2 Pounds of blanched Lobster Claws

½ a bulb of thinly sliced Fennel
•
3 tablespoons of Canola Oil
•
1 sliced shallot
•
3 sliced garlic cloves
•
3 springs of thyme
•
2 tablespoon of Sherry
•
½ a cup of white wineissu
To make the dish first, take a big pot, and fill it with salt and water. Bring it to a boil and cook the lobster claws in it for about three minutes after which you shock them in ice water. Then, take a large pot and heat it before you add the canola oil. After the oil simmers add the shallots and fennel. Once they are translucent add the garlic. Cook for about 30 seconds. After done add the thyme and Lobster claws and give it a good mix. Then, take a pan and deglaze it with sherry and white wine. Cook the claws still they are properly done. You can either serve the claws with the liquid or strain the claws and serve it with the liquid as a dip.
