Contents The grey days and dark nights are over – and for now, at least, it’s all about cold drinks and long days in the park. Which is just as well, because we’ve got 12 seasonal drinks recipes to shake up your summer menu. There are six classics, and six brand new ones – try peach & passion fruit frappe for big, tangy flavours or the Lotus Biscoff frappe for a spot of indulgence. We’ve got plenty of healthier choices for the season too. Add two sugar-free syrups to your arsenal, and matcha tea to your vocabulary.

Brewing Guide

The cold brew process creates a perfectly balanced and distinctively smooth cup of coffee – served steaming hot or iced cold. For the best flavour, start with coarsely ground coffee beans (fresh roasted is best) and filtered water. Ingredients 340g coarsely ground single origin coffee, 1.65 litres cold water 1. Preparation • Insert stopper, dampen the filter and insert into bottom of brewing container • Add 235ml of water to container, then add 170g of ground coffee • Slowly pour 710ml of water over the grounds in a circular motion • Add remaining 170g of ground coffee and wait 5 minutes • Slowly add remaining 710ml of water – DO NOT STIR – lightly press down top grounds with the back of a spoon to ensure all grounds are wet 46

2. Brew • Leave to steep for 12 to 24 hours to create a smooth, rich flavour 3. Filter • Remove stopper and let the coffee concentrate flow into the glass decanter • Keep refrigerated for up to 2 weeks

6. When the water sinks to about half way through the paper filter, do another big pour covering all the grounds. This helps agitate the grounds and leads to a uniform extraction

6. Turn AeroPress over quickly onto a pre-heated cup or brew bar

2. Assemble AeroPress (don’t fit the filter just yet)

3. Use hot, but not boiling water

4. Stir and leave for 30-60 seconds

5. Do a big pour – make sure all the grounds are covered so the extraction is even

7. Remove the cup when it’s 1½ cm away from being full. There may still be coffee coming through, but you should stop the extraction
