usinesses, regulators, police groups and health and treatment specialists across the united states and in Ohio are supporting a bill pending in congress entitled hr 5034, or the comprehensive alcohol regulatory effectiveness (care) act of 2010. the OlBa’s interest in the care act is to protect state laws that were drafted by the Ohio legislature. Over years several large suppliers in the united states have challenged individual state laws just because they are different than another law in another state. the OlBa opposes a one size fits all liquor law and supports Ohio’s liquor control system. individual laws that could come under attack in Ohio include the quota system, recent sunday sales victories, state agency contracts, prohibitions against quantity discounts and even laws that require distributors to service every account in their territories. When prohibition was repealed, the 21st amendment gave the individual states the right to regulate liquor within their borders. in Ohio, the OlBa has been part of the conversation regard-

ing liquor regulations and has been instrumental in drafting laws and rules that work in our state. Ohio laws are designed to strike a balance between a variety of interests including ours as well as other types of retailers, distributors, supplier and the general public. at the end of september, the united states house of representatives Judiciary committee held a hearing on hr 5034. the only opposition offered at the hearing was from california wineries and national breweries. the opposition claimed that their businesses would be hurt if the care act were to pass. the claim is false. Nothing in the care act would change the world we know, it simply gets federal courts to understand that just because state liquor laws differ, doesn’t mean they are unconstitutional. the only industry truly hurt by the care act is the lawyers who continue to use the federal courts to challenge state liquor laws.

he Division of liquor control is anticipating another successful holiday season this year. specialty gift items are a long-standing holiday tradition for the liquor industry and each year at this time the Division’s agency Operations section

partners with suppliers to make a variety of these gift-giving ideas available for Ohio consumers. suppliers submitted products in July that were made especially for the holidays. after reviewing these products, the Division selected items that include a range of brands and prices that have the potential to appeal to Ohio con-
sumers celebrating the holiday season. for the 2010 holiday season, 48 holiday gift packs totaling more than 24,000 cases of different types and brands of spirituous liquor were selected for sale in Ohio’s contract liquor agencies.

Less is More The Secret to the Success of Tito's Handmade Vodka? Not Changing a Thing By aLIa akkaM

ack in 1997 in Austin, TX, long before the vodka category was as cluttered with artisanal versions as it is today, Tito’s Handmade Vodka was born. Tito’s, made in Texas’ original microdistillery, is the brainchild of Tito Beveridge, a native Texan and geologist who started experimenting with flavored vodkas in his spare time. His decision to launch a venture around vodka crafted in small batches in an old-fashioned pot still was a wise business decision: six-timesdistilled Tito’s is now well-received nationally. It may not have a multi-million dollar ad campaign to attract potential customers, but according to Nicole Portwood, brand manager, “We have a high-quality American-made product that appeals to folks who want that pure, smooth taste of an exceptional vodka without paying for the hype.”
Brand Development At a SRP of $19.99, Tito’s is indeed a value. To leverage its popularity, instead of introducing product extensions—for the first time ever, this holiday season Tito’s will debut a gift bag in the off-premise market—it continues to rely on word-of-mouth to build

its brand and expand to new markets, which dovetails nicely with today’s affinity for social media. Portwood comments, “A lot of our growth has been due to people sharing their stories and experiences with friends and family. In that respect, social networking has just become one more person-to-person way of sharing that information and those great stories. We are active in that world because we love to hear from our fans and friends out there, and social media makes it easy to have those conversations across the country and in real time.”
The Basics When Beveridge launched his company over a decade ago, he did not know the craft distillery movement would be at the forefront like it is now. Instead of hoping to establish a trend, he simply wanted to make quality vodka his friends could afford. “The best way for him to ensure that is to be down at the distillery every day, handcrafting each batch, tasting and tweaking ‘till it tastes just the way he likes it. Tito’s name is on every bottle, so it’s really important that it’s a product he is proud of,” explains Portwood.
Defining a movement may not have been Beveridge’s goal, but there is no denying the flood of small-batch vodkas now on the market. Tito’s continues to stand apart by emphasizing quality, employing the same techniques and standards it has since the beginning.
Inspired Cocktails Portwood says she hears about bartenders who make cocktails with Tito’s all the time, from bold molecular recipes to straightforward Martinis and re-imagined Moscow Mules. “We are always so incredibly flattered when the inventive mixologists out there choose our brand to showcase their best creations. The Ohio Division of Liquor Control provided a “Do’s and Don’ts of Liquor Law” seminar. “Self Defense for Bar Staff,” gave attendees self defense techniques they can use when dealing with unruly customers and “Grow Your Bar Business Using Social Media” featuring Barry

