ix of the best young chefs in Sussex took part in a sizzling cook off at City College Brighton & Hove on 6th November, to win the hotly contended Sussex Young Chef of the Year award, sponsored by Cheese Please and Gram UK Ltd, as part of the Sussex Food & Drink Awards 2012/13.They were Charlie Tayler from The Pass at South Lodge Hotel in Lower Beeding, Paul Peach from The Horseguards Inn in Tillington, Jimmy Gray from Jeremy’s Restaurant at Borde Hill Gardens near Haywards Heath, Steve Pelling from The Felbridge Hotel in East Grinstead, Ryan Hunter from Wingrove House in Alfriston and Tom Goodchild from The Crabtree in Lower Beeding. Each young chef was asked to prepare a three course meal made from locally sourced Sussex produce to be judged by an expert panel including Roy Perrett from the Craft Guild of Chefs, Leroy Clarke, Chef Lecturer and Course Manager at City College’s catering department, sponsors Fiona Kay of Cheese Please and Glenn Roberts of Gram UK Ltd and chair of judges, Clive Beddall OBE. Roy Perrett, Vice President of the Craft Guild of Chefs who lives in Sussex said, “The six young chefs all produced menus of an amazing standard and selecting just three finalists was challenging with a display of such exceptional culinary skills. It was a very exciting and highly competitive afternoon.”Said Leroy Clarke, Chef Lecturer and Course Manager at City College’s Catering department, “When we have young chefs as talented as today’s competitors working in our restaurants and hotels, the hospitality and catering industry in Sussex has a great future and can only go from strength to strength.”Other categories in these coveted awards include best Sussex eating experience, food producer, drink producer, farmer, food/farm shop, butcher and farmers market. Winners and runners up will be revealed at the ‘Sussex foodie event of the year’, the awards banquet, being held at the Amex Stadium on 31st January 2013, hosted by Sally Gunnell OBE adn Danny Pike from BBC Sussex. n Friday 9th November 2012, Steyning Grammar School Old Boys, known as the Old Grammarians, were joined by students, staff and governors for a Remembrance Service to honour the memory of all those who have given their lives for the peace and freedom we enjoy today. The service took place in the newly built boarding facility in Bolton House on Church Street. Remembrance Service was held in Bolton House where Grammarians young and old remembered together the names of the Fallen. The Remembrance Service was opened by Rev Peter Butchers, the school’s Chaplain, and followed by Year 11 student Rebecca Van-Pelt who gave an insight about the school in 1914. The names of those who fell were read by Head Boy Ben Miller, Deputy Head Girl Hayley Weir, Head Girl Emma Watson-Jones and Deputy Head Boy Alex Powel. Laying of the wreaths were shared between year 7 and 8 students, and Dr Roddy Stevens. Old Grammarian George Cockman recited From Steyning to The Ring a most popular poem attributed to Philip Johnson that has haunted many people since it was first printed by the Daily News in June 1916.
During the Second World War, many of these Old Boys attended Steyning Grammar school and remember much of these days. The service over, Young and Old Grammarians got together, the former to inquire and the latter to share their experiences. “This was a service where different generations came together to remember those people who sacrificed their lives such that we can live ours in a free society. The contributions of Derek Redman, George Cockman and our chaplain Peter Butchers in particular moved all in the congregation to reflect on the past and present and has increased understanding across generations.

