Last month at the Salisbury International Women’s Day Breakfast, Marcela Lastra from Mawson Lakes was a guest speaker. She told us about the shift in her cultural awareness, from growing up in Chile where men were considered superior to women, to thriving in a culture in Australia where women have unlimited opportunity to achieve. Marcela is the 2019 City of Salisbury Citizen of the Year. Read her advice to women on page 12. Mother's Day is coming up next month, so MLL will publish a special feature on mothers. Without food The article on the food crisis facing the world in the January issue made me aware of food shortage. Then I saw the Netflix movie called 'The boy who harvested the wind' and I could understand the reality of famine much better. This movie is a touching true story about a family in Africa and how a little education can have a dramatic effect. It was released this year and I highly recommend it to anyone with an environmental conscience. - Firash
Clean up Mawson Lakes We are part of the Green Team in India so we were very pleased to help the Clean Up Mawson Lakes campaign in March. We have only been in Australia a short time and we don't know many people here or have any friends so we rely on Mawson Lakes Living to give us information on where to go and what’s happening in our new suburb.
Dangerous Footpaths Footpaths are no longer safe places for people on foot. The average walking pace is 6km/hour, but bicycles going much faster can now ride on footpaths. They charge up upon you without warning going so fast they cause fright. This year motorised scooters reaching 15km per hour are allowed on footpaths in the city. Then there are reckless oldies doing 10km on motorised buggies, I am becoming increasingly nervous as motorised vehicle take the spaces once reserved for safe foot passage. - Henry Gonet Theft warning If a parcel is delivered by Australia Post or courier and left at the front door be aware that it could be stolen. It happened to me last week during daylight hours. My advice is to have a safe place for deliveries. A big letterbox that is locked, an out of site location behind bushes or the side passage, but not exposed to passing traffic. I am now installing a security camera. - Scott from Shearwater Dog attacks Puppies are not born bad, but as a result of cruelty, mistreatment, neglect and poor handling they may grow into anti-social and aggressive dogs. At present a man is in hospital fighting for his life after a savage dog attack not far from Mawson Lakes. Whenever a dog attacks or injures a person or another dog, the owners should be charged, fined or jailed and then banned from ever owning a dog again. - Simon Aamot 4

Robots as human companions Hello, my name is Pepper. I’m a humanoid companion robot and I can recognise faces and read basic human emotions. I'm 1.2 metres tall and I have been designed to chat with humans in lighthearted conversation and answer their questions.
"My brain contains a high-performance processor with internet access. This creates a connection to a cloud service where speech is processed. When I speak I do not just deliver predefined texts. With my ability to learn, I answer each question individually." Humanoid robots are coming into schools, shops, airports, hotels and hospitals. Retirement villages and aged care homes are introducing robots to combat loneliness among residents. Pepper sings and dances, reminds residents of their schedules, or when to take medication. She is sweet and talkative and has become a much loved member of the communities where she lives because she taps into the instinct for human interaction. She is a product of the Fourth Industrial Revolution-4IR (see page 8). Her ability to detect emotion comes from artificial intelligence. The designers say that Pepper can bridge the gap between automation and customer centric interaction so that people feel they are being

The Fourth Industrial Revolution Each industrial revolution has changed the world. The First Industrial Revolution used water and steam power to mechanize production. The Second used electric power to create mass production. The Third used digital technologies that enabled us to go online to buy a product, make a payment, book a flight, watch a movie, listen to music, play a game etc.

Now a Fourth Industrial Revolution is marked by emerging technology breakthroughs in biotechnology, nanotechnology, the Internet of Things, the Industrial Internet of Things (IIoT), Blockchain, fifth-generation wireless technologies (5G), advanced manufacturing, 3D printing and autonomous vehicles. The term 4IR was coined in 2016 and is referred to as Industry 4.0 Here in Mawson Lakes researchers, scientists and engineers are pushing the frontiers of Industry 4.0. Professor Duncan Campbell, Head of Engineering at Uni SA and a resident of Mawson Lakes said the ability to collect vast amounts of data and the possibilities of billions of people connected by mobile devices, with unprecedented processing power, storage capacity, and access to knowledge, has resulted in an acceleration of unprecedented advances.