Chandler of thebarblogger.com was a great chance for bar owners to learn how to get their bar involved with social media. The Arlington Entertainment Complex, which closed to the public during the day of the event, provided an excellent venue for the Show. My staff and I received many positive comments from the vendors who participated in these events. Thanks to all of the permit holders and their employees who attended the Expo. District court permanently enjoined the enforcement of the provisions of rule 52 which regulated nudity, sexual activity, sexual contact and sexual conduct on

a permit premises. as a result of her decision, certain provisions of rule 52 that regulated nudity and improper conduct on liquor permit premises were unenforceable. this decision was appealed to the sixth circuit. During the summer of 2008, the sixth circuit court of appeals rendered a decision reversing Judge aldrich and determined the challenged provisions of rule 52 constitutional. the court elaborated that rule 52 is a constitutional content neutral regulation of the undesirable secondary effects associated with nude dancing in an environment serving alcohol, including; prostitution, drug trafficking and assault. although the court stated that nude dancing is protected by the first amendment, that safeguard is only “within the ‘outer ambit’ of the first amendment’s protection.” rule 52 has a minimal impact on the market place of ideas because persons desiring to perform mainstream works of art involving nudity and sexual activity may do so in an establishment that is not licensed to sell liquor. after the u.s. supreme court denied plaintiffs’ petition to hear
further appeal, they filed a new motion in Judge aldrich’s court requesting another injunction. Plaintiffs’ set forth an argument that rule 52 is unconstitutional as applied. they argued the applied challenge was not resolved by Judge aldrich because she found rule 52 to be facially unconstitutional on overbreadth grounds. following the death of Judge aldrich, the case was reassigned to Judge Polster. Judge Polster ruled on Plaintiff’s motion that “the sixth circuit left no room for such a challenge to go forward.” the sixth circuit held that “rule 52 was constitutional because it applied to plaintiffs’ strip clubs and not to contact done in furtherance of legitimate works of art for the purpose of conveying artistic meaning.” the court further opined “[p]laintiffs’ strip clubs are the exact type of establishment contemplated by the Ohio liquor control commission.” as a result, plaintiffs’ new motion for an injunction based on an as applied challenge was denied and Judge Polster refused to re-litigate matters already decided by the sixth circuit. the court then lifted the stay of enforcement of rule 52 until september 8, 2010 to permit plaintiffs an opportunity to seek a stay from the sixth circuit. Plaintiffs did file for relief with the sixth circuit; however, the sixth circuit was unpersuaded that the plaintiffs have shown the necessary likelihood of success on the merits that would support an injunction pending appeal and also denied the motion for injunction on september 7, 2010. therefore, local law enforcement and the Department of Public safety may once again enforce all provisions of rule 52. if you do have nude performers or employees engaging in improper conduct on your liquor permit premises, you must review the laws and make certain the performers and employees strictly comply with all applicable laws, including rule 52.

he ePa’s plan to impose an even more stringent standard for ozone levels may not concern the average Ohioan much. What they probably don’t realize is that if these standards are allowed to go forward, then Ohio’s unemployment problems will become even worse than they are today! these new ozone proposals will cause people to lose jobs all across america. they can’t be allowed to go forward. Our members meet people from all over the us in their businesses, and the stories they hear about the hard times back home are heartbreaking. unemployment levels are shockingly high in some states. People have been out of work for months, even years. everyone’s anxious for the economy to start sizzling again, so they can go back to work and start paying down the debt they’ve racked up. the last thing they need right now is another burden.
the ePa, however, seem not to have noticed the sad state of the national economy. they want to lower the current ozone standard, set just two years ago, from 75 parts per billion to 60 ppb.

scientific background to understand how reducing ozone levels by a measly 15 parts per billion are going to make any significant contribution to air quality. But, as a business person, i do understand the economic impact of this arbitrary and utopian standard. as an american, i’m outraged by it.

