilliant progress she is making, her can-do mindset and persistence are quite incredible. Other Sixth Form College students received prizes for their work for their contribution to life in the Sixth Form College and life in the Boarding House. Head Boy George Hall, Head Girl Bessie Richards and Deputies Boni Babel and Rosella Whitehead, together with Head Boy of Boarding Ayoola Adeshina and Head Girl of Boarding Jess Loxley-Stuart were awarded the Foundation Governors’ Prize for carrying out their duties superbly throughout the year. We continue to be grateful to the Foundation Governors, Friends of Steyning Grammar School, the Millennium Trust, Southern County Engineering Solutions Limited and many other local companies for their generous support in sponsoring these awards. Head Boy, Head Girl and their Deputies together with the Head Boy and Girl of Boarding, delivered an entertaining farewell speech.. Students leave the Sixth Form with fond memories and strong lasting friendships. Finally, Mr Young brought the formal proceedings to a close with a toast to the class of 2012. A three-course dinner followed and the evening’s celebrations continued.

Consultation on housing allocations receives 100 online responses HORSHAM District Council’s consultation on housing allocations has received almost 100 online responses in its first two weeks. The consultation was launched on Thursday 14 June 2012 following a sharp increase in demand for social housing (previously known as ‘council housing’) and the introduction of The Localism Act. The Localism Act gives the Council greater freedom to determine: • who social housing should be for (and who therefore qualifies to go onto the housing register) • which households (if any) should be prioritised over other households when a house becomes available As the Council is committed to ensuring that decisions are locally determined, the consultation seeks the views of residents in relation to the above and will use the results to help determine if existing allocation policies need to be modified. Online responses are being encouraged and paper copies of

the questionnaire will be available in the autumn edition of the Council’s ‘Horsham District News’ magazine, which is sent to homes across the District. Additionally, hard copies of the questionnaire are available from the Housing reception at the Horsham District Council offices at North Point in North Street in Horsham as well as the Citizens Advice Bureau in Lower Tanbridge Way in Horsham. The consultation will end in September and The Localism Act will come into force in July or November 2012. If residents want to help shape policies that determine who social housing is prioritised for in the Horsham District, it is important that they respond to this opportunity by submitting a completed questionnaire before the end of September 2012. Questionnaires can be found online at www.horsham. gov.uk or by completing and returning the questionnaire in the Horsham District News magazine in August.

Serves 4 people Ingredients

Recipes by: Rebecca Woodward

For the Burger • 1 lb of minced beef

Homemade Beefburgers with Beetroot and Basil Relish...

• 1 slice of white bread grated into breadcrumbs • Half an onion finely chopped or grated • 1 egg • 1 tablespoon of Dijon mustard • Salt and ground black pepper to taste

For the Relish • 3 medium sized cooked beetroot (not pickled) • 1 tablespoon of balsamic vinegar • Roughly 12 fresh basil leaves shredded • 2 tablespoons of olive oil • Salt and pepper to taste

To Serve Four burger buns or other rolls Onion slices Rocket leaves – Combine all of the burger ingredients in a bowl, making sure thoroughly mixed. Then form into 4 burgers and place into the fridge covered with clingfilm to firm up for at least 20 minutes. – while the burgers are chilling chop the beetroot into a fine dice and combine in a bowl with the remaining relish ingredients, taste and season adding plenty of black pepper – Cook the burgers either on a barbecue or chargrill and serve on the toasted bun with rocket and onion slices.

Glamping in Shadow Woods By Ginette Stevens

T

he aptly named Shadow Woods is situated just the other side of Billingshurst. Set in 63 acres of woodland, it is traditionally managed by a group of dedicated staff whose ideals are ecologically friendly but with a modern twist. There is an easy to navigate website and when you book, you receive directions and information to make your stay as perfect as possible. It is set quite a way from the nearest road, so make sure you print the detailed directions. You do not just turn up to Shadow Woods, you are invited when you book and this keeps it safe, secret and secluded. Shadow Woods has belonged to present owner, Pom Oliver, for 12 years. Pom was part of the first all women team to walk to both the North and South Poles. Whilst walking across the snow and ice covered land that she decided she would like to make her little piece of naive woodland open to the public. On her return, she also decided to explore traditions used through the centuries when man survived on the land and used all it had to offer. About this time, Clive Cobie began to work with Pom and together they began the path back to sustainability. When work had been underway for a number of years, it felt right to share the woods and the age old skills with others. Shadow Woods Woodland Skills and Yurting Holidays began to take shape. The retreat has been running successfully for five years and continues to increase its range of activities and accommodation. It is a non-profit organisation: funds cover the maintenance of the woodland to increase its biodiversity. Courses on offer include bushcraft and woodland survival techniques, self-care workshops, adults and young people/ father and sons go wild in the woods, fire by friction day, charcoal burning day and nature awareness. Arriving at Shadow Woods on a Friday afternoon, Nicole and I couldn’t have received a warmer welcome. Amanda met us with a beaming smile and various bits of camping equipment that we may need. She ran through the main rules and instructions (all carefully placed in a folder for us to take to our Yurt so we could refer to them later if needs be) and showed us the toilet and shower facilities. We loaded up our wheelbarrow with our overnight bags (to wheel to our yurt) and then moved the car from the site. The car park is situated a few minutes’ walk from the yurts. Once back at site, you feel completely immersed in nature and the shoulders ease down a fraction. August 2012 • Village Living

