Welcome to July!

ith so many fabulous things still going on all around us it’s hard to pick where to be and when! The weeks are flying by. It’s been so busy, and it looks to get even busier over the Summer and Autumn! In the magazine this month I have a summery wander around Cobblestone Walk to see what’s new, and pop into the Cobblestone Café for lunch with my schoolfriend Heather. WEEE are ready for you in Steyning
B
roken or unwanted electrical items will be collected during a mobile recycling event being held in Church Street Car Park, Steyning, 28 July 2013, 10 – 3pm. This is part of a trial mobile recycling waste electrical and electronic equipment (WEEE) event continuing in the Chanctonbury area until the end of the year. This Scheme is being run by West Sussex County Counci in partnership with Viridor and Horsham District Council in order to encourage recycling of WEEE items and to provide a more localised service in rural communities The first eight events collected the equivalent weight of nine small cars – 18.12 tonnes – with the latest event at Storrington having collected the equivalent weight of nearly two small cars – 3.66 tonnes – which is the highest yet. People are encouraged to think twice before putting WEEE into their waste bins and to consider if they can reuse it and if not to take it to be recycled. The WEEE service can accept large electrical appliances such as washing machines and cookers, fridges and freezers, display equipment such as TVs, laptops and personal computers, fluorescent tubes and small electrical appliances such as hairdryers and batteries. For any items that can’t be accepted, the nearest household waste recycling sites are at Newbridge Road, Billingshurst, RH14 9HY or Hop Oast, Worthing Road, Horsham RH13 0AR, or at Brighton Road, Shoreham BN43 6RJ.

To begin with, after a full consultation, Olivia chose the correct keratin to match the condition of my hair. She began with a pre-treatment shampoo followed by the pre-treatment itself, which was applied using small sections throughout my hair. The Keratin is then applied, again using very small sections, before hair is dried for the first time. Olivia started to straighten each small section, using titanium straighteners – the temperature and straightning strokes predetermined by hair condition... I was left for 5 minutes whilst my hair cooled down and then taken to backwash for a 5 minute rinse and shampoo with the ‘straight and maintain’ products. This is the end of the treatment as such – normal styling now starts! It’s a fantastic treatment, an evolution in straightening and repair that brings new life to your hair after years of damage by restoring keratin moisture, strength and elasticity, resulting
results and the compliments I am still receiving on my mega shiny hair! any Hypnotherapists state that they are ‘solution-focussed’ and do not delve into problems from the past. Personally, my opinion is that only by healing the effects of events from the past can clients move forward in their lives. To me it is like getting rid of weeds. Yes you can pull the weed out, but unless you get rid of the root, the weed will re-grow. With most anxiety-related conditions, finding out the cause of the problem is my first line of attack and this is where regression comes in. In trance, deeplyhidden memories can be unearthed and once unearthed, they can be changed, so that they no longer create the problems that have created and maintained the client’s condition. This can create a certain amount of emotional discomfort for a very brief period, but there are control mechanisms available to minimize the effects and the potential benefits far, far outweigh any discomfort experienced. I also believe that once clients understands why they have developed the condition, then they are more likely to be able to resolve it (with help from me); especially once they realise that the condition is the problem, they are not
the problem. For example, the client is not an alcoholic, just an individual suffering from alcohol abuse; in the same way that most children are not bad children, just children with bad behaviour. ‘Regression Therapy’ is a term that throws some would-be clients into a state of panic; just at the possibility of past-life experiences being involved. When I first signed up for the Quest Hypnotherapy course, I asked if this concept gave hypnotherapy a bad name. My soon-tobe tutor told me the following story. He had a client who had what we call a presenting problem of anxiety. The first line of attack is to invite the client to look back along their imaginary timeline to the first event connected to the problem. In this case, the client regressed several generations to the 16th century, where she believed that she had had anxiety issues with her husband. My tutor helped her to deal with those issues (in her mind) and in doing so her current anxiety issues were resolved. His words to me were, ‘It doesn’t matter what we (as therapists) believe, we always work with what the client believes. The client obtained the desired outcome, so job done.’
My only exposure to past-life regression was 2 colleagues at Safeway, where I was working when I started training. Both came to me with a belief that they had each had a different life in the past and asked me to take then back to it. I agreed to do this. Both recounted details of their lives in great detail and obviously firmly believed in what they were saying. However, subsequent investigation could not substantiate what had been said in trance. What I do believe is that there is so much that we don’t understand about the human mind that I still keep an open mind on the subject. I know Hypnotherapists who specialise in this field. here are nearly 10,000 species of bamboo ranging from tiny dwarf species to enormous tropical ones. Luckily you needn’t worry about having to choose between all of these – only a few hundred different species and varieties are happy in the UK. All bamboos are easy to grow, from the sun-loving Phyllostachys to the shade-tolerant Fargesia. It is normally best to choose a bamboo that is suited to the size of your garden and to make sure that it is going to do what you want it to do. Most Phyllostachys bamboos prefer sunny to part-shady situations, are generally clump-forming and will reach between 3.5 to 7.5 metres in height depending on species. If you need a bamboo for a shady spot then a Fargesia is ideal and will get to between 1.5 and 3 metres tall, again dependent on species. Having said this, Fargesia is also perfectly happy in a sunny situation. For ground cover we would recommend Pleioblastus, Sasa or Indocalamus – but choose with care because some of these will spread surprisingly quickly. The height of these varies between 1 and 2 metres.
The most important thing to remember about bamboos is that they respond very well to watering and feeding. A bamboo will require a lot of water when it is first planted to help it get established, as long as the water is allowed to drain away. Bamboos can be thirsty and will appreciate a lot of water, as long as they are not water-logged – since this can have a negative effect on them. Feeding bamboos is very simple – they respond well to most feeds, any general purpose feed is fine, but make sure you do not use tomato feed. Bamboos can be used as specimen plants in the middle of a lawn or border. They are equally as happy as a screen to block out your nosy neighbours or an unsightly building. They can be grown very easily in a pot providing they have adequate drainage and don’t dry out. Basically, bamboos can be used in any garden setting and will fit into a formal garden just as easily as a tropical garden. The Cobblestone Tea House Steyning
As this is a Cobblestone issue, I couldn’t not bring you an up to date review of the lovely Cobblestone Tea House, slap bang in the middle of Cobblestone Walk! It claims to be quintessentially English and it certainly is! I had arranged to meet an old schoolfriend here for lunch and a catch up...