Rev It Up Value and Accessibility Fuel Growth for Red Truck Portfolio By AlIA AkkAm

f Fred and Nancy Cline of Cline Cellars hadn’t been in attendance at an auction for the Sonoma Valley Museum of Art, they might never have laid eyes on Dennis Ziemienski’s striking painting of a classic red Dodge truck set amid a calming, pastoral background. It was the sight of this old automobile that inspired the duo to launch Red Truck Wines in 2002. “The Red Truck portfolio doesn’t necessarily cater to an old or young demographic exclusively,” points out Doug Walker, manager, 585 Wines. “Red Truck strikes a chord in terms of Americana, evoking images of life on the farm. It’s not a critter brand that was made up; it actually tells a story.”
Beyond a Blue Sky While the vintage truck set against a peaceful landscape of rolling hills certainly appeals, winemaker Charlie Tsegeletos crafts consistently good wines that are accessible to consumers. “We’ve repositioned our pricing on Red Truck to provide strategic value to our customers,” explains Joey Franzia,
general sales manager, 585 Wines. “One thing Bronco Wine Co., which took control of 585 Wines Partners in early 2010, does well is offer efficiency of vineyard ownership; we manage all facets of wine production from the vineyard to the table, and provide high quality at a great price.” Red Truck’s signature blend (SRP: $10.99), an easy-to-drink, fruit forward wine, features a combination of Syrah, Petite Syrah—which offers a nice tannic backbone—Cabernet Franc and a touch of Mourvedre and Grenache. “Our grapes come from the same consistent growers as well,” notes Walker. “Even though the brand has grown, Charlie has maintained a certain style with his wines.” In addition to the Red Truck blend, single varietal releases (SRP: $11.99) include a Central Coast Cabernet Sauvignon, California Pinot Noir and Sonoma County Zinfandel. Just in time for the holidays, Little Trucks (SRP: $11.99), 187ml four-packs of Red Truck, are the ideal stocking stuffer and respond to the growing trend of consumers seeking out alternative wine packaging options.
An Accelerating Truck “When we started it was literally just the red blend,” says Walker, who points to the brand’s growth with equally successful line extensions like White Truck (SRP: $9.99-$11.99) un-oaked Chardonnay, Sauvignon Blanc and Pinot Grigio; Pink Truck (SRP: $8.99),
a summer blend of Zinfandel, Grenache, and Mourvedre; and the all-organic Green Truck (SRP: $13.99), a collection of Petite Sirah, Sauvignon Blanc, Zinfandel, Chardonnay and Cabernet Sauvignon, Walker comments, “Green Truck is very exciting, but it’s going to take some time for the segment to grow. It has to be a bottle of wine that’s good first, organic second.” So far the brand has made waves partnering with Whole Foods. Primarily the wines under the Red Truck umbrella are recognized in the off-premise, but Franzia is quick to point out that they are also becoming more well known in the on-premise, appearing on wine lists at casual chains such as Texas Roadhouse and California Pizza Kitchen, as well as those at Kimpton Hotel restaurants like Silverleaf Tavern in New York City. tracking and managing your sales correctly By chucK DeiBel

i and welcome back to the last call! We have had a busy fall. this month’s topic is sales and inventory controls. With most of the money coming into your business from the sale of your inventory this particular area of managing your bar is critical. i am writing on this subject matter in part, because in my 35 years of working in the bar business over 95% of all bars do not track and manage their sales and inventory using the correct procedures. a bar not using these procedures will experience an average loss of 15% of their gross sales to the bottom line. Bars that use these procedures will experiences losses of 3% or less. that’s like being less than ½ of 1 percent off of your ideal liquor cost percentage. many bars simply look at their financials from one month to the next. it’s simply not enough. let’s split this discussion into four areas. tracking sales, tracking inventory, analysis and management. tracKiNg sales. many bars and restaurants still use a manual cash register. there are several reasons why you want to use a computerized POs system. a regular cash register allows the user to index the price of the sale in manually. this can allow them to ring in any price they want and it’s usually into an open department. this means they can ring in a happy hour price during regular pricing hours. a computer is programmed for the time and the day for the proper price and cannot be changed expect by the manager or owner. the bartender simply presses the button for the product they are serving and the computer charges the correct price. also, tab sales all have to rung in and the system can’t be closed out until all tabs are closed. a manual register uses manually written tabs that can be blown away with the wind or not recorded. tracKiNg iNveNtOry. the inventory needs to be counted weekly (weekly is best, followed by bi-weekly and then
monthly). the precision of counting the inventory needs to be at or better a serving size for that product. for bottles of beer this means 1 beer, for draft beer this means you need to know within at least you’re smallest serving size how much is in the kegs. and for liquor this means to a 1/4 of an ounce, as we pour in all mixed drinks in ¼ oz increments. this means tenthing the liquor bottles and shaking the kegs isn’t close enough. it’s best to weigh the open containers.
Over 95% Of all Bars DO NOt tracK aND maNage their sales aND iNveNtOry usiNg the cOrrect PrOceDures aNalysis. most operators simply compare their current actual cost percentages against past actual cost percentages. some will calculate their percentages using just their purchases for the month divided by the sales for the month. Both of these methods are flawed. comparing a past actual percentage against your current actual percentage is simply comparing actual results to actual results. it would be like comparing the count of the actual cash in the drawer for last monday to the count of the actual cash in the drawer for this monday. instead, you compare the actual cash in the drawer count to the actual sales for that same day to determine if your money is on or not. so you are comparing actual cash (what’s counted) to ideal cash in the drawer (what’s on the Z tape or cash in drawer report). you should be determining the quantity of the product sold, which obtained from the product mix report to the quantity of the product used, as calculated by calculating your inventory usage for the period of time being measured. this method eliminates the issues that happen when you have

