DRY JANUARY? - Alcohol free wine

It’s January and you may be planning on having a “dry January” as one of your New Year’s Resolutions. If a lovely glass of wine is your tipple, you will be pleased to know that alcohol free wines have now joined the ever growing and extensive range of alcohol-free drinks.

I hear you say – “hey, if you take the alcohol out of wine, doesn’t that mean it’s grape juice?”, just like the drinks we used to give our kids, so they didn’t feel left out when the adults were having a party.

The process of making alcohol free wine is similar to the making of normal wine. The grapes are harvested from the vineyard, taken to the winery, and sorted, removing poor quality or under-ripe grapes. They go through the same fermentation and aging process as wine with alcohol. The alcohol is removed at the final stage, either through distilling the wine or by filtering the wine, but regardless of method, the flavour of normal wine is retained.

Now that you know it’s not like the grape juice we gave the kids, you can give it a try.

Hope you enjoy these low-cost options for January. Some old favourites like mince and dumplings, yummy winter comfort food that doesn’t drain your budget; soups that are filling and healthy and for those of you who don’t pass out at the thought of offal, chicken livers cost next to nothing and are high in nutrients. Enjoy.

300g fresh or frozen broccoli 1 pint veg stock 250g low fat cream cheese 1 grated garlic clove Salt & pepper Method

1. In deep pan, cover broccoli & grated garlic with veg stock and bring to boil.

2. Reduce heat, add cream cheese and simmer until broccoli cooked.

3. Season with salt and pepper add more stock if required, although you don’t want your soup to be too thin.

Welsh Rarebit Ingredients

Sliced rustic bread of choice 50g our 50g butter 250ml warm beer 250g strong cheddar cheese

2 tsp English mustard

2 tbsp Worcester sauce

Salt & pepper

Method

1. Melt butter in small pan and add our to make a roux. Gently cook for a couple of minutes watching it doesn’t stick or burn. Slowly add the warmed beer until you have a thick smooth sauce. Add grated cheese, mustard, Worcester sauce and season to taste.

2. Lightly toast and butter bread, add the cheesy sauce on each slice and cook under a hot grill until bubbling and brown.

Roasted Red Pepper and Tomato Soup

Cost – 3-4 euros. Serves 4 people

3 Red Peppers, cut and deseeded

1 onion cut into large chunks

1 tbsp Olive Oil

1 pint vegetable or chicken stock

1 clove grated garlic

Salt & pepper

Basil for garnish

2. Put peppers, tomatoes and onion on roasting tray, lightly drizzle with olive oil and roast for 30 minutes, watching the edges of the veg don’t burn.

3. Put the roasted tomatoes, onions, peppers, and juices from the tray into a deep pan and add the vegetable stock, garlic, salt and pepper and simmer for 10 minutes to bring the avours together.

4. Blend with a stick blender.

5. Serve with fresh basil.

Minced Beef and Herb Dumplings

Ingredients

100g self-raising our 50g suet

Chopped herbs (e.g., parsley/coriander)

5 tbsp water

500g minced beef (or mix of beef & pork)

2 diced onions

1 carrot

1 pint of beef stock (oxo cube)

Dash of Worcester sauce

Pinch of paprika

Gravy granules

Salt & pepper

Cost – 5-6 euros. Serves 4 people

Method

1. Over a medium heat, add mince to large pan, making sure all the mince is broken down and browned.

2. Drain o any excess fat, add diced onion and sliced carrot to the meat mix and continue to brown.

3. Add beef stock and dash of Worcester Sauce to the mince and continue to cook for 10 minutes. Add the gravy granules to thicken the mince and add in paprika.

4. Meanwhile make the dumplings by adding our, suet, salt, pepper and chopped herbs in a large bowl. Bring together with cold water until it forms a sti dough.

5. Divide the dough into small balls and place them into the mince so they are half covered.

6. Cook for 30 minutes, gently turning the dumplings halfway through.

7. When ready, garnish with chopped parsley and serve either on its own or with your favourite veg.

Thai Drunken Instant Noodles (mama phat khi mao)

Cost around 5 euros. Serves 3-4 people

Hope you love this quick and easy dish. You can use whatever protein you like, chicken, beef, shrimp, left-over pork or turkey, tofu or miss out all together and make with vegetables. Drunken is the style of sauce – no alcohol involved. Whatever protein or veg options you choose, you will be hooked as it’s really quick and easy to make and prepare in advance and it’s cheaper than a takeaway.

