Heirloom Fine Foods, evolving from its high-end catering roots, opened a new mixed-use space on April 10 for dining, grocery and events in Millwork Commons, 1210 Nicholas St.

Anthony Roza, Heirloom Fine Foods, owner said the market/café in the Ashton Building has a “bougie bodega,” vibe.

Customers will see a wall of wine and chips on the right. In the center of the 2000-square-foot space is a variety of goods, including snacks and items for gift baskets. On the left is a bar area for visiting and relaxation, a food case and ordering area. At the far-right end is a generous seating area with high-top tables against a bay of large windows creating warmth and vibrance.

“From the first time I saw these gorgeous windows I knew that is where people had to sit and soak in that sun while they eat,” Roza said.

Roza and his wife, Shelley Elson-Roza, also owner, started the

Heirloom Fine Foods catering business in 2015. In 2020, an on-site tasting and event space opened at 325 N. 72nd St. Four years later, they were ready to expand.

Fresh and fair

Roza is currently busy developing menus in collaboration with Elson-Roza and Nicholas Street location Manager, Ethan Anderson.

Roza said the goal is to give customers a menu of freshly prepared sandwiches at a fair price of around $15 and still be profitable. Other establishments sell artisan sandwiches in the $20 range.

“We wanted to create the same level of tastes and textures but focus on things for a light lunch and not always have to take it home with you,” Roza said.

However, Roza emphasized if you look around the market, there are high-end products like expensive wines and snacks, but you’ll also find

fairly priced wines and snacks like Cheetos.

“We try to serve everybody, but we still want to have some really interesting products on our shelves to wow people,” Roza said.

Heirloom Fine Foods is classified as woman-owned business and Elson-Roza is the shopper for the market/café. Roza said she has a “huge passion” for women-owned products to stock the shelves.

Precise and beautiful

The market/café serves beer and wine, and the event space can accommodate up to 40 or 50.

“We just like to focus on making things precise and beautiful and the best way to do that is to have smaller parties,” Roza said.

Roza described the atmosphere as a mid-century modern style with splashes of gold everywhere.

“We focus on all the elements of the human perception of food — essentially taste, sight, and making everything as beautiful as possible, along with great sounds to listen to,” Roza said.

Locally-sourced

Roza and his wife attended Omaha’s Burke High School and both later became chefs, preparing dishes for a variety of palates including vegetarian, vegan and gluten-free. Ingredients are locally sourced, organic and made from scratch with their own recipes.

“If five people come in with whatever dietary restriction they have, they are going to be able to find something,” Roza said. “We just want people to be fed at a fair price and with food full of flavor.”

Anderson, an Omaha native, said Heirloom Fine Foods doesn’t “go crazy” with ingredients like butter. Sandwiches are “cleaner, healthier and lighter.”

Training the team

Roza has worked in the food business since he was 17 and what he has learned along the way, he said, became the “backbone” for how he operates as a coach and hired the first seven team members on a system of “personality first and trainability second.”

“As long as employees are happy,” he said. “Then it is a job well done.”

Healthy and convenient

Millwork Commons is in a food desert, with people in nearby hotels and apartments having limited access to healthy foods. Roza explained that the convenience of walking to the market and café is a benefit. “Grab and go” items are available, and there are eggs for sale.

“We are family here,” he said. “We’re open arms to the community, so we want to sell other people’s products too.”

The goal is to add additional refrigeration for local eggs, butter, pies and cakes as well as selling their own products such as the pickled

onions that are on their Veggie Bomb sandwich and Elson-Roza’s popular Sweet Potato Hummus. Roza said homemade beef jerky, jams, soups and sauces are also a part of the vision.

Creativity and more

Among the creative offerings is a charcuterie service for a snack available on-site or to order for parties. Roza said there is more to come such as Friday oyster nights.

While first years can be tough, Roza explained, they are focused on fine-tuning, keeping full shelves and making sure the business is operating sustainably.

“The neighborhood is still hard to gauge right now with new residents moving in and figuring things out for themselves, but people who have experienced us love us and come back,” Roza said.

The Metro is home to numerous food-based small businesses, with many manufacturing and distributing their products on all different levels.

For some businesses, the current goal is to one day see their product on grocery store shelves, and others is to grow within the area. Whatever level, the manufacturing and distribution processes can vary, but one commonality remains: these food entrepreneurs, and those who lift them up, create a strong business community.

