CLASSIC HOT CROSS BUNS Flavoured with mixed spice, nutmeg and cinnamon, hot cross buns are an essential part of British Easter celebrations. Try them the traditional way – toasted and spread with butter – or in our tasty brunch recipe below

AN EASTER TR ADITION Hot cross buns date at least as far back as the 18th century, when the cross shape was cut into the buns, rather than piped on top. They’ve long had associations with Easter in the UK, but nowadays they’re enjoyed as a year-round treat.

RECIPE

H OT CRO S S B U N S W I T H A T W I S T Ready in 15 minutes • Serves 2 2 eggs 75ml whole milk 2 hot cross buns, halved 1 tbsp unsalted butter Icing sugar, to dust Seasonal fruit (we used oven-roasted figs) Crème fraîche, to serve Runny honey, for drizzling over

1 Whisk together the eggs, milk and a pinch of salt in a bowl. Put the hot cross bun halves in a shallow dish, and pour over the egg mixture. Leave to soak for a minute, then turn the buns over and soak for 1 minute more. 2 Put the butter in a large frying pan over a medium heat. When it starts to foam, put the buns in

the pan. Cook for 1-2 minutes on each side, until golden brown. 3 Transfer to 2 plates. Dust with icing sugar, then top with the fruit, a dollop of crème fraîche and a drizzle of honey.
