From the Editor Our theme this time being marine conservation, I found myself leafing through an antiquated copy of Mrs. Beeton’s Cookery Book for some fishy nostalgia. Plenty of fish, here I thought – how to give explicit instructions to the servants to fillet, prepare, bake, broil, fry, preserve and make pies from salmon, smelts, brown trout, eels, dorys, ling, turbot and flounder with sole and herring recommended for ‘invalids’. The many recipes seemed adaptable for the modern cook to try except for curious suggestions like ‘wash the fish with permanganate of potash’ (I’ll Google that later) and how one must skin sole from tail to

head but whiting head to tail. Foodie magazines contain relevant advertisements, but not usually hard backed books, so I found myself engrossed and fascinated by the crudely drawn adverts throughout – some familiar companies, some long gone. On closer scrutiny I was amused and alarmed by some of their claims – Vaseline would ‘heal all skin affections and relieve rheumatism and neuralgia’. We are urged to buy Oakey’s Black Lead for beautifying stoves and grates at 6d a bottle. Another boasts a non mercurial soap for polishing the silver. (bless the poor souls forced to use the other kind). Atora Suet – we all know that one for making delicious puds. But mixing with warm milk for ‘consumptive invalids and delicate children’? Really?

We are encouraged to change our oil fired cookers to the New Gas variety and buy cast iron cooking utensils described as ‘Strong, clean, quick and economical, the very qualities of the faithful servant, and like good servants they keep their places without a murmur for 10, 20, 30 or even 50 years’ – procurable at all ironmongers. Well, at this point I felt quite sombre, and thankful for our modern day health and safety and employment practices. Quaint names made me smile though, ‘The Patent Coal Mantle Co’ and ‘Real turtle soup containing pure extract of selected West Indian Turtles’ – Ready to Serve! The preface extols the virtue of Mrs. B as guide, philosopher and friend of countless housekeepers, rescuing them from perplexity and woe, and quotes Sir Arthur Conan Doyle as saying ‘Mrs Beeton must have been the finest housekeeper, therefore Mr. Beeton the happiest and most comfortable man’. My, how times have changed girls. As I pondered about lessons on trussing, making peptonised gruel, cow’s heel soup, stuffed sucking pigs feet and ingredients requiring 2 dozen larks (aw) I popped this interesting tome back into its slot in the bookcase

and nipped out to the chippie for a cod supper, hoping it was sustainably sourced, and thankful that attitudes have changed, many for the better.

Save our sealife Wendy Greene looks at our lovely Sussex coast and how we can preserve it a quick profit today with no thought for the future. The whole industry has become very political with ever-crazier EU rules and, some claim, other nations seemingly allowed to take vast amounts of fish from our waters. Quotas have led to the practice of discard, where fish have been returned to the sea, often dead, because the quota has been exceeded. Happily, in

Sussex has 285 kilometres of coastline, and many of us probably take it for granted – especially the state of its health. Recent studies have shown, however, that unless positive action is taken, we may lose the fish we eat and the marine life that feeds it and cleanses the water. Our coastline has magnificent chalk cliffs in the east, wonderful little inlets and harbours in the west and in between sand dunes, shingle beaches, rock pools and plenty of safe bathing beaches. There are piers, amusements, promenades, bandstands and cycle lanes. Sports include yachting, water-skiing, windsurfing and diving. Sussex is a kite-surfer’s paradise, with kitesurf schools and competitions gaining popularity.

You can buy fresh fish and seafood from local fishermen or eat it in local restaurants. Some celebrate the harvest from the sea with events such as Rye’s Scallop Festival which takes place in February. Samphire and other edible shoreline plants thrive but few people choose to eat them now. We’ve given you a local recipe on our Book Page – see page 13

A fishy problem Fishing has always been an important way of life in Sussex, from anglers on piers or beaches to trawlermen - with many fishermen still braving the waves in small boats. All of them should care about our fish stocks and seabeds and most do. Sadly some only want

4 ing r a C The dilemma DEFRA published, in 2011, recommendations for 127 Marine Conservation Zones around the coastline of England and Wales, though the Government’s 2013 list has named only 31 zones. Despite consultation with representatives from all marine sectors, there are some fishermen who are still not in favour of MCZs, claiming they will be forced to move from their regular sites into areas fished by other crews, thus putting them in competition. Others worry about abuse of regulations. However, where areas have been conserved, not only do fish stocks increase within them, but also in the surrounding areas as new populations spread. The Wildlife Trusts say, “Marine Conservation Zones, when combined in a network with European Marine Sites and protected sites from the other devolved countries, would provide effective and meaningful protection for our marine environment.”

Keeping it clean “Litter is swamping our oceans and is washing up on beaches. It kills wildlife, looks disgusting, is a hazard to our health and costs millions to clear up.” This is The Marine Conservation Society’s message to coastal dwellers, marinebased industries and holidaymakers alike. Recent beach surveys have shown there are two pieces of litter for every footstep on the beach. Items found in recent clean-up sessions in the Worthing area alone include food wrappers and plastic bags, bottles, cans, pieces of fishing net and rope, builders’ rubbish and glass, nappies and unpleasant, often dangerous clinical items.

