Why Chemex? It’s all about the taste: soft, clean and free from bitterness. In fact, it’s one of the most efficient ways to extract flavour from your beans. Actually, there’s one other very good reason to choose Chemex: the wooden collar and leather tie look fantastic, and will have customers talking. Especially if you use our Hario Drip kettle (DKETTLE) to perfectly control pouring the hot water.

Use 30g of ground coffee (medium grind) for two 10floz/500ml cups

Rinse the cups and filter paper with some hot water

Use hot, but not boiling water (500g)

Pre-pour a little water to saturate the grounds and allow the coffee just to bloom

Do an even spiral pour from the centre to the edges – make sure all the grounds are covered so the extraction is even

It’s pitched at beginners in a relaxed atmosphere and delivered by skilled trainers experienced in food service environments where speed and quality are essential.

This half day class is designed for baristas who already work in a coffee shop environment but want to improve their milk texturing techniques and deliver amazing latte art effortlessly. The focus of this intensive hands-on class is simply milk.

Whatever your coffee knowledge, you’ll learn practical skills. How to: • Make all the key drinks in a basic coffee menu • Steam milk • Maintain and keep your equipment clean Coupled with the practical side of the class, we will give you key background information on coffee, roasting and the importance of freshness and consistency to give you the confidence to get started. This class is designed for head baristas, supervisors and managers with great coffee and milk skills and a genuine passion for the black stuff. Those who have the heavy responsibility for carrying out coffee quality checks, equipment cleanliness and for passing on their skills by training staff to respect coffee and the hardware. Training doesn’t come easy to everyone and this class will help to stop you becoming a monster with a clipboard. The focus is still on coffee, but the training techniques you will learn will help you to train effectively in other areas of your business too. Sol y Café, Peru

The Kopakama coffee co-operative on the shores of Lake Kivu has achieved a great deal since the genocide in 1994. Not only has the group secured electricity and gravity-fed water to serve the community, they have also used Fairtrade contributions to purchase land for hundreds of female farmers, many of whom were widowed during the violence and had struggled to earn a living.

German Silva Vasquez farms his coffee on 5 hectares of land. He has used Fairtrade Premiums to help increase yields from his farm to generate additional household income. He has also invested in new drying facilities to increase the quality of his coffee and boost his farm’s income.
