‘White Christmas’ links history, family
C
hristmas has come and gone but this article first printed in the Fargo Forum December 22, 2013 by Bob Lind bears repeating.
One of the Christmas tree ornaments made by Tim Kessler to honor his father. The ornament shows the original sheet music of "White Christmas" which Paul J. Kessler and fellow members of the 164th Infantry Division of the ND National Guard heard for the first time while they were in Guadalcanal on Christmas 1942.
For those of you who don’t know Paul and Eva Kessler, they were long time Candoites and former business owners of K & E Meats. Paul has since passed away but Eva now lives in Detroit Lakes. It was a rugged place to spend Christmas in 1942: Guadalcanal, where the 164th Infantry Division of the North Dakota National Guard was in fierce combat with the Japanese forces occupying the Pacific island. The fighting had been virtually nonstop since the division landed that October, making it the first U.S. Army unit to go into offensive action during World War II, and the loss of life was high. Then Christmas Eve arrived. The men of the 164th, far from home, took advantage of a rare break in the fighting to gather around a shortwave radio and listen to the Armed Forces Network’s Christmas Eve broadcast. And for the first time they heard a song that had only recently been released: “I’m dreaming of a white Christmas, just like the ones I used to know …” It was the first time Paul J. Kessler, then of Anamoose, N.D., and a member of the 164th, had seen grown men cry.
Family tradition
Paul’s son, Tim Kessler, Detroit Lakes, Minn., says the family had a Christmas season tradition: Paul, safe-
ly home from the war, and who had a rich Bing Crosby-like baritone voice, sang “White Christmas” every year. His seven kids just took it for granted, not knowing the special significance the song had for their dad. But one Christmas not long before he died in 2007, Paul told Tim about the time he first heard that song. “He talked about the battle-hardened soldiers all ‘blubbering’ ” during the song, Tim says. “Where the tree tops glisten, and children listen to hear sleigh bells in the snow.”
Special pine cones
A few years ago, while Tim was visiting his father’s grave in the North Dakota Veterans Cemetery in Mandan, he noticed many large pine cones under a nearby tree and thought they’d make nice Christmas tree ornaments. So, knowing what “White Christmas” meant to his father, he reproduced an image of the song’s original sheet music and a wartime photo of his dad on those pine cones from the gravesite and created ornaments for his siblings and their mother, Eva, of Detroit Lakes. But his mom’s ornament had a special addition on it. Back when his father was buried, the Mandan VFW honor guard had fired the salute. Later, Tim shook their hands, then “On a whim,” he says, “I picked up

Eva Kessler holds a Christmas tree ornament with a photo of her husband, Paul J. Kessler. The ornament was made by her son, Tim, to honor his father. sler Sr. was part of the first U.S. Army offensive operation of World War II, and his son, Paul J. Kessler Jr., was part of the end of the American involvement in the Vietnam War. And both had links to that much-loved Christmas song. “May your days be merry and bright, and may all your Christmases be white.”