changing product mixes and differences in costs and selling items for happy hour pricing. you would need a software program to accomplish this method of analysis. maNagemeNt. and finally, you need to manage the staff with the information by holding them accountable. Bars that have low levels of shrinkage provide either rewards or consequences or both to both managers and staff. they provide regular feedback as to the results of the inventories. t’s November: You’re contemplating holiday sales numbers, stocking up on bubbly and special occasion wines or developing festive cocktail recipes. Are you concerned about what the holiday season will bring? Wondering how many glasses of that housemade eggnog you’ll sell? How many VAPs you will have to return to the warehouse? The power of persuasion, the pursuit of customer appreciation and a few kind words can go a long way to getting even more of your product into your customer’s shopping cart, more drinks coming across the bar, more bottles flying out of the wine cellar.
At Your Service John Henry, partner in Pipeline Brand Agents, sees holiday sales increase when retailers use the right tactics. He says, “My overall concept is what I call the concierge process. You can’t just do the gift sets, stack them up and walk away. You’ve got to get in deep with your customers. The (wine/liquor) stores that are doing well are embracing their customers like good restaurateurs do and offering some special things for them. With your customers you literally have to spend some time with them, like the best clothing stores do.”

Suburban Wines and Liquors in Yorktown Heights, NY, and Drinks Over Dearborn in Chicago, IL, pride themselves on providing their customers with the same kind of bespoke service you’d find at a custom tailor in Hong Kong or on Savile Row. Kevin Flannery, Suburban’s spirits manager, knows that building trust with his customers engenders repeat business. While he’s willing to take in a few stand-out gift packs that he knows will sell, his approach to hearing that cash register ring over and over again is to serve as a trusted guide to all who enter his store. “Customer service: it makes all the difference,” says Flannery. “To really sell, you’ve got to get the people willing to work with you, take a chance and throw a little trust out there. In our store I have a lot of eclectic brands in there. When I have something in here I stand behind it. I tell my customer ‘When you get home you’re going to thank me. You’re going to put it in whatever drink and you’re going to recognize it and you’re going to like it.’ Plenty of times when I’m having this conversation another customer will come up and say ‘Listen, he knows what he’s talking about.’” It’s a similar climate at Drinks Over Dearborn. That sales technique allows shop proprietor Kyle McHugh to sell his clients a whole lot more than they initially walked in for. He says, “Upselling is an art, especially in this eco-
nomic environment. First of all, you never get anything (including a bigger sale) without asking for it, and the tone in which you ask for it makes a big difference. The easiest way to upsell, for myself and my staff, is to show the buyer why they should spend a little more on a better product. If you can taste them on it, like with spirits, it can really drive a point home—if the customer falls in love with it, they have to take it home; it’s like selling them a puppy; you’ve got to have them hold it, then they’re hooked. The other good upsell is accessories. Buying whiskey for a Manhattan lover? Ask them, ‘What are you using for sweet vermouth?’(usually something horrible that they’re not refrigerating is the answer) and then say, ‘You have to try this (Punt e Mes, Carpano Antica). How about your cocktail bitters?”

From coast to coast it works like a charm with skilled bartenders focused on making a customer happy and creating repeat guests. Have some kind of decent POS to entice customers to buy product with—good glassware, a pitcher, a punch bowl, nice wine openers; stuff that can be auxiliary gifts or stocking stuffers to help push that one extra sale from a customer to get the premium.

