Dessie Redmond and her husband Marshall opened Full Fledged Brewing Co. in 2019 with great support from the Council Bluffs community. Their path to growth was an uncertain one during the pandemic, but today the couple can say the future looks bright for the craft brewery.
“We were very worried we wouldn’t make it on the other side. There were several things we did, cutting back costs on everything, anything that wasn’t necessary,” she said. “One of the hardest things about COVID was having to lay off our staff. We’ll never forget the day we had to do that; it was heartbreaking and it was probably the hardest thing we’ve had to do.”
The Redmonds don’t wallow in such memories, but it doesn’t take much to see they learned a lot from them, namely how to think creatively and lead through challenging circumstances. Judging from how the Council Bluffs-based brewery has come roaring back, those lessons are still being taken to heart.
“We leaned on PPP, and we also got a local grant called the REV grant, which is a specialty grant for small businesses that are upcoming,” Dessie Redmond said of TS Bank’s 2020 REV pitch competition. “What it did was help us buy a canning machine so we could start canning our product, which we weren’t doing before. Basically, we created a new product to help grow our business. We started canning our beer to get into grocery stores, liquor stores and places like that. That added additional revenue.”
Today, the business is buzzing. After hiring back furloughed staff within six months of laying them off, Full Fledged Brewing Co. has been on a steady upwards climb. A recent deal with Doll Distributing promises wider distribution for product statewide, with eyes on additional markets in the region.
Redmond said output is expected to grow from about 900 barrels last year to 1,300 in 2023, and all signs are pointing toward expanding production space soon.
“We have about 6,000 square feet and that includes the brewery, which takes up about half of it,” she said. “We have an option on
the space next door to us, so if we do need to expand we can expand next door by adding more tanks and increasing the size of the brewery. We definitely are planning for that. We don’t have a timeframe as of now, but we’ve been planning for that since we opened.”
The business wasn’t just a new experience for the owners, it’s reportedly the first craft brewery in the city. This not only generated the excitement that surrounds novelty, but it also complicated certain processes during the construction phase. Throughout this process, Redmond said the owners were impressed with the support they received.
“Because we were the first brewery, we did have to go and amend the city’s code,” Redmond said. “That was a little bit of a problem, but people were super supportive. The city staff was very supportive, the city council was very supportive of us coming in. We were really lucky.”
Advance Southwest Iowa helped the couple through the process by showing them potential buildings.
“We’re not from Council Bluffs, so we didn’t really know the lay of the land,” she said. “Looking back, the construction part was fun; we got to see the space come together how we pictured it. Really, the hardest part is after you open the doors; once you have a small business, it doesn’t stop.”

The brewery continues to benefit from craft beer’s sustained popularity nationwide. As reported in April by the Brewers Association, production from small, independent brewers in 2021 was up 8% over the previous year, boosting craft beer’s overall market share by volume to 13.1%. The increase can be contributed to organic in-market growth while a portion is driven
by beer tourists and enthusiasts who seek out craft breweries in other locations to gain a sense of regional tastes and variations by individual brew masters on various beer categories.
“We have about 11 hotels within a mile radius of us, so we get a lot of people who are going through town who picked their hotel because it’s walking distance to a brewery,” Redmond said. “There’s also a lot of people staying here who are coming into town for the College World Series or a concert that’s happening across the river in Omaha. That’s probably another 20 to 30%.
“We have great local customers in Council Bluffs. The community has many craft beer lovers and they were very excited to get their own.”

It’s natural for people nearing retirement to have questions. Will they have enough money to maintain their desired lifestyle? What about things they can’t control, like inflation and long-term care expenses? Will they be able to try new and exciting activities? Local organizations are addressing the breadth of new concerns.
Baby boomers currently entering retirement are seeing greater longevity. With such a large generation retiring, many are changing their goals. Individuals are looking for ways to age successfully through exercise, diet, social engagement, and remaining active so they are not faced with increased illness and cognitive decline as they age.
Communities, said the retirement living and senior care organization, which has served Nebraska and Iowa for more than 136 years, focuses on the changing needs of its residents.

Saving enough money for retirement has also become an issue.
“Saving for retirement can be challenging as the shift from government and employer-defined pensions to paying for housing and services as you age becomes a personal responsibility,” Kaminski said.

