A LITTLE PIECE OF ITALY A little piece of Italy is coming to Steyning on Sunday 20th July The Market will be held in the High Street Car Park and will include Italian sourced products ranging from meats, cheeses, olives, pasta , olive oil, focaccia and so much more... Bring your shopping basket and pop along to enjoy some great selections. Authentic Italian stall holders, but all will understand English and Euros are NOT needed! Unfortunately the one thing we cannot guarantee is Italian sunshine, but fingers crossed.

STEYNING PROBUS CLUB Steyning Probus Club members together with wives and partners totalling 64 were taken by coach from Steyning to attend this special event to celebrated their 25th Anniversary at the Windsor Hotel Worthing on Thursday 15th May 2014. On arrival sparkling wine was served at the bar and the garden terrace followed by a 4 course dinner. After the meal a number of short speeches were given by our new and past President’s, one of our Ladies’ thanked the members on behalf of the wives, partners and guests. Two of our Founding Members are still with the club, one of them talked about the forming of the club taking us back to the eighties with some interesting memories. Probus a social club for semi retired and retired Professional and Business people have a close association with Rotary, so it came as no surprise that our guest speaker was the President of Steyning and Henfield Rotary. Entertainment for the evening was performed by THE THREE PENNY PIECE, a group of 3 young ladies singing toe tapping songs of an era long gone by. The evening concluded with the coach retuning us safely back to Steyning. The next 25th Anniversary will of course be our fiftieth year 2039. Springs Smoked Salmon

ucked away in the foothills of the South Downs stands one of our local success stories, Springs Smoked Salmon. I’m sure you are all familiar with the name, but did you know this home-grown business is 50 years old? Happy Birthday Springs! Having driven past the site on numerous occasions, it was time for a visit. Martin Harris, who runs the business with his brother David, was more than happy to spend some time with me and allow me to look around the premises. With ample parking opposite, I was soon inside the large and airy shop. This had been the whole site at the beginning Martin explained. Wow! Settled at the back of the shop amongst all the mail delivery orders, I was soon finding out all about Springs – from how it started to future plans. Springs Smoked Salmon began in 1964. Prior to this, Springs was an arable farm. As arable farming did not need 100% attention all year, Martin’s father was keen for the family to start another business. On visiting his wife’s father in Suffolk, Geoffrey Harris found the ideal business for them. Richard Pinney was running a successful salmon smoking business. Started just after the Second World War, Pinney’s of Orford is still going strong today. Realising the potential of a smoking business, the Harris’s returned to Orford and spent a wonderful holiday learning how to smoke salmon and see the traditional smokers that Richard Pinney had built in operation. As mentioned earlier, the family started the business in the old forge. The kilns that they build are still in use today and are unique to the site. The business over the years has

increased in size to the point that faming no longer takes place, and the old outbuildings have been altered to house the kilns, preparation areas and wood shed. The forge is now the large, bright and airy shop. It was great to hear that the firm is still in the same family and there are no plans for this to change any time soon! The business these days is split into two parts. Firstly there is the shop. This is open to the public all year round and houses around 200 different types of seafood, along with local produce, cakes and puddings. I was expecting a much smaller place and was delighted at its size and the produce on offer. The man who was manning the store that day had been with the Harris’s 14 years. It seems once you start, you stay! Nick the smoker has been with Springs over 30 years and the smoking time is regulated by him – his experience tells him when the fish is ready, not a timer. Nick is only the second smoker employed by Springs since it launched. The second part of the business is the wholesale side. Springs delivers to pubs, hotels, restaurants, golf clubs and garden centres all over the South of England. If you wanted a delivery, a minimum order of £50 is required. This is not a lot when you start looking at all the delicious food on offer! Apart from salmon, Springs also smoke cod roe, haddock, kippers, mackerel and trout. These are all done in the

traditional oak kilns. They also have a commercial smoker where they smoke chicken and duck. So what makes their smoked products better than the competition? Martin explains it is the oak wood that they use and the unique kilns. Having seen the wood store, I can confirm that only oak is there! Other firms use chippings which could contain other wood aside from oak and they smoke in metal vats. Springs salmon is second to none – as demonstrated in a salmon tasting poll in The Times. Springs won (of course) and Delia Smith became a fan. She has even mentioned them in one of her cookbooks. Other famous faces to have graced the premises include Lord Olivier, Earl Spencer, David Jason, Douglas Bader and