Ingredients

Stir-Fry Sauce:

2 tbsp light soy sauce

1 tbsp oyster sauce

2 tbsp sh sauce

2 tbsp chilli sauce

Stir-Fry Ingredients: 225 g uncooked noodles 400 g chicken/beef

2 cups broccoli orets

2 spring onions 1 red pepper

4 cloves garlic, grated

1 tsp grated ginger

1 diced chilli (optional)

1 tbsp oil

1 bunch basil leaves

Squeeze of lime juice

Options for garnish: chopped peanuts, Method

You can prep each of the stages in advance and bring it all together in minutes when you are ready to eat.

1. Make the sauce by whisking all the ingredients together in a bowl. Set aside until ready to use.

2. Prepare noodles following instructions on the packet. Don’t overcook. Drain and rinse the noodles thoroughly in cold water and shake o excess water. Toss the noodles in a drizzle of oil to stop them sticking and leave aside until ready to use.

3. Cook the vegetables. Par boil the broccoli orets for 5 minutes until al dente. Drain, rinse in cold water and shake o excess water. Set aside. Cut peppers into strips and chop spring onions. Set aside with broccoli.

4. When ready to eat, heat a spoonful of oil in large pan or wok, add diced chicken, beef, or whatever protein you are using and season with salt and pepper, sauté the meat in hot oil for 3 to 4 minutes or until cooked through.

5. Add the peppers to chicken or beef and sauté for a couple of minutes. Add chopped chillies, grated ginger and garlic.

6. Combine rest of ingredients, i.e., noodles, sauce, broccoli, spring onions and basil leaves (leaving a few for garnish). Gently stir-fry until everything is hot. Squeeze lime juice over the top when you serve (optional).

7. Garnish with whatever you fancy e.g. chopped peanuts, chillies, basil.

Fully Loaded Hasselback Potatoes

Cost – 3 - 4 euros. Serves 2 - 4 people

Ingredients

You can make as many potatoes as you wish depending on how hungry you are or how many people you are feeding.

4/5 Potatoes

50g butter

2 cloves grated garlic (optional)

3-4 Cheese slices cut into 4 per slice

Grilled pancetta to garnish (optional)

Method

1. Preheat oven to 200 degrees c.

2. If you are in a hurry, par boil the potatoes for 5-10 minutes (depending on size of potatoes) the ones I used weren’t too big so 5 minutes was enough. Speeds up the cooking process.

3. Remove from water and make cuts in each potato making sure you don’t cut right through. Place on baking tray.

4. Melt butter in small pan and add grated garlic and spoon into the cuts of the potato.

5. Add the cheese slice pieces into the potato cuts and bake the potatoes in oven for 30/45 minutes until golden brown. (Cooking time will depend on size of potatoes)

6. Serve with pieces of grilled pancetta.

Herb Crusted Cauliflower Cheese

Cost – 4-5 euros. Serves 3-4 people

Ingredients

1 Cauliflower

250 ml warm milk 50g butter 50g flour

2 tsp English mustard 250g grated cheddar 200g breadcrumbs

Chopped mixed herbs

1 tsp Paprika

Salt & Pepper

Method

1. Preheat oven to 200 degrees c.

2. Remove outer leaves from cauliflower and break florets into pan. Cover with water, add salt and boil for 10 minutes.

3. Drain cauliflower and put into baking dish.

4. Melt butter in small pan, add flour and combine. Gently cook for a couple of minutes watching it doesn’t stick or burn. Slowly add the warmed milk until you have a thick smooth sauce. Add grated cheese, keeping back a little for the topping, mustard, paprika and season to taste and cook for a couple of minutes until cheese has melted and you have a smooth sauce.

