Steyning pre-Festival attractions! Although the Festival itself is not until next year, to keep you going, the Steyning Festival Commitee have organised some wonderful events for this Autumn. These will help to raise money to enable them to bring you spectacular attractions for the Festival next year, as well as being interesting and great fun! – the more we have the better the festival will be! Wednesday 16th October at 7.30 pm Steyning Grammar School Drama Hall, Shooting Field, Steyning, BN44 3RX – Four Hundred Years Of Education – A History of Steyning Grammar School. An Illustrated talk by Janet Pennington. Janet will be giving us a fascinating insight into the development of the school over 400 years, starting with the origins of the buildings in Church Street and describing how Brotherhood Hall eventually became a school. We will learn, through her words and pictures, about the conditions
in which the boys lived and were educated, and how this changed over time. Also included in the evening will be a presentation on the progress of the Heritage Quilt project and an update on the events that are planned for the celebration of the school’s 400th anniversary for pupils and the wider community. During the interval there will be an opportunity to view work undertaken on the Quilt so far. There will also be an exhibition of interesting objects connected with the school. A compelling legend of tragic romance tells story of Odette, a Princess turned into a swan by an evil curse. The twinned role of the pure White Swan and the scheming, duplicitous Black Swan tests the full range of a ballerina’s powers, particularly in the two great Pas de Deux. Other highlights include the charming Dance of the Little Swans performed by a moonlit lake and sweeping ballroom waltzes in the splendour of the Royal Palace. Russian State Ballet and Opera House is a gem for the Russian cultural traditions, bringing as they do the passion and vibrancy of Russian character to one of the most well-known Ballets. They have ensured that this classic ballet remains just as spell bounding today as it was when it was composed over 130 years ago.

Big Beach Café Hove Lagoon
I
n the heart of Hove Lagoon, sits the Big Beach Café, a locally owned and independent café/coffee bar, with excellent locally sourced coffee, all-day breakfasts, lunches, fish & chips, a fabulous bistro menu two nights a week, pastries, delicious ice cream, oh and probably the best cakes in Hove! Big Beach Café is owned by Norman Cook – all round local hero and legend (I think you know who I’m talking about…) and the equally charming Dan Stockland. The café is run by Dan, a classically trained and qualified chef. His career spans more than 20 years – from Conran’s ‘Bluebird Café’ on London’s Kings Road, to touring with some of the world’s top artists and bands, including Eminem, Kanye West, Coldplay and Robbie Williams. He has a fantastic team of smiley, happy people both in the kitchen and upfront and there is a really chilled, and relaxed, yet buzzy, bigbeat feel to the place. It’s certainly not too cool for school, perfect for everyone. I would be as happy bringing my nan for a cup of tea and a slice of cake as I would joining my friends for a meal and wine at one of their bistro evening meals. (Thursdays & Friday evenings). We dropped in on a blustery Sunday afternoon, myself, Rog, the kids, and the dog… the children had a brownie and a cherry bakewell between them, Rog a tasty Spinach, Feta and Pea Filo Parcel and I had the best tasting cake yet known to man… Banoffie and Pineapple, seriously, it was amazing. The lovely Jake looked after us and took a few moments out of his schedule to have a chat about the place and everything that goes on. Local artists’ work is displayed on the walls amongst iconic posters from Norman and Zoe Cook’s own collection; brilliant local Artist/Illustrator Sean Sim’s new Updated Brighton Line Map is available signed for just £5.00 – believe me it will look great framed and on your wall (whether you are from Brighton or not). Plans for Quiz Nights and Film Afternoons at the café (with popcorn from the onsite popcorn machine) meaning that mums have got somewhere to meet up and watch movies with the little ones, and planned, themed evenings with film screenings will undoubtedly prove very popular. There will soon be a Big Beach Café Club loyalty card allowing you extra special discounts and deals – go to their face book page for more details. Supporting local suppliers is important to BBCafé and wherever possible, they do source locally, using products from companies such as Small Batch Coffee, Fish Galore and Life Water. They sell the most amazing cakes (made by Lady of the Cake and She Bakes). Ever. (I know I keep raving about the cakes but seriously… you need to know!) There are also an extensive range of ice-creams to be tried including organic homemade and gluten vegetarian, and BBCafé are looking to renovate for the summer ahead to accommodate the massive ice-cream demand!