Apart from the hazard to humans who picnic or bathe on the beach, the rubbish, especially plastic, can be swallowed by sea creatures who think it’s food, leading to death from starvation. This plastic never biodegrades, it merely breaks into small pieces. Some litter comes from fishing activities and shipping, but much more comes from beach users – happy to bring a picnic in a plastic bag, but not willing to use that bag to take rubbish home for safe disposal – and from sewage pipes full of items that should never have been flushed down the loo.

Plastic bags – the problem and some answers Plastic bags have become part of our lives, and try as we might to be rid of them, there are occasions when we’re hard pressed to find alternatives. Shops no longer use paper to wrap

goods, so unless we remember to take our own shopping bag wherever we go, there’s likely to be a time when we’ll be grateful for one – an unplanned purchase, or something that might spill onto other shopping. Many people use them instead of bin liners. Let’s face it, with the modern wheelie bin system, you can’t tip unwrapped rubbish in and then have to nose-dive once a week to clean the bin out. If you use newspaper, the goo soaks through. Carrying buckets of soapy water can be hazardous if you live in an upstairs flat or are not too steady on your feet. Groceries orders are delivered in numerous plastic bags labelled ‘freezer’, ‘fresh’ etc, or in boxes to be stored and returned. So unless supermarkets sell us woven, re-usable bags, we are probably likely to continue with plastic. Is it fair to put a levy on bags that are imposed on us?

Caring 4 B eache s Other hazards and developments Balloons and lanterns are just as dangerous, especially when released in bulk. It’s time to find another, less harmful party activity. Cosmetics containing plastic beads and granules are washed down our sinks and into the sea. A biodegradable substitute is needed. Some councils are moving away from landfill and into

other types of refuse disposal where plastic bags can’t blow away. Greater awareness and a little thought and effort from everyone can make a huge difference. For more information, visit www.mcsuk.org

Denise loved the fish cakes, saying, “They were deep and fluffy – full of big flakes of haddock, salmon and local white fish – and gently seasoned.” She also sampled the Thai Green Curry which was “authentic, mildly spiced, with British Welfare chicken, lemongrass, lime and aubergine.” Wendy had never tried Cullen Skink before but declared the thick fishy soup delicious. “My favourite was the fish pie,” she says. “It was made from locally caught fish in a creamy white sauce and topped with cheesy potato mash.” There seems to be something for all tastes on the menu. It’s probably a good idea to write down all your own preferences before you start, to make choosing easier. It’s tempting to let your heart rule your head once they look you in the eye, so practicalities must be taken into account. Why should the Local Authority get it all?” It pays to plan in advance, says Glenys Laws at CLS If you have to go into care and you have assets that total more than £23,250 (including the value of your home), you will have to fund your care in full. A care home could cost to £600£1,000 a week or more. The reality is that your children could end up with very little. Although care might seem only a distant possibility right now, there are important steps you should take now to protect your home.

Married Couples If you and your husband/wife currently have ‘Mirror Wills’ or ‘Joint Wills’ you risk leaving

your share of your home to your husband/wife for it simply to be swallowed up in care home fees. A legal trust arrangement within your Will could save your family tens of thousands of pounds and ensure your hard earned wealth passes to those you choose.

Leaving a Lasting Legacy Philip Lansberry, Director of Spofforths Private Client Services, explains that legacies are an ideal way of recognising valued relationships. The most common gifts in Wills are left to grandchildren, godchildren and to charity. These legacies can also benefit people who have played an important part in a person’s life. With some legacies there are particularly important points to consider. When leaving a gift to a carer, it should be made clear if it is to be paid only if the carer is still employed or if it is to be paid anyway, in recognition of their support. A legacy to an Executor is normally made contingent upon the Executor acting, so it will lapse if he doesn’t do so. Great care should be taken to secure the correct names and addresses of beneficiaries, particularly charities and to accurately describe pictures or jewellery. For those in a permanent relationship, if both decide to include legacies in their Wills, it is necessary to consider when the legacies are to be paid – on the death of the first to die, on the death of the survivor, or on death in whatever order that occurs. If a legatee passes away before the testator, the legacy will lapse but it could be drafted to pass on to another person. Bradshaw’s Handbook Published by Shire Publications Price £10.00 This collector’s item is a facsimile of the actual book – often referred to as ‘Bradshaw’s Guide’ – that inspired the Great British Railway Journeys television series, possibly the only surviving example of the 1863 edition. It is an exact copy with a removable belly-band. As a landmark in the history of the tour guide – a snapshot of Britain in the 1860s – Bradshaw’s Handbook deserves a place on the bookshelf of any traveller, railway enthusiast, historian or anglophile. Get fit among friends Motorcise is more like a Ladies’ Club than a gym

Sometimes you walk into a place you’ve never visited before and immediately feel comfortable. Motorcise in Haywards Heath is just such a place. Since being raised from the sea in 1982, Henry VIII’s warship has been continuously sprayed with preservatives. During the final phase of the hull’s conservation she can be seen in a ‘hotbox’, as up to 100 tons of water is removed from the ship’s timbers. It’s the only sixteenth century warship on display anywhere in the world and the brand new boat-shaped Museum built around her reunites her with

many of her 19,000 Tudor artefacts including shoes, musical instruments and nit combs – complete with 500 year old lice – as well as longbows and two tonne guns.