5. Pour the sauce over the cauliflower.

Roasted Peppers Stuffed with Spicy Minced Chicken

Cost – 5-6 euros. Serves 3 people

Ingredients

3 peppers

1 chicken breast

1 small onion diced

1 tbsp olive oil

Grated cheese

1 tsp Cajun spice

Salt & pepper

Method

1. Preheat oven to 200 degrees.

2. Remove stalks and seeds from the peppers and slice a piece off each pepper from the top down.

3. Place the deseeded peppers on a roasting tray and lightly spray with a little oil and roast in oven for 10 minutes while you make the filling.

4. Chop a chicken breast into tiny pieces and place in frying pan with 1 tbsp oil.

5. Brown the chicken, add the diced onion and fry until softened, then add the diced peppers and cook together. Add Cajun spice, salt, and pepper.

6. Add the filling into the peppers and top with grated cheese.

7. Return peppers to oven and roast for a further 10 minutes until cheese has melted.

8. Serve either on their own or on a bed of greens (I used savoy cabbage).

Chicken Liver Crostini with Grapes

Cost 4-5 euros. Serves 3-4 people

Ingredients

350g chicken livers

1 garlic clove grated

1 small onion chopped

1 small bunch of grapes

25g butter

1 tbsp olive oil

1 sprig of rosemary or 1 tsp dried

3 tbsp sherry

1 baguette cut on angle

Parsley for garnish

Method

1. Preheat oven to 200 degrees c. Remove and discard any stalks from the grapes and place on a tray and roast for 20 minutes.

2. Trim and chop the chicken livers, removing any white bits.

3. Rub the bread lightly with garlic, drizzle with a little oil and toast. Set aside.

4. Heat olive oil and butter in frying pan, add the chopped onion and gently cook until softened and transparent.

5. Increase heat and add chicken livers and rosemary and fry until they are all browned and cooked through to your liking (some people don’t like them to be pink – I am one of them!)

6. Add the sherry and cook until evaporated.

7. Add chopped parsley and grapes. Reheat the toast and top with the chicken livers.

New Year’s Resolutions

How can you make this year different?

It’s that time of the year when we make promises to ourselves to change our lives in the New Year in some way or another. For many those New Year Resolutions are to lose weight, stop smoking, stop drinking, leave a toxic relationship, eat a healthy diet, exercise more. For most those good intentions are lucky to last until February if they ever got off the ground.

First thing to realize is that if New Year’s resolutions are going to work it is going to take work, focus, commitment, and energy. If you set goals that fit into your life you will stand a better chance of achieving them.

When you set those goals remember to

Be specific

If you want to lose weight, it’s better to be specific, i.e., I would like to lose two or three pounds per week with a goal of getting to ? your desired weight in X months.

If you want to exercise more - i.e. I will exercise for 15 minutes, twice a day.

I want to eat a healthier diet – i.e. I will start eating at least one portion of vegetables with my main meal every day.

Be realistic

If you want to lose weight, there Is no point in telling yourself you will lose stones in weight in two months if you have struggled to lose weight for years.

Measure your results

Find simple ways of measuring your results. Many people have fitness trackers on their watches and can measure the number of steps they have taken in a day which is good if you are trying to exercise more.

There are many apps to help you measure different things, like calorie and specific food intake measurements.

Celebrate successes

Don’t forget to give yourself a pat on the back for your successes. Buy yourself a reward especially if one of your goals was to stop smoking. You could buy yourself a little gift with the money you saved on buying cigarettes.

Remember little steps lead to big changes, so don’t beat yourself up if you eat too much cake when you are trying to lose weight. Goals and changes are not punishment they are taking you to a better, healthier life. Recognize it for what it is and get back on track.

The beginning of a new year really does give us an opportunity to kick start changes in our lifestyle. No excuses, the overindulgence of Christmas has passed and it’s time to get serious about your health.

A resolution to be healthier is one of the most important steps you can take. This might include losing a few pounds, reducing your intake of alcohol, or getting fitter. When you put your health as a top priority you will achieve your goals

Too many people go on faddy diets, thinking there is a quick way to become a few sizes smaller. These usually fail quickly, and you become despondent.

Why? Because your resolutions are not serious or geared to your health.

Let’s think about this! If you are overweight, unfit, and consuming too much alcohol, what is happening to your body, your heart, your organs, and your brain?