ith the ever growing display of Old English china tea sets and nick nacks, you almost feel as though you have taken a step back in time… the freshly laundered original table cloths are different on each table and the fresh flowers lend a traditional feel. I bumped into another old friend in the teahouse as well and had a quick catch up, apparently it is their every day coffee stop! The teahouse was packed when we arrived with the sound of happy customers from near and far and the chink of a real china tea cup – nice! There is a friendly and welcoming vibe in the teahouse, and you just know that nothing is too much trouble! I know that Eddie is very involved with life in Steyning and keen to get everyone involved in local events and happenings, which is fantastic for the community. He even mentioned that this year there will be a Steyning and district food festival to look forward to... watch this space. At the Teahouse, the menu is clear and proudly in keeping with the authentic and quaint style of the place. It is typical of days gone by, self explanatory, and straightforward. Hot food is served all day and the special breakfasts till 12pm. A wonderful selection of freshly baked cakes and treats are always available (and highly recommended – by me!) The service however is not old fashioned, it is perfect, friendly, speedy and attentive, Eddie, Val and the girls are always so very welcoming and charming, the teahouse is somewhere you can sit with your mum, your nan, and your very best friend! (all at the same table if you wish!). I had the stilton ploughmans served with Homemade coleslaw and pickle, fresh bread, apple a, grapes and garden salad, perfect, there was just the right amount of cheese and everything was fresh and tasty! Heather had the just right scrambled egg on brown toast, freshly brewed coffee which was delicious! A perfect end to a perfect trip to Cobblestone Walk.

