OWNERS OF FIG. AND LOLA’S OFFER FRESH TAKE ON LIGHT FARE
To understand just how much thought and attention to detail went into Fig., the encore restaurant of business partners Clare Watson Bartolomei and Corina Figueroa, one needs only examine the name. The moniker, spelled intentionally with a period, serves triple duty in describing the stylish, sun-soaked eatery.
“The identity concept ‘Fig.’ comes from our location and proximity to the science museum,” Watson Bartolomei said. “It’s a little bit of a play on when you’re reading a scientific article in a journal and they refer to ‘Fig. 1.’ Our logo is Fig dot tying into the science concept.
“At the same time, the fig is such a beautiful fruit that blends an organic component and sensual component to the identity. It allows us to be a little bit more romantic, if you will. And then Fig also is a shorthand for Corina’s last name, sometimes people call her Fig.”
If that seems like a lot of meaning to wring out of three little letters, it fits perfectly with ownership’s operational and culinary belief that less is more. This concept is reflected in the restaurant’s sleek, slightly industrial vibe and a menu that uses familiar dishes to introduce bold, creative flavors, expanding diners’ palates in a way that models the Kiewit Luminarium broadening their horizons.
Culinary exploration
“The idea of the café that we wanted to give life to was a café that would offer refuge for people who have been busy all day at the museum and at the park,” Watson Bartolomei said. “People are having fun-filled, activity-filled days, and we wanted to be the spot where they could land and rejuvenate, have a little bit of peace.
“At the same time, just as the Luminarium is expanding people’s minds through different concepts, we wanted to create a menu that was both comfortable but also featured things people don’t find other places. We didn’t want to just be another restaurant with all the same things.”
Open since last April, Fig.’s fresh but familiar approach to its menu is perhaps the strongest link to its sister restaurant, Lola’s Café in Dundee, which is approaching its fifth anniversary. There, Watson Bartolomei and Figueroa refined their concept of using comfort dishes to nudge diners’ experience slightly outside the norm.
“The threads that Fig. shares with Lola’s are fresh, organic and local, vegetable-forward, and then expanding the horizons of people’s palates,” Watson Bartolomei said. “We wanted to create a concept

that could appeal to a very broad swath of the population but also help them discover new things through our menu.
“For example, we have a pasta salad made with fresh basil pesto. People are familiar with pasta, but maybe they’ve never had fresh pesto before.”
Locally grown
The 60-seat restaurant (90 with patio dining), is unabashedly vegetable-forward but while the menu does feature some vegan options it is not, strictly speaking, a vegan restaurant.
“We have a good featuring of vegetables on the menu, and we do have very strong representation of the local food system to help us articulate our concept,” Watson Bartolomei said. “But we also have a cheeseburger on the menu, we have a fried chicken sandwich. We have something for everyone.”
The public’s response to Fig. has been positive, fed in part by the loyal clientele of Lola’s and in part by new diners happy to see more restaurant options in the neighborhood, in addition to those visiting the Luminarium and other nearby attractions.
“We definitely had some built-in support from the museum crowd and the feedback on the cafe for museumgoers has been great. People are excited to find such a great food option as an amenity to the museum,” Watson Bartolomei said. “Lola’s has such a strong, loyal following that we have been able to build in a lunch crowd independent of the museum through that pipeline. I also think that there is a good amount of

opportunity left for discovery by the downtown Omaha business crowd that we are a great lunch option as well.”
Another way Fig. is rapidly becoming known is through the restaurant’s catering operations Watson Bartolomei said. The restaurant is on the museum’s list of preferred caterers and since opening has handled myriad events, the largest of which was 900 people. That kind of exposure is valuable to repeat business by downtown workers and weekend visitors alike as the frenzied environment of serving hundreds of event guests gives way to a decidedly more relaxed pace.
“Our identity, the brand we’re speaking to, is this idea of calm,” she said. “We’re a place where you can come and have a little bit of peace. We want to provide an environment where guests can contemplate all that they’re learned in the museum while enjoying amazing food, maybe have a glass of wine or a great coffee. We’re here to help people take it all in.”