BBCafé are all about the community, they welcome everyone and endeavour to be open all year round – come rain or shine! Expect a fairly basic café menu but with a pretty fabulous twist. Mango snizzle cupcakes, coffee and walnut cake, courgette and lime cake, beetroot and chocolate gateaux, vegan and wheat free flapjacks, cherry and almond slices and incredible chilli brownies are just some of the varieties of cakes you may find here. Tuaca and dark chocolate or rhubarb blackberry and white chocolate artisan éclairs are to be grabbed quickly before they all go! Try amazing breads, croissants, Danish pastries, muffins and pain au chocolat. The Big Beach Breakfast (bacon, sausage beans, egg, hash brown, tomato and toast) is available from 10am every day (veggie and vegan option as well) all at a bargain £6. Calamari, fries, baked beans on toast.. all on the menu too. Sit in and relax over coffee, Babychino, Cappuccino, tea and hot chocolate, or takeout and walk on the beach. Big Beach Café is also available for private hire for parties and gatherings. With a fully licensed bar in a wonderful location, they can provide food and entertainment at your request, big or small. The venue itself accommodates approximately 80, and they have a great outdoor space with room for a marquee, suitable for another 75! On Thursday and Friday evenings the café turns Bistro, closing at 5.30pm and reopening at 6pm with a fantastic menu of 2 courses £14-50 or 3 for £19-00 – great prices and regular promotions plus a fully licensed bar, the perfect venue for an inexpensive meal out. The menu includes dishes such as Starters Sussex Smoked Mackerel Pate and Sourdough Toast, Local Rib Eye Steak and Frites with Grilled Mushrooms, Tomato and Béarnaise Sauce, Fresh Pea and Mint Risotto with Parmesan and Cream, Catch of the Day Fish and Chips with Mushy Peas and Lemon Tartare Sauce, and a Sussex Cheese Slate with Crackers and Chutney. There are some massively exciting plans in the pipeline for the café. Meetings are being held with the local council with aims to sparkle up the area and really put it back on the map. It was lovely to pop in and see what it was all about now it’s finally in the right hands and we will be back! The staff are warm and friendly and I will definitely be returning, with AND without the children! GYSO Roller Disco
It has been many years since I have whizzed around on a pair of roller boots. I am rather proud to say that I used to be quite speedy around the town where I grew up, with roller booting being my main mode of transportation.
H
aving hung up my last pair of boots nearly 30 years ago, it was with some intrepidation that I entered Roller Central in Shoreham to join one of their family discos.
Greeted warmly by the founder of the Company, Maria Fry, I was soon kitted out in a snug fitting pair of boots and gingerly half walking and half rolling to the main arena. My daughter Jessica had come to support me (literally!) and seemed to be feeling a lot more confident than I was. Once on the rink, I felt a little better as there was a barrier to hold on to all the way round... I rolled forward a little and slowly took my hand of the side. A few rolls later and I was on my backside. Ho hum – if at first you don’t succeed and all that, so up I got and tried again. With Jessica holding one hand and the other waving madly around in the hope it would balance me, I made a full circuit upright. Hurray! Perhaps it was all coming back to me? Confidence can be a dangerous thing and I was soon in a horizontal rather than vertical position again. Grrrr – it was not going to beat me. Up once again and off I went. Ok, so I wasn’t very elegant, or fast, and I had to stop mostly with the help of the barrier, but with each circuit I became more and more confident and was soon really enjoying myself. Whilst I felt I was winning, I thought it was time to grab a drink and catch up with Maria to find out more about GYSO Roller Disco.

Having heard about the roller disco through a good friend of mine, I was intrigued to know what GYSO stood for. Family initials perhaps? Maria laughed ‘no, it’s simply – ‘Get Your Skates On!’. Of course! Well that’s that mystery solved. But how did Maria and her family have the idea to start this business? She explained that her youngest son Josh adores skating. But as his ability and confidence grew, Maria found that there was nowhere in the immediate area she felt that, at seven, it was save for Josh to really let his hair down and skate to his true ability. She needed to find somewhere for him. With no local venues around it soon became apparent that there was a really good opening for a business and soon Maria and her sons were sourcing venues to begin their business in earnest. That was over three years ago. Starting with a mobile roller disco in 2010, the Frys soon had regular slots at Longhill School in Woodingdean and soon added places in Henfield, Steyning, Billingshurst and Hove. But demand was increasing and people wanted a set site that they could use more regularly and not necessarily on one or two nights a week. As luck would have it, in 2012 they found the old Post Office building in Shoreham was up for rent and soon had terms agreed and moved in. Roller Central was born. It was not an easy first few months but they made the place their own and it continues to grow and flourish.

Although the lease is still only on a temporary basis, it has moved to a longer term let and but they could still be given notice at any time. There are rumours of plans to build houses on the site, but nothing concrete has been decided as I write this. The business itself is run by Maria and her sons – Robert (27), Daniel (22) and, on a part time basis, Josh (11). They have grown their employee workforce to up to 30 people weekly to not only keep the Shoreham disco running throughout the week, but also the mobile venues. At Shoreham, there is also a separate area for the skateboard and BMX enthusiasts called the Fearless Ramps. I don’t know about fearless – they looked pretty scary to me! GYSO Roller Disco is a big draw for birthday parties and on a weekly basis they hold anything up to 14 parties for all age groups. All the necessary arrangements are tailored to the individual party including providing invites, boots, a party room and personal refreshments. Anyone can have a go so long as either GYSO can provide skates to fit, or you have your own. There is a skate and BMX shop, a tuck shop, coffee shop and licenced bar. There are always first aiders on hand for those little bumps and scrapes some of us may encounter.