Mawson Lakes Industry Hub A new centre for advanced manufacturing is being set up on the Mawson Lakes campus of UniSA. The world-leading Industry Connections Hub (ICH) is a test lab that will give businesses hands-on access to the technologies that will shape the future of industry. Professor Emily Hilder, director of the Future Industries Institute at the Mawson Lakes campus, said the test lab involves the advanced automation of manufacturing. It is designed to provide small to medium enterprises and high-tech start-ups with otherwise-unattainable access to smart technologies known as Industry 4.0. This includes rapid prototyping facilities and a digital platform for precision design and visualisation. "We have the ability to create a ‘digital twin’ of a product – a near-real-time digital image of a physical object that helps improve its performance," said Prof Hilder.
Industry 4.0 is rapidly transforming the supply chains of the defence and space industries. The test lab is strategically located to leverage connections with Lockheed Martin, Saab Technologies Australia and the Defence Teaming Centre (DTC), all located within Technology Park. More than ninety per cent of SA's small to medium enterprises are family owned and produce specialised components. For such businesses with niche markets, access to digitisation of design, product innovation, and data acquisition throughout the production process can provide key competitive advantages. The test lab at Mawson Lakes is one of six being built around Australia with investment from state and federal governments. The project will help build an internationally competitive defence and space industry in Australia. Ed

NEW BUSINESS: Kitchen Smith opens in Mawson Lakes Every Saturday morning Liz and Bret O’Neill take their dogs for a long walk, then they treat themselves to a hearty breakfast at Kitchen Smith. "This is no ordinary cafe; the menu is modern, so too is the presentation," said Bret who was having trouble choosing between scrambled eggs with SA blue swimmer crabs, or the wholemeal ricotta hotcake with lemon curd and almonds, or eggs benedict with house made hollandaise. Owner, Alex Smith, said that everything is fresh and homemade including all the sauces that give each dish a flavour sparkle. All day breakfast is on offer, or there’s a large selection of brunch dishes. My order for lunch was 'The Dome’ an open sandwich packed full of smoked salmon, herbed cream cheese, with avocado on toasted organic rye and served with a sharp salad of cucumber,

asparagus, pickled, red onion and fried capers. It was a generous masterpiece of colour, freshness and flavour. Indoor and outdoor seating makes this a welcome spot to bring your dog. Or bring your mother on Mother's Day or sit down on Friday or Saturday over Easter. The cafe is open 7am to 3pm. Try the homemade juices and organic teas. My choice was the jungle juice made from watermelon, apple, pineapple and coconut water. I can recommend it. We’ve been waiting a long time for this," said Bret who is a local in Shoalhaven just over the railway bridge and close to Kitchen Smith. Ed

Citizen of the Year Guest speaker at the Salisbury International Women’s Day Breakfast was the Salisbury Citizen of the Year Marcela Lastra. She told the audience that she grew up in Chile in a "macho Latin American family" where women were expected to be good mothers and housewives and serve their husbands. She came to Australia when she was 4 and entered a whole new culture. "Australia is a land of opportunity for gender equity and I chose a career path in hairdressing that has taken me around the world to train women in slums to cut hair, thereby giving them a livelihood." Her message is "Think Big" and always say "YES".

Keeping Mawson Lakes beautiful A mud covered patio table, an old bicycle, a tyre and a shopping trolley were some of the slimy items pulled out of Dry Creek when a band of 30 volunteers got their hands dirty on Clean up Australia Day on 3 March at Mawson Lakes. By far the most rubbish came from food packaging and drink cups/cans and cigarette butts that littered the walkways and hid in the bushes.

