n the hospitality business, we’re keenly aware of the changing of the seasons, especially winter—it envelops us, even in sunny Southern California, where a dip below 80 degrees calls for outerwear. The holidays transform our surroundings, from the festive décor to the aromas coming from our restaurants, as we busy ourselves with family parties and corporate gatherings. We also get a chance to reflect on the year that has come to a close and look forward to the one that lies ahead. And ever since we opened the doors to the first Montage in 2003, we’ve taken the year’s end as an opportunity to go beyond—to push the boundaries of what we know and innovate the way things have been done. The year 2020 holds incredible potential to do just that across all Montage properties. We can’t wait for you to see what’s in store. You’ll get a sneak peek in this issue of Montage Magazine. Take, for instance, the All-American Road Trip, launching in 2020 to celebrate the 10th anniversary of Montage Deer Valley. It includes transportation in a vehicle made for going beyond—the Cadillac Escalade—to destinations such as Scenic Byway 12

and Bryce Canyon National Park, and a dinner at Hell’s Backbone Grill & Farm. FESTIVE DECORATING TIPS FROM INTERIOR DESIGNER SHEA MCGEE, CO-OWNER OF STUDIO MCGEE IN SALT LAKE CITY

MONTAGE MAGAZINE: Where do you draw inspiration for your holiday décor? SHEA MCGEE: I’m drawn to an organic approach to holiday decorating and then love to add trendier accents through subtle details. I find inspiration to change things up in day-to-day life, fashion and especially the beauty of traveling to new places. MM: What were some of your inspirations as you were putting together this year’s McGee & Co. Holiday Collection? SM: We focused in on three words when we created this year’s Holiday Collection— organic, curated and simple. A lot of the items in the collection are versatile enough to be used year-round, like our candle holders, charcuterie boards, hand towels, and platters. We like our holiday décor to feel lived-in and relaxed, but still sophisticated. MM: What are the top holiday décor trends this year? SM: I’m seeing a lot of natural texture and more organic holiday décor with a play on the traditional red and green color palette. Instead of bright red, the colors are warmer, deeper notes like rust and burgundy, mixed in with some pretty olive tones. Holidays used to be about, “the more decor the better,” and staying in a really tight color palette, but now it’s about playing with textured pieces to create dimension and WINTER 2019 | 25 |

warmth for the season. MM: Any tips for decorating a tree? SM: I like to choose an overall color palette and put those ornaments on first. Break up your colors by adding neutrals in a variety of textures like glass, metallic and natural ornaments. A nice mix of modern and traditional helps bring the tree to life without feeling overdone. Don’t be afraid to add personal ornaments you’ve collected over the years—they always make for a meaningful moment on the tree. MM: As an interior designer, what are some of your favorite design rules to break when it comes to holiday décor? SM: I love to mix symmetry and asymmetry in spaces. I’ll hang garlands off one side and balance with décor on the other. It helps to make the space feel a little more approachable and less formal while still being refined. MM: What are some creative ideas on how to design a mantel? SM: One of my favorite things to do for the holidays is style a wreath over the mirror on the mantel. It creates this large focal point and instantly makes the mantel feel ready for the holidays. You can finish off the mantel by grouping ornaments together for a more decorated look, while still keeping things collected and sophisticated. Hearts of Montage at Montage Los Cabos hosts A Night in Wonderland, a gala event supporting the Los Cabos Children’s Foundation and the Fundacion Sarahuaro. BY KATIE MCELVEEN

hen Faryn Clark and her family moved from Dallas to Cabo San Lucas, Mexico, eight years ago, Clark was struck by the level of poverty she observed. “People are living in meager, desperate situations in homes with dirt floors and tarps for roofs,” says Clark, who opened Eclectic Array, a boutique filled with unique items handcrafted in Mexico that’s located within Montage Los Cabos. She soon discovered that the problems went much deeper than housing. Cabo has one of the highest rates of teen pregnancy in Mexico; worse, according to “Education at a Glance: OECD Indicators,” more than a third of Mexican women between the ages of 15 and 29 attend neither school nor work. Instead of ignoring the problem, Clark got active, volunteering as a board member for Fundacion Sarahuaro, a local nonprofit that was founded in 2005 to support and empower mothers. The organization got its start providing classes in life skills. Before long, the curriculum had expanded to include nutrition, parenting, human development, recognizing domestic violence, anger management, fitness, sex ed and English, which is a gateway to higher paying jobs in hotels, restaurants and other tourist-supported businesses. Participants also learn handicrafts like jewelry making, woodworking, knitting, sewing and crocheting—items are sold at local events and festivals—and, at the community garden, learn to plant and grow their own vegetables. Most days, a consulting psychologist is also on hand to help women recognize symptoms of depression and anxiety and provide tools to help them cope with their situation until they’re

able to improve it. In 2013, Sarahuaro increased the scope of its services and created the Children’s Kitchen, which helps children focus on their studies and excel in school by feeding them a nutritious meal each day. Within two schools in Gastelum—an impoverished neighborhood less than 4 miles from the Cabo San Lucas tourist area—Sarahuaro’s nearly 200 volunteer mothers prepare and serve more than 350 meals each day that school is in session. The program does more than provide valuable fuel: Since meals are served at school, they provide a powerful incentive for kids to attend classes every day. This year, to further improve each child’s health, the organization launched an initiative to help the children improve personal hygiene with classes and personal cleansing kits filled with soap, toothbrushes and other essentials. On Saturday, Jan. 4, 2020, Hearts of Montage at Montage Los Cabos will host A Night in Wonderland, a gala event supporting the Los Cabos Children’s Foundation and the Fundacion Sarahuaro. A fundraising goal of $75,000 will help the organizations feed thousands of meals to children in need, teach life skills to impoverished women and provide medical support to families in La Paz. Tickets, which include a special dinner created by Montage Los Cabos Executive Chef Xavier Salomon, as well as auctions and entertainment, are $150 in advance and $175 at the door. The pollen of Hawaiian ferns hold such DNA codes, which correlate to specific human emotions, traits and virtues, which I refer to as ‘The Principles of Aloha.’ Aloha, or love, truly is the highest possible vibration in this reality. “In our lore, according to the Mū Culture (pre-Tahitian Hawaiian Culture), there are 103 native Hawaiian ferns, which correlate to 103 individual emotions,” says Hanalei. “For example, Kaapeape fern is the personification of grace. Ae fern is the personification of empathy, and palai hinahina fern is the personification of grief. I resource the medicine of ferns in order to explore, integrate and express the true energy of emotion. This ensures

the emotion remains fluid.” Hanalei adds that all of the plant matter comes from the wilderness of Maui and Kauai, many from sacred sites. Each fern or plant holds power in the houses of moon phases and therefore the harvest and distillation or extraction is performed during those sacred times. Now, guests at Spa Montage at Montage Kapalua Bay have the option to choose one of Pōhala botanical’s fern essential oils to complement their service.