Even the Brighton Rockers have picked up on the venue. They are Brighton’s roller derby team and train at Shoreham at least three times a week. It’s a great way of letting off steam. A healthy family workout where the young ones can learn a new skill and us oldies can relive our youth. Friday nights are for the teenagers, and if you feel the need to improve that bit more, lessons are held on a Monday night with a qualified instructor. With a variety of opening times and venues (Shoreham extends its opening hours in the holidays), and the unpredictable British weather, I am sure we will be visiting again very soon with the male Stevens in tow. earning to drive is a daunting experience however old you are, there are so many driving schools out there and it’s very difficult to find the one that suits both you and your pocket! I have found mine and cannot recommend Kevin Chatfield from Chalkwood Driving enough. I first heard about Chalkwood when Kevin approached me to advertise, feeling it was some sort of fate intervening I thought, come on what have I got to lose and called in Kevin’s expertise for myself. That’s right; I am learning to drive, at the grand age of forty one I am on the road, well nearly…! I failed my test the first time when I was much younger, but as I lived in the city I simply didn’t carry on, I didn’t need to, but now I really want to and think this might be it! Kevin is an incredibly patient and calm instructor, based in Storrington providing driving lessons in the Sussex area, he is an Approved Driving Instructor (ADI) registered with the Driving Standards Agency (DSA). DSA Cardington Special Test – grade ‘A’ standard PTTLS (Preparing to Teach in the Lifelong Learning Sector) Level 4 BTEC Level 3 (aCCeLerate) Advanced Award in Coaching for Driver Development IAM F1RST Member DIA Award in ADI Knowledge DIA Award in Driving Theory. Having signed up to the DSA Continuing Professional Development (CPD) scheme, Kevin is committed towards professionalism, keeping up to date and continually seeking to improve his knowledge and expertise and has recently completed the btec level 3 advanced award in coaching for driver development, this is a method of teaching becoming more recognised, it is more about the learning process and the learner and less about teaching and the coach. Enabling the coach to offer advice and give information but rather than just telling as with instruction, coaching is more about asking than just telling! I am finding this method of teaching particularly helpful as I feel more in control of my decision making behind the wheel, thinking for myself whilst driving
and not just waiting to be told what to do. This gives you greater confidence in your learning and definitely once you obtain your practical pass and are on your own! The car Kevin teaches in is something special, an Audi A1 Sport back is the perfect training car, with the A1’s blend of premium-quality interior, entertaining driving characteristics, good visibility, and appealing design. It really is a beauty and I fully now understand what drivers mean when they say how lovely something is to drive! For your safety the car has dual controls and, in addition to Audi’s latest safety technology, is fitted with Xenon plus headlights (with LED daytime-running lights), making driving in poor weather or at night less tiring and altogether safer. When you sign up with Kevin, he will give you access to a Driving theory practice to move things along, and get you going, with all sorts of help and resources at hand the Chalkwood website is very informative and easy to navigate. After each lesson, Kevin will send you an encouraging email on your progress and discuss with you what areas to cover in your next lesson. Armed with my free folder full of information with easy to follow instruction, diagrams, tips and quizzes, I feel I have everything possible to get me moving in the right direction! Tomorrow I will be out with Kevin, taking the A24 in my stride, I have always felt slightly anxious at the thought of this drive before but I am now filled with more confidence in my ability and that is down to Kevin’s excellent coaching. I would highly recommend Chalkwood Driving as a school to teach anyone, from the younger learners to the late starters like myself.

Hypnotherapy & Impulse Control Disorder
H
aving recently spent a substantial amount of time out with my ‘significant other’ at M&S, I was reminded of a condition called Impulse Control Disorder(ICD). This is a relatively new class of personality disorders, characterized by an ongoing inability to resist impulses to perform actions that are harmful to oneself or others and includes Shopoholism. Impulse Control Disorders include five major conditions: intermittent explosive disorder, pyromania, kleptomania, trichotillomania, and compulsive gambling disorder. Repetitive self-mutilation is also considered by some experts to be a type of impulse control disorder. In this condition, people cause intentional harm to themselves through burning, cutting, or scratching. The incidence of ICDs in children and adolescents is difficult to determine. In general, intermittent explosive disorder, pyromania, and compulsive gambling disorder are more common in boys, while kleptomania is more common in girls. The exact causes of impulse control disorders are unknown, but may be linked to genetics, family environment, and/or neurological factors. Some research suggests that impulse control disorders are linked to certain hormones, abnormal nerve impulses, and variations in brain chemistry and function.
