Welcome to the first edition of Elegance Magazine My intention is to bring you a blend of interesting lifestyle and entertainment features together with some of the finest properties available in the North and North West London area. Incredible Spiceman In a career spanning almost 40 years, an appetite for progression has kept Cyrus Todiwala at the forefront of London’s culinary scene. The chef talks to Colm O’Rourke about how his distinctive approach to food has seasoned.

When did you first have an ambition to work as a chef? How did that idea develop? I had no clue. The idea of making it a career never occurred. I was selected by the Taj Mahal Hotel in Bombay to come and work for them. When I started, there wasn’t much in the way of ambition. That gradually happened as I aspired to be different and rise. Why were your parents against your desire to become a chef? My parents didn’t know or understand the industry. They’d have preferred me to have a more sought-after career; after all, the son of a popular man in Bombay was becoming a domestic hand, as it was seen in those days. Dad hoped I’d join him and open a garage, but he did cars and I did food. Where did you gain your experience and qualifications? I did a Diploma in Hotel Administration and Food Technology. My main experience came at a hotel chain for fifteen years; I was trained by traditional

and foreign chefs. I also trained in Geneva and the Hilton Park Lane, and I spent a few weeks with French chefs. Later, when working in Goa, I decided I had to relearn Indian food, as that was where my passion ought to lie. You worked around the world before coming to London in 1991. How did the move to the UK arise? I left the Taj Group to open a restaurant with a friend. I then migrated to Australia; in the meantime, a friend who lived in London asked if I’d join him and start a restaurant. Having worked here before, and with so many cousins and relatives, we decided to come over. What did you know about London’s culinary scene when you first arrived? I knew nothing at the time. When I first entered the kitchen at Namaste, I had to learn and cook the British version of Indian cuisine until I was ready to put my own imprint on the menu. I hated it, but it was expected, and until I managed to wean habits away, I couldn’t do anything.

One of your newest restaurants fuses Goan and Portuguese cuisine. Where did the idea for this come from? Working in Goa for eight years gave me a deep passion for its food and culture. Speaking the language fluently, and knowing many Goans, it was a good idea to introduce Goan cuisine to Central London. Three years ago, I was asked to do a documentary on the Portuguese exploration of discovering the modern world. Therefore, it had to be Goan food, partly influenced by the Portuguese. Television work has become part of your life. How did this strand of your career come about? I made my first TV recording sometime in 1996. I have never pushed myself in that direction, and I think I never will. I love doing it though, and I’d really like my own programme so I could teach the British public simple things to make. Cooking is still my career, and of late, TV has added to that. How did it feel bringing Asian cuisine to a mainstream audience with “The Incredible Spicemen”? Have you received any recognition for the series? This was amazing, and such fun to do. Tony, my partner in crime, is full of life, and is fun to work with. Our audience grew with each episode, so that’s recognition. That the BBC may not do another series is a disappointment.

Are there any upcoming events or projects you’re taking part in? In January 2015, I’m taking a talented team to Goa to launch a food festival showcasing British cuisine, to encourage the budding chefs there to embrace their own cuisine. We’ll invite Indian chefs to question our team and be inspired. There’s a full day of cookery demonstrations, and on the final day, a gala fundraising dinner to help sustain educational and environmental projects in Goa. This hasn’t been done before in a place I love, but I know I can make it a big success. It will be great to add value to both cultures. With all you’ve achieved in your professional career, where would you like to go next? Wherever it takes me really. When I told Mum and Dad before leaving India we would return in seven years, Dad told me two things: do not regret leaving us, go where your destiny takes you; and secondly, you have no control on your destiny, a greater power decides where you go and what you do. In time, I truly believed his words. Do I know where my career will take me next? No - but will I continue to embrace the good things we believe in, to that, the answer is yes!