It’s a Cobblestone C s
o it’s that time of year again, I’ve got a list as long as my arm of people to shop for but I’m fed up of the high street chains and the same old same old, so this year I am really keen this to shop locally, and support our local businesses, so I am going to Cobblestone walk in steyning where I know I will get what I need, and I’m going to take you with me... As I walk in the alluring doorway first stop on to my right is one of my very favourite places to shop, Flicker Rose, for me, has it all, with beautiful handcrafted jewellery and gifts from sussex and beyond including gorgeous trinkets and pretty things for any girl of any age! I duck back out into the tastefully decorated hall way and to my left, is the newly refurbished Lansbury’s Ladies Wear, with up to the minute fashion and bags and now stocking the TIgI range, I am sure to find something perfect in there for everyone…! Right that’s the mother in law sorted I’m off again but today I’m rushing past my friends at the pooch shop as lexi (my dog) has been all stocked up for, this year and possibly next! Next stop is mainly for me, I love the Littlest Craft Shop / knit One Patch One – gavin, has a kit for everything, from stamper kits, to flower presses, button making machines and hand held sewing machines, gavin completely gave me the encouragement to get making again. In his second hut, he stocks fat quarters for you serious crafters out there, I know one, and so that’s another off my list! Ah the beautiful courtyard which I take for granted now but with all the festive decorations and the tea house shining brightly takes me aback once more, Tracey greets me from the Old Toy box, with beautiful handmade traditional wooden toys… Tracey has some lovely new stock in, which will certainly please the little ones and the bigger ones too I should imagine! (No plastic or beeping in sight!) I’m quickly popping into a Car’s Private Hire to see Andrew and book me a car home for when I’m done, with all my lovely shopping! I haven’t deserved my coffee and cake yet but will pop back in later when im done! Next up… River Rose Occasions –Tina’s is perfect for fascinators, beading, hair clips and costume jewellery, I’ve got stocking fillers for me, my girl and my goddaughters! Right on to indulgence Jewellery, Nick has recently had a reshuffle, and it looks great in here, …I’m going in to make my own wish list before sending Roger in just before Christmas! It’s the right place to get something sparkly for that special someone. Oh perfect Pro Cycle Services! Time to pick something up for Rog and his bike, Andy also offers repairs & did you know you can hire bikes here too? something to remember for the New Year. As I move on passed the gardens to Something Special baby boutique and The Wool Shop the lovely Joyce greets me with her handmade luxury, lovely and bespoke handmade gifts for that little one on its way, and all the items and supplies of haberdashery anyone could need for the year ahead of home stitching! Right, yarns check, needles check, patterns check, on we go, Next to Joyce I see Jeanette at Oliver and kate Fair Trade Boutique, she stocks Fair Trade and ethically sourced bags, I’m going to pick up the perfect pressie for my sister, hand designed by Jeannette and all ethically sourced and made, she will be thrilled! what’s that noise... Peekaboo baby gifts, aha handmade bespoke knitwear by the talented hands of Karen, it’s even completely natural bamboo wool she uses so I’m going to place an order for my nephew, I can hear the clicking of needles as I pop over

the way to see wendy, at the Faerie Cottage,, where I will pick up one her fab hippy bags for my daughter and faerie dust and Nagchampa incense, its time to stock up, have run out since my last visit! Now housed in the back corner block is lacey at Pink Ribbon dress agency Clothes she expanded due to its success and proudly supports breast cancer donating up to 30% of profits. Fantastic! Is there something for me? Not today but I’m not shopping for myself! lacey does have a perfect handpicked range of all sizes and styles; I am going in to have a look for my sister in law... Just passing the jewellery repairs and wedding shop… don’t need those today… but handy to remember... and in I go to see the newly established Alan in aJ Frames offering nostalgic steam and aviation prints, framed spitfires, great British traction engines, steam trains and many more prints… absolutely amazing, my father in law will love these prints, all perfectly framed. A little bit of me time with my lovely Crystal arts Clare… I’m going to have a chat and make an appointment for a chakra rebalance after Christmas I will definitely need it! I’m going to book a session for my best pal while im here.. Clare can get those chakras back in line, do card readings, massage, healing, and crystal works to name just a few of her amazing skills and treatments… Do stop and have a chat as there is definitely something to help everyone here. I’m coming back later! I don’t need any alterations or repairs today so pop in to see Helen, to browse The Gallery supporting the children in India, with beautiful unique artwork and fine exotic necklaces I’m sure to find something in here! After having an engaging chat with Helen I go next door to see Photography Pete, Pete offers prints right of the shelf or can be commissioned for wedding shoots or any of you photography ideas. I’m going to pop in and see Emma