Be ready to answer questions on how much to buy based on attendance, time and what’s being served. Also suggest specific items/styles/grapes that are group-friendly for parties.

terest in the bar’s farm fresh cocktail program. He says, “I’m upselling all the time. Instead of them ordering a normal drink, I’m offering them a cocktail. When they ask for their standard drink I’ll say, ‘I’d love to make that for you, but this is what we do here, I go to the farmer’s market four times a week. If you don’t like this, I’ll make you the Grey Goose and soda.’ By convincing them to try something new I’ve gotten them up to a $16 cocktail.” He continues, “But the upselling is not so much per drink. It’s anchoring them in that bar and creating an experience so they stay three, four hours and their check is that much better. I’m giving them sips of every cocktail that I make. Especially if it’s someone in for the first time I’m drawing them in.” Josh Pearson, head bartender at Sepia in Chicago, draws them in (and sees check averages growing) when he can play the role of educator and offer a taste of something special. “Generally people are looking to celebrate at that time of year and are more willing to have a cocktail or glass of Champagne before their meal,” he explains. “They also tend to indulge in the ultra-premium spirits (rare or vintage) so having a few on hand definitely helps. When a guest asks for a drink without specifying a brand, I use that as a chance to steer them to a higher quality and price spirit. When guests eat at the bar with me I always offer to pair wine with their food, dessert wine with dessert and offer Cognac, Scotch or a digestif after their meal.” In Miami, Michael Flannery has a bar that looks like it could produce a meal. Each night he sets up his bar at Mondrian South Beach with a lush mise en place that is the Cachaça-centric bar’s visual focus.
In a place where people are on vacation relaxing in this gorgeous setting, a little conversation and a little free taste of someone else’s drink is all it takes to elevate a check from one drink to more. “The mise en place on the bar brings up conversation. We’ve got this gorgeous white bar and we stock it with fruits and vegetables—it’s a tropical paradise,” Flannery points out. “I’ll make a drink and pour a little for the other guy too. Ultimately it’s all about social interaction—introducing people to each other and introducing them to new things.”

While the after dinner drink is a familiar concept, most guests don’t consider starting off their meal with a celebratory glass of bubbly. Emily Wines, wine director for Kimpton Hotels, is out to change that and seamlessly bump up her server’s check averages. She says, “We have a program called Champagne First. If you’re offered a glass of bubbly it sets a tone and gets people to start thinking of Champagne beyond celebratory and instead as a great way to start a meal. This program has made a very measurable spike in the by-theglass program. Not so much in the bottle service but we’ve noticed a spike across the board in wine sales and, most notably, in Champagne sales.” Selling ice to a customer seems even trickier than getting them to think about Champagne as a first drink, but tap into the Glace Ice program, which has a holiday season partnership with DonQ Grand Anejo, and profits can go from 300% to 450% according to company owner, Roberto Sequeira. He explains why bars and restaurants benefit from having a branded ice program and what they bring to the table during the holiday season when patrons are inclined to treat themselves, “We’ve always advocated for on-prem-

ise using premium ice; it’s a perceived value—it gives the establishment the ability to up charge. You can’t charge for ice if they (the customer) think it’s regular, generic or homemade. Glace has always offered a branded product to give the ability to charge like a premium brand over a well brand. That’s important from an upsell standpoint and a cocktail consistency standpoint. It’s very simple—someone having an anejo rum on the rocks is having a substandard experience to someone having a DonQ over Glace ice. Those that choose that level of experience are willing to pay. And, because Glace ice will last 20-40 minutes in a tumbler, chances are they’ll enjoy the experience so much they’ll have a second drink. The nice thing about the second pour is the establishment captures the entire profitability because they’re not paying for the ice the second time around.” Offering that unique experience during the holiday season, the one that leaves the customer feeling warm and fuzzy, is what leads your customer to say, “I know the experience will be better so I’m willing to pay more, I’m willing to buy more.” And that approach to upselling will make your holiday numbers ring loud and clear. ■