he North Star School Board met on Thursday, February 20 for their regularly scheduled meeting. Three new students have started in the elementary school bringing total enrollment to 186 students. This is up from 167 students at the same time last year according to elementary principal Vicki Held. The Towner County Spelling Bee was held with Noah Weltin taking first place and Brenna Bulman second place. Fifteen children were screened during pre-school screening with an expected enrollment of 18-19 students during the next school year. Mrs. Lybeck and Miss Krile presented the RTI (Response to Intervention) process to the board. The program helps students who do not qualify for the special education program, but need additional help. The two teachers explained that early intervention has been shown, through test scores, to be beneficial in getting students back on track. one of the spent 30-06 casings from the M-1s they’d fired and pocketed it. When I made the ornaments, I added it to Mom’s, because the M-1 was the weapon Dad carried.” Tim gave those ornaments to his family last Christmas Eve. It was a nice surprise, a nice story. But then a surprising twist to that story was revealed by Tim’s brother Paul J. Kessler Jr., of Green Bay, Wis., and who is known as “P.J.” After graduating from high school in Cando, N.D., where the family had moved, and while the Vietnam War was on, P.J. went into the Navy. On April 29, 1975, P.J. was a seaman on the bridge of the carrier USS Hancock when the helicopter evacuation of Americans from Saigon began. Many of the evacuees were taken to the Hancock. In fact, the movie “The Deer Hunter” included actual footage of the helicopters landing on the Hancock, then being pushed overboard to make room for other evacuees. P.J., in telling this story to his family, also told of the signal given to start the evacuation from Saigon. He said the American personnel there were told they should move immediately to their evacuation points when they heard Armed Forces Radio play a recording of Bing Crosby singing “White Christmas.” So it was, Tim notes, that Paul J. the year to now were shared. Tim Johnson was present to discuss a ground source heat pump as the board continues to explore heating and cooling options for the school. Several members of the Buildings and Grounds Committee are making plans to travel to Jamestown to see the system in action. High school principal, Nancy Reiser reported steady enrollment and attendance figures at the high school level. She also reported poor attendance at the spring parent teacher conferences. Tayden Thomas was commended for qualifying for the State MathCounts competition. The high school robotics team will be traveling to Duluth for their competition in March. Activities director Jeff Hagler reported that the Starkweather School Board has approved the sports co-op with the North Star School. The North Star School Board also accepted the agreement. Two games will be played in Starkweather next year. Mr. Hagler also presented the basketball schedules to the board. Dunseith has been added to the district for both boys and girls basketball. North Star will also host the 201415 girls District 8 Tournament. Head football coach, Bryan
Haugen addressed the board to inform them that he has taken over as the head of the Saskota Bowl team. The Saskatchewan representative called Mr. Haugen as Rolla no longer wanted to host the event. Mr. Haugen has put together a committee to help organize and fundraise and was approaching the board for approval to use the football field, practice equipment and busses for transportation this year. The game will be played in Cando next year when he will also need the use of the kitchen and gym for a banquet. The board gave their approval. Superintendent Hagler reported three open enrollment applications. He also informed the board that the school board election will be held June 10 at the Cando Armory. Two positions, those of Vickie Jacksen and Jeana Jorde, will be on the ballot. The filing deadline for petitions is April 7 for those interested in running. Ross Myers addressed the board regarding the State Forester being in Cando for Arbor Day. He also talked about planting trees to replace those removed from the tree row west of the football field. The next regularly scheduled meeting will be held March 19, 2014 at 7 pm at the North Star School.
ing home has lost a small amount each year leaving it in a position where there is no capital available for improvements. The facility has been trying to utilize grant dollars to assist with the remodel. A $20K grant was secured from Workforce Safety and an additional $5K was provided from Cando City sales tax dollars to purchase new beds for the residents in the nursing home. The nursing home activities director, Peggy Hendrickson, and her husband Tim secured a $2,500 grant from the Monsanto Fund to purchase a new patient lift. Along with new beds and
lift equipment, the remodel will hopefully include a new van for patient transportation, new flooring, retexturing and painting the walls, remodeling resident rooms, obtaining new furniture for the common areas, and upgrades for the chiller and boiler. Sunday, March 2nd the Entre Nous club of Cando and the Cando Fire Department will be serving a sausage and pancake breakfast to help fund the van and improvements to the Towner County Living Center. The breakfast will be at NorthStar School from 9am-1pm, with free will donation.
Towner County Living Center looks to remodel
CLC improves its quality rating and looks forward to a remodel in 2014.
The Centers for Medicare and Medicaid Services (CMS) launched a rating system for nursing homes back in 2008. The ratings take the form of a set of “star” ratings for each nursing home. Ratings are based on nursing homes’ performance on health inspection surveys, staffing levels, and a set of Quality Measures (QMs). Towner County Living Center has improved its rating to four stars, from its prior rating of three stars.