Chris Ellison. Many well-known and respected chefs use the fish in their restaurants. But enough of this chatter, it was time to learn about the smoking process and see where the action happens. We went first to the filleting area where the fish are prepared for salting. The salmon delivered to Springs is either Scottish Wild Salmon (most rare therefore most expensive), Canadian Wild Salmon (plentiful and cheaper), and farmed salmon. Martin favours wild salmon over farmed for its taste and texture. After filleting, it is laid out and covered with salt and left overnight before being transferred to the kiln. When Nick deems the salmon is ready, it is moved to the cold store where it will remain until required for an order or to go into the shop. The salmon is also sliced at Springs and Martin showed me the two machines they have depending on the cut needed. Once sliced, the fish is vacuum packed to keep it fresh. I asked Martin if they had thought about doing tours of the premises. He explained that they had done in the past but stopped due the stringent Health and Safety laws and the time it took. With new orders coming in regularly, the brothers have no plans to expand the business further but to carry on doing what they do best – supplying high class goods to the general public and professions. Sounds good to me! As the time had come for me to take my leave, I could only thank Martin and David and wish them luck for the next 50 years!

Arun Veterinary Group Ashington Practice Grand Opening

n Saturday 17th May Arun Veterinary Group officially opened their new purpose built surgery in Ashington. The arrival of the new practice has been well anticipated within the village following a 9 month build programme and pet owners turned out in vast numbers to take a tour of the premises as well as enjoy stalls, face painting, food and refreshments. Director Matt Gittings, pictured with his daughter Lily-Rose made an emotional speech to the crowd that gathered before his eldest daughter, Lily-Rose, cut the ribbon to mark the opening. It was a very proud day for Matt and his team who are thrilled to finally be able to extend their excellent standard of veterinary service from their existing base in Pulborough and Storrington to the local community of Ashington and neighbouring villages. The new practice is a purpose built, fully functional surgery with on site laboratory, kennels, theatre, X-ray and dental facilities. Pet owners queued to take a tour of the new practice, which has also been designed with the ‘customer experience’ in mind. “When designing the new practice I wanted to modernise the customer experience especially within the reception area and consultation room” Matt remarked. “I really wanted to make these areas more vibrant and interesting yet retaining the clinical element of what we do. I have tried to bring the history of our practice to the new practice whilst modernising the environment. The aim overall has been to create a relaxing and welcoming environment for our clients and it seems from the feedback we have received that it has achieved these goals.” Matt went on to say “We have also designed the clinical areas to a very high standard with patient care and service a priority to us. For this reason we have invested heavily in modern veterinary equipment. The practice has also incorporated air conditioning in each room and a Sonos music system, allowing pets to recover to the soothing sounds of classical music whilst clients waiting in reception can listen to Radio 2!” “I am extremely proud of this new surgery and I look forward to welcoming new clients here. Hot Smoked Salmon & Asparagus Terrine An elegant and tasty terrine with hot smoked salmon and fresh asparagus, this terrine cooks in in a Le Creuset casserole dish which is used as a bain-marie for perfect and even heat retention. This delightful terrine is also wonderful for picnics and as a luxury sandwich filling. This terrine held together as well as being light and almost fluffy; the asparagus spears gave the terrine an attractive pattern when it was cut, and is was beautifully flavoured with herb cream cheese, lemon and the delicious hot smoked salmon. The Le Creuset casserole dish made the perfect bain-marie, with even heat distribution and retention, as well as a nice tight-fitting lid. The recipe can be doubled up to make in a larger casserole dish, but the amount I made this time was just right for a light lunch for three people when served with salad and crusty bread. This recipe would also serve four people as a starter, again, served with salad and maybe some Melba toast.