at emas nails and beauty, Emma has two huts due to high demand and offers all the usual treatments including the fabulous shellac Nails. I think I’m going to pick up a couple of gift vouchers for my other sister. Oh ok, and I booked in for myself too. After an exciting and productive afternoon I deserve a break and as if by magic there it is The Cobblestone Tea House – for one of my very favourites val’s homemade scones, a pot of tea and a chat with the friendly bunch of staff – perfect! As I’ve booked my car already to take me home I can sit down and relax… I’ve done most of my Christmas shopping, I’ve supported our local traders all in one delightful and historic place – I’m happy! go and have a browse, there is something for everyone in this walk, just don’t be too tempted to buy just for yourself, you will be tempted… I promise! Late night shopping in Steyning Wednesday 5th december all open till late... Thursday is late night shopping every week in december till 6pm!! The Cobblestone Tea House Competition: Judge your favourite window display & be in with a chance of winning a cream tea for four! Each hut will have a slip for you to take & post in the ballot box in the Tea house. Winner of the Best Display will win a prize for the business & their staff! Salted Caramel tray Bake ingredients For the cake • 140g butter • 75g light muscovado sugar • 5 tbsp golden syrup • 2 tbsp black treacle • 225g self raising flour • 1tsp vanilla extract • 2 large free range eggs
For the topping • 25g butter • 40g light muscovado sugar • 1 tbsp golden syrup • 1 tbsp double cream • Half tbsp sea salt • 20g icing sugar
To Prepare 1. Heat the oven to 180c and grease and line a 20 x 30cm baking tray. 2. whisk together all of the cake ingredients and pour into the tin. Bake for around 30-40 minutes until the centre of the cake is springy to the touch. Allow to cool in the tin completely. 3. To make the topping, gently melt the butter, golden syrup, double cream and muscovado sugar in a saucepan over a low heat. when the sugar is dissolve, take the pan off the heat and stir in the sifted icing sugar. Drizzle over the cake and allow to cool completely before slicing into squares.

he road to Oz will be paved with fun, glamour and all things ‘totes reem’ this Christmas when star of The Only Way is Essex, mario Falcone, leads the cast of wizard of Oz of Oz at the Pavilion Theatre in worthing from December 13 – January 6. The TOwIE star makes his pantomime debut as wizard of Oz in the high-energy modern pantomime which brings 1930s-style Hollywood glamour to the traditional tale through a mix of well-known songs and a story which follows would-be starlet Dorothy as a snow-laden tornado whisks her to the Emerald City. The reality star will be joined on stage by Sussex’s Heart Breakfast presenters Tom evans and Jack Hayes who take the roles of wilfred and Archie, travelling showmen who peddle trips to a magical city of dreams and tempt Dorothy to the join them in a land where she can achieve her heart’s desire thanks to the enigmatic wizard. Along the way she is joined by fellow dreamers including the Tin Man, lion and scarecrow whose journey
leads them to meet the magical people of Oz including blonde bombshell glinda, the good witch of the north, who wants to spread the word of wizard of Oz and has a fondness for shoes. Producer, director and writer Paul Hammond has more than 30 years’ experience creating pantomimes and shows. Tv’s Superstar finalist Jon moses will be live on stage as Prince valiant when he stars in sleeping Beauty at the Connaught Theatre in worthing from Friday December 7 to saturday January 5. Jon stars alongside Hi-de-Hi yellowcoat Nikki Kelly as wicked fairy Carabosse and top pianoplaying dame Bobby Crush as Nurse Katy Cough Drop. In the traditional version of the fairytale story, the lilac fairy will weave her enchantments through the audience as the story unfolds about the beautiful girl who is cursed by Carabosse to prick her finger and fall asleep for 100 years. The sparkling tale is woven together by lots of audience participation, jokes and gags from comedy impressionist Tony Rudd as Muddles plus well-loved songs, glittering costumes
and hand-painted sets to create the ultimate authentic pantomime experience. Paul Holman says: “I’m thrilled Jon has decided to join the cast of Sleeping Beauty. Petworth House & Pleasure Grounds at Christmas By Ginette Stevens
C
hristmas is a truly magical time and I am always looking for new adventures to add to our family memories. Although we have our yearly traditions which include attending the local nativity service, a Christmas Day walk and watching Dr Who(!), we also look out for something new to do and this year I have found just the thing – Balthazar’s Palace at Petworth House, together with an Elf Exploration for the children. Petworth House is situated just the other side of Pulborough. Set in 700 acres of landscaped parkland, the house was rebuilt in the late 17th century by Charles Seymour, 6th Duke of Somerset. The original site was occupied by a fortified manor house founded by Henry de Percy, and the 13th century chapel still survives today. Many people maybe more familiar with the stunning park. Landscaped by ‘Capability’ Brown, it is home to the largest herd of fallow deer in England. Its beauty has been captured by many artists over the centuries, including JMW Turner. Many of his paintings can be found inside the house, together with