Autumn Trees Deciduous trees might lose their leaves during autumn, but they sure go out in a blaze of glory. Many trees change colour as the temperatures go down, and the glowing shades can be amazing. It’s true the colours tend to be more intense in cold climates, but Mawson Lakes doesn’t disappoint. Our trees put on an excellent display, but why do leaves change colour in autumn? Green leaves are filled with chlorophyll that turns sunlight into sugars and this gives leaves their green colour. But as the sunlight diminishes the trees take all the food they can from the leaves, and the green pigment is broken down into colourless compounds. Anzac Biscuits Anzac Day is Thursday 25 April During the First World War families baked biscuits to send to their loved ones overseas. This recipe is based on a traditional Scottish oat cake recipe. ANZAC biscuits (previously known simply as soldier's biscuits) were made from readily available ingredients with the addition of golden syrup to keep them moist and preserve them on their long journey. INGREDIENTS 1 cup plain flour 1 cup rolled oats 2/3 cup desiccated coconut 3/4 cup sugar 125g butter 3 tablespoons golden syrup 1/2 teaspoon bi-carb soda 2 tablespoons boiling water
METHOD 1. Mix together flour, sugar, coconut and rolled oats. 2. Combine melted butter and golden syrup. 3. Dissolve baking soda in boiling water and add to butter and syrup mixture. 4. Make a well in the centre of the flour mix and pour in the liquid. Stir until combined. 5. Roll spoonfuls into small balls and place 5cm apart on a lined tray. Bake in a preheated oven for 15-20 minutes at 160 degrees.

Melt butter in a sauce pan, add onions and sauté on medium heat for 1-2 minutes, add pistachio nuts and sauté a further minute before adding the crumbs, lemon zest, cranberries and sage, season with salt and pepper, stir well and set aside. 3.Rinse chicken under cold water and dry with a kitchen towel. Season the inside of the chicken with salt and pepper, a sprinkle of paprika, rub the outside with oil and season with salt, pepper and paprika. 4. Gently separate the skin from the breast at the cavity end of the chicken (not the neck end). Place the stuffing under the skin. Fill chicken with remaining stuffing.

Bake at 180°c for 9-11 minutes or until set and edges are lightly browned. Cool on a wire rack. In a large bowl, beat cream cheese and remaining sugar until smooth. Beat in orange juice and vanilla. Fold in beaten cream. Spread over crust. In a microwave-safe bowl, heat blueberry jam on high for 15-20 seconds or until warmed; gently stir in blueberries. Spoon over filling. Refrigerate until serving.

180 gms white cooking chocolate 2 cups thickened cream 1 tbs sugar 1 tsp vanilla essence 1 tbs hot water 1 1/2 tsp gelatine powder
METHOD
Place all ingredients, except water and gelatine, in a saucepan over medium heat until chocolate has melted. Place hot water in small bowl, sprinkle gelatine over and stir until dissolved. Combine with chocolate mixture. Add a few drops of red food colouring, mixing until you get an even pink colour. Pour into 6-8 small ramekins or glasses and set in fridge 4 hours. Next top with whipped cream. If desired, top with sprinkles. Serve or store in the refrigerator to serve later in the day.
Lemon Baked Cheesecake INGREDIENTS
125g butter, melted 250g crushed sweet biscuits 500g cream cheese 200g castor sugar 1 tablespoon cornflour 3 eggs 2 tablespoons lemon juice Pinch of salt 2 cups sour cream

METHOD
1. Preheat oven to 180C (160C fan forced). 2. Line base of tin with baking paper 3. Crush biscuits in a food processor. Add butter and mix together. 4. Press crumb mixture into base of 22cm tin. 5. Beat cream cheese and sugar in an electric mixer until smooth. 6. Beat in cornflour, then add eggs one at a time, beating each time just until smooth. 7. Add lemon juice and salt. 8. Add sour cream and beat briefly to combine. 9. Pour batter into tin and bake for 50 minutes 10. Cool completely in tin on a wire rack and refrigerate for several hours or overnight before serving.
5 TIPS FOR A PERFECT CHEESECAKE When you’ve got the know-how it's easy to make a fabulous looking cheesecake. Follow these tips: 1. Plan ahead Take the cream cheese out of the fridge at least 30 minutes before use so it's soft, easy to work with and you won’t get lumps in your cheesecake. 2. Build a perfect base Use a drinking glass to tightly press the biscuit mix into a straight sided dish. Chill in the fridge until firm before adding filling. 3. Don’t overtake If a cheesecake bakes for too long or at too high a temperature, it will be dry and the surface will brown and crack. It’s cooked if you gently shake the pan and the filling has a slight wobble in the centre. 4. Avoid cracking If you remove the baked cheesecake from the oven suddenly it can crack, so turn off the oven, leave to door ajar and rest your creation in the oven to cool completely, then chill it in the fridge. 5. Cut clean Cheesecakes can be messy to cut, so select a long-bladed knife, run it under very hot water and wipe dry. Cut the cheesecake in half, then in quarters, then slices. Rinse the knife after each cut and work quickly while the knife is hot and clean.