Cobblestone in Bloom... S ummertime is here and the flowers are out in full bloom – finally! I am a big fan of Cobblestone and all the unique businesses there, I’ve recently had a walk around, so will share and take you on a guided tour of who’s who and what’s where.. currently! Flicker Rose, for me, has it all, with beautiful handcrafted jewellery and gifts from Sussex and beyond including gorgeous trinkets and pretty things for girls of any age! Flicker Rose also has a unit up at the back of Cobblestone Walk – be sure not to miss it. Lansbury’s Ladies Wear, is a must see, with up-to-theminute fashion and bags. Popping in to see what’s newly in, is a a must! I have Lexi (my dog) is with me, so we will pop into her favourite shop – Palace of Pooch! Ella is always pleased to see Lexi, and she gets spoilt with the tasty treats specially left on the counter for the dogs that come in. With an extensive array of all the top Poochy brands, I’m torn between a bag of natural treats, a new sofa for Lex or a very stylish parka for the winter... Yes you heard me right this palace really has it all!! Next door is Jeanette at Oliver and Kate, a classy boutique full of unique, bespoke and pioneering pieces from all over the world. Jeanette (business owner & Crafty Mum as seen in the June issue), has a real eye for fantastic items all fairtrade, ethical and hand made. The beautiful courtyard, bursting with colour is full of a truly amazing selection of flowers all in traditional “Cobblestone style” galvanised tubs, historic planters and beautiful baskets. Having The Potting Shed based in the courtyard is a massive advantage, Tracey and i have a chat, she talks me though just some of the many bedding and pot plants they stock. I’ve bought myself some bedding plants and will pick them up on the way out, Tracey is also business owner from the Old Toy Box, with beautiful handmade traditional wooden

I won’t be needing to visit Andrew at A Car’s Private Hire today as I’m driving, but always good to know that they are there... did you know?? Next to Tina is Indulgence jewellery. Nick, always one to please, has everything displayed clearly and it looks great in here, I’m going to have to buy something! Andy from ProCycle Services is next door. Unfortunately he will be leaving the Walk at the end of July but will still be offering ProCycle Services from home... The gardens are in full bloom and look really beautiful, full of people relaxing with a coffee on the tea house seats next to Something Special Baby Boutique & the Wool Shop. The owner, Joyce, greets me with her handmade luxury, lovely and bespoke handmade gifts for that little one on its way, and all items and supplies of haberdashery anyone could need for a year ahead of home stitching! I have visited Joyce a few times recently, I like to crochet (its no secret) and have not been able to get the hang of the infamous granny square. I have now literally just finished a blanket for my daughter and brandishing it proudly, show it off to Joyce. Right – yarns check; needles check; patterns check, on we go... Next to joyce are Jo and Vida of Green and Healthy stocking fair trade and ethically sourced products for you and your home, I’m going to pick up a few things I’m short on (and also a few I didn’t know existed!) with the advice of the ladies... thanks! It’s a Stitch Up – handmade bespoke products by the talented hands of Caz and Jax, they have only just moved into Cobblestone and I’ve already something fab, a cork board

After catching up, I move on to see the newly located Alan of AJ Frames now with an even bigger selection of nostalgic steam and aviation prints, framed spitfires, great British traction engines, steam trains and many more prints… absolutely amazing, my father in law will love these prints, all perfectly framed. Newly established Steve of Shabbys offers a good oldfashioned eclectic mix of top browsing goods. I love a browse and Steve has plenty of stock. Two tea pots and a book later, I’ve finished with Steve (for this week at least!!). It’s always good to have a little bit of ‘me time’ with Crystal Arts Clare… I’m going to book an appointment for a chakra rebalance next week, I definitely need it after this Spring! I’m also going to book a session with Clare for a friend so she can get her chakras back in line – Clare also offers card readings, massage, healing, and crystal works to name just a few of her amazing treatments. Very new to Cobblestone and just setting up is Rebecca, of Honeycomb Cakes, a budding professional when it come to the art of cakes and defintely worth remembering for those special occasions. Just next door to Rebecca is Lorraine from Compassionart Card, her work is fantastic, Lorraine is a local artist offering original artwork of Steyning and a fantastic selection of her very own cards. Jo from Lines offers bespoke handmade wood crafts, her handiwork is fantastic, I can really see one of her chopping boards in my kitchen! Then just next door is Jane, Jane is new to the Walk but has worked in Steyning a long time – her skills are in life coaching. Speaking with Jane I automatically feel good, she is set to stay here offering services to enhance your mind and soul. Carrie is the owner of House of Ivy Steyning’s very own super stylist, there are lots of classy bits here, modern classics for everyone. We come to Emas Nails and Beauty, I have known Emma for a while and am thrilled to see that due to high demand she now has two units! She offers all the usual treatments including the fabulous Shellac Nails. Somewhere to pick up a gift token or two! The traders here are so very friendly. Do go round and say hello, there is always lots going on at Cobblestone, and always something new and exciting to see. With the weather improving its the perfect time to sit outside, have a coffee and one of Val’s homemade scones, and just watch the world go by! Even if the weather isn’t brilliant, go and have a walk round (before a coffee and one of Val’s infamous homemade scones!) you will always be made to feel very welcome!