Quality ingredients

Starting a food retail business is no small feat. The investment of hours, days, months and even years to perfect a recipe or process requires passion and grit. When it came to starting Humbl Roots, a food manufacturing company, Jacque Burklund and her husband Jake had to find the perfect place for producing their product line Carinara, which included an FDA-approved kitchen that had bigger equipment than their home kitchen. Once they found that through the Kitchen Council, the main priority came down to quality

ingredients and where to supply them from.

“It took us a little bit to figure out where to source our ingredients from,” Burklund said. “We did a lot of trial and error to figure out what were the highest quality ingredients to use for our sauce, which is always our highest priority for our customers.”

Humbl Roots found Gather Urban Farm as its source for basil. Burklund said they’ve enjoyed the process of working with local businesses to get their own off the ground, including using Kitchen Council in Council Bluffs to manufacture their product, and look forward to what’s to come with distributing.

“Right now we hand-deliver all of our products because there aren’t any distributors around here who would distribute our product at a smaller scale,” she said.

Humbl Roots aims to add on more products and bigger distributions in the future, with the goal of getting its products into more homes of those who could benefit.

Growing reach

Omaha-based Urban Slicer, founded by Matt Frampton, has grown its distribution nationally. The company sells its pizza products in grocery stores such as Hy-Vee and Fareway, as well as many other locations around the U.S. Frampton said using local sources has always been important to the growth of the business.

“We service areas outside of the Omaha, Lincoln and Council Bluffs area, but all of our R&D was done here. We also used Conagra food scientists when it came to creating our gluten-free dough. There’s been lots of local help involved in the process,” Frampton said.

Frampton said small businesses bring a more personal connection when it comes to distribution.

“We sell to a lot of small ‘mom and pop’ stores, so the process of

manufacturing and distributing is easier because they can work directly with the company,” he said. “We manufacture and distribute directly to them when it comes to grocery. Then, we have a distributor that is in the middle and it adds challenges to the logistics.”

He is proud to be an Omaha-based distributor and looks forward to continued growth.

“We’re going to continue to innovate and bring new products to market that we think our customers will enjoy,” he said.

Small-batch sweets

the importance of supporting local businesses, whether that’s herbs, paper products, or honey.

“I love working with as many local producers as I can. It is really important to connect with businesses and their owners, especially face to face,” Steinbach said.

“I really cherish the relationships I’ve made with local businesses.”

Lulabee’s sells through distributors, as well as its storefront.

“We distribute to small mom-and-pop stores, and it is all mostly face-to-face.

We all help each other out when it comes to getting the product out,” she said.

Lulubee’s focuses on creating a clean product, with freshness at top-of-mind.

“We make sure we’re not putting anything artificial in our products, and really look at our process as creating indulgent treats,” Steinbach said. “We don’t use preservatives or artificial flavors, and we make small batches so everything is fresh.”

Incubator

No More Empty Pots (NMEP) is a nonprofit that provides connections for individuals as well as groups to improve self-sufficiency, food security and economic resilience of urban and rural communities.

“We play a big role in food security and food access,” said Talia McGill,

president and CEO. “We do a lot of our programming to increase employment, give access to education, [and] respond to our community’s needs, whether that’s transportation to get food, lack of education on how to make food, or anything else.”

NMEP programming includes Community Harvest, which offers prepared meals and community-supported agriculture, Community Education, which offers hands-on learning opportunities and the Micro Market, which is a storefront of NMEP.

“The Micro Market offers locally sourced food and artisanal products, including produce and greens grown at our own greenhouse facility,” McGill said.

Sourcing food locally is a significant part of NMEP initiatives and programming. Its programs source food locally, in addition to produce grown in its greenhouse facility.

“Our greenhouse is a controlled environment and we are able to control the nutrition density of the food without it needing to be transported,” McGill said.

In 2023, 87% of NMEP food was sourced locally. Over 38,600 pounds of food came from 40 area farmers. The organization provides procurement services to other local consumers and businesses to assist them in sourcing locally for their own business needs and programs.

“Manufacturing is an important engine in Nebraska’s economy,” said Matt Allmand, director for the Nebraska Manufacturing Extension Partnership at the University of Nebraska-Lincoln. Yet, contributions go far beyond Nebraska, extending to the nation’s overall economy.

According to the United States Bureau of Economic Analysis, in the first quarter of 2023, manufacturing was ranked the largest industry sector in Nebraska in terms of gross domestic product (GDP).