“Guests are surprised by the story of Pōhala and the foraging of the ferns and botanicals,” says Jennifer Holzworth, director of Spa Montage at Montage Kapalua Bay. “This allows them to have a deeper connection with the experience, and a sense of place.” Recognizing a perfect partnership, Hanalei—whose Maui grandmother, as well as her mother and her mother-inlaw, were medicine women or Kahuna— reached out to Holzworth at Spa Montage because “the area in which the spa and hotel are located is considered a Wahi Pana (sacred site) to the ancient Hawaiian people, so I’ve always been drawn to that area. It was considered a healing sanctuary to the ancient people so I felt it was appropriate to approach the spa to see if Pōhala botanicals may be compatible for their offerings. ... As a child, I can recall my tūtū (grandmother) in her backyard tending meticulously to her plants. ccording to the 5,000-yearold principles of ayurveda— derived from two Sanskrit words: ayur meaning life and veda meaning knowledge—everything is made out of the five elements, including the three body types, or doshas: vata constitutes air and space; pitta is made up of fire and water; and kapha is water and earth. When combined, these elements create the doshas, which, in order to remain healthy physically, mentally and emotionally, need to be in balance. While everyone has all three doshas, their dominance varies due to body type, stress, poor diet and or lifestyle habits, which can create imbalances leading to discomfort. To help Montage guests get back to their natural states of health, Spa Montage has launched Peace Within, a 90- or 120minute transcendent journey that offers essential ayurvedic wisdom in one transformative treatment, providing balance and rejuvenating the body and mind in order to create a profound state of deep relaxation. The experience begins with a balancing aromatherapy essence and chime ritual. A therapist further customizes your journey by determining your dosha with a series of questions and then applying a doshaspecific massage oil to your body’s energy centers, or chakras, along the spine to create openness and flow. Oils from Shankara, an all-natural ayurvedic skin care line, are used depending on your dosha: Calming essence (jasmine, vetiver and cardamom),

Crescent Cookies

Amanda Lavin, executive pastry chef, Montage Beverly Hills Ingredients: 1 cup softened butter 1/2 cup sugar 1 teaspoon vanilla extract 1 tablespoon water 1 3/4 cups all-purpose flour 1 cup walnuts Melted butter, garnish Powdered sugar, garnish

Method: Preheat oven to 350 F. Cream butter, sugar and extract with the paddle attachment of mixer until light and fluffy, then add the water. Stir in flour and nuts, careful not to over mix. Set dough in the refrigerator to chill for at least 45 minutes.

Shape cookies into crescent moon shapes, or roll into balls. Place on an ungreased baking sheet. Bake at 350 F for about 8-12 minutes until lightly browned. Let cool on a rack. When cookies are cooled, dip in melted butter and roll in powdered sugar for garnish. M

THE ROSENSTEINS RIDE AGAIN The founders of ’90s casual-chic pioneer Fitigues open their new concept shop, R&R Surplus, at Montage Laguna Beach. BY MICHELLE DALTON TYREE

B

efore there was such a thing as “athleisure,” before there was a Juicy Couture or a Splendid, there was Fitigues, a Chicagobased clothing brand started in 1988 by Steve and Andi Rosenstein. “We were in our 20s when we started the business. It was the answer to cool gym clothes,” Steve Rosenstein says. “That was all we were trying to do back then.” The Rosensteins—who are not fans of the term “athleisure”—were nonetheless ahead of the curve, and also among the first wholesalers to dive headlong into retail

simultaneously. And it was their casual-chic aesthetic and visibility in both markets that cracked open the door to what has now became a massive shift in how we dress. Yes, leggings, we’re looking at you. But by 2006, the pair was ready to hang up their design hats after selling to Chico’s and moving to Phoenix, Arizona, where—on a whim—they bought an abandoned 1928 warehouse in the Phoenix Warehouse District. Together they concocted their next venture: The Duce, a Prohibition-era concept much lauded by the media for its dynamic, cheeky mix of WINTER 2019 | 32 |

everything from eatery to boxing ring, bar, 1915 Chicago-inspired soda fountain, retail and event space. But it was a chance visit at The Duce from a few Nordstrom employees that officially pulled the Rosensteins back into the fashion world as they launched their R&R Surplus clothing concept, which catapulted Andi back into designing and started a new design career for the couple’s son. Montage Magazine caught up with them after R&R Surplus launched its first West Coast outpost at Montage Laguna Beach.

MONTAGE MAGAZINE: When you started Fitigues, it truly was one of the first kids to that comfy-chic party. What made it a pioneering brand? ANDI ROSENSTEIN: We were the only brand at the time that was doing gym-chic. You could wear it to the gym and wear it after the gym. STEVE ROSENSTEIN: And even in the early days, we were expensive for sweats. We really had to do a sales pitch. MM: So then how do you go from all of those years in fashion and manufacturing to a concept like The Duce? AR: I stayed on for a year after the Chico’s purchase [of Fitigues]. But the day after we retired, we went for a walk with the dogs and I was like, ‘What are we going to do? This is all we know.’ We get back from our walk and someone had emailed Steve a picture of the warehouse [which would eventually become The Duce]. We hopped in the Jeep to go see it and the rest is history.