GREATINWAR COSTUME As Britain marks exactly 100 years since the outbreak of the First World War; an event that is still so prominent in our history and culture, Gemma Rose looks back at how it affected women and fashion.

s events take place up and down the country from Downing Street to Blackpool Tower to commemorate and educate people about the cause and consequence of the Great War, we are reminded just how much of a turning point the years 1914 to 1918 were for British society. In Liège, 50 Heads of State gathered for a service to mark the invasion of Belgium, at which French President François Hollande declared that “nothing was spared in Belgium.” Meanwhile, back on home soil, the Fashion Museum in Bath put on The Great War in Costume. The exhibition, which ran from July 19th to August 31st, focused on conflict and how that influenced the way women dressed. On show were examples of uniforms and civilian dress, as well as costumes from the ITV series ‘Downton Abbey’. Yvonne Hobbs, the co-curator of the exhibition, wanted to mark the centenary of World War One, as it is such a huge subject to tackle. She says: “We decided to concentrate on women’s roles in the war and how that affected what they wore. Having read Kate Adie’s book, Woman in the First World War, and several other books, I started putting a story together for the exhibition that touches on many aspects of the war, and how they related to women.”

There were 26 costumes in total, most of which came from the London costume houses of Angels and Cosprop, accompanied by an original wedding dress from the period that was loaned by Lucy Adlington, whose book Great War Fashion was a huge help in researching. Numerous items were also made especially for the exhibition, including a copy of the first patented bra, and an ammunition worker’s overalls. The event followed two years of careful planning.Yvonne explains: “Nikki Bonner [co-curator] joined me earlier this year. Normally my exhibitions are more costume centred, but this one has a lot more information and graphics. Nikki is a graphic designer and together we formulated the look and the content.” So, how exactly did women’s fashion change? Before the war, girls were wearing tightly laced corsetry that created a wasp waist and ‘monobosom’, and ankle length skirts. And after, comfortable and practical clothing were first choice, such as straighter and shorter dresses. Women who had to work in factories or farms, or carry out duties that involved climbing ladders, started wearing trousers; and undergarments became softer. Many women volunteered for service in uniform and joined the military, or enlisted in the nursing services and saw action abroad, as well as at home. More than a million others worked in factories, on buses and trains, or as policewomen and postwomen – anywhere that men’s work needed to be done because they had gone to fight. Without women, the Allies could not have won the war, even though the Suffragettes were still campaigning vocally to get the vote, and women still didn’t receive equal pay. Despite this, they did achieve a level of independence that they had not had before. Yvonne reveals how even though people were actively encouraged not to dress extravagantly, the girls did treat themselves to a few luxuries: “The newlywaged working girls liked to spend their money on things like silk stockings and make up, things they could previously not afford. They also made a lot of their own clothes; home dressmaking was very popular.”

Yvonne says: “I hired them [the costumes] from Cosprop who made them for the series, and what they demonstrate is that even in the highest echelons of British society, which ‘Downton’ represents, the structure of life was evolving. “One daughter became a nurse, one a land girl, the convalescent hospital and the assumed natural order of things began to change.” The only original piece in the exhibition was a rare and fragile wedding dress with an original wedding photograph of the bride and groom. Unfortunately, nothing is known about the couple. This year, it’s more important than ever to keep the stories of the First World War very much in our memories, and The Great War in Costume has been just one way, not to depress, but to inform and educate people of all ages about a period that helped shape the modern Britain that we live in today. They enjoyed an evening which featured a surprise video rendition of Bohemian Rhapsody performed by the Directors and Staff, and culminated with a performance from The Voice finalist Moni Tivony. The Palm Court was specially decorated for the night with banners, pictures of all the branches past and present, MG Minis and a display of Martyn Gerrard sold boards from the past five decades. Martyn, Simon and their wives arrived at the event in a London Taxi decorated in the Martyn Gerrard livery.