other well-known artists such as Van Dyck and Laguerre. Petworth House and Park were handed over to the nation in 1947 and are now successfully managed by the National Trust. The charity is one of the most important nature conservation organisations in Europe. It promotes environmentally friendly practises and cares for the diverse and rare wildlife that lives on its land. It looks after more than 300 houses and gardens, from workers cottages to stately homes, preserving not only buildings but the stories of the people who lived there. These spaces inspire the Trust’s 4 million members, 61,000 volunteers and 5 million other visitors every year. Petworth is just one example of the charity’s fantastic work. The National Trust holds many events at Petworth, but this is the first time that it has opened its doors throughout December to offer visitors the chance to journey through the imagined palace of the Arabian King, Balthazar. Balthazar, of course, was one of the Three Wise Men who visited Jesus after his birth offering gifts of gold, frankincense and myrrh. December 2012 • Village Living

The house will be transformed with rich red and gold hangings, spectacular flowers, exotic foliage, and the evocative sounds of the Middle East in this fantasy for the Christmas season. From majestic throne room to midnight garden, each of the eight decorated rooms will delight the senses with colour, perfume and lighting. I spoke to Karen Manton-Cook, Visitor Services Manager who said: ‘This month long event will see many of the main rooms dressed for a spectacular eastern celebration. This is the first time we have opened the house for the whole of December, allowing visitors to experience the unique atmosphere of Petworth during the winter. The closed curtains and stunning interior decorations will showcase a side of the house not normally seen by visitors.’ Not to be missed is the 54ft Carved Room, which will house an equally long table dressed in magnificent and opulent style, prepared for an exotic banquet. decorated with sumptuous flowers and fruits will await the arrival of guests, while eastern music fills the air. Balthazar’s Palace has been inspired by the painting ‘The Adoration of the Kings’ attributed to Hieronymus Bosch that hangs in the Somerset Room at Petworth House; it shows the three Kings presenting their gifts to Christ. Visitors will be able to admire this painting in splendid isolation at the end of their journey through the Palace. The younger visitors are also being catered for by way of an Elf Exploration.
The Petworth House elves will be thrilled to have their young friends search for them – by looking for clues and answering riddles to find their hidden home buried deep in the heart of the Pleasure Grounds. And when the elf home has been discovered, the children will be able to go inside and will be invited to write and post a letter to Father Christmas. The children will also receive a small gift. I really do think that this will be a magical experience for all ages and cannot wait to take the family in December to start our Christmas celebrations.

The Sussex Produce Company Steyning Reviewed by Hannah Best from Steyning, owner of the fabulous www.the-tea-set.com
W
hen Katie asked if I would like to do a food review at The Sussex Produce Company, I jumped at the chance. Since moving their lovely shop last year from the other end of the High Street to its new, larger, more central location, and opening up the café, Nick and Nina have really transformed what was a drab, small supermarket, into an award winning shop, stacked to the rafters (literally) with local produce, and a wonderful restaurant. Everything in the shop is displayed beautifully. Buckets of colourful seasonal flowers and crates of wholesome, quality veg bedeck the shop front, the suburb quality of the produce and the friendly, knowledgeable staff that are always on hand, make this a lovely place to shop. Living close by I regularly use the shop for its vast range of good quality ingredients, and often use their café as a place to meet up with clients and friends. By day, the café is a buzz with all sorts of people enjoying fresh coffee, delicious cakes and lunches of salads, soups and homemade quiche. Although I had always meant to pop in in the evening to see what dinner was like, I had never gotten round to it. It was with great excitement that Kirstin, (just call her Geraldine) and I walked up the road, wandering what was in store. On arrival we were greeted by the very lovely Sheree, who looked after us beautifully for the evening. The Blond ordered a glass of rioja and I tucked into one of the local ciders on offer whilst we perused the menu and enjoyed the relaxed atmosphere… All the dishes available use best quality ingredients and as such everything on offer was very temping. Once the drinks menu had been wrestled out of Geraldine’s
grasp, she opted for the Risotto of roast local aubergine and taleggio with avocado oil dressing to start, and I went for Seared local Scallops on forced rhubarb puree with crispy pancetta. Both of which looked amazing and were so tasty that conversation stopped when they arrived, we tucked in, “Incredible” Geraldine muttered between eager mouthfuls. Since I was writing the revue, naturally I had to try both. The risotto was delicious, creamy and comforting, and the Scallops were perfectly cooked, the sharpness of the rhubarb complementing the scallops and pancetta brilliantly.