Dana Oakland was named the Director of Nursing (DON) at the living center in August of 2013 and has done a great job at focusing on improving quality and making the nursing home a better place to work. Trevor Tompkins has also accepted an administrative role and has been responsible for leading the restorative therapy program and the Certified Nursing Assistants. Both Dana and Trevor have been focused on decreasing the use of agency staffing to ensure that care is coordinated and quality improves. The Living Center
has provided many residents in the area with an opportunity to begin a career in health care. Certified Nursing Assistant positions can be obtained as early as 16 years of age. The starting wage is currently $13/hour and the Living Center will even offer to pay for CNA training for the right candidate. If you are interested in being employed at the nursing home go to www.tcmedcenter.org to download an application and call Pat Klingenberg at 701-968-2555 to hand in your application and set up an interview. In 1997 Towner County Med-
ical Center purchased the Living Center from HMU management. In 1999 a remodel was completed to upgrade the nursing home. The nursing home has struggled with decreasing resident numbers. In 1997 when the hospital purchased the home there were about seventy residents. Today the the number of residents fluctuates in the low thirties. This decrease is due to population decline in Towner County. The Living Center is trying to secure funding to remodel the facility. Due to the slight decline in residents over time, the nurs-

We are entering the second week of the “Schwan’s Cares for the Uffda Fund for Animals” campaign. You can participate by placing a telephone or online order designating the Uffda Fund by name or with the campaign ID # 6377. Call 1-855-870-7208 or visit www.schwans. com to place your orders. Thank you to the folks who have already helped Uffda through Schwan’s-Cares. Our available critter count has grown this week to include Copper and Dodger, two young male lab crosses. Jaycee, the long-haired Angora, and Chrissy, our former feral, now friendly feline, have been joined by Babez, Ace and Leo. Babez is a beautiful gray and white spayed female kitty who would make an ideal shop cat. She is not a cuddly sort so, like the old movie star Greta Garbo once said, she “Vants to be Alone!” As for the two brothers, Leo and Ace, very sadly their adoption has not worked out due to severe cat allergies in the family. Since these sweet kittens are very bonded to one another it would be preferable if they could remain together. Our next Uffda meeting is set for 5 pm Wed., March 5th at Farmers Union Insurance.

Prairie Fare: Savor the Flavor of Bacon but in Moderation Bacon is highly flavorful, so a sprinkle of bacon crumbles adds a lot of flavor to a baked potato or a spinach salad. To moderate your intake of sodium, try the reduced-sodium versions of bacon that are available. By Julie Garden-Robinson, Food and Nutrition Specialist NDSU Extension Service
“M
om, I just had the best cookies ever! I ate a bunch at the dining center. You need to make them at home,” my 18-year-old son exclaimed. He was practically salivating. “What kind of cookies were they, anyway?” I inquired. “They were bacon chocolatechocolate chip cookies. They were featuring bacon on the menu,” he replied with a grin. I did a quick online search and found several cookie recipes with crumbled bacon bits. As he continued his glowing culinary review, I had a flashback from 18 years ago. I experienced a craving for bacon while expecting him. Was this a delayed effect? At the time I was pregnant with my now 6-foot-3-inch son, I was teaching a food service management class twice a week in the campus dining service kitchen. It was near the same time of year as my son’s present-day “bacon encounter.” My buddy, who was the head cook, would greet me with, “Julie, your bowl of bacon is on the counter.” I looked forward to my flavorful treat and waddled over to retrieve it. As the months progressed, I needed to temper my intake of higher-sodium foods, including bacon, when my feet began to swell and I grew out of my shoes. I savored the flavor of one piece of bacon instead of three. Obviously, my craving didn’t stunt my son’s growth. The 2012 Bacon Report referred to its namesake as “meat candy.” More than 627 million pounds of bacon was sold in retail outlets in 2012. A slice of bacon isn’t as high in calories or fat as you might expect. According to the U.S. Department of Agriculture Nutrient Database, one slice of pan-fried bacon has 54 calories and 4 grams (g) of fat. One slice of cooked bacon