Price starts at £239,736. sit, reminisce, and reflect on what has been a truly mind-blowing experience. For many years I have been blessed with the privilege of driving many supercars, but never has one impressed me as much as this. Our last Ferrari test was the fabulous 458 Spider, and having spent hundreds of miles previously behind the wheel of the hard topped version, the Italia, I found it hard to imagine how it was possible to beat that car on sheer ability. The Ferrari spokesperson’s response to this conclusion was: “Ah, but wait until you try the F12.” He was right – the bar has been raised again. The F12 is powered by a 730 bhp V12, without doubt the most beautiful engine I have ever seen. It generates 690 Nm of torque, or loosely put, it has about seven times more pick up power on the move than an average family saloon. 0-62 mph is achieved in 3.1 seconds, and it is only too eager to reach its 211 mph top speed. To give you some idea of the levels we are talking about here – you can comfortably change from first to second at 60 mph (or even more) with another five more dual-clutch Usain Bolts just waiting for a flick of the paddle.

Ultimate driveability Yet the driveability of this car is even more impressive than its staggering performance. On our test drive, the rain was falling in buckets and showed no sign of letting up. In fact, my young photographer and passenger for the day had a positively sullen look on his face. He wasn’t worried about the pictures; they were already done – no, his disappointment lay in the prospect that the incessant rain was going to take the edge off his dream drive in a Ferrari. But he was wrong; for in his

own words the rain enhanced the excitement of the drive, and showed the exceptional abilities of this car in a way that otherwise may not have been possible. Being young, he had it all film recorded on his mobile phone, and according to his mates, he has spoken about nothing else since. And he owns a Nissan Skyline. The F12 is as engaging at 40 mph as it is at 70 mph, and how it manages to contain 730 bhp into such a manageable and safe-handling package is simply incredible. Although this style can only be advocated for track, not road, this car is so well-sorted that you can slide the rear end to any predictable angle you like in the wet, for it gives you enough confidence to ease it back into line without fuss or drama. And yet, such is the prodigious power of the F12 that it is capable of breaking rear end traction in any of the intermediate gears on a dry straight road. The genius of the F12 is the marrying of the two extremes. Engineers need look no further for a solution to containing 730 bhp into a road car; the answer is the Ferrari F12. “We’re going to fly” Nothing quite prepares you for the searing standing-start acceleration of the F12. It’s razor keen and raw from the outset. The V12, howling to be released, screams in orgasmic joy as you plant that throttle. Take sex out of the equation and think of the last time you were taxi-ing in an aeroplane on a runway, the pilot applies full power for take-off, and you get that surging push in the back. Well, multiply that force by three and that’s how it feels to be seated in an F12 under hard acceleration. In the words of my passenger, with both hands clutching the side of his seat and the rocket– like acceleration seeming to never end: ‘It feels like we’re going to fly.”

Aero-genius But probably not, for ingenious aerodynamic innovations keep the car rooted to the ground. The F12 has a drag coefficient of 0.299, and generates 123 kg of downforce at 200 km/h. The ‘Aero Bridge’ design concept uses the car’s bonnet to create downforce, and Active Brake Cooling automatically opens spoiler-integrated air vents to cool the brakes. Not surprisingly, the state-of-the-art technology in the F12 is endless, yet its mathematical genesis is simple: less weight, more power. The F12’s space-frame chassis and bodywork are completely new, and it uses 12 different aluminium alloys to contribute to getting the weight down to just 1,525 kg, whilst boosting torsional rigidity by 20%. The F12’s bloodline predecessor, the 599 GTB Fiorano, is a 1688 kg heavyweight by comparison, and the F12 betters its fuel consumption and emission levels by 30%. The human factor It may be a tired cliché when it comes to Ferraris, but this car simply oozes passion, beauty and style. We couldn’t park the car for two minutes without it attracting a crowd. On one occasion, when parking up for photography, a car drives up to us, and the driver says: “I know nothing about cars, I haven’t a clue what that is, but all I can say is that it’s the most beautiful car I have ever seen.” Ferraris reach out to your soul. On two occasions, after a couple of women blew kisses to me, I thought just how lucky Ferrari are to have someone as good looking as me behind the wheel; Ferraris even bring out inflated egos.