Do you really want to cut years off your life? Sounds harsh doesn’t it! But this is the reality. Unless you act, you will increase your chances of heart disease, type 2 diabetes and high blood pressure and get depressed. How much more of an incentive do you need?

Everything is possible when you take positive steps forward.

Here are a few tips to kick start your healthy 2023 journey.

Weight loss and gentle exercise tips that work

A simple plan to lose just five to ten percent of your body weight can help avoid health issues.

1. WHY do you want to lose weight? In our article on New Year’s Resolutions, reasons behind setting your goals are fundamental – i.e., better health, a beach holiday, a wedding. Your WHY is so important. Although, what could be more important than your health?

2. Make healthy food choices. Be conscious of what you are eating and drinking. If you continue to drink sweet fizzy drinks, even if they are “diet” drinks you will do long term damage to your health. Choose lean meats, eat high fibre foods that will keep you full longer. Don’t buy packaged, processed ready-made meals. They are full of additives that will damage your health.

3. Menu plan. As well as making healthy food choices, be conscious of what you are buying in the supermarket. Plan your menu for the week ahead and buy your shopping in line with your plan. Not only will you save money, but you will also make healthy meals and not be tempted to grab something ready-made when you are in a rush.

4. Smaller plates and smaller portions. Often, we eat as habit. We pile our plates up with food because that’s what we have always done. Reprogramme your brain and habits, reduce your plate size and reduce your portions. You will soon adapt and eat less.

5. Eat breakfast. A healthy breakfast is the most important meal of your day. If you think about WHY this is important you will be more inclined to take breakfast seriously. Breakfast kick starts your day and replenishes the supply of glucose which boosts energy as well as starting your day with nutrients required for your health. Diets that encourage skipping breakfast are not helpful as you end up eating more at lunch time and are tempted to grab biscuits or chocolate before you even reach lunch.

6. Drink more water. Drinking a glass of water before each meal will fill you up and stop you eating too much. Generally, make sure you are drinking at least 8 glasses of water per day to keep your body hydrated. Often when you think you are hungry you are just thirsty. Remember this when you reach for a biscuit and consciously have a glass of water instead.

7. Move! Move more and sit less. Physical exercise is key to helping you shed some pounds and keep them off. Make a simple plan to walk briskly for 20 to 30 minutes a day. Park further away from the entrance to the supermarket. Take the stairs rather than the escalator.

8. Exercise from the couch! If you have mobility issues, you are house bound or must sit at work, you can still exercise.

Work your legs

• Whilst sitting, raise your left leg straight up and squeeze your thigh muscles - hold the position for a count of 10 then lower your leg. Now do the same with your right leg. Repeat 5 times.

• Sit on the edge of your couch or chair with your feet flat on the floor. Lift your toes toward the ceiling and hold for 30 seconds and feel the stretch in your calf muscles.

Repeat 5 times.

Stretch your upper body

• Whilst seated, tighten your stomach muscles, and slowly rotate your torso to the left and then to the right, keeping your hips and legs facing forward, so you are only moving your torso. Repeat 10 times.

• Remain seated, keep your back straight, pull together your shoulder blades. Be aware of your posture and don’t shrug. Hold this position for ten seconds and repeat 10 times.

Work your hands and arms

• Squeeze a small foam ball in your left hand for 30 seconds and then repeat with your right hand.

• Stand up and put your arms straight out to the sides and slowly move them in big circles for 30 seconds, rest and reverse the direction of the circles. Repeat 10 times.

Get up and march around

• If you can move around, get up and move. March around the house taking lunges – it might feel weird, but you are getting the blood flowing.

Think about it, if you were on a long-haul flight you would get up and stretch your legs and your body. You may be sitting every day for more hours than that long haul flight!

It is a chilly overcast day in 1492. The date is January 2nd. A large silent crowd lines the streets. In the centre of the town a small group of despondent turbaned men patiently wait on horseback to surrender the Key of Granada. Isobel the Catholic accompanied by her husband Ferdinand of Aragon approaches, also on horseback. Thus, after ten years of siege, the city of Granada fell to the Christian troops ending almost 800 years of Moorish rule of Spain.