From catering private events to popping up at different festivals, food trucks create an exciting dining experience where customers can try a variety of cuisines for relatively low prices.
Right amount of spice
The food truck industry has been on the rise in the U.S. in recent years, with it representing a $1.4 billion market in 2022. Not only are these mobile food services fun for patrons, but they also allow greater flexibility for owners to design unique food concepts and connect with the community in a bigger way.
This community approach to food service and the popularity of street food in Latin America inspired Itzel Lopez’s family to open the Maria Bonita food truck in 2011.
“The food truck business has been a thing in Mexico in different modes,” Lopez said. “And it looked different from what they look like now, but nonetheless, they were mobile units all over the city.
“And when we came to the U.S., and after we decided to open a restaurant, we thought the food truck business was the more scalable way to reach more customers.”
The family-owned truck specializes in food that Lopez described as traditional, yet fun and exciting.
Lopez said that the food served at Maria Bonita is only spicy upon request so that wider audiences can enjoy the traditional Mexican flavors.
“The flavors are still very traditional, but we serve it in a way that becomes comfort food for everyone,” Lopez said. “…It serves so that people can enjoy each of the flavors that our cuisine is made of.”
Lopez said that she has had to continuously learn and adapt to new policies, ordinances, and laws which has been a challenge over recent years. However, despite these hurdles, she said that having the community’s support for the last decade has made owning the truck well worth it.
“That’s kind of my favorite part — that we get to drive around town and just continue to bring people together,” Lopez said.
Community outreach
This desire to bring people together through food is what led Matt Weber to open the Mobile Grace Café food truck.
The truck builds upon the concepts of Weber’s Table Grace Café, which he classifies as a community restaurant. Instead of charging people for menu items, the café instead asks people for free-will donations to help with hunger outreach.
“We believe that healthy giving is based on healthy relationships, and you can’t have relationships unless you actually interact with the

people you’re serving,” Weber said. “And a great way to interact with people that need help is by having meal together.”
Both the Table Grace Café and the Mobile Grace Café provide opportunities for people to gain work experience through their job experience program.
The program is intended for people undergoing life transitions to gain experience in the food industry for later applying to other jobs.
“In the restaurant business, food business in general, a lot of learning is on-the-job. And you learn by experience,” Weber said. “Table Grace is meant to be that first experience for somebody, and then it gives them a reference, someone to vocalize their character when they go out for other work.”
By having the food truck, Weber said he’s been able to expand his outreach into the community. However, it has been a learning process going from a brick-and-mortar restaurant to a mobile kitchen.
“We have figured out it can be a high-pressure situation, just like a restaurant where there’s a lot of people to serve and they’re counting on you, and you need to make sure everything’s right,” Weber said.
“There’s just a lot of different things to check off your list.”

Unexpected challenges
Jonathan Taylor was teaching culinary school when his wife showed him a ‘for sale’ posting for the Modern Waffle food truck. Despite it being the one area of the food industry field Taylor had never tackled, he decided to give it a try.
The established base for the Modern Waffle truck allowed for Taylor to grow, which motivated him to launch the Three Kids Lobster food truck from the ground up. Three Kids Lobster pays homage to Taylor’s childhood summers in Maine through serving fresh lobster rolls.
While building a customer base can be difficult for food truck owners, he said that delivering a high-quality product to customers is what keeps people coming back.
“Every single person should get the same quality, the same quantity, the same lobster roll, in my case,” Taylor said. “That goes a really long way towards building that customer base.”
Taylor also credits his staff for the success of the trucks. He said that finding the right people has in a lot of ways helped them to grow and be successful. CONTINUED