MM: R&R Surplus actually got its start at The Duce, right? AR: We had 14,000 square feet to fill [at what would become The Duce]. We had food, and we had a farm stand filled with organic produce that the bartenders would walk over and use for their drinks. Then, we were at a tradeshow and we stumbled across this French military surplus vendor and we started to cut and re-sew the clothes, and that became [the first iteration of] R & R Surplus. MM: So now you were back in retail? AR: My mom actually started calling people on our old mailing list and saying, ‘They’re back!’

MM: That’s amazing. Go mom. So what does R&R stand for? SR: We don’t really tell people. It’s: reclaimed, reissued, Rosenstein, rest and relaxation. MM: But it sounds like you guys are hardly resting. How did you get pulled back into designing and manufacturing? SR: R&R Surplus was originally just going to be a retail concept only operating out of The Duce. I was at The Duce bartending on a cold February back in 2011 and two girls walk in as I was making drinks. They were both from Nordstrom. The next Monday, the VP of women’s [apparel] called and said, ‘We need you to buy back Fitigues.’

AR: Steve said, ‘Grab your old Fitigues [pieces]. We’re going to Nordstrom.’ So I went into my closet and pulled all my favorite pieces. And now here we are. MM: Fitigues was well known for the amazing hand of its fabrics. Have you carried that over into R&R today? AR: We still actually work with our original fabric supplier for Fitigues. He knows our brand so well and today the fabrics are even more unbelievable and softer than ever. MM: Did you ever imagine that you would be designing again? AR: No. I was so revitalized by being out of fashion. I created the whole bar menu for The Duce and loved every minute and the creative juices were just flowing again. WINTER 2019 | 33 |

MM: R&R appears to be a family business. Now your son, Luke, is involved as a model and designer? AR: Yes. When he was a senior in high school, I begged him to be a fit model. He went into the bathroom, tried on the clothes and was like, ‘This is all wrong.’ And now he is 22 and designs all the menswear. MM: What is the thing that surprises you the most about where you are now? AR: We didn’t come up with a concept and find a location. It came to us. The [entertainment concept and clothing] all evolved and unfolded organically. We had no idea when we bought the building what we’d even put in it. SR: And now we’re at Montage! M

MONTAGE MAGAZINE: There’s such a fun femininity to all of the hair accessories this season, from elegant to cheeky. What do you think is fueling this excitement for hair adornments? CASSANDRA THURSWELL: I think social media has pushed hair accessories to be more in the spotlight. With images being from the shoulders up, it’s a perfect way to add dimension to a photo. It’s also such a fun way to dress up a look without a lot of effort. MM: What initially pushed you to launch the Kitsch brand? CT: I’m from a small town in Wisconsin and my shopping options were limited. Though I’ve always been very simple with my style, a hair elastic was something I used every day. I always wondered why it couldn’t be more chic! Most of the products in our line are elevated versions of your everyday basics. I wanted Kitsch to be an attainable line of beauty accessories that were higher-end than what you found at the drug store, but still at attainable price points. MM: What’s the key to pulling off hair accessories if you’re not a 20-something? CT: Just like jewelry, hair accessories come in a variety of styles and designs. I think staying true to your personal style is all you need to not have it look like a costume. If you’re comfortable with chunky statement earrings, then a padded headband could make an of-the-moment look. If you’re more minimal, a smooth blowout with a simple gold bobby pin near your hairline might be all you need. M

FLEECE IS THE WORD

This season, designers from Fendi to Phillip Lim offer their luxe take on a fabric that has become a ubiquitous garment for millennials.

f you were of the age to embrace ’90s fashion actually in the 1990s, you probably have a keen remembrance of your first fleece—and how under-the-radar cool you felt throwing on that fuzzy pullover made not from wool, but highly engineered polyester. (This writer happened to have a charcoal gray Patagonia Synchilla Snap-T fleece pullover.) But after years of market saturation, fleece garments eventually decamped into two worlds—one for sport enthusiasts in need of high-performance wear and the other as the outerwear of choice for Silicon Valley tech execs trying hard to look like they’re not trying too hard, with their company logo emblazoned on their fleece. As fashion lore would have it, all that took a turn when designer Sandy Liang sent models down the runway in leopard fleece for her spring/summer 2017 show. Liang originally designed it as a fun antidote to the hand-medown fleece garments she was made to wear as a kid. But her playful take on it reignited a trend and a resurgence of interest in brands such as Patagonia—known as the OG brand of high-performance fleece. In fact, the brand collaborated with Malden Mills (now Polartec) to create the first-generation fleece known as Synchilla—as in, you guessed it, synthetic chinchilla. Now, the glossies have embraced it in fashion editorials as designers release their own luxe versions of the high-tech fabric.

LA-based power stylists Meg Chapman and Jordy Lane personally embrace fleece as a fresh alternative to the denim jacket or cargo jacket over dresses. Case in point: Coach 1941’s fleece paired with a floral dress in the fall show. However, when it comes to styling their high-profile Hollywood clients, fleece hasn’t had quite as warm and fuzzy a reception as a fashion piece as it has with the younger set. “Our clients have not really been into the fleece trend [as fashion],” says Chapman. “If they do want to try them, they are choosing the Sandy Liang oversized, colorful throwback options or the

3.1 Phillip Lim cropped options that add to a certain style versus looking too sporty. . . . They don’t really want the OG versions with the obvious logos unless they are wearing them to workout or hike.” Chapman said that clients who eschew logos have been gravitating to fleece from burgeoning startup Outdoor Voices, a woman-owned athleisure brand founded by thirtysomething Tyler Haney with nearly $60 million in venture capital behind it and former J. Crew retail luminary Mickey Drexler sitting as its board chairman. But even if you’re not into logos, there are myriad ways to wear your fleece fashionably, says Chapman, who also likes to

pair it with wide-leg denim and thin knits and flats for more a classic feel. And one of their favorites actually happens to be one of the most affordable as well. “There is one that we love that is from Everlane [the ReNew Teddy Liner jacket, $68] because it’s so easy to work into our wardrobes and our clients’,” says Chapman. “It’s not high-fashion, but we pair it with more risky or colorful pieces to bring the style!” No matter which side of the fleece camp you’re on, it’s clear that it is a trend that is here to stay for a while. Who knows, by next fall we may all be sporting a Snuggie. M