British Hen Welfare Trust By Ginette Stevens
T
wo things made me do a double take when I first looked at the British Hen Welfare Trust’s (BHWT) website. Firstly, the celebrity names associated with the Charity, and secondly the number of hens still farmed in unnatural conditions in the UK. With the well-publicized lives these creatures have led in the past, I couldn’t believe that there were still so many living in poor conditions – over 16 million. With eggs being such an important part of our everyday diet, no wonder celebs such as Jamie Oliver, Antony Worrall-Thompson, Amanda Holden, Pam Ayres and Antony Cotton offer their support to the hens’ on-going welfare. In 2010, statistics indicated that 50% of eggs produced were from battery cages (source – Department for the Environment, Food and Rural Affairs (DEFRA), with the other 45% being free range, and 5% from barns. But the introduction of a European Union Council Directive effectively banned conventional battery cages in European Union countries so that from January 2012, the number of eggs produced from battery cages in the EU is rapidly decreasing. But just looking at a website and reading facts and figures is not my style, so when my friend Gez asked me to accompany her on a ‘hen rehoming day’, I jumped at the chance to see the girls up close and personal. There are rehoming days throughout the year, all over the UK, organised by BHWT. Over the years the Charity has built up relationships with many large chicken farmers. Before BHWT stepped in, chickens that were no longer deemed productive would be sold to meat producers for use in such food stuffs as dog and cat food. By nonproductive, it was often the case that they were no longer laying one egg a day. The profit is so small on each egg that seven eggs a week down to four or five was not financially viable for the farmers. The chickens were usually only about 18 months old. They could have years of laying and life left. By the BHWT buying the chickens rather than the meat producers, hens could enjoy the rest of their days by being rehomed to the likes of you and me. So one Sunday afternoon, Gez and I set off to a farm near Walberton to help out. The hens that were being rehomed that day were from a large farm in the West Midlands. There were over 600 birds and so they were split between the Sussex, Surrey and Hampshire branches of the Charity. The farm in Walberton was a stop gap between the hens
arriving from the original farm and being paired up with their new owners. Owing your own hens is very popular nowadays and the lady co-ordinating the rehoming advised that we had more demand than birds, so we had to reduce each request by one. Most people requested four hens, so this was cut to three. Todays hens had spent all their lives in a barn. Much better than being in a cage, but they had still never seen daylight. When they hatch, they are kept in a pen until they are old enough to be sorted into male and females. The males are taken away, and the females kept for their eggs. They are 20 weeks plus when they start to lay. In the barn, they are free to roam, but can be picked on by other hens which, in a large environment, may not be noticed. Our hens were transported in small crates, accompanied by a member of the Charity. On arrival, I noticed their normally bright red crests were pale and pink - a result of the lack of daylight. They can also have long claws as they are not able to scratch as they would in a free range environment. We carried the crates to a pre-prepared pen, ready to inspect each one as we got them out the crates. They were each given to quick health check and their claws trimmed if needs be. Any open wounds were sprayed with purple spray to avoid the other chickens attacking. As a newbie, I was entrusted with opening and closing the crates, and being the purple spray sprayer! probably a bit dazed by seeing sunlight and grass. We had two poorly ones out of 132 and these were separated for special TLC. It didn’t take long for the hens to settle. They were soon drinking, eating and generally beginning to display normal hen-like behaviours. Some were near perfect (apart from being pale), others were slightly bald and there were a few with nips in them. Andy from the Charity said that this was one of the best groups he had seen. Standards were definitely improving. Barn raised hens do tend to be fitter than the enriched caged hens that they also rescue. Enriched cages are a significant improvement on battery farming – but the hens are still not allowed much room and they are kept indoors.
There was a gap for the hens to settle before their new owners started arriving. It was so well organised. The new owners had already completed and returned a questionnaire to the Charity, and been interviewed by HQ. They had indicated their suitability to have hens, and said how many they wanted. They arrived at staggered intervals to allow each car to collect and move on before the next arrived. It was so rewarding to see the happy faces of the new owners as they collected their hens. A lot had had hens before and stopped for a quick catch up while their hens were boxed and loaded in their cars. By the end of the afternoon, we were down to just the two poorlies. They usually go to a lady near Cowfold who nurses them back to health but this time, Gez agreed to take them. We loaded them in her car and headed home. I am pleased to report that the one I thought would not make it through the night did, and even rewarded Gez with an egg. Happy days – and buy free range.