In June 2022, a study done by Edward Jones, Age Wave, and The Harris Poll found that in the past, retirees saw retirement as a time for rest and relaxation, but current retirees see retirement as a new chapter in their lives, a time to reinvent themselves and focus on new interests, skills and activities.
Kaminski said Immanuel residents are looking for more choices.
For example, many of the organization’s living communities do not offer three set meals a day at set times. Instead, residents have more menu choices and flexible dining times.
“We also see our residents wanting to engage in various activities,” Kaminski said. “[Although] bingo and cards are still popular, we have groups for residents interested in rock climbing, social drumming, yoga, tai chi, book clubs, and bocce ball. We are also seeing medical services such as clinics, physician visits and care navigation embedded into our communities. Coordination of care and access to care is an important feature to many retirees.”
Baby boomers bear a large part of the responsibility for these trends emerging now, according to Kaminski.
“The baby boomers are the largest group of retirees we have seen for quite some time, and they are cracking the mold on preconceived ideas around aging,” she said. “They want to be seen for who they are, and just because they are aging does not mean they will ascribe to society’s norms of how an aging individual should look, act, or think.
“I would advise individuals looking for retirement living to look for a place you feel welcomed and that you belong, where the people are friendly and there are a wide variety of amenities, activities and resident choice.
According to Rick J. Dhabalt, a financial advisor at DC Retirement Strategies, one of the biggest fears retirees have is running out of money.
“As advisers, we try to find the right products and solutions to help curb that fear and to make sure they don’t run out of money,” he said. “There are several products out there that can provide a lifetime stream of reliable income. We definitely discuss those options with them, especially because no one has a pension plan anymore — those are a thing of the past for most people. People just want a secure income when they retire.”
Thomas Pargett, a wealth advisor at Carson Group, said that investment strategies are unique to every individual or family. Ultimately, the firm ensures that its clients are covered for shortterm needs of one to three years, medium-term needs of three to seven years, and long-term needs of more than seven years.
“The specific terms and the specific needs are discussed and understood through a comprehensive planning process that our clients go through with our advisers,” Pargett said. “Once the first seven years of needs are identified, we can really open the investment universe to our clients and ensure their money is invested in accordance with their specific financial plan.”
Some type of annuity product is generally used to create a reliable retirement income, according to Dhabalt.
“We see lots of our clients put a certain amount of assets in there, which covers their basic needs such as utilities, taxes, groceries, and gasoline,” he said. “For years we’ve promoted emergency funds to take care of those unexpected things that pop up in life.”
But the key to having a successful outcome is to start saving early, to have a financial plan in place and stick to the plan.
“Higher inflation and the cost of long-term care are unpredictable,” Dhabalt said. “If you have only so much money to go around you want to make sure you have reliable income to cover your basic daily needs.”
This is something that is answered through a detailed financial plan.
“Our advisers have the ability to create different scenarios with our clients, while they are right there in the room together, to show them how cash flow can be affected by such items as inflation and health care,” Pargett said. “There’s no universal answer to this question, but there are answers to each family. That’s exactly why our advisers are so detailed in delivering an ongoing financial plan.”
Individuals two decades away from retirement usually are not concerned with cash flow or income within their investment portfolio.
“At this stage, you really do have the ability to take more risk with growth-oriented investments — within your own personal risk
the clients who have a plan and stick to the plan are the ones who are in the best shape at the
tolerance of course — so that your investments can grow over the next 20 years,” Pargett said. “The timeframes (for short-term and medium-term planning) no longer belong in the planning conversation. It’s all about the long-term at this stage.” Dhabalt generally advises clients nearing retirement that they lower their overall risk in their portfolio and place a higher allocation of their money into fixed-income strategies.
“One advantage of the rising interest rate environment that occurred in 2022 and a little bit in 2023 is that some of the lowest risk investments like money markets and certificates of deposit at the banks and credit unions have really nice high-interest rate earnings right now,” he said. “I haven’t seen interest rates like we have now in more than 20 years.”
For those who are retired, emergency funds and shortterm, high-interest money market accounts, or short-duration certificates of deposit, are good strategies.
“We’re telling our folks to take advantage of that to reduce their overall risk as they get closer and closer to retirement,” Dhabalt said.
“The most common question my team and I receive is ‘Am I going to be okay?’” Pargett said. “Individuals and families are truly most concerned with ensuring that the standard of living they seek is sustainable. Even those who are still a decade away from retiring are beginning to wonder if they’re on the right track to ensure they’re okay, and that’s completely normal and very common.”
A financial plan is a must to help you stay on track. The first part of that plan will create a road map that tells how you’re going to get to retirement, which involves making sure you’re saving enough and investing properly. The second part of that financial plan should be concerned with how to create income from the assets you’ve accumulated over your life.
“You’ve got to have a financial plan so that you at least have a blueprint of how you hope things turn out and to be able to generate enough income so you will never run out of money,” Dhabalt said.
It’s easy to deviate from your financial plan, especially when emotions get involved.
“You can get fearful pretty quickly when you turn on the news,” Dhabalt said. “But the clients who have a plan and stick to the plan are the ones who are in the best shape at the end of the day. Even as you get close to retirement and you’re in retirement, stick to the plan.”
Review and update your beneficiaries regularly. Develop an estate plan to make sure that everything’s in order. Meet with a trusted adviser to create that financial plan and review it annually to make sure that the plan is still good and that you’re sticking with it.
“The best time to start a financial plan was yesterday,” Pargett said. “There are so many things you can do to be proactive around your retirement, so the earlier the better. Is your estate plan prepared? Are you properly insured? Do you understand the best method for distribution in retirement? How does your planned distribution method affect your tax bracket? All of these questions should be answered and planned around before you officially retire and that’s what a Certified Financial Planner is built to do.”