Children and adolescents who have had a severe head injury and who have epilepsy may be at greater risk of developing these disorders. In children and adolescents, impulse control disorders often occur along with other psychological conditions, such as attentiondeficit hyperactivity disorder (ADHD). Intermittent explosive disorder is characterized by episodes of aggressive and violent outbursts and loss and lack of control of anger. Often, explosive episodes result in destruction of property, domestic violence, and physical assault, which, in turn, have legal ramifications. The degree of aggressiveness during each episode is grossly out of proportion to any stresses. Pyromania is the repetitive, deliberate, and purposeful setting of fires. Children and adolescents with pyromania are often aroused by fire-setting, and/or feel pleasure, relief, or gratification when setting fires or witnessing the consequences of fire. In addition, pyromaniacs are fascinated and attracted to fire and related accessories (e.g., matches, lighters), and are unnaturally curious about their use and consequences. Fire-setting is not performed for any other reasons, such as for financial gain, to express anger, to conceal a criminal act, or to express sociopolitical views. Kleptomania is an inability to resist impulses to repetitively steal objects that are not
necessary for personal use or monetary value. Children and adolescents with kleptomania experience a growing sense of tension just before stealing, followed by pleasure, relief, or gratification during or just after stealing. Career thieves, those who steal out of need or to support substance abuse, and those who steal because they have no regard for society’s laws, are not considered to have kleptomania. Individuals with kleptomania do not want to steal and feel guilty about it. Trichotillomania is characterized by recurrent pulling out of one’s hair to produce noticeable hair loss. Children and adolescents with trichotillomania experience a growing sense of tension or stress just before pulling hair out or when trying to resist hair pulling. They experience pleasure, relief, or gratification when pulling out the hair. (Ref: Gale Encyclopaedia of children’s health) All of the above can generally be treated with Hypnotherapy, which can help identify the causes of the problem and then help the client to provide the solutions, along with coping mechanisms, where the causes are ongoing.

A dish that bridges nicely between the end of summer and the start of autumn…
Polpette small Italian meatballs I love the summer months and whilst we’ve had a spectacular summer season this year I am glad we’re heading into Autumn… the crackling fires, the warm, snuggly clothes, a crisp chill in the air and of course the promise of bonfires, Halloween and yes, even Christmas. The food is also so much more comforting. The popular dish that is Italian meatballs with tomato sauce is in fact not very Italian at all... it’s an American interpretation of polpette that has evolved from the traditional recipe over the decades to become the wonderful dish we now all know and love... polpette is usually made from 2 types of meat, a ground beef and a ground veal and never served with tomato sauce but probably served as an appetiser or as a dish between starter and main course. I’ve combined the old and the new by creating a thick and rich tomato sauce and I’ve also used ground steak mince and Lincolnshire sausage meat to give the recipe some local spice! It may all seem slightly fiddly but it’s a great dish to make with the kids and you can have the whole dish prepped and made in just over two hours.
Ingredients For the tomato sauce This sauce needs a minimum of two hours, longer if possible but can be made well in advance and stored in jars. 2 medium onions – finely chopped 2 cloves of garlic – crushed butter & olive oil 2 x 400g tins of chopped tomatoes 1 x tin’s worth of half white wine, half stock or water Rosemary, Thyme and Oregano
For the polpette Makes 35 small meatballs 1 medium onion – finely chopped 1 clove of garlic – crushed Oregano 2 large, good quality sausages Roughly 250g 450g minced steak Half a loaf of basic white bread – crusts removed and roughly torn 50ml milk Olive oil
To start with we’re going to caramelise the onions for both the tomato sauce and the meatballs so use all three onions and all the cloves of garlic at the same time... add them to a large hot pan with olive oil and a little butter and gently saute them for about 20 mins on a medium heat, with a pinch or two of sugar and some chopped fresh herbs... keep your eye on them, they want a little golden colour but you don’t want them to stick... once they’re done spoon out about a third and set aside, then add the tinned tomatoes, wine and stock to the remaining onions, turn the heat to it’s very lowest and let them plop away gently for at least an hour and a half if not longer. Place the bread in a large bowl add the milk and stir until it’s all absorbed, next add the rest of the ingredients and the onions and get your hands stuck in and bring at all together ensuring it’s well mixed. Prepare a baking tray with foil, then pour some oil onto your hands and form little meatballs from the meat mixture, you want them the size of a large marble. Lay them out evenly on the baking tray and then bake in the oven on 180C for 20 mins or until golden and gorgeous. Add them to the sauce before serving either as they are or with some pasta or rice.