WHAT WOMEN WANT How to Better Serve Your Most Important Customer BY KRISTEN BIELER

ordan Salcito knows how high-end wine drinkers operate. As the sommelier at East Hampton’s Nick & Toni’s and former sommelier at the four-star Eleven Madison Park in Manhattan, she’s seen her share of four-figure wine tabs, and some of her most wine-enthusiastic diners are women. “One of my biggest spenders at Eleven Madison would request something ‘good and red’ and trust me to choose for her,” she recalls. “She had tremendous confidence in her wine knowledge, price was never an issue and she preferred to deal only with a female sommelier.”
What Salcito describes reflects important changes in the way Americans buy wine, but the shift is perhaps most dramatic amongst female consumers: Women are more educated about wine than ever before, they spend a lot of money on it and they prefer to drink red. Yes, women—both as wine drinkers and as wine professionals—have come a very long way, and the industry is still struggling to catch up. WHY WOMEN MATTER Women are estimated to purchase over 70% of wine sold at retail in the U.S. and account for half of the high-end wine purchases as well (wines over $15 a bottle). So, with the current channel shift from
on-premise to off-premise, women have become even more important consumers and there has understandably been a rush to serve this critical growing market. We asked retailers, experts and suppliers to weigh in on what works and what doesn’t work when it comes to selling wine to women: THE REASON “CUTESY” OFTEN FAILS Suppliers and marketers have unleashed a flurry of labels unabashedly aimed at women (Little Black Dress, Promiscuous, Bitch, Working Girl White, Mad Housewife, White Lie, Girly Girl, Seduction, Bootleg, Middle Sister Wines, and BrownForman’s One.9 and One.6 low-carb wines,
among many others). Some have caught on, but many haven’t. “When something is too cutesy and overly feminine, women have no confidence in it. It lacks subtle quality cues and comes across as having no substance or credibility,” says Wendy Nyberg, senior director of marketing, Sutter Home Winery, who has worked in the industry for 23 years. “Women are smarter than marketers give them credit for. At the end of the day, women want to spend their money on quality.” Kim Donaldson and Alyssa Rapp, who founded Bottlenotes, an online community for wine enthusiasts in 2005, blame an absence of women at top tier positions at major beverage companies for a lot of the ill-conceived brands. “Too often, the industry assumes women need something frilly and pink, when in fact this comes off as an insult,” Donaldson believes. “There is a market for some of this stuff, but it’s much smaller than marketers realize. The wine industry underestimates the welltraveled foodie market.” There is another more fundamental reason why many of these female-oriented brands fail to catch on, says Julie Brosterman, CEO & founder, Women &
label provides what women are looking for right now: a chance to explore different types and styles of wine. “It isn’t about marketing to women as much as it is about understanding your female customer,” says Nyberg. “At Sutter Home we know exactly who our customers are: they are mostly female, married with kids, doing lots of in-home entertaining. We also know that women are much savvier and much more adventurous than they were 10 years ago—where they used to drink only White Zinfandel and Chardonnay, now they want to try Riesling and Malbec.” Wine (womenwine.com) a lifestyle community for lovers of wine, food and travel: “A lot of them taste terrible. Besides, most of them are white wines, when research has shown that women prefer red.” Yet some do work. Little Black Dress by Brown-Forman was launched in 2006 and had grown to a 100,000-plus case brand by 2009 (according to Impact Databank). “Today, there’s a big difference between girly and whimsical and a true female brand proposition,” says brand manager Kim Charney. “Little Black Dress was created to leverage the powerful, emotional connection of a familiar icon. It is a trusted wine, just like the dress.” DON’T MAKE IT ABOUT GENDER There are plenty of ways to appeal to women without making wine about gender, says Deborah Brenner, founder and president of Women of the Vine Cellars, a brand which features the wines of various women winemakers under one label. “When I was writing my book, Women of the Vine, I was speaking with Gina Gallo and we decided that this is where so many marketers have made a mistake: They try to make wine about gender.” Women of the Vine Wines are made by six esteemed winemakers, including Heidi Barrett, Alison Crowe and Carol Shelton. “We’re the first company to unite women winemakers under one brand; we want to celebrate the accomplishments of women, but these are not gender wines—there are no cute critters on our labels, no gimmicks, no insulting low-calorie promise” adds Brenner. Her
PROVIDE INFORMATION: WOMEN WANT TO LEARN Giving women access to information will boosts sales, reports Salcito: “In my experience, women ask more questions about wine than men. Often when a man is ordering, the sommelier’s role is to make him feel that his choice is the best one. Whereas women want to create a conversation—they get excited about the history and story behind the wine. And getting into the background behind a wine undeniably leads to more wine sales.” Brosterman also owns the Wine Valet in Beverly Hills, a boutique shop which she opened about three years ago. About one third of her clientele are women, and they, in particular, want knowledge: “Women love engaging with us about wine—they are not used to getting that Women Who Drink