Best not to self-delude behind the wheel though, as being one of the fastest cars on the planet, the F12 demands a responsible approach. While the antics described earlier show F12 genius on the test track, it doesn’t mean the F12 cannot be enjoyed within legal limits on the road. It is truly enjoyable and rewarding to drive at any speed and, for those who choose to, it has the usability and reliability of every day transport. Yes, there’s a seven year warranty even with Ferraris these days (and a decent sized boot). Taking into account that this car has the true ability to be a World Grand Master of performance, yet is equally at home on the office run, both redefines and justifies the place of the supercar in today’s world. What an achievement.

Famously doubling as Hogwarts School of Witchcraft and Wizardry in the ‘Harry Potter’ films, and currently being utilised by the cast of ITV’s ‘Downton Abbey’, Antony Sore takes a look inside this iconic building.

A

s family homes go, Alnwick Castle is quite an impressive dwelling. Occupied by the illustrious Percy family for over 700 years, the current Duke of Northumberland, Ralph Percy opens his home to the public for seven months of the year; while the Duchess has overseen the establishment of the adjacent Alnwick Garden and its famous poison garden. Being instantly recognisable as the school of Harry Potter, has led to an increase in public interest - Alnwick currently boasts visitor numbers in excess of 800,000 per year. The castle itself dates back to Norman times, encapsulated by the dog-tooth chevron patterns that can be seen on the inner courtyard archway. Originally built to protect England’s border from Scottish forces, the castle guards a road across the River Aln, and would have been surrounded by a moat filled with sharpened stakes and logs to defend from cavalry attack.

Nowadays however, the castle houses special exhibitions in three of the castle’s perimeter towers, including the Northumberland Fusiliers museum and the Percy Tenantry Volunteers exhibition. The extravagant State Rooms are decorated in an Italian Renaissance style, and offer one of the country’s finest private art collections, amassed over the years by generations of the Percy family, of whom many were passionate in their love of art. The drawing room boasts a remarkable ceiling carving and frieze, painted and designed by the Italian artist Alessandro Mantovani; while the 17th century Cucci cabinets were originally made for Louis XIV and boast fine detailing that has been expertly restored - featuring monkeys and dogs amongst other decorations.

The castle also contains the finest collection of Italian paintings in the north of England, including work by Canaletto, Titian and Van Dyck – the Flemish Baroque artist who became the leading court painter in England following great success in Italy and his native Flanders. Van Dyck’s portrait of the 10th Earl of Northumberland sits proudly amongst the home-grown work of Turner and William Dobson, one of the first notable English painters. The magnificent library contains one of the most important collections of books and manuscripts currently in private hands; with around 14,000 titles housed in floor to ceiling bookshelves. Built over many centuries by successive Earls and Dukes, the original collection was compiled by the 9th Earl, who having been imprisoned in the Tower of London as a conspirator in the Gunpowder Plot, had a large library placed in his cell, consisting mainly of Italian books, including those by Tasso and Machiavelli. As an interesting side note, while in the Tower, ‘The Wizard Earl’ surrounded himself with men of learning, including the astronomer Thomas Harriot and Sir Walter Raleigh, with whom he discussed advanced scientific ideas and smoked tobacco.

An enormous mahogany table extends to over 33 feet in length and dominates the dining room where the 19th century family silver stands proudly on display – dinner at Alnwick is not a mundane affair. Offering a stunning insight into the lives of the Duke and his family, the medieval banqueting hall features stunning emerald green silked walls, and was refurbished in 2005, which included the restoration of the stunning Italian marble chimney piece figures, carved by sculptors Nucci and Strazza. Other rooms that are open to the public include the china gallery, which retains one of the most important collections of Meissen porcelain in Britain; the Guard Chambers with their Venetian style mosaic floor; the breakfast room; the saloon; and the Chapel, with its 17th century tapestries and Gothic ceiling.