The manufacturing sector produced $19.8 billion in economic activity in the first quarter of 2023 alone.

There were more than 2,000 manufacturing establishments in the state at that time that employed more than 104,000 workers, and growth continues.

“A lot of folks don’t realize just how much value Nebraska’s manufacturing industry brings to the state’s economy, their local area, and how large the industry really is,” Allmand explained. “Nebraska manufacturers do amazing things.”

Supportive organizations

The Nebraska Chamber of Commerce and Industry began over a century ago as the Nebraska Manufacturing Association. Today, the organization is Nebraska’s affiliate of the National Association of Manufacturers in Washington, D.C. Throughout the years, the association grew organically to comprise all business and industry sectors to become the statewide chamber of commerce that is widely recognized today.

“Throughout that time, the Nebraska Chamber of Commerce has served as the place where business leaders statewide — regardless of size — convene with the mission to make Nebraska the best place to own, operate, and grow a business,” said Mike Johnson, chief operating officer and executive vice president.

“Just as manufacturers play a key role in providing stability and economic opportunity in the cities and towns across Nebraska in which they do business, manufacturers have played a key role in the Nebraska Chamber since its very beginning.”

In 2020, the chamber worked with various organizations across the state to promote the manufacturing industry, which resulted in the creation of the Nebraska Manufacturing Alliance.

Together, these organizations promote manufacturing as a hightech career path for students, in addition to advocating for policies that promote manufacturing, research, and development. In 2022, the Nebraska Chamber launched ‘The Coolest Thing Made in Nebraska,’ a bracket-style competition, which highlighted one-of-a-kind products that are manufactured in Nebraska.

The Nebraska Manufacturing Extension Partnership (MEP) at the University of Nebraska-Lincoln also exists solely to help manufacturers grow and succeed in their industry.

The MEP provides practical and results-focused training and consulting in the areas of strategy, lean methodology, supervisory training, supply chains, and more. The team works closely with the UNL Food Processing Center to provide food safety and product development services to food manufacturers, in addition to partnering with the College of Engineering on workshops aimed at manufacturing — just to name a few.

“Nebraska manufacturers ship products around the world every day,” Allmand said. “Many national and international companies have plants located here to take advantage of our work ethic and easy access to transportation, but most of our manufacturers are small, privately held businesses that manufacture unique products here and ship them primarily outside of the state.”

Chad Johnson, co-founder and CEO of Grain Weevil Corp., said that the spirit of innovation in Nebraska is unlike anywhere else. His company’s product, a grain bin safety and management robot designed to clean out grain bins, is still in the research and development pre-production phase.

However, there is already quite a buzz around the Grain Weevil product video, boasting more than 200,000 views on various social media platforms.

A lot of folks don’t realize just how much value Nebraska’s manufacturing industry brings to the state’s economy, their local area, and how large the industry really is.

The company has developed prototypes, utilizing several Nebraska manufacturing companies for parts, consulting, and even general advice. While the product has yet to have an official launch date, Johnson said the target date to be at scale will be the summer of 2025.

“Someday we hope that people look at our company and see that Nebraska is leading the way in rural innovation,” Johnson said.

“Nebraska is known as an agricultural state, but the manufacturing around here is second to none. Things are even better when you combine the two as we become the ag tech manufacturing hub.”

Far-reaching

Bison, Inc., the Lincoln-based company that employs 100 and manufactures sporting goods equipment like basketball, volleyball, soccer, and other team sports goals. The equipment is sold to schools, clubs, and organizations that participate in the team sports business around the globe.

There are sales offices across the Midwest and over 750 dealers across the United States and internationally. Many Bison product innovations have become worldwide standards, including the DuraSkin backboard padding and no-tip soccer goals.

“Nebraska businesses in all sectors are very entrepreneurial,” said Nick Cusick, CEO. “There was a time not that long ago that many believed that all manufacturing would leave the U.S. for lower-cost countries. Quality issues, long lead times, high freight costs, and other logistic issues have proven that U.S. manufacturers can compete.

Drone Amplified is also doing big things with its IGNIS system, a drone-based aerial ignition system that can ignite backburns to contain wildfires and prescribed fires to help better manage lands and reduce the risk of wildfires. IGNIS is attached to a drone and is equipped with a thermal and visual camera for situational awareness. Already, the system is being used around the United States.