Author and blogger Lauren Scruggs Kennedy talks about resilience, her new wellness program, The Clean Sweep, and why she loves Montage Laguna Beach. BY SUZETTE LIPSCOMB

L

auren Scruggs Kennedy, a two-time New York Times bestselling author, literally wears her courage, beauty and resilience on her sleeve. Instead of wallowing in self-pity after losing an eye and an arm in a tragic accident in 2011, this California girl stepped into action, cofounding the LSK Foundation, which exists “to bring hope, restore confidence and ignite faith” in girls and women with limb loss by providing beautiful coverings for prostheses. Her books, “Still Lolo,” written shortly after her accident, and “Your Beautiful Heart,” written in 2015, both speak to her miraculous recovery and deep faith. What she has done for young girls is remarkable. After her accident, she and surfer Bethany Hamilton, who lost an arm in a shark attack, started a yearly retreat

for girls called Butterfly Flawed in order to create a community for those who have lost a limb to encourage each other on their journeys. Kennedy’s lifestyle, beauty and wellness blog, LSK, is read by thousands, where she shares her tips, traits and healthy habits with many. Her newest program, The Clean WINTER 2019 | 38 |

Montage Magazine: What is your secret to resilience? Lauren Scruggs Kennedy: My relationship with Jesus, close friends and family, and being vulnerable and honest. I learned that mindset and foundation when I was young

MM: Is there anyone whose resilience you found inspiring during your healing? LSK: My family amazes me every day. We have been through so many of the same things, yet in different ways, and their way of grieving and thriving and suffering has been such a positive example to me.

MM: What’s always in your suitcase? LSK: Levi’s, a swimsuit, sunglasses, a good white tee, comfy socks, essential oils, a facial massage tool, Branch Basics travel cleaning supplies, surface wipes (we launch ours in 2020), Follain travel soap, my sleep mask, my blow dryer and round brush and my favorite nontoxic beauty products.

MM: What was the catalyst for starting The Clean Sweep? LSK: On Instagram and on my blog, I share so much about wellness and my own health journey. I started receiving so many similar questions from different people. They all wanted to know how to alter their health in positive ways. I came to realize that many people just needed a practical guide to clean up their life in every way; food, products and practices. It has been such a joy to create and so rewarding to see how it is impacting people.

MM: What is your wellness philosophy? LSK: Balance is most definitely key. It is so important to know that wellness is a lifestyle rather than something that should be compartmentalized in your life. As important as it is to stay committed, it is also good to know that “stress” or too much pressure can actually cause more harm than not eating well or skipping part of your daily routine. For instance, enjoy a hot chocolate over the holidays or miss a celery juice or take a week off from working out with no shame. It is so healthy to listen to your body daily. If wellness becomes rule-based and too stringent, it becomes something you want to avoid. Wellness should be enjoyable and rewarding. MM: Where are some of your favorite travel destinations? LSK: My husband and I absolutely love to travel. Our favorite place is Montage Laguna Beach. It was the first place we traveled to together; it is so magical, we have our Laguna “routine,” and we get the most rest there than any other place. It truly feels like home. We also love Montecito, Big Sur, Idaho, the Bahamas and Mexico, just to name a few. MM: Do you tend to frequent a traditional spot for holidays? LSK: We always see our families on the holidays, which is my absolute favorite. We either meet in Idaho, Dallas (where my family is), or Florida (where Jason is from). We also love December because we celebrate Jase’s

MM: What is your favorite travel snack? LSK: Hmm, this changes often. I love my bone broth bars, quinoa bites, seaweed and Siete chips. In the fall, I bake pumpkin muffins to go. These all travel really well. MM: If you only had time for one selfcare activity daily, what would it be? LSK: The infrared sauna, journaling or face-masking.

MM: Is there anything you’d like to add about your travel or wellness habits that you’d like to share with our readers? LSK: I think it’s so good to develop these habits over time and learn as you go. It is a constant process and you will eventually come to your go-to wellness routine and travel habits. Try one thing at a time, do your research and take it at your own pace. Also, every person is different, so it’s so beneficial to take the time and trial and error to find out what suits you best. MM: Is there anywhere you dream of visiting that you haven’t had the chance to experience yet? LSK: I am so inspired by anyone that makes beauty products from their own farm. LAUREN SCRUGGS KENNEDY’S TIPS FOR TRAVELING LIGHT For travel plans (and just everyday life), tips for traveling light are always greatly appreciated. All it takes is overpacking one time or lugging too much in your tote to understand the value of traveling with less. Eliminate the extra stuff, stick to necessities and your load will be lighter. Carrying less allows you the freedom to be more present, explore more easily and go with the flow of the day more fluidly. Jase and I travel often, especially now with a place in Idaho! WHERE’S THE MEAT?

When it comes to a good burger, there are many flavorful options made from plant-based ingredients. BY JESSIE DAX-SETKUS

lexitarians—those living a semivegetarian lifestyle—have rejoiced at the now mainstream availability of innovative meatless burgers. While the protein count may be the same and the products have the taste and texture of real beef, the change to plant-based alternatives could make a staggering impact on health. Beyond and Impossible Burgers don’t use GMOs and they are gluten-free, and the environment, as well as the billions of animals killed on factory farms, has become unsustainable for the climate, from water use to the increase in antibiotic resistance. Last year, Whole Foods Market predicted mock meat would be one of the biggest food trends of 2019. They were correct: Sales of meat alternatives jumped by 268% from mid-2018 to mid-2019, according to a report from the restaurant industry group Dining Alliance. Chef Joosung Lee, who leads the culinary team at The Loft at Montage Laguna Beach, says, “Our shiitake mushroom burger is one of our most-requested vegetarian menu items at The Loft, offering guests a satisfying meat-free option.” This plant-based patty is made from brown rice, sunflower seeds, quinoa, shiitake mushrooms, onion and garlic with a sprinkle of sea salt, then sautéed in olive oil.

