800 years of evolution, a decade of revolution Once upon a time, in 1191, drinking of green tea (and matcha) was introduced in Japan by the Zen master Eisai, who was seeding tea plants while travelling the country. In his book Kissa Yojoki he wrote: “Tea is an unrivalled natural medicine for body and soul. Wherever the tea starts to grow, long life follows.”

How does matcha taste? Its taste is strong and plant-like one – some would say it resembles spinach, others grass and similar to umami (the fifth taste). The taste depends on the origin and the grade of the green tea. The quality of tea used for production of Matcha Tea is crucial, since there are many low-quality imitations of the genuine Japanese matcha.

Matcha is 100% pure green tea. Dried pulp of the youngest tea leaves is milled to a very fine powder. In production of matcha, there is no fermentation involved, no colouring, no additives or preservatives added.

All teas descend from the same plant, Thea (formerly Camellia) sinensis, related to camellia flower. A wooden shrub is usually kept one-meter high, in a suitable height for easy harvest. The tea plant is a natural source of origin of white, green, oolong, black or pu-erh tea, depending on a specific variety, region and production process.

DESCRIPTION Matcha, finely milled green tea (Camellia Sinensis) from Japan in organic quality, ceremonial grade. Packed in a sealed tin. CONTENT 100% matcha (Camellia Sinensis) Country of origin: Japan DIRECTIONS TO USE 1. Preheat the matcha bowl (chawan) – fill it with hot water about 1/3 full. Then place the bamboo whisk (chasen) facing down into the hot water to wet the tips of prongs. Once chawan is thoroughly preheated, pour out the water and dry it out preferably with a cloth such as a chakin. Measure out 70 ml of water for usucha / 40 ml for koicha into a measuring cup and leave it to cool. 2. Use the bamboo scoop (chashaku) to measure matcha (2 scoops for usucha, 3-4 scoops for koicha), and place it into chawan. 3. Once the water’s temperature drops to 70 °C, pour it into chawan. 4. Take chasen in one hand and hold the rim of chawan with your other hand. For usucha, whisk matcha briskly in the “M” motion using your wrist until matcha has a thick froth with many tiny bubbles on its surface. and a gentle 360° rotating action can be used to make a thick consistency. The resulting tea should be reasonably thick, smooth and without froth. BIO Matcha Tea Ceremony can be prepared also in the modern way in a shaker either as a cold or hot beverage.
