These relate how to cook and adapt local ingredients till they become the masterpiece recipes which are descended from generation to generation. HOUSE determines to introduce cuisines with traditional Issan northeastern part of thailand flavor in order that customers could perceive and deeply understand the relativity between Issan way of life and folk wisdom. The people of Issan “commonly grow plants that yield fruits or the elements can be used for foods and they eat all crops that they can grow.” Their backyard is compared as prime food source of the household which means traditional Issan cuisine is composed of local ingredients that can easily be found in the area. According to Buddhism’s dogma, one of an important Issan belief is “adequate production so as to consume and distribute the leftover to family, friends, neighbors, and charities.” The most important ingredient that Issan people necessarily have in every Issan household is “fermented anchovy” which is created from their ancestors’ folk wisdom aiming for food preservation. Fermented anchovy and dried fish make of fish which are leftover from consumption in household or distribution to others in order to maintain long lifespan of food. Fermented anchovy is mostly used as seasoning in diversified traditional Issan cuisines such as soup, chili sauces; similarly to using of fish sauce to season foods in Central region of Thailand. The outstanding flavor of traditional Issan cuisine is salty flavor from fermented fish sauce; spicy flavor from fresh chili; sour flavor from local vegetables such as tamarind, olive, etc. Most Issan traditional foods are dry or compose of little soup which is commonly season with fermented anchovy. Coconut milk is not so famous to utilize as in other Thai regions.