has 194 milligrams of sodium. That’s about 13 percent of the daily sodium recommendation for people 51 and older and 8.4 percent of the recommendation for people younger than 51. When cooking bacon, start the process in a cold pan and cook to desired doneness over medium heat. You also can cook bacon in an oven or microwave oven. Drain the bacon on a double layer of paper toweling to reduce the fat content. You can cut back on added salt or added fat if you are adding bacon to a dish, such as a soup or casserole recipe. Top off your menu with a side salad, fruit, veggies and other food naturally low in sodium and high in nutrients. Bacon appears in many ways on restaurant menus besides being a popular side dish for eggs at breakfast. Bacon often inspires sales by appearing on sandwiches, salads and pizzas. It serves as wrap around shrimp, scallops and pork loins. Bacon also has been used in cocktails and desserts, including sundaes, cookies and brownies. Typically, “standard” cut bacon is sold in 1/16-inch slices, but some people prefer thickcut bacon, which is about 1/8inch thick. If you visit most butcher counters, you can buy bacon in slabs, which you cut at home. You also might find “center-cut” bacon, which is lower in fat because the bacon is cut close to the bone. Bacon is a pork product, so religious restrictions prevent some groups from using it on their menus. “Turkey bacon” is available and others have made baconlike products from lamb, beef, soy and other proteins. If you want to profess your love of bacon visually, you can decorate yourself or your office with numerous bacon-inspired items. I could wear plastic bacon strip earrings and a bacon apron. I could use a mouse pad imprinted as a slab of bacon. If I cut myself while cutting bacon “lardons” (small pieces of bacon), I could use a baconcolored bandage to cover my wound. Before we go “hog wild” about bacon, we need to keep mod-
eration in mind. Bacon is highly flavorful, so a sprinkle of bacon crumbles adds a lot of flavor to a baked potato or a spinach salad. To moderate your intake of sodium, try the reduced-sodium versions of bacon that are available. Here is a recipe adapted from the Spend Smart Eat Smart program at Iowa State University Extension and Outreach.
Loaded Potato Soup With Bacon Crumbles 3 c. red potatoes, peeled, cooked and mashed 1 Tbsp. margarine (soft, tubstyle) 1 c. onion, chopped 1/2 c. green or red pepper, chopped 1 (14.5-ounce) can chicken broth, reduced-sodium 1 c. fat-free milk 1 c. frozen peas (or mixed vegetables), thawed 1/2 tsp. pepper 4 slices (3 ounces) American cheese 4 strips reduced-sodium bacon, fried and crumbled 1/2 c. green onion, diced Fat-free sour cream (optional) Peel, cook and mash potatoes. Fry bacon until crumbly, drain well and set aside. Melt margarine in a sauce pan over medium heat. Stir in green or red pepper and cook for about five minutes, until the pepper is softened. Stir in broth and heat to a boil. Add milk and vegetables. Heat through, stirring occasionally. Add the cheese slices, cooking and stirring for about two minutes. If desired, add additional milk to reach the desired consistency. Serve immediately. Top with crumbled bacon, green onion and, if desired, fat-free sour cream. Makes six servings. With reduced-sodium bacon, each serving has 200 calories, 7 g of fat, 9 g of protein, 24 g of carbohydrate, 3 g of fiber and 450 milligrams of sodium. Towner County Living Center News
With Valentine and President Day month wrapping up, we are looking forward to the month of March….hopefully spring will be in the air. Several Valentine activities occurred over the past couple of weeks. Some of these included Valentine trivia and discussions, Valentine spelling bee, Valentine Tic Tac Toe, Valentine Musical Bingo, Valentine bean bag toss and the Valentine Party. Peggy Hendrickson led the residents on singing Love Songs to commemorate Valentine’s Day. A private birthday party was held for Patty Hendrickson February 16th. Family helped Patty celebrate her 60th birthday. A special supper was brought in for her, to include her favorite meal. Happy Birthday, Patty. The Monthly Birthday Party was held February 17th. Marilyn Sawchuk provided piano music and also provided the birthday cake, made by Paula Hendrickson. The residents enjoyed the familiar tunes and hymns. February birthdays included Hugo Baerwald, Norma Halverson, Patty Hendrickson, and John Sawchuk. Thank you, Marilyn. Thanks to Dorothy Bjornstad for being hostess this month. Happy Birthday to all the February birthdays. Residents had been keeping track of the 2014 Sochi Winter Olympics. A board was located, in the activity room, displaying the medal counts. This was reviewed daily, as the residents cheered USA (and Norway) on. The final week of the Olympics, residents held their own Winter Olympics. It was a great hit, and residents