As well as being a family home and a tourist attraction, in recent years the castle has provided the backdrop for some of film and television’s most iconic scenes. The opening credits to the original ‘Blackadder’ series see Edmund riding his steed in front of the fortress; while Kevin Costner’s ‘Robin Hood Prince of Thieves’, and ‘Elizabeth’ starring Cate Blanchett are also notable films that were shot in the ancient surroundings. A Royal Retreat The 5 star Grand Luxe Villa Padierna Palace sits in the hills of Marbella: a magnificent Palladian splendour in the style of a Tuscan palace that whispers rather than shouts. Created by Englishman Edward Gilbert, architect and master-builder, together with his patron Riccardo Arranz de Miguel, their renaissance collaboration is reminiscent of the Medicis. The hotel draws its exclusive clientele from all parts of the globe, gravitating towards sophisticated grown-ups and romantics young and old, although there are smatterings of well-behaved children with their parents during the school holidays. Keeping up to Par It is unashamedly a golfer’s resort, with the Flamingos Club leading directly down from the terraces of the hotel. Buggies whizz past on the velvety green that is literally on the doorstep. There’s an odd fascination having breakfast at La Loggia, sipping orange juice whilst watching golfers practising their putts in their primary coloured gear, in contrast to the tranquil stillness of the undulating plains surrounding the silky lake, no doubt full of misguided balls –18 holes, Par 71 men’s handicap 27, women’s 34. The Alferini Club –18 holes, par 73, is much more challenging: suited to top amateurs and professionals. Although the handicaps are stated as

the same as the Flamingos, you would be kidding yourself if you weren’t nearer to scratch. Tramores Club is ideal for beginners and good for practice. A shorter course, Par 63/65, ups the handicap to 48 for both men and women. If you really want to perfect your game, there’s the Villa Padierna Michael Campbell Golf Academy, where the 2005 US Open Champion offers a comprehensive support system for aspiring tour professionals of all ages. The hotel has an hourly shuttle service to its own private beach, Club de Mar: a broad sandy coastal stretch with comfortable loungers, all the trimmings and an excellent bar-restaurant. We are staying in a sumptuous Junior Suite, with a luxurious marble bathroom overlooking the Flamingos golf course. The rooms are furnished in a classical style, with original art and antiques from the owner’s private collection; the hotel boasts 1200 exquisite pieces throughout. I am having the Michelle Obama treatment: a delicious two hour gourmet facial with masks – strawberry, truffle, caviar and collagen. Finally, a high-frequency wand slips over the nooks and crevices of the skin, tightening and lifting the face and neck. Nuptials For exchanging wedding vows, the VP’s Romanesque Amphitheatre is perfectly sited next to the stupendous ballroom that can accommodate a banquet for 500 guests. enerally, I would suggest that you get a marketing appraisal for your home from three estate agents. Here are some pointers to how you should choose those three.

KNOWLEDGE AND PROFESSIONALISM It really is ver y impor tant that you consult a qualified professional; many agents are not qualified or regulated. Members of the National Association of Estate Agents (NAEA) are governed by strict rules of conduct and maintain high professional standards. To become a member of the NAEA, the agent must demonstrate good knowledge of the legal process, general proper ty construction and agency practice.

Introducing the right buyer is only par t of the process.The knowledge, advice and help in shepherding a sale through to a successful completion is an impor tant facet that you gain from using a member agent of the NAEA. So make sure you look for the logo.

DIGITAL MARKETING

MARKET REACH Another important aspect is how many potential buyers the agent can put your property in front of. After all, the more people that see it, the better your chance of achieving the best possible price. You should look at what web portals the agent is on and how their properties are presented. It has been shown that buyers generally look more at the larger adverts with more pictures and videos. The better agents will apply search engine optimisation of their own website as well as the properties advertised to attract more property searches. However, remember online is only par t of the story. Some agents may rely solely on internet adver tising. A good agent will carry out far more marketing to attract even more buyers.