Lavender & Chilli-infused Pork Skewers Smoke, Lavender and Chillies – The Barbeque Season is Here! There is something very elemental about cooking and eating outside; it’s often said that it brings out the “caveman” in many a man, as they (as there is usually a group of them) huddle around the barbeque, muttering and chanting special incantations as the bangers burn and the burgers become even more charred! But it doesn’t seem to matter how charred the offerings are, we Brits all love a barbeque and as soon as there is just a whiff of sun, we are all outside, tongs and charcoal to the ready. July is the start of the proper barbeque season; the school holidays have started and many a family gathering has been planned with ideas of burgers, chicken kebabs and sausages cooked over hot coals. I am a “charcoal kinda gal” – yes, I know that gas barbeques are easy, but for me, the ritual of lighting a proper charcoal fire, eased into life with twigs and pinecones, appeals to me more than pressing a button to ignite the gas. I love the anticipation and the fact that the food actually tastes of charcoal or wood; I often coax my barbeques into life with old lavender stems, from my bag of pruning kindling, and the smell is intoxicating. As well as the lavender stems, you can also add a bit of lavender sunshine into your food with an easy lavender and herb marinade. I also perk it up now and then with chillies, as I did in this recipe for Lavender & Chilli Infused Pork Skewers. So, for my July recipe, I am very pleased to offer a proper barbeque recipe – easy to prepare and using local free-range British pork – it’s a winner and all that is needed to serve these fragrant, spicy skewers is a selection of salads and some sunshine of course!

Ingredients (Serves 4) 4 tablespoons olive oil 2 tablespoons lavender honey 1 teaspoon of lavender flowers 1 teaspoon finely chopped sage leaves (optional) 1 clove garlic, peeled and crushed ½ teaspoon chilli flakes (optional) Juice of half a lemon Salt and pepper to taste 8 bamboo skewers, soaked in water for at least 1 hour 600g pork fillets, or lean pork loin chops – cut into bit size chunks

If there are any chilli haters, then of course omit the fiery addition. 1. Mix all the marinade ingredients together and put it and the pork pieces into a plastic container with a lid. Allow to marinate for 2 to 3 hours at least, or overnight in the fridge. 2. Light the barbeque and allow the flames to die down – cooking can commence when the embers are glowing red and there are no flames or smoke left. 3. Whilst the barbeque is being lit, thread the pork pieces onto the soaked bamboo skewers – allow 2 skewers per person and don’t overcrowd the skewers with meat. 4. Cook them on the barbeque, turning frequently, for about 8 to 10 minutes, basting with the marinade to keep them moist. 5. Serve the skewers with assorted salads, condiments and sauces as well as crusty bread or pitta breads. 6. Chicken breast and thigh can also be used instead of pork; adjust the cooking time depending on the meat.