How different it had been in the year 711, when the Moors had swept triumphantly through Spain, conquering all before them. Recent years had not been so kind to them and gradually they had bit by bit ceded their kingdom to the Christian onslaught. Now the last standing Moorish city, Granada was surrendered by the Moorish king Muhammad X11, also known as King Boabdil. But what a wonderful legacy these intelligent innovative people from Africa left behind.

Granada sits amongst hills, overlooked by the magnificent, often snow covered mountains of the Sierra Nevada. During their occupation, the Moors built the world famous Alhambra Palaces.

An absolute ‘must see’, when you visit this fabulous city. A visit to the Alhambra transports you to a world of sparkling fountains, horseshoe archways, stunningly ornate ceilings and beautiful gardens.

The highlight is the mind blowing beauty of The Nasrid Palaces. Named after the last Moorish rulers of Granada the Nasrid Caliphate, the views from the palace are incredible. In the tree covered valley below, the sparkling waters of the River Darro with its ancient stone built hump backed bridges remind us of simpler times. On the other side of the valley the many white houses of the Albaicin district sparkle in the sun.

This is the area where the medieval working population lived and worked Although some buildings have been altered, the shape of this district has not changed in centuries and should not be missed. Narrow, winding cobbled streets lead past historical buildings, to wonderful squares with fabulous panoramic views of the city and the Alhambra.

At night this district comes to life with the strumming of guitars and the distinctive sound of Flamenco singers providing music for Zambra – Granada's fiery equivalent to flamenco dancing. Often called Gipsy dancing.

Around every corner is something else to see.

In the city centre the massive cathedral (formerly a mosque) adjoins the Royal chapel. The tomb of the Catholic Monarchs is found here. Their coffins along with those of Joanna the mad, Philip the handsome and the boy prince Michael can be seen here behind a glass screen.

Behind the cathedral the buzz of day to day Granada surrounds us in the old Moorish market area. Horse shoe archways, tapas bars, market stalls, gift shops and boutiques compete for our attention. Everywhere we are reminded of the different influences of Moorish government followed by Christian rule. In the summer the River Genil tumbles forcefully down through the edge of the city as the snows of the Sierra Nevada melt.

Live Your New Year with Purpose

A new year is like a new chapter in a book waiting to be written. The book is your book, your chapter, and your life. Are you living your life to the full. Are you living a meaningful life filled with satisfaction and purpose? If not, it’s not too late.

Everyone is different and we want different things, however there a few cardinal rules of life:

• Love life and live every day as if it was your last.

• Have a grateful heart. Be grateful for everything you have no matter how insignificant it may seem, and every day thank God/The Universe or whatever or whoever you believe in.

To what extent is it advisable to make a donation of your assets in Spain?

A donation implies that one person gives an asset they own to another, without the latter having to give anything in exchange for receiving it; it would be a gift, and can be made by any person who has the capacity to contract and dispose of their assets.

The person making the gift can give his or her property to whomever he or she wishes, and it does not have to be exclusively a family member. Therefore, there is no limitation on the choice of the person who will receive the gift, as long as the person receiving the gift, in turn, has the capacity to accept the property given to him/her.

Is it better to donate during life or wait to inherit after death?

In Spain, given the tax system, inheritance is the most common way of passing on wealth. However, if you wish to make a donation during your lifetime, you should be aware that this operation will be subject to the following taxes:

1. Inheritance and Gift Tax, which will be payable by the person receiving the donation.

2. The gain generated by the donor must be declared for Personal Income Tax.

3. The municipal capital gains tax, in the event that the donated asset is real estate, which will also be paid by the recipient of the donation.

It should also be borne in mind that there are significant tax reductions for the taxes levied on the donation, depending on who is the donor, who is the donee and the Autonomous Community in which the property is located.

Therefore, it is always advisable to consult a specialist lawyer who will advise you taking into account the value of the donation and the relationship you have with the person receiving the gift.

The Royal Pages will visit Torrevieja on 3rd and 4th January so that children can deposit their letters in the Royal mailbox located in the Plaza de la Constitución from 5pm to 7pm