Doggie Daycare by Nigella When Sacha’s mum goes to work, Sacha goes to doggie daycare.
others choose to have dogs instead of children; and others give their hearts to a dog once their own children have grown up and left home. That's my mummy.
We were playing together at my place on the weekend so I checked out a dog's view of doggie daycare.
All my pet friends are part of their family and their parents think nothing of spending big bucks on them.
"I love it," said Sasha. "We play in the sandpits (see photo) and on the swings and ropes, and when it's hot we play water games. In the afternoons I like a nap so I just curl up on my favourite leather chair and snooze in the air conditioning." "I’m an only girl and my mummy adores me but she worries that I will be lonely and bored at home all day by myself so she drops me off at 8.30 in the morning and picks me up around 5.
Sasha reckons that doggie daycare is for a dog what preschool is for a kid . . . and costs about as much. She goes to daycare two days a week and it costs around $37 per day. Some centres charge up to $45, and if a pet taxi is needed the bill goes up. Or maybe a shampoo and groom... "We follow a daily routine and carers insist on good manners," said Sasha. "Some dogs need behaviour training but we all get along, even the two great danes that I hang out with."
When she leaves, it’s time for serious fun with my doggie friends. Yesterday was Snowy's birthday so we had a party with doggie treats and presents to take home. I can't wait for my birthday," said Sacha. Dog minding is a exploding industry and I've noticed that doggie daycare is becoming popular with my Mawson Lakes friends. My mates are all "precious pooches" and they are spoilt, just like me. Some belong to humans who can’t have children so they love a dog;

Coastal conditions In the middle of the night the phone rang and the wife got out of bed to answer it. Her husband heard her say to the caller: "How should I know, that’s a long way from here." The husband asked: "Who was that?" The wife said: "I don’t know, some young woman wanting to know if the coast is clear."

Coping with shouty strangers by Fred I am wary of strangers. I think this is wise as some people can be quite loud and boisterous and some cats go on the attack defending their territory, but not me. Occasionally my staff bring strangers into my house and if I’m in any doubt I like to flatten my ears and hide under a sofa until they leave. My sister Ginger on the other hand struts about with false bravado, but I can tell she’s cautious. As these shouty people approach she darts off to safety.
FAMILY FUN IN MAWSON LAKES Join me on Sunday April 14 for the upcoming Salisbury Plays community event in Mawson Lakes by Salisbury Council (see page 24). Council is shutting Mawson Lakes Boulevard for this Family Fun Day! Salisbury Plays is all about Games, Sports, Food and Fun, with plenty of children and family entertainment on Mawson Lakes Boulevard. It is open to the whole community - so bring your family and friends!
Ginger does get visitors at the window at night and boy does she go bananas trying to get out. Her main visitor is a black and white cat who just sits and stares lovingly at her. It is quite spooky.
The event also includes the return of the Mawson Lakes Fishing Competition run by the Game Fishing Club of South Australia! There is cash and fishing gear prizes for various categories - so bring your fishing rod and have a great time removing carp from the main lake. Registration from 8am.
Our staff don't like the kerfuffle as it usually occurs late at night when they are asleep. I don’t know why they don’t just sleep in the daytime like we do…
If fishing is not for you, please bring the family and enjoy all the FREE family activities along the Mawson Lakes Boulevard from 12 noon until 3pm. I am pleased that the Salisbury Plays event is coming for the first time to Mawson Lakes and our Fishing Competition has returned, especially as I have been working very hard since being elected to bring more community events to Mawson Lakes and West Ward.