12 slender asparagus spears

1. Pre-heat oven to 160C/325F/Gas Mark 3.

(woody ends trimmed)

2. Select a container that fits into a 20cm Le Creuset casserole dish, one that has a lid preferably.

75g smoked salmon (cut into small pieces) 2 large free-range eggs 100g herb and garlic cream cheese 1 tablespoons crème fraiche 225g hot smoked salmon (flaked) zest and juice of 1 lemon lemon wedges to serve fresh chives to serve

3. Line the container with cling-film allowing a large overlap to cover the terrine as it is cooking. (I used a 450g tinfoil “take-away” “freezer” tray with lid). 4. Trim the asparagus spears to fit the container, and then steam them in salted, boiling water for 2 to 3 minutes. Carefully take the asparagus out with some tongs, and allow them to cool for a few minutes. 5. Lay 6 of the asparagus spears in the bottom of the prepared container lined with cling-film. Cover with half of the smoked salmon pieces and then make the terrine mixture. 6. Whisk the eggs and add to the cream cheese, mix well and then add the crème fraîche to loosen the mixture before adding the flaked hot smoked salmon. Then add the lemon zest and juice and mix well. 7. Spoon over half of the cream cheese salmon mixture and then lay the remaining 6 asparagus spears over the top, followed by the rest of the smoked salmon pieces. Add the remaining cream cheese salmon mixture and fold over the spare cling-film to cover the terrine loosely, to allow the terrine to puff up and rise during cooking. 8. Cover the terrine with a lid, or tinfoil and place it into the Le Creuset casserole dish. Boil a kettle and carefully pour in enough hot water to come up three-quarters around the container. Cover with the casserole lid and bake for 45 minutes to one hour, or until the terrine is puffed up. 9. Allow to cool in the casserole dish, then take the container out and chill for about an hour before serving in slices with lemon wedges and freshly chopped chives. 10. Perfect as a starter or for picnics, also wonderful as a luxury sandwich filling, or for a light lunch with salad and crusty bread.

Tried & Tested Andrea Wells at...

This month for tried and tested I visited Andrea, resident podiatrist at the Bloomsbury clinic in Steyning.

P

odiatry is the more clinical and specialist side to footcare, podiatrists are basically the foot doctor! Giving you and your family advice on how to look after your feet and what type of shoes to wear. They can also treat and alleviate day-to-day foot problems including: toenail problems such as thickened, fungal or ingrown toenails , corns and callouses, verrucas, athlete’s foot, smelly feet, dry and cracked heels, flat feet and bunions. Foot care from a health point of view is totally overlooked and is really only considered in terms of a quick snip with the clippers and a choice in nail varnish colour… unsurprisingly a huge percentage of us suffer with foot problems unnecessarily. Andrea gave me fifteen minute nail cutting treatment, it may sound fairly simple but many of us do not cut our nails properly on a regular basis, this sort of treatment is imperative for those that are not able to look after their feet for whatever reason whether they are pregnant and can’t reach or elderly, struggling with arthritis or just wanting some foot care on a regular basis. Generally we do not look after our feet which, when you think about it, is crazy! Regular treatments can prevent all sorts of problems, particularly in the elderly, preventing falls, pain, corns, long nails. After cutting my nails in a straight line (something I don’t really pay much attention to) Andrea gave my feet a buff down with the dry skin remover and they felt great! Apparently I have very good feet, no problems there, but very tight calves… Need to get stretching! Everything has a knock on effect on our poor feet, from the way we walk, exercise, eat – everything. I have been advised to use more moisturiser something like Vaseline on a regular basis and of course, drink more water.