Recipe: Serves 4 Ingredients: 2 shiitake mushrooms 2 garlic cloves, chopped 1 onion, small diced 1 cup white wine 2 cups quinoa 2 cups brown rice 1 cup sunflower seeds 1 bunch chives Sea salt, to taste

Method: Sauté mushrooms lightly with the garlic and onion. Deglaze with white wine and cool. Separately cook the quinoa and brown rice and cool. f cocktails are your thing, you’ve no doubt ventured into some pretty creative territory. Flaming aquafaba foam? Check. Butterfly pea tea ice cubes that change color when in contact with an acidic liquid? Yes, please. The possibilities are endless, the

variations never-ending, the innovation downright inspiring. But at some point, you may find yourself wondering about your old standbys, the cocktails that first ignited your love for mixed drinks and spurred your passion to continue down the road of

increasingly out-there preparations. In other words, the classics. We are talking about the Manhattans of the world, the Sazeracs and the Negronis, the Old-Fashioneds and even the beloved, ever-riffable margaritas, mai tais and Moscow Mules.

It isn’t the creative takes on these cocktails that got Montage Deer Valley Beverage Director Dave Wallace all fired up about creating the classic cocktail program for Montage (he’s all for a nontraditional cocktail, provided it’s well-made). It’s that he wanted to create consistency across the Montage brand. While better, higher-quality ingredients or more impressive aesthetic flourishes are available, there are always guests who expect the high standards of a classic cocktail. “We want to reflect and honor the classic roots of these cocktails,” Wallace says. “It’s about culture, history and consistency, as well as guest experience.” That means a classic cocktail manual, prepared by Wallace, with very specific instructions, ingredients and methods for making a curated list of 16 different time-honored cocktails, right down to ice standards, appropriate glassware and proper garnishes. Mint Julep First appearing in books in the 1700s, the mint julep wasn’t originally considered a cocktail—it was medicine. In 1938, the mint julep was named the official drink of the Kentucky Derby and an estimated 120,000 of them are sold at Churchill Downs each year. event. Here are instructions for making a classic mint julep from Montage Deer Valley Beverage Director Dave Wallace’s classic cocktail menu. Ingredients: 2 ounces Woodford Double Oaked Bourbon ¼1/4 ounce simple syrup Mint bouquet and powdered sugar, for garnish

Method: Add bourbon and simple syrup to glass and fill halfway with crushed ice. Stir for 15 seconds, then add crushed ice until three-quarters full. Stir until the glass is frosted, then add crushed ice to form a cone and garnish with a mint bouquet and powdered sugar.

hat does it take to be named 2020 Luxury Car of the Year by auto reviewers? How about bespoke luxury that equals or surpasses every other marquee, a reputation for quality and performance that stretches back a full century and all of the high-tech bells and whistles drivers might ever desire in their car. If you want to know how a top speed of 207 miles per hour compares to other speed machines, consider the fact that today’s Formula One grand prix race cars top out at around 220 mph and the all-time Nascar record for zipping around an oval is 216 mph. Yet the brain trust at Bentley says that speed wasn’t their main consideration in remaking the four-door vehicle. “With the new Flying Spur, we set out to build a car that would connect with people on a more emotional level through its design and be supremely capable both as a driver’s car and for those who prefer to be driven,” says Hans Holzgartner, the British motorcar maker’s senior global product manager. “We didn’t set out to make the fastest fourdoor sedan on the planet, but I suppose our founder W.O. Bentley’s words—‘To build a fast car, a good car, the best in its class’—still resonate with everyone working at Bentley. It’s just in our blood.” So what’s all that speed going to run you? The Flying Spur starts at $224,000 on this side of the Atlantic. M

F R E E Cirque du Soleil’s “Volta” transports Southern California audiences to extremes of the street.

I

t’s been 33 years since Canada’s Cirque du Soleil made its United States debut on opening night at the 1987 Los Angeles Festival, and in that time, the Montreal-based troupe has gone from a collection of 25 aerialists, clowns, stilt-walkers and acrobats to more than 1,300 gravity-defying artists who use their bodies to create physical, breathtaking, yet fleeting art. Past Cirque du Soleil productions have transported audiences to fantasy worlds; “Volta,” the group’s newest work, takes place where the group began: on the street, where the show’s urban extreme athletes use BMX bikes, bungee cords, roller skates, slacklines, jump ropes and—in parkour style (the practice of traversing obstacles by rolling, vaulting, climbing and other movements without using equipment)—buildings, to spin, fly and jump their way through dizzying routines. The show, which travels on 74 trucks and takes nearly two weeks to set up, opens Jan. 18 for a seven-week run at Under the Big Top at Dodger Stadium in LA (it closes March 8), before moving south to the OC Fair and Event Center in Costa Mesa from March 18 through April 19.

“Volta” is the story of Waz, a game show contestant who, after being mocked as a child for his odd, bluefeathered head—the heartbreaking scenes are shown through video flashbacks—meets a band of free spirits who help him understand that what some judge as weird actually makes him unique and should be celebrated rather than scorned. Throughout the show, double-dutch jump rope experts flip and tumble through the orbiting lines, BMX cyclists shoot off ramps into intricate twists and a pair of remarkably strong climbers suspend themselves parallel to the stage from a pair of articulated, spinning ladders. There are entirely new spectacles as well, most notably a scene where a female performer is lifted off the stage by nothing more than her hair, which has been threaded with a metal ring and a cord. Once airborne, she soars through the air, pirouetting, leaping and somersaulting along the way, all four limbs free. The show also includes a surprisingly elegant “pas de deux” with a dancer and a cyclist as well as a unicyclist who circles the stage while balancing a woman in a handstand. Comprising former gymnasts, divers,

stunt men and freestyle skateboarders, Cirque du Soleil performers practice for hours each day to ensure that each physical feat is executed in flawless precision with the music, which provides the split-second timing necessary for flying trapeze catches and synchronized cycle jumps, double backflips and twisting dives. “In middle school math, we had to figure out where Train A and Train B would meet if they left at a certain time and were going at a certain speed,” says Cirque du Soleil Entertainment Group Automation Mechanic Sean Groves. “Choreographing Cirque du Soleil uses those same skills. To make a trapeze catch work, we have to time the launch so both performers will reach the apex of their flight at exactly the same time.” “Volta” premiered in Montreal in 2017; the show’s haunting score was created by composer Anthony Gonzalez, best known for his French electro-pop project, M83. “Volta” is a story of transformation; it is about being true to oneself, fulfilling one’s destined potential and recognizing one’s own power to make it possible. State of The floating matriarch of Palmetto Bluff for nearly a decade, Grace has enjoyed a rich and dramatic history and a massive renaissance to get her back on the water.

