From Our Kitchen... Nisu is a traditional yeasted coffee bread from the Scandinavian countries. Also referred to as “Pulla this soft and lightly scented cardamom bread is perfect for a lazy Sunday morning! Traditionally served with coffee, it is absolutely delicious during the holiday season. While a bit labor intensive, Nisu is well worth the time it takes to prepare.

Tasty Tip: Make extra! This sweet loaf is the perfect holiday gift for friends and family. WORK URL

Nisu Finnish Sweet Bread

1/2 c. warm water 1 pkg. active dry yeast (1/4 oz.) 2 c. milk, scalded and cooled 1 c. sugar 1 tsp. salt 4-5 tsp. crushed cardamom seeds 4 eggs 8-9 c. flour 1/2 c. melted butter 1 egg, beaten with 1 tbsp. water Instant Coffee In large bowl of electric mixer, dissolve yeast in warm water. Stir in milk, sugar, salt, cardamom, eggs, and about 2 cups of the flour to make a batter. Beat until smooth; add three more cups of the flour and beat until smooth and elastic. Stir in the melted butter and beat until dough is glossy. Stir in remaining flour by hand until a stiff dough is formed. Turn out onto a floured surface; cover with a light cloth and let stand 10-15 minutes. Knead until dough is smooth and satiny, about 10 minutes, adding flour to surface as needed to keep from sticking. Place dough in greased bowl, turning once to coat all parts of the dough. Cover and let stand in a warm place until double in bulk. Punch dough down and let rise again until doubled.

Christmas Pudding Ornament $15.

WORK URL

Divide dough into 3 equal parts. Divide each part in three again and roll out the 3 parts with hands into three 16 inch strips. Braid the 3 strips together and tuck ends under loaf. Repeat with 2 other parts of dough. Place on greased cookie sheets and let rise in warm place until puffed but not quite doubled in bulk. Brush with beaten egg-water-instant coffee and sprinkle with crushed sugar cubes or granulated sugar. Bake at 400 degrees for 25-30 minutes, until lightly brown in color. Serve with coffee and butter.

What is MINCEMEAT? Mincemeat initially began as a way to preserve food. It was likely made in large batches and canned or stored. Originally containing meat as well as fruit, the term “mincemeat” gets its name from fine cutting of its ingredients. A longstanding holiday tradition in England, the early mince pie was known by several names, including mutton pie, shrid pie and Christmas pie. Typically its ingredients included a mixture of minced meat, suet, a range of fruits, and spices such as cinnamon, cloves and nutmeg. Today most mincemeat is not actually made of meat at all, but is instead a mixture of chopped dried fruits, distilled spirits, and spices.

Gargie’s Mincemeat Turnovers Pastry for 2 Crust Pie 2 Cups Flour, All-purpose -- sifted 1 Teaspoon Salt ¦ Cup Shortening 4 Tablespoons Cold Water -- to 5 Tablespoons Filling 1 Cup Mincemeat -- prepared or homemade Ɖ Cup Apples -- diced, peeled Powdered Sugar Frosting Ɖ Cup Butter -- softened đ Teaspoon Vanilla Extract 1 Cup Powdered Sugar -- sifted Water as Needed Make pie crust. Roll pastry about 1/8" thick and in 4 1/2" circles. (Use a big cutter or cut around a saucer). Combine mincemeat and apples. Place about a tablespoon (size 60 scoops) of mixture on each pastry circle. Don’t overfill. Fold over to make half-moons and seal edges with 4-tined fork. Prick tops. Bake on a cookie sheet in a 450° oven about 15 minutes, or until browned. Spread tops while slightly warm with Powdered Sugar Frosting. Makes about 15 turnovers *For an alternative substitute puff pastry and powdered sugar for pie crust and frosting

Help get Austin back on it’s feet!

Plan a future trip to this amazing city and put your $$$ where your mouth is.

Texas that is, black gold, Texas tea. A city that Old Jed the millionaire would most certainly never leave for Beverly… Hills that is. Austin has its own swimming pools and movie stars and a heapin’ helpin’ of their very own and self proclaimed “weird” hospitality! For any of you that happen to find yourself in or near Austin, you’d be crazy not to take advantage of the eccentricity that Austin has to offer. Somehow the residents of Austin manage to maintain this uniqueness, despite the rapid development their city is undergoing! After a long weekend in Austin (which was not nearly enough time to take in everything the city has to offer) I have to say… I am SMITTEN! If only the ocean wasn’t 3 + hours away I might even consider moving. Well, enough about me… here are a few recommendations from my time in Austin.