The yurts are nicely spread out around a clearing, giving you the feeling of being part of a group but certainly not on top of your neighbours. We had open air solar heated showers near to us, plus a compost toilet facility. There were regular showers and toilets on site, but we were more than happy with our green alternatives which were clean and environmentally friendly. Our traditional yurt (imported from China) contained all we could need for a comfortable stay. We had proper beds with quilts, pillows and blankets and a chair to put our clothes on. Full crockery and cutlery were provided together with cleaning products and cloths. We had our own sink and draining board, and table and chairs. We also had our own private barbeque. From the office we were provided with a halogen lamp, a fire, a single ringed gas cooker and some logs. Charcoal, which is made on site, is available at a small charge as are extra logs and a gas cylinder for your cooker.


There is no electricity in any of the accommodation which allows guests to fully immerse themselves in the natural environment and enjoy the sounds of nature. Once settled, we met up with Clive who had kindly offered to take us on a woodland walk. A little sceptical at first about what we would learn, we were soon enthralled with the history of the woods and how they have evolved through to the present day. Clive’s enthusiasm was infectious and we found ourselves asking more and more questions and learning more and more about the natural habitat. We learnt many things including how to use the trees to know which direction was North and what moss you could use as toilet paper (yes – really!). We ate honeysuckle flowers, the inside of thistles and wild strawberries. We found wild mint and wild garlic.

We learnt about the badgers who live in the woods, and the continuing work that Clive and colleagues are doing. Clive also told us stories that he tells the children who visit, either with families or as a school trip, which I can imagine blow their minds. Before we knew it, it was time to return to our yurt to light our barbeque. Clive did this for us without the need for matches or a lighter. Soon our charcoal was smouldering and it was time to cook. We ate a hearty meal and sat in the fading light putting the world to rights and agreeing how chilled and relaxed we felt. Asleep as our heads hit the pillows, before we knew it, morning was here. I slept well, waking earlier than I normally would, listening to the sounds of the woods and birds. We had a morning stroll, returning to our yurt for

breakfast. Then all too soon it was time to leave. Shadow Woods caters for couples, friends and families. They pride themselves on making camping accessible for everyone. As well as yurts, there is a restored single decker bus and the pretty Wild Flower Meadow Cabin. It is a great stress buster and a marvellous way to experience a native woodland retreat with an element of comfort.

The Squire and Horse Bury

W

e arrived on a sunny lunchtime and were immediately struck by the characterful 16th century building and colourful pots and hanging baskets. There is large car park and the pub is easy to find, situated on the A29, perfectly positioned for lunch on a day out to Amberley or Arundel. I’d heard about the amazing food and that it would be well worth the 15 mile journey from Steyning so I was eager to find out for myself! We were greeted by co owner Wendy and were shown to one of the tables in the restaurant. The interior of the pub itself is charming and traditional but bright and welcoming and there was also a very attractive courtyard garden with comfy looking and stylish seating. We were handed the menu and our mouths were watering instantly! This was definitely not average pub grub. There were some old favourites but there was a modern and innovative feel with inspiring sounding flavour combinations. Starters were priced from £5.95 for a Thai style soup and included seasonal treats such as chargrilled asparagus with Parma ham for £6.95 which my companion selected and barbecued king scallops with tomato salsa, chorizo and a champagne vinaigrette for £9.50 which I chose. Main courses started at £8.95 for a Greek salad and included the best sellers of Steak and Mushroom suet pudding and Barbecued Calves Liver and Smoky Bacon, both for £12.95, as well as steaks for £18.50 and an exotic sounding Thai green curry for £13.95. I chose the Rump of Lamb with Portobello mushroom, potato and pancetta pie and roasted cherry tomatoes for £15.95 and my friend August 2012 • Village Living