We held quarter finals, semi finals and took the top three residents to the finals. Gold was won by Dude Haugen, Silver by Ingrid Strand and Bronze by Hugo Baerwald. February 19th was Hockey. There was a definite difference, in this game, on how the men knew how to hit with the hockey stick, compared to the women. The men pounded away the puck, into the net, while the women struggled. With a white painted cardboard “run,” residents lined up match box cars and raced them down the slope. Each resident got four runs. We took their longest run. The top residents advanced onto finals. They each had four more runs. Dorothy Deplazes had two great final runs, giving her the Gold position, followed by Esther Garness with the Silver and Darlene Jorgenson with the Bronze. In this event, the women out-did the men. On the final day of the Olympics, February 20th, residents held a wheelchair race. Each resident had two individual runs. While seated in a wheelchair, a staff member pushed the resident around an obstacle course. Trevor Tompkins pushed for the first heat and Dana Oakland took over the second heat. The races were timed and the top three times advanced to the finals. Olivia Gailfus took home the Gold, Peggy Overland Silver and Hugo Baerwald the Bronze. Thank you, Dana and Trevor for your help with this event. Following the wheelchair race, the medal ceremony was held. Each of the residents who placed over the four days received their medal. A participation medal was also given for those participating in the events throughout the week. A special cake was served to end our Olympic week. Thanks to Michael Jarrett for leading Bible Study February 19th and Pastor Bonnie for leading Women’s Circle February 24th.
Residents Journeyed the state of Virginia on February 25th. This state was chosen to commemorate Washington and Lincoln’s birthdays. Virginia is nicknamed the “Old Dominion,” and the “Mother of Presidents.” Eight U.S. Presidents were born in Virginia; Washington being one of them. The others were Jefferson, Madison, Monroe, Harrison, Tyler, Taylor, and Wilson. Residents discussed the early English settlements as well as places to visit. Facts about Washington were discussed. Residents attempted to guess which were actually true or not. Washington did NOT have a middle name, he did NOT attend college, he did NOT throw a silver dollar across the Potomac, never occupied the White House, did NOT wear a wig. He WAS the best horseman of his time; was called the foremost farmer of America, believing America should be a “granary to the world,” and was a pioneer in improving many aspects of farming. He also operated the largest distillery in America at its time; inherited his first slave at age 11 and had over 300 slaves in bondage, at Mount Vernon, by the end of his life. He did make provisions, in his will, to free all of his slaves, being the only slave-owning president to do so. In the afternoon, a Cherry Tree Game was played. By the way, after much research, there was no documentation found that George Washington ever cut down a cherry tree. This famous story, on how Washington was said to say, “I can’t tell a lie, Pa,” was a moral lesson adults wanted children to learn from history, especially as taught

T
he North Dakota High School Activities Association will recognize the 1989 Bisbee-Egeland Panthers state “B” championship team during halftime of the state “B” title game on March 8, 2014 in the Grand Forks Alerus Center. At a time when Class “B” basketball had over 200 schools with teams, Bisbee-Egeland and its 50 students in grades 9-12 (20 boys and 30 girls) was able to make a memorable tournament run. The team had quickness, skill, and great chemistry, but did not have a player over 6’2” on the squad. The Panthers battled through a challenging schedule of tall and talented teams in district and region that prepared the team well for a 9-0 run at tournament time.