Grace has led a charmed life, traveling with the rich and famous on the Hudson River and Long Island Sound in the 1920s and touring with a floating theater group along desolate river towns. She then went into hiding for decades, resurfacing in the 1980s in a state of homelessness, when she finally was returned to her original glory. A WINDING JOURNEY TO PALMETTO BLUFF Grace was commissioned by Joseph B. Cousins for personal use, built in Manhattan by the New York Yacht, Launch and Engine Co. Cousins picked the style of yacht he wanted, called a double-ender, referring to the similar shape of the bow and the stern. Ready for family use, she was originally christened the Sispud II, after the nicknames of his children, Sissy and Puddy. She spent many years transporting the family back and forth to New York City from their home on Long Island. The next owner was James Adams, who lived aboard, using Grace as transportation to his business, The Floating Theater. The theater was built on a barge and pulled by tugboats, stopping in small and large coastal cities to entertain guests with music, dance, drama and a talented cast. In 1925, the Pulitzer Prize-winning author Edna Ferber traveled with the troupe of performers, eventually writing the novel “Show Boat,” famously adapted for Broadway by Oscar Hammerstein II. The theater met an unfortunate end, sinking in 1941, but Adams continued to use the Sispud II as his home until he sold the vessel. At some point, owners abandoned Sispud II at a Rock Hall, Maryland marina. It was found there in the 1990s by Earl McMillen, sitting neglected and deteriorating on blocks. McMillen, the founder of McMillen Yachts Inc., a company that restores and maintains classic yachts, extensively restored Sispud II and put it back in the water under the name Zapala. In the early 2000s, Palmetto Bluff was busy preserving the history of the Wilson family and searching for a period piece to reflect Wilson Village. Because the boat was built in 1913, which was the year the Wilson mansion was first WINTER 2019 | 50 |

occupied, they purchased the yacht and renamed it the M/V Grace, believing it was a great fit for the neighborhood. DEDICATED TO RESTORATION Every year, Grace was required to pass an inspection from the Coast Guard to make sure she remained seaworthy. In 2013, they found extensive damage, the kind that could end Grace’s time on the water. The residents,

GREETED BY A FLEET On Dec. 11, 2015, Johnson and Renard began their journey back to Palmetto Bluff. “We were on the Intracoastal and the time of year that we were traveling had boats moving South,” Johnson says. “We got a lot of horn blasts, a lot of waves. When we pulled into marinas to spend the night, a crowd would always gather.” When they reached the area in February, they were greeted with a fleet of Palmetto Bluff members’ boats and a party at Montage Palmetto Bluff ’s Canoe Club. Everyone was excited to have this iconic symbol home, ready to be enjoyed by club members and Montage guests. Johnson understands the appeal. “People are amazed by its longevity,” he says. “We have member cruises two times a month and there’s always a waiting list.” Montage guests can experience a whole range of excursions on Grace. The boat takes sunset cruises, has wine and mimosa trips and is available for private charters. Its companion vessel, a Hinckley Yacht picnic boat aptly named Palmetto Bluff, is available for smaller groups ON THE WATER On one of these journeys, we borrow blankets when Grace leaves the dock, wrapping them around our legs as the sun sets on the horizon with rosy hues. One member of our group notices a dolphin and Johnson hurries over to help her spot more, educating the guests with the knowledge of someone who spends hours on the local waterways. inspired by their love for the boat, agreed to send her to Moores Marine, a specialty wooden yacht restorer in Beaufort, North Carolina. Two of Grace’s captains, Ed Johnson and Herb Renard, piloted her up the Intracoastal Waterway and into the care of the experienced shipwrights. After pulling her apart, they found more damage to the keel and keelson than expected, but everyone remained dedicated to repairing the special boat. Capt. Johnson wasn’t surprised to learn that more was needed. “It was like peeling away an onion,” he says. “You just keep finding more layers.” The team of carpenters dedicated a little over a year to her restoration, removing and rebuilding the motor, replacing ribs, planks, upholstery and windows and upgrading the plumbing and electrical systems while the captains traveled back and forth to check on the progress. They were able to save much of the original construction and around 30% of the keel, plus the antique Honduran mahogany interior paneling which lends its warm, classic style to the living area below the deck.

Known for its 12 miles of expansive sandy beaches and world-class golf courses, Harbour Town Lighthouse and Pinckney Island National Wildlife Refuge salt marsh, Hilton Head Island, nestled along the South Carolina coast, is full of adventures for the whole family. That is why tennis great Stan Smith has made Hilton Head Island his home for the past for 47 years, still playing and coaching at Sea Pines Racquet Club when he’s not having fun on the beach with his 13 grandchildren. “My kids grew up here in Hilton Head and we still enjoy doing all the tourist things—biking the trails, going to the beach, getting out

Mykaela and Brandon Salisbury knew they wanted to get married in Southern California because it's where they met and where they planned to spend the rest of their lives together. “Not to mention, Southern California is just hard to beat, beauty and weather-wise,” Mykaela says. So when it was time to choose a wedding venue, they looked for a place that reflected the area’s natural beauty. They found it at Montage Laguna Beach. “Both of us had visited Montage before and thought the grounds were stunning,” Mykaela says. “It was such a gorgeous beach setting and yet so private.” The resort matched their vision for their wedding—elegant, coastal and romantic with a subtle travel theme. “The resort created a beautiful background for our ceremony and reception,” she says. “The views are something that we couldn’t find anywhere else.”