Now in its 48th year, cooperatively owned retail grocer Open Harvest is on track to expand to a new 10,300-square-foot location in the Telegraph District in early 2024. As General Manager Amy Tabor puts it, the new store’s retail floor will be 40% larger than its home of more than three decades at 1618 South St. in Lincoln.
“It will feel much larger to our customers,” she said. “We will provide similar products as South Street, but we are very excited to be able to sell beer and wine in this location, something our members and customers have been requesting since the surge in popularity of craft breweries and wineries in Nebraska.”
Open Harvest provides a full lineup of products, from dairy and produce to meat and seafood, and made-from-scratch deli and bakery items to supplements, body care items and household goods.
“We’ve built relationships with local farmers and food producers, providing a consistent place for them to sell their products,” Tabor added. “In the [fiscal year] 2022, nearly 27% of all of our sales came from products produced or grown within 200 miles of the state of Nebraska.”
As a cooperative grocery, Open Harvest’s owner-members are largely the customer base, but the store is open to anyone to shop.
Tabor noted the co-op business model provides a means to connect products and services to customers while strengthening the surrounding community, and world.
“While Open Harvest is one of a few food co-ops in the state of Nebraska, we are a proud member of a larger cooperative network called National Co-op Grocers,” she explained. “If you ever visit a food co-op in Minneapolis, Minnesota, Grass Valley, California, Sioux Falls, South Dakota or Belfast, Maine, there is a good chance that you are shopping at an NCG co-op.”
Guided by its “Ends Statement,” Open Harvest strives to support the community’s access to healthy, organic, local foods; economic justice and a strong local economy; inclusivity and socially-responsible practices; a robust food system and sustainable environment; and cooperative principles.
While Tabor said its present location has served the organization well for over 30 years, the board and management engaged in ongoing discussions about a new location for many years.
“Our expansion in 2009 helped position the co-op to better withstand the increased competition that flooded the market in the early 2010s,” she recalled. “The project doubled our current space and brought several improvements to the deli and bakery kitchen spaces, walk-in coolers and offices, as well as more aisles for products.
“In 2019, it became clear that our lease was not able to be renewed. So, the board of directors and management began focusing on finding a new home for Open Harvest.”
Tabor referenced additional opportunities with the new space including more energy-efficient equipment, abundant parking space, a central location in proximity to Lincoln’s trail system and a larger outdoor seating area.
“We set a big goal to raise $2 million dollars in preferred share investments from our membership base,” Tabor said at the time of this writing. “We’ve raised $1.1 million in preferred shares and donations coming from 385 owners and community members throughout three phases of fundraising. Since our original proposed project budget, we’ve adjusted as financing and fundraising was realized and construction and equipment estimates came in.”
In fact, she noted the team is evaluating the need to raise one final round of funds from members.
“Our owner investment campaign was an enormous owner engagement undertaking, made possible by a dedicated board of directors, a cadre of volunteer callers and co-op staff members,” Tabor said. “We called every single one of our members at least once and completed 4,000-plus phone calls over the course of a year to share the investment opportunity and answer any project questions.”
During the height of three separate phases, Tabor said the team reached out via letters, postcards, e-newsletters, and maintained a constant social media presence. Additionally, the board had a strong physical presence in-store, tabling numerous weekends throughout the year and making themselves available to answer project questions.
“We had great attendance at several campaign events, supporting local businesses in the Telegraph District like Saro Cider, The Mill and at Zipline Brewing Co.,” she said. “We topped off 2022 with a wonderful in-person annual meeting, held at the Hub Café, one of the first in-person annual meetings we’ve held since the pandemic.”
To further engage with member-owners, Tabor referred to two drives whereby they can enroll or renew and enjoy an added perk or gift.
“In October, during our Fall Owner Drive, we also hold our annual board election and SEED Program vote, where members elect new directors and select recipients for the upcoming SEED Program,” she said. “Since our SEED Program launched in spring of 2020, we have raised $60,000-plus in donations for local nonprofits, selected by members and staff.”
Additionally, members have been vital in informing the board’s
development of a list of priorities to help guide management’s progression through each phase of the project that is the new store. Insights were gleaned from the likes of member and staff surveys, special meetings and conversations at annual meetings.
Breaking ground in June, Tabor expects the new space to open in early 2024.
“It’s quite remarkable what a group of people managed to start over 48 years ago in someone’s basement and see how it has evolved into the organization it is today,” Tabor summed up. “We still have some of these same people who shop every week, who continue to share their amazement in our humble beginnings and proudly support what Open Harvest has become, and where we are headed in 2024.”