Quiet innovation

Johnson said that last year, the winner of the ‘Coolest Thing Made in Nebraska’ was an all-terrain wheelchair created in Columbus, Nebraska by Rocket Mobility. Some other Nebraska-made products aren’t widely known about, either.

For example, Kawasaki in Lincoln produces subway cars for the New York City Transit Authority. Lozier in Omaha creates store shelves that are used in Target, Walmart, and other worldwide retailers. Costco’s rotisserie chicken is processed in Fremont. Our state is also home to some of the largest agricultural irrigation firms, such as Lindsay, Reinke, and Valmont.

“When thinking about the future of Nebraska’s manufacturing industry, I’m eager to see where technologies like automation and robotics lead the industry,” Johnson said. “There is an abundance of potential that remains in this industry, and I think we’re just beginning to tap into it.”

CONNECTING BUSINESSES WITH NONPROFITS

Midlands Community Foundation partners with the local business community and individuals who seek to broaden their personal community impact.

Executive Director Diane Knicky who has been with the Foundation since 2007 said that the 501(c)(3) organization provides opportunities for individuals and organizations to meet charitable giving goals under its nonprofit umbrella. MCF administers over 175 charitable funds. About 92% of every donated dollar goes to programming supporting the community versus administrative expenses.

Raising funds for distribution to nonprofits that serve residents of Sarpy and Cass counties in Nebraska is the major focus of the foundation. Organizations like the Food Bank For The Heartland can be located in other counties as long as their reach extends to serving residents in the two-county area.

On May 20, the organization hosted its annual golf tournament at Oak Hills Country Club with 36 teams of 144 golfers. Seven food pantries were selected by the board of directors to receive a portion of the event’s proceeds.

Each year, the foundation and its board plan a large-scale event to raise funds and celebrate the efforts of people making an impact in Sarpy and Cass counties. This major fundraiser features an award presented to an individual or individuals that support the foundation and/or have been an active part of Sarpy or Cass County. Event sponsorships for the 2025 gala fundraiser can be secured by contacting Knicky.

While the golf tournament and annual gala are the two Foundation events held each year, donations are accepted for the bi-annual and monthly grant programs and charitable funds administered.

Bi-annual grants are awarded each year typically ranging from $2,500 and $10,000 with some awards in the $15,000 to $20,000 level. Health, art, culture, community, education, economic development, and human services are the key areas nonprofits can apply for these grants. Contributions can be made throughout the year to replenish funds. Nonprofits can download a grant information and guidelines brochure on the Foundation’s website www.MidlandsCommunity.org.

Each month grants up to $1,000 are awarded to nonprofits requiring funds for immediate needs. Interested organizations can write a letter or send an email. Donations to this grant program go directly to organizations working within their community.

In February 2024, MCF announced that 111 of the 175 charitable funds administered took advantage of the Matching Charitable Program. This sponsored program raised more than $1.8 million during Giving Tuesday, November 28, 2023, through January 5, 2024. $629,977 qualified for matching funds.

“Each year, the results of our Match Program exceed our expectations,” Knicky said. “We are pleased to offer this opportunity to our more than 175 charitable funds, enhancing their visibility and outreach, connecting them with new donors, and offering donors added motivation to support the missions of these charitable funds.”

OMAHA’S COUNTY, FOR ONE YEAR, SURGES TO FASTEST GROWING ECONOMY IN US

Spurred by finance and insurance, and buoyed by steadyas-she-goes pandemic growth, Douglas County shockingly bests titans like counties containing Nashville and Austin… at least until next year, experts say.

By one measure, the fastest-growing economy among the nation’s largest counties isn’t in Texas, Florida or any of the other usual big dogs.

It’s Douglas County, Nebraska.

In 2022, as the nation emerged from a pandemic, Douglas County’s gross domestic product grew 9.2% – the most of any county with at least 500,000 residents, according to a recent report by the Bureau of Economic Analysis. The county, home of Omaha, had never previously placed in the top 50 since the agency began recording the metric in 2018.

Omaha-Council Bluffs’ 6.3% gain in economic output ranked second nationally among major metro areas, trailing only Austin.

So how did Omaha, with its slow and steady population growth, keep pace with exploding metros in the South?

The driving force: Omaha’s deep-rooted finance and insurance industry, which drastically outperformed the national sector in 2022.

Quick thinking and hard work at the beginning of the COVID-19 pandemic paid dividends for financial institutions and their customers when the economy fully reopened, business leaders said.