With the help of Lovelyfest, a wedding and event planner, the couple brought unique details to their special day. Mykaela’s father walked her down the aisle, and also officiated the ceremony. And her oldest nephew, Everett, walked down the aisle with the couple’s dog, Henley—both of them ring bearers. “It just wouldn't feel right not having our dog as part of the celebration,” Mykaela says. When it was time for the reception, the couple incorporated their love of travel by labeling the guest tables with a destination that they had visited together since they met in 2012. To accompany the theme, the menus were designed to look like passports with each guest's name printed on the front. The passport menus were even more individualized to reflect menu choices: A tassel on each designated blue for pan-seared halibut, pink for filet

mignon and dark pink for a vegetarian entrée. To commemorate the special day, two signature cocktails were served—his and hers. “Brendon's family owns and runs a few local restaurants in Southern California and we wanted to include our two favorite drinks,” Mykaela says. “We chose to use El Cholo’s margarita mix and The Cannery’s Moscow mule. We were very glad that Montage worked with us to be able to include outside mixers to get the signature drinks that meant something to us.” WINTER 2019 | 66 |

For dessert, Williams pear and blackberry crisp were served with vanilla ice cream. And when it was time to end the night, the guests moved indoors for an after-party in one of the ballrooms. “Our favorite thing about the day was just having all of our families and friends in one spot celebrating as we officially started the rest of our lives together,” she says. “The venue, design and event was a dream come true, and we have an amazing team to thank for that.” M

Elevated Journey In Peru’s Sacred Valley, adventure travel— and altitude-inspired cuisine—soar to new heights.

In the third season of “Chef ’s Table,” the Netflix series offering epicureans a behind-the-scenes glimpse into the kitchens of the world’s most celebrated chefs, Virgilio Martinez, the passionate chef/owner of Peru’s much lauded Central and Mil, is describing his first visit to Moray, an ancient food lab in the Sacred Valley of the Andes. There, struck by the terraced concentric circles that were once an Incan experimental farm, he explains how he came to discover the atmospheric nature of food. “People in the Andes have another way to see life,” he explains of his one week visit to the high plateaus of his native land. “They see the world in levels and altitudes, in a vertical way. That was it for me. It changed the way I was thinking about food.” When he returned to Lima, he reinvented his Central menu based on the biodiversity of different altitudes, so that diners could “feel all the parts of Peru.” Since then, Central has consistently been considered one of the top 10 restaurants in the world. But his fascination with Moray did not end and, a decade later, in 2018, he opened the 20-seat, tasting-only restaurant Mil in a former vicuña (a high-end relative of the llama) breeding center overlooking the terraces. Within a year, Mil was named one of the best restaurants in the world by a collaboration between Travel + Leisure and Food & Wine, and if you’re traveling to the Sacred Valley, it’s worth making the trek to try Mil’s eightcourse tasting menu serving the “ancestral cuisines” of the Andes. Or, if you really want an immersive experience that involves Martinez’s food and the land that inspired it, check in to Explora Valle Sagrado, a luxurious, all-inclusive adventure lodge that appears to be growing out of fertile fields of corn and quinoa in the remote foothills of the Peruvian Andes: In the summer of 2019, the lodge and the chef partnered so that guests could experience Martinez’s obscure Andean ingredients presented in the restaurant as works of art almost too beautiful to eat. Explora’s partnership with Martinez makes complete sense. Since it opened in 2017 as one of Peru’s most experiential properties, Explora has widened its reputation (it has three other properties, all in remote destinations in Chile) as a high-end base camp for travelers seeking to connect with the ancient land and its culture. EXPLORING THE SACRED VALLEY Half-day or full-day excursions are led by Explora’s expert guides with deep knowledge of the local Quechua culture. The day we arrived, our guide explained the history of the Inca Empire, which before the Spaniards arrived, spanned over 2,000 miles and brought together 10 million people under the same sacred theocracy. The capital of this powerful empire was the city of Cusco, and from the majestic mountain landscapes and fertile valleys that surrounded it, the Sacred Valley was chosen by the Incas to build some of their most important architectural works, thousands of miles of travel paths connecting the vast territory and complex irrigation terraces built with stone walls, pipelines and aquaducts at the mountains slopes that are still used for growing food. This is why it was the perfect location to build Explora Valle Sagrado, with over 30 full-day or half-day expertly guided excursions to many of these sites, including everything from hikes and bike rides through the landscape of mountains, potato fields and Incan ruins, to cultural outings in Cusco and overland adventures. But most travelers brave the extreme altitude of Peru’s Sacred Valley for one reason: to visit Machu Picchu, once the heart of the Inca Empire and one of the most impressive architectural feats of their civilization, as well as one of the Seven Wonders of the World. expedition to Inti Punku (or the “Sun Gate”), the gateway through which travelers who hike the Inca Trail enter the historical sanctuary. The itinerary begins early in the morning at the Ollantaytambo rail station, where a glassed-in train runs along the banks of the picturesque Urubamba River to the town of Aguas Calientes. From there, a bus swerves along a curvy mountain road to deliver you to the entrance to Machu Picchu, where preservation initiatives include new restrictions on the number of visitors entering the sacred site (reservations are now required). This is the starting point of the 1.2-mile climb to the Sun Gate, where the crowds and the air are definitely much thinner, the sweeping views of the historic site are stunning as the clouds move quickly over the green hills and the sky is sporadically filled with thunder and lightning. Because this is the cloud forest in the dry season (Peru has two seasons, a dry season and a rainy season), bursts of rain are most welcome in the humid afternoon. After eating a light lunch at the top, the much faster trek down leads to ancient Incan structures, where llamas graze in the grasslands and the ruins can be explored. In sharp contrast to the challenging hikes and jaw-dropping views of lakes and mountains are the weaving villages that dot the landscape. Peru’s sustainable use practices, as well as the incorporation of traditional weaving techniques, have drawn