The players received tremendous support from their parents, family members, friends, cheerleaders, statisticians, classmates, faculty, staff, administration, coaches, and bus drivers. The Panthers had fans from home as well as many other small towns who were among the 7900 people in the stands for the sold-out games at the Bismarck Civic Center. The Panthers were also cheered on by people who watched the games on television or listened on radio. The encouragement was absolutely amazing. The Panther team couldn’t possibly thank everyone enough. This spring also marks the 25th anniversary of the Bisbee-Egeland-Cando state “B” high school baseball championship. The members of the baseball team are equally as appreciative of all the
community support and encouragement they received. The team had a tremendous season with a 20-3 record. The talented group of players had pitching depth, team speed, timely hitting, and a strong defense. While the baseball games were not televised, nor the media coverage as dramatic the accomplishment by the players and support of the communities was outstanding. The 25th anniversary of these teams brings back fond memories for the players as well as an appreciation for everyone who is part of these stories. The teams would like to thank everyone for the memories and your overwhelming support! The 1989 state “B” champion basketball team The 1989 state “B” champion baseball team

orsening U.S. Divorce Rate Points to Improving Economy. This is the actual title of an article printed online by a major news source. At first glance the title of this article confused me, but as I read further I became very enlightened. Here is an excerpt from the article. “The business was hanging on by a thread and we had to hang on,” said Derose, 53, who had been married 35 years and worked as the business manager. “We couldn’t afford to split. He needed me in the business and I needed him.”
With Florida’s economy and housing market recovering, “we are definitely on the upswing” and revenue is rising at their 24-employee company. That is allowing the couple to move forward with their divorce this month after years of showing up to work as if nothing were wrong personally. Now, she is looking for a job and “couldn’t be happier.” After being financially drained due to our long battle with the State over our tire fences, I am very relieved to know my chances of a long and successful marriage have improved dramatically!

Bearcats Earn Sixth Straight Trip to Region Final By Lavonne Haugen
For the Record-Herald
North Star vs. Carrington The North Star Bearcats tangled with the Carrington Cardinals in the first round of Region 4 Tournament play on Monday, February 24 in Devils Lake. The Bearcats came out on the floor appearing tight as their shots were off the mark in the first half of play. Despite the chilly offensive start, the team managed to outscore the Cardinals as they maintained a 24-16 lead at the half. North Star appeared more relaxed in the second half as Alex Weston took up residence in the post position and muscled his way to 15 points. Jayden Komrosky also found his range as he led the team in scoring with 16 points. The Bearcats steadily pulled away to advance to the semi-final round with a 54-29 victory. The team was 20 of 42 for 48% from the field and 8 of 14 for 63% from the free throw line. Along with Weston and Komrosky, Christian Kvilvang added 15 points and seven rebounds. Johnny Heisler ended the night with five points, five assists and three steals while Mathew Hunt scored three points and pulled down six rebounds for the Bearcats. Komrosky also grabbed seven rebounds for the Bearcats.
North Star vs. St. John
Alex Weston drops in the short jumper for two points against St. John.
The semi-final round on Tuesday, February 25, brought a highly anticipated re-match with the St. John Woodchucks on a neutral court. The Bearcats were hop-
ing to avenge a regular season loss to the ‘Chucks and advance to the championship game of the Region 4 Tournament for the sixth consecutive year. The game lived up to its billing as the two teams battled closely with the Bearcats taking the early lead and clinging to it as they took a 33-30 advantage into the locker room at the half. A big third quarter by North Star gave them the edge they needed to pull away. The Woodchucks made one final run late in the fourth quarter and closed to within five points, but the Bearcats managed the clock and finished with a 70-60 victory. North Star was 27 of 50 for 54% from the field and 11 of 15 for 73% from the free throw line. Christian Kvilvang led the Bearcats with 28 points and 10 rebounds. Alex Weston followed with 22 points and six rebounds. Jayden Komrosky ended the night with 13 points and three steals while Johnny Heisler added five points for the Bearcats. Mathew Hunt rounded out the scoring with two points and seven rebounds and led the team in assists with four. Head coach, Jeff Hagler pleased with the way his team is responding in tournament play. “I am really pleased with how we hung with it the first night, even though we didn't play real well. Last night we did a nice job defensively holding a high powered offense to 60 points. It's great to be part of the sweet sixteen and a chance to go to the state tournament.” The Bearcats advanced to the Region 4 championship game against the Four Winds/Minnewaukan Indians on Thursday, February 27.