“It’s a little bit different than most anywhere else because you have to be both a cook and front-of-house person at the same time,” he said. “So, you need that customer-facing personality, where you can speak to people and engage people and make sure they’re having a good time.”
Creating a quality product and finding an enthusiastic staff are problems that most people in the restaurant industry face, but food truck owners also deal with many additional hurdles such as weather.
“If it’s 110 degrees out, I’m not putting my staff in that position,” Taylor said. “It’s dangerous for them. It’s not going to be pleasant for the guests anyway, so it’s better to just cancel and take that hit sometimes. We always try and find a way to make it work, but you’ve got to put the safety of your people first.”
Not only does weather create an obstacle for food truck owners, but so does the mobile aspect of the industry. With the food trucks constantly being on the move, owners must constantly update their websites and social media to make sure that people can find them.
“One of the biggest challenges is knowing where to get that food. They’re always on the move. Then you have this amazing egg roll this one time, and then you never find it again,” Taylor said. “So, giving people the ability to find you and making sure that you have some way for people to actually find you all the time.”
Mentoring others
Both the Modern Waffle and Three Kids Lobster have the advantage of being located at T&T: Trucks, Taps, Patio, a food truck hub located near 108th and Q streets.
T&T owners Kevin Wyatt and Isaiah Renner took their existing knowledge of the food truck industry to open a space which would help mitigate some of these hurdles for other food truck owners.
One of the main ways they support other trucks is by providing owners with a commissary kitchen.
“A shortage in this general area is having a kitchen space, and
Douglas County will not permit you to be a food truck without a commissary kitchen,” Wyatt said. “They don’t want you cooking this in your garage or your basement or your kitchen. They want a brick-andmortar place you’re attached to.”
As the only food truck hub in the area, Wyatt and Renner said that they have people that come by all the time looking for advice with starting a food truck.
This mentorship aspect and getting to see other trucks grow and evolve is their favorite part of owning T&T.
“We did events that we never should have done. We paid to be at events for amounts that we never should have paid for,” Wyatt said. “All of those things now are in the rearview mirror, and if somebody talks to us before they do things, which they tend to do, they oftentimes now will not make those early mistakes we did.”
In a space with so many different dining options in one venue, one might think that the trucks would need to compete against each other for customers.
However, Wyatt said that the community aspect of the patio benefits everyone by having an option for every palate.
“In general food trucks want to see other food trucks succeed,” he said. “One of our earliest learnings was that more food trucks are better than less.”
Each truck stationed at T&T has a different concept from classics like pizza to innovative food truck ideas such as loaded fries and lobster rolls.
Renner said that he believes food truck owners will continue to move in this direction as they strive to create products that other trucks haven’t already done before.
“Food trucks are kind of evolving now to where they are more on the chef-driven side, and you know, have almost restaurant-quality stuff coming out,” he said.

The importance of networking
Stuart Chittenden, founder of Squishtalks, noted that the obvious advantage of business networking is the ability to gain support so you can better reach your career or business objectives. But it goes beyond that.
“A more urgent benefit is the potential to be of value to someone else, especially if that person is less privileged in a business environment that is not inclusive or diverse,” Chittenden said. “Networking events are opportunities to support someone else. An attitude towards others has the broader potential to help an individual and also elevate the business ecosystem so all can thrive. Think ‘outrospectively.’”
With an established network, staying updated on current industry news or trends is also easier. This can be incredibly helpful in learning about new

prospective ventures and what challenges or competition may be coming down the pipeline for your business. It can keep you in the loop about what growth opportunities might arise.
Karine Sokpoh, CEO of Midlands African Chamber, believes that networking is the lifeline of a business.
“A strong network continuously provides referrals, insights, and opportunities, helping businesses grow and thrive,” Sokpoh said. “Networking not only introduces you to potential clients but also connects you with mentors, collaborators, and supporters who can offer invaluable advice and assistance.”
Sokpoh said it is important to clearly and concisely describe who you are, what you do, and the type of people you specialize in serving. She noted it’s also vital to be able to talk about the value you can offer.
“Listen actively and show genuine interest in others,” she recommended. “This helps build rapport and trust, making your connections more likely to remember and support you. After initial meetings, follow up to maintain and strengthen the relationships. This can be done through emails, social media, or setting up one-on-one meetings to explore opportunities further.”
Prioritize building genuine relationships over merely seeking business leads. Authentic connections tend to be more sustainable and beneficial in the long run.