Next up was our main; my companion had Pan Fried Local Knepp Castle Steak with a fricassee of wild mushrooms, thyme and tarragon, sauteed new potatoes and a béarnaise sauce, while I had chosen the seasonal dish of Local Thai Spiced Pheasant, with mushroom basmati and a fruit chutney. Both of which went down very well, the Pheasant was tender and the spices combined with the chutney cut through some of the gamey richness of the pheasant. The rice was also cooked to perfection. Our only problem so far with the evening being that it seemed to be going past too quickly – we needed

more time to ‘drink it all in’, so to speak, that’s when the desert menu arrived, the perfect way to stretch out our time in this cosy corner of the restaurant; we were taking our responsibilities very seriously, everyone is going to need to know about the pudding, right? The Blond grasped at the paper, and called first dibs on the Rich pot au chocolat served with physalis fruit, I was already taken with the sound of Mango Tart Tatin with locally made Coconut Ice Cream, thinking it would follow on nicely from the spiced pheasant. Oh yeah baby, I was right, it was delish! A really unusual take on the French classic, but combined to make an amazing end to my meal. geraldine’s chocolate pot went down so well I didn’t even get to taste it. we rounded off our meal with coffees and sat at our table ‘til we were the last ones there. A simply fabulous meal, indeed. Many congratulations and thanks to the brilliant sussex Produce Company team on managing to strike the perfect note with excellent quality food and a fuss free, unpretentious, relaxed atmosphere. A
t any time that a person is experiencing a particularly emotional event and a stimulus is applied at the peak of that event, then the two will become linked neurologically. This is known as an anchor, or in its negative state, often referred to as a trigger. with a phobia, for example, the stimulus, e.g. a spider, becomes linked with the emotion of fear. If you think back through your own life at all of the major events that you remember, there is usually a strong emotion, sadness, fear, anger, joy, pride, happiness etc. linked to each memory. Examples of anchors exist all around us and in various forms: the piece of music that makes you cry (sound), or the spider with long hairy legs (visual), or the item of food that makes you gag (taste). My favourite party piece is to ask someone to recount a time when he/ she giggled uncontrollably. As the story is retold and when the teller starts to giggle uncontrollably, a simple repeated tap on the shoulder can establish an anchor (kinaesthetic). later on, that person can be put back into a state of hysterical giggling by simply tapping the shoulder again.
The point of the above is to demonstrate that anchors can be used in therapy in a positive way. someone who has a fear of standing up in front of a group of people can make use of a confidence anchor, established in a similar way to the above. Any positive emotion can be anchored; relaxation and confidence being the most common in therapy. In relationships, how often does conflict occur or become exacerbated because something that is said or done fires a trigger back to events of the past. Rows can get out of hand as a result. How often do you hear ‘you never……’ or you always..…’as the subject matter of the row broadens? Occasionally a negative anchor can be set up and used in a positive way, for example, to help individuals to stop smoking. An association between the smell, taste or feeling of a cigarette can be linked to the same aspect of a food that makes the smoker gag, to offset the pleasurable effect of smoking. This ‘aversion therapy’ is only used when specifically requested by the client and where a suitable food can be identified. Often the mind can easily be fooled
into believing that 1+1=3. I had a client who had panic attacks which made her face flush and feel hot. One day she was in an environment where the temperature made her face flush and feel hot. A panic attack ensued, probably because the subconscious mind associated the feelings being experienced with the original stimulus or cause of the problem. It is possible to break anchors through the use of appropriate hypnotic techniques. Hence phobias, panic attacks, confidence and performance issues amongst others, can usually be quickly and effectively dealt with by clever manipulation of the anchor(s) involved and the creation of new anchors to help the client to cope. if you would like to discuss this more, please phone me on 07740 085101 / 01903 745606 or email me on cj@chrisjones.uk.com
