Greek philosopher Heraclitus once said, “The only constant is change.” As we’re moving forward, battling the Covid19 pandemic, I have been looking forward to the changes, emphasizing the impermanence of life and savoring every little bit of what we have before it is gone. Please don’t mistake this for being morbid, but a chance to enjoy what is now, such as eating best of the best in each season, like these apples, roasted in warm spices of cinnamon and cloves, and a slice grilled to perfection for my apple pie. The hard white spring wheat harvested and milled, is baked until golden brown and delicious in this Banana Nut Bread, served warm with Honey Cinnamon Butter ! Or plums, one of nature’s healthiest fruits, packed with anti-oxidents, most delicous, fresh and cooked as featured here in my Plum Tart, without added sugar. Desserts can be sinfully healthy and delicious.
As we are approaching the fall equinox (equinox from Latin Aequus meaning “equal”, and nox “night”), day and night are roughly equal in length of time, a balance in the world as reected in the astrological sign, a simple scale; balance. I want to create something that’s balanced, a dessert that encompasses the basic geometric shapes and lines, a texture prole of a crunchy biscuit, smooth jelly, creamy center, the smell of warm spices and taste of brown sweets, and a dessert that’s equally tasty as well as visually stunning. I hope I’ve achieved that balance, and you agree this is worthy to be on a celebratory table this Fall. I love Autumn, this season physically changes everything, letting go of the summer struggle of reaching for the stars, now leaves are dropping from the trees, and it’s time to de-stress.