This lofty ranking is probably short lived, experts say. The county’s nation-leading GDP growth is unlikely to continue

when the BEA releases figures for 2023 and 2024, but economists are optimistic that the area’s output will continue to climb upward at a stable rate.

And that growth matters because it creates high-paying jobs and signals an overall healthy local economy.

“The higher you rise, the harder the fall is, so if we’re ‘steady as she goes’ with the economy, that’s pretty good,” said University of Nebraska at Omaha economics professor Chris Decker.

A powerhouse industry

A glance at Omaha’s skyline will tell you that finance and insurance are big business in town.

The city’s tallest skyscrapers belong to First National Bank and WoodmenLife. Mutual of Omaha’s new downtown home will rise above them once completed.

From heavyweight Fortune 500 companies to small-time community banks, the industry employs about one in 12 workers in the metro – double the national rate, according to BEA statistics.

The finance and insurance industry accounts for a whopping 22% of Douglas County’s gross domestic product, triple the national level.

The industry’s local origins date back to the mid-19th century when Omaha, a town that had sprouted along the Missouri River, established itself as a hub for both railway and river transportation.

As warehousing businesses flourished, a need arose to insure the valuable commodities they were storing, Decker said.

Banks and other financial companies emerged to hold and invest the money flowing through the burgeoning city.

The industry has since developed organically, giving Omaha a competitive advantage over other cities, Decker said.

The industry’s economic output grew by 28% in 2022, according to Decker’s analysis. Nationally, the insurance and finance sector narrowly contracted, making Omaha’s growth even more standout.

There’s no simple explanation for that growth, economists and business leaders say.

Jobs in the industry stayed relatively flat, but wages rose at double the national average, according to data compiled by the Greater Omaha Chamber. On paper, it appears that high worker productivity contributed to the high output, Decker said.

The industry’s fast adaptation during the pandemic may have propelled the growth.

In 2020, Nebraska banks emerged as early leaders in helping businesses access forgivable loans through the federal Paycheck Protection Program, said Lydell Woodbury, chairman of the Nebraska Bankers Association.

At Woodbury’s First Nebraska Bank in Valley, employees worked on businesses’ applications until 3 or 4 a.m., he recalls.

businesses to stay afloat and keep their workers employed, Woodbury said. Banks, in turn, had financially healthier clients that could repay loans and avoid foreclosures.

State leaders opted for a quick reopening of the economy, and businesses were ready for it, Woodbury said.

“The reason we did better is because we stayed steady. We didn’t have a whole bunch of layoffs,” Woodbury said. “We didn’t have to start trying to ramp back up completely. We had a structure.”

It might sound corny, Woodbury said, but Nebraskans are resilient, and their comeback from the pandemic fueled the economic gains realized later on.

Some big-name financial and insurance companies have also seemingly contributed to the industry’s growth.

Fiserv, a Wisconsin-based financial technology firm that employs more than 5,000 people in the metro, increased its production in two core business functions by about 6% in 2022 without significantly boosting its workforce, said spokesman Chase Wallace.

The Omaha boom of 2022 was many years in the making, said Greater Omaha Chamber President Heath Mello.

Lawmakers and economic development officials have fostered an environment in Omaha where insurance and financial companies want to locate and boost their operations, he said.

“This is what happens when you are strategic in growing an industry,” Mello said.

The 28% growth for finance and insurance is “impressive but likely not sustainable,” Decker said.

There are some clouds on the horizon. The state’s labor shortage will eventually stifle economic growth for the industry, said Nebraska Bankers Association President Richard Baier.

But Omaha’s economy is likely to keep seeing strong growth – around 3% – because of its diversity, business leaders and economists agree.

The city – with its two medical schools and several major hospitals – has become a hub for health care and scientific research, said Creighton University economics professor Ernie Goss.

An evolving concert scene and events like the College World Series have burnished Omaha’s reputation as a regional tourism destination, Goss said. Agriculture and food processing maintain a stable presence in the area’s economy, too, he added.

The broad base of Omaha’s economy makes it less prone to significant downturns and provides more stability for investors to trust, Decker said.

Local economic growth isn’t just good for businesses’ balance sheets, Mello said. It creates new good-paying, high-demand jobs, he said.

Having “the profile of growth” also makes Omaha an appealing place for newcomers seeking job opportunities and high quality of life, Goss said.

“2022 was a very good year for Omaha,” he said, “but I think with the profile of Omaha, the future could be just as bright.”