chose the Roast of the day from the specials board, Pork for £12.95. There was also a snack menu with a variety of sandwiches, wraps and a tasty sounding Aussie burger priced from £7.50. There are even take away fish and chips available for £6.50 from 5.30pm. The wine list is extensive and varied with bottles priced from £16. We were both suitably impressed when the starters arrived. Great care and attention to detail had gone into the presentation and the scallops were almost too beautiful to eat! We tucked in nonetheless and were in raptures! The scallops were plump and were complimented perfectly by the smoky chorizo and tangy salsa. My friend was particularly impressed with the teardrop shaped poached egg that came with her asparagus. While we waited for our main course Wendy came over for a chat about the pub which her and award winning Australian chef Nick bought back in 1999. Their passion, hard work and commitment have obviously paid off and their loyal customers are numerous, drawn back by the regularly changing menu which highlights seasonal produce from local suppliers. She also explained the Members club which

now has over 4000 members. For a one off joining fee of £5 members can enjoy a lifetime of special offers such as the one course lunch for £7.95, 10% off all roasts on Sunday and half price between 5 and 7pm. Our eagerly anticipated main courses arrived. The Roast Pork was seriously impressive. There was a huge homemade Yorkshire pudding and 2 types of crunchy crackling. The roast potatoes were perfect and there was a generous selection of lightly cooked vegetables. The lamb was soft and tender, just the right shade of pink and served with a rich jus and tasty accompaniments. All that was left was to think about dessert. If there was one lasting impression I had it was that you absolutely must have dessert!

Everything is homemade from scratch which is a rare treat in most pub restaurants. Everything sounded tempting but it had to be the Chocolate truffle torte filled with cherries with orange scented cream for me, we’d heard a whisper from the waitress that this was not to be missed and she was right, it was rich, dense and slightly bitter. Definitely a grown up pudding! My dining friend chose the Mille Feuilles with strawberries and a rich French pastry cream. It was served with tiny cubes of Pimms jelly which added an interesting texture and it looked stunning. we loved our visit to the squire and Horse and can’t wait to return, it was well worth making a special journey for a truly memorable, delicious and decadent lunch treat, and with their sPECIAl OFFER of buy one main course and get another free until the end of september (booking is advised) it would be a shame to miss out!

D

ealing with children is both fun and challenging. Formal hypnosis and many of the standard techniques are not normally suited for children under the age of about 13, as they do not understand the subtleties of the process and wording used. However, as previously described, hypnosis is a state that we enter into many times during the day. Children do respond to many techniques, which fire their imagination. Treating children has to be fun and and engaging, for treatment to work, so in many cases, it is like playing games. For example, for one child, who was painfully shy, the following technique was successfully used. I asked the child to close his eyes and think about how he currently feels about the things that caused him problems. I then asked him to change chairs and think what it would feel like to be confident (in great detail). I asked him to give this person a name, which he did. I then asked him to move to back to his original chair as himself. Next he was encouraged

to ask questions of his new self that would help him to understand what needed to happen for him to become the new character he had imagined. By physically moving him between the two positions and guiding him gently through the process and moving him between the 2 chairs, he was able to come up with all the answers he needed to resolve his issues. His mother reported that the next day, he demonstrated his new-found confidence in a way that astounded his class-mates. Metaphors are a great way of getting a message across to children. Often everyday tales can have a hidden meaning, which the child can be encouraged to pick up on. As long as the child can identify with the characters involved. Many people have the gift to be able to create their own stories, which can be highly effective. Anchoring, a simple technique previously described, is an effective way of linking a simple action to a positive emotion or feeling, such as relaxation or confidence. The anchor can then be ‘fired’ whenever it is needed.

Hypnosis is a state that we enter into many times during the day. One of the best techniques for helping children, who suffer from fears relating to people, is called ‘The Circle of excellence’. In this, the child is asked to create in his mind certain memories of things (a person, place etc) that he associates with safety. He is asked to put all these things inside a circle which he steps into and experiences the resultant feelings of safety. These feelings are then anchored and he is taught how to recreate the circle whenever it is needed, If you would like to know more about these techniques and others, please email me or give me a ring.

uly was a busy month. Now back from Hampton Court Flower show where we were awarded a silver gilt medal for our display of ginkgos and shade loving plants. For everyone that visited us thank you for your kind words and support. Now it’s time for potting and propagation, despite the weather the nursery looks fantastic many of our plants love the rain and are bigger than ever. If you can visit us, please do – we have lots more plants at the nursery than we can include on our website, many in much larger sizes. There is always plenty to see. If you can’t visit us, please ask about current stock. we are happy to photograph plants to email you or offer advice. we have some particularly gorgeous and flourishing FERNs in at the moment – Dicksonia antarctica or the Tasmanian Tree Fern is perhaps the best known of all the tree ferns and possibly the toughest. It is easily recognised by its thick, soft brown trunk and graceful arching dark green fronds. In milder areas where the frosts are only light, it will keep its fronds all year round and with a new set produced each year can

In colder areas it will have to be wrapped or at the very least, place a handful of straw in the crown to protect the new fronds.