The end goal
“The key to networking is to strategically look for places where you can connect with people who provide insights or opportunities aligned with your objectives, which means you must know what your objectives are,” said Becky Phipps, director of business development for the Greater Omaha Chamber. “Based on your position and your organization, identify who your ideal connections might be. This could be potential customers, potential partners, potential donors, influencers, and subject matter experts.”
Chittenden suggested finding clarity in career goals.
“Attending events that have some connection with your work or experience is a broad brush and possibly unenjoyable approach,” he said. “Instead, a comprehensive understanding of your long-term aspirations, strengths, values, and personal interests will help you to filter networking opportunities to events and to their audiences and then make smart choices about which to engage in.”
What to look for
Sokpoh explained that professionals should look for two main things at professional networking events: authentic connections and quality leads.
“Prioritize building genuine relationships over merely seeking business leads,” she said. “Authentic connections tend to be more sustainable and beneficial in the long run. After establishing authentic connections, seek out potential leads that align with your business goals. Effective networking isn’t just about the quantity of contacts but the quality of those connections.”
It’s also important to know what you want to get out of the event before you arrive. Identify what would be most beneficial for you so you can keep that front and center as you meet people.
“Are you looking for new customers or clients? Referral partners? A job opportunity? A mentor?” Phipps asked. “If the event publishes a list of registered attendees prior to the event, study who is expected to be in the room and make an effort to meet them. The goal is not to gather the most cards you can at the event. The goal is to have meaningful conversations that lead to scheduling a one to one follow up meeting.”
Chittenden said it’s important to have an element of spontaneity when you
go to a networking event, too.
“Yes, do know yourself and your goals, but try to go into a networking event without an agenda, or at least, being wide open to possibility,” he explained.
Popular networking groups
There are many places to build a network. One avenue is getting involved in organizations related to your field, either by volunteering, attending their events, or serving on their committees. There are also networking-focused opportunities available. For example, the Greater Omaha Chamber is one of the oldest business organizations in the Midwest and has nearly 3,000 member organizations within it.
Some other local associations or organizations include the Midlands African Chamber, the Nebraska Hispanic Chamber, the Sarpy County Chamber, Urban League of Nebraska Young Professionals, Human Resources of the Midlands, Midwest Women’s Business Council, and the Women’s Leadership Network. For those new to networking, organizations like Business Networking International and Center Sphere are good primers.
Omaha Empowerment Breakfast, The Kids’ Table Omaha, and Women with Voices Omaha provide access to larger groups of people with common interests. Furthermore, consider getting involved with philanthropic clubs like a rotary or the Lion’s Club, which offer a way to not only connect with others but also make a difference through programs intended to positively impact communities across the state. And lastly, take advantage of social media to build your network via online platforms like LinkedIn, Instagram, Facebook, or TikTok.
The old adage, ‘it’s not what you know, it’s who you know’ still rings true today – even when technology dominates much of how we do business. No matter how far you are in your career – just starting, or winding down for retirement –relationships are always the key to success. So, take time to cultivate meaningful connections. When you do, you will be better able to reach your dreams and continue onward on the path that you’ve always envisioned.
“Networking is about creating meaningful conversations,” Phipps said. “It takes time and repetition to build relationships. The best networkers are those who diversify their network and those who provide value to the people they meet.”