high-end fashion designers to the country, which is home to 80% of the world’s population of alpaca. Brands such as Stella McCartney, Ulla Johnson and Isabel Marant have incorporated the eco-friendly alpaca—the animals are not harmed during the shearing process—into their collections using Peruvian workers to do the hand-knitting. Chinchero is believed to be the birthplace of the Sacred Valley’s textile craftsmanship and an excursion to Cuper Bajo allows visitors to learn firshand about how natural dyes are used to create the colorful alpaca, baby alpaca and vicuña wool textiles woven by local artisans with backstrap loom techniques. You can witness a demonstration of how the women weave by throwing the yarn back and worth and how natural dyes are created—including watching one of the weavers smash a parasite from a cactus in her palm, mix the bloody red guts with lime juice and a crystal and use it to dye wool and redden her cheeks—and then buy woven items at dirt-cheap prices right from the collective. “These women,” explains our guide, “they can walk, they can dance, they can kiss their husbands while they spin the yarn. And depending on how they are feeling in the day, they use happy colors, or dark colors when they are sad.” We purchase some happy bright red and fuschia scarves, rugs and handbags, and are on our way. An excursion to Moray and Salinas de Maras is also not to be missed. The ancient Maras salt mines are one of the few sites in the world to extract naturally pink salt and this exploration takes travelers through the open-air salt pools dug into the mountainside where salt in shades of white and pink are all fed from an underground sea of salty water deep within the mountains. Thousands of shallow pools filled with salt water eventually evaporate and leave behind the crystallized salt, a process that has been practiced for more than 500 years. On the exit road, stalls sell the various salts including a smoked pink bath salt that smells like the aftermath of a smoldering backyard barbecue. Nearby, the mines are the circular terraces of Moray, one of the best-preserved archaeological sites in the valley and the spot that inspired Martinez’s Mil and his menu in Lima’s Central. A hike down the backside of the mountain offers panoramic views of the grass-covered, terraced Incan ruins, at one time a large-scale agricultural experiment. Soil tested from the area shows it was brought in from other areas, creating a series of microclimates that match many of the varied conditions across the Incan empire. Scientists have determined that the rings were probably used as test beds to grow crops.

This is a signal that the families inside are producing and selling Chicha—Peru's local, indigenous sour beer made from fermented corn—in unused rooms or corners of their patios. In these unlicensed Chicherias, you can get a big glass for as little as 1 sol, which is about 30 cents. After we try regular and strawberry chica (definitely an acquired taste), we pass through the town’s main gate and over cobblestone streets to get to the village, where we climb the steep steps to the archeological site to see its terraces, the ceremonial center and the Royal building. Here, alpaca roam the grounds, inspiring selfies and a spontaneous group yoga pose. The week we are there, a special Explora wellness experience is being led by Kathleen Nitting, a Vedic educator certified by the Chopra Center for Well Being, that fuses yoga, meditation and ayurveda. The wellness experience is designed for travelers to add an extra layer of healing to their Explora adventure by connecting with the natural elements and discovering the culture of Peru and its reverence for the land. treatments. During this special week, herbalist and ayurvedic workshops are integrated with the excursions. EATING IN OR OUT One off-menu excursion our group could not do without was a visit to the $165, eight-course, lunch-only tasting menu at Mil. Each creatively presented course is a re-creation of an Andes high altitude ecosystem. At 11,500 feet, the restaurant literally stocks oxygen tanks if you need a boost, so acclimation before your visit is recommended. Courses have names like Andean Forest, Diversity of Corn, Extreme Altitude and Central Andes, the last of which integrates some of the country’s 4,000 varieties of tubers with potatoes, stems, chaco clay (an edible clay) and wild chinco, all baked in a traditional adobe brick oven. The water is from the Andean snowmelt, the pink salt from Maras, and much of the menu is sourced from surrounding indigenous communities. Each of the eight courses, mostly made from tubers, grains and vegetables—but also includes alpaca and llama and lamb—and served on dishware handcrafted from local wood and stone, is paired with an in-house distilled infusion. The chocolate, which many reviewers have remarked

is the best chocolate they have ever had (and this writer agrees), is made in the food lab there. Ingredients also include such rarities as sea-bubble algae, dragon’s blood tree resin and cassava starch. But guests of Explora can taste Martinez’s rare ingredients in the lodge’s restaurant as well, where items like mashwa (a type of tuber), cushuro (a blue-green algae) and ayrampo (a variety of cactus), are collected and grown in cooperation with the local farming communities. Several immersive excursions centered around foraging for local ingredients and interacting with the local agricultural communities—some hosted by Martinez himself—are being planned. Explora’s new custom-designed menus will be available for nonguests with prior reservation as well. But mostly, a journey to Peru elevates the spirit. At Machu Picchu, it’s a remarkable experience to witness the 300-ton stones at the sprawling temple of the Incan King Sacsayhuaman, or learn about the rooms lined with gold at the Coricancha. These Incan wonders have brought people from all over the world to admire an area considered to be one of the Earth’s chakras, or energy centers, a sacred power point on the planet that includes the heart of the Andes range, Cusco and Machu Picchu. It is believed that when spending time in these places—Mount Shasta, California; England’s Glastonbury; the Great Pyramids; and Tibet’s Mt. After a scenic heli-ride drops you on site, it’s just you, your snowboard or fat powder skis and a vast terrain of heavenly powder calling you to carve fresh tracks. Whistler Blackcomb, located north of Vancouver, British Columbia, may be one of the largest ski resorts in North America, but it’s also where 90% of the world’s heli-skiing takes place because of its exclusive access to pristine alpine terrain. It’s become a cult destination for skiers: guests can indulge in heli day trips ranging from classic three-run packages to elite six-run packages. Additional treats include a heli-picnic and photographer/videographer ride-alongs, which are available to purchase aprés-ski.

Exclusive rights to close to a half-million acres of the Pacific Coast Mountain Range is offered by Whistler Heli-Skiing, whose expert guides will, from the sky, scout the terrain that includes 173 glaciers and 475 runs.
