Finds a New Home In Manayunk.This month’s chef Making the Move: Gemelli spotlight features Clark Gilbert from Gemelli On Main.
W
alk into Gemelli on Main any day of the week and you’ll find owner and executive chef Clark Gilbert behind the stove. “I have a commitment to this restaurant and also to Manayunk,” Gilbert said, “so that’s why you’ll see me here seven days a week.”
Before finding its way to Manayunk in June of 2011, Gemelli (meaning twins in Italian – named after Gilberts 13-year-old twins), was located just across the river in Narberth. While at the old Gemelli, Gilbert was approached by Manayunk businessman Dan Neducsin, who convinced Gilbert to come look at some of his spaces in Manayunk. “I hadn’t thought about Manayunk in years,” Gilbert said, “but I had this palpable feeling that there could be a new restaurant resurgence here.”
It’s the perfect marriage of French and Italian cuisine.
Although some elements of the old Gemelli remain the same, the move allowed Gilbert to reinvent the restaurant with an updated style, new menu items, and a liquor license and full bar. The new restaurant feels sleeker and has a polished look with a neighborhood

feel, making it more warm and inviting, Gilbert said. The menu at Gemelli features unique dishes for the adventurous diners including Venison TarTare – with curried cockle and pistachio vinaigrette, and the Lobster Cannelloni – with lobster and shrimp, braised pork belly, butternut squash, nebrodini mushrooms, and lobster jus. These dishes are indicative of how Gilbert has elevated the food, but longtime customers also requested old Gemelli favorites that included classic Caesar salad and Mussels. “It’s a balance of foodie dishes as well as accessible recognizable options,” Gilbert said. “It’s the perfect marriage of French and Italian cuisine,” Gilbert said about the braised beef. “We use the French technique of braising, but it’s served over risotto.” As the seasons change, so does the menu at Gemelli. Daily specials feature items in season and although many of the classic dishes remain the same, the accoutrements are changed to compliment the season as well. Another classic dish, the Gemelli pasta features bolognese sauce that is rotated throughout the year – it currently features a lamb bolognese, but up next is venison. For the holidays, Gemelli is planning the Italian Christmas tradition of a feast of seven fishes, which he will serve the week leading up to Christmas Day.
Gilbert began his career in the restaurant industry over 20 years ago. He’s a true success story, starting at the bottom and working his way to the top as an executive chef and owner. As he moved his way from the front of the house to the kitchen, Gilbert realized there was something he loved about food and that culinary skills came to him naturally. One thing led to another and he began training under Jean Francois Taquet and then further honed his skills in Paris. Gilbert’s dishes are thoughtful, skillfully prepared, and are a feast for the eyes as well as the palate. Gilbert said he wants people to, “remember that Manayunk’s a hop, skip, and a jump from almost anywhere and that we offer great food without having to drive into the city.”
Although Gilbert said he tries to source food locally, quality is his highest priority. He admits he isn’t reinventing the wheel when it comes to his menu, but “what I hope we’re doing is offering value product, price, and selection, I would say that’s our mission,” he said. Along with their meal, diners at the new Gemelli now have a chance to enjoy wine, beer, and cotemporary cocktails that were not served at the Narberth location. Gilbert said the wine list was thoughtfully selected and has minimal markup, so the staff can promote the wine list and really allow people to enhance their dining experience. Gemelli also offers several unique craft brews and infused cocktails including Lakefront Cherry Lager and Rosemary Pear Capiroska.