Q: Tell us about the business model of your franchise.
A: The 101 Mobility system has over 160 locations in the U.S. and Canada. Our territory covers Lincoln, Omaha and the surrounding area. The support team is located in Wilmington, North Carolina. They provide us with the system and support that we need to be successful, while at the same time they allow us to make decisions that shape our business to meet the demands of our customers.
Q: Why did you choose this industry?
A: Donna has a background in ministry and senior living, and Tom’s background is in customer service and operations. With Donna’s knowledge of the needs of today’s seniors and their desire to “age in place” in their home, we felt the demand for in-home mobility products is going to continue to rapidly grow as the baby boomers start to reach their golden years. We were looking for an opportunity to really help people — whether they are disabled, military veterans, or elderly — we are able to provide people with freedom and independence to live their lives to the fullest.
Q: Why did you choose this franchise?
A: 101 Mobility is truly a leader in the industry. The market of mobility equipment suppliers is relatively fragmented, but 101 Mobility has built a network of local, full-service providers of expertise and equipment that is unmatched. Q: What was the process of starting your franchise?
A: We used a franchise broker (Blake Martin of Fran Net) to help us work through the initial process. He helped us decide if a franchise was going to be the right fit for us. Once we determined that we wanted to make the jump and start our own franchise, Blake gave us three recommendations for possible opportunities based on our extensive conversations and discussions on the type of business that we wanted, and the type of business that would be a great match for our skills and goals. We connected with the business development manager at 101 Mobility and started having serious conversations on what our territory would look like and what the process would be to open a new location in the system. Before we knew it, we were on our way to Wilmington to “Meet the Team” and dive deeper into the business. After dinner with the CEO of 101 Mobility, we both decided it would be a great match and that we wanted to move forward with purchasing our territory.
Q: What challenges have you faced?
A: The biggest challenge was opening a business when the world around us was shutting down and, sadly, many businesses were forced to close. There were no networking meetings for a long time, so building awareness was a huge challenge. Another big challenge was finding the right people to help us with our mission of serving others and growing our business.
Q: What have been your biggest wins?
A: I think our biggest win was surviving the COVID pandemic! We made it through our first year and have been able to consistently grow every year since. We were lucky to be recognized by our Franchisee as one of the “Circle of Excellence” winners in 2013. But really we have big wins every day — when your team installs a stairlift in someone’s home and they shake your hand and thank you for giving them a way to easily and safely get up to their bedroom (instead of sleeping on the couch), you really feel that you are making a difference in their lives and making their world a better, safer place for them.
Q: How have you grown?
A: Our support team provides us with a great website and some great partners to build our brand through online ads and social media. I think the biggest way we have grown is through getting to know other business leaders in the community by attending as many networking events as we possibly can.
Q: What does the future hold?
A: With the aging population in the U.S. expecting to grow rapidly in the next 10 to 15 years, we expect the demand for our products and services to continue to grow with that demand. We know that by building a trusted, local business that provides excellent customer service and solutions that are tailored to each customer’s needs, we are positioning our franchise to help many people and improve their lives.

When John Massih finished law school at the University of Nebraska College of Law in Lincoln, he wanted to choose a practice area where he would be helping people rather than hurting them.
His desire to help others, especially families, led him to open Massih Law, an estate planning firm.
“I really wanted to help people,” Massih said. “I think that with attorneys, sometimes you can choose a practice area where you are inflicting pain on others, and I just wanted to help and to protect, and I get to do both of those things.”
Massih Law offers estate planning, business, and real estate services. The firm started as a small practice in Connecticut and now has offices in New York, Nebraska, and Iowa.
“We don’t leave stones unturned,” Massih said. “People come to us because they don’t just want a collection of documents. They want a real plan and they, in particular, want to live up to the promise that they make to their loved ones that they took care of it.”
He said that meeting with clients is his favorite part of the job because it’s an opportunity to show them the value of the planning process.
“Our biggest wins are when a client completes a plan, integrates their assets with it, and then keeps it maintained, because we have the greatest possibility for success in that regard, and we end up with clients whose families are taken care of the way that they want them to,” Massih said.
Massih hopes being named the Greater Omaha Chamber Business of the Month gives the firm a larger platform.
“I just appreciate being recognized for the good work that we do for folks,” Massih said. “I just want to make sure that people are taken care of.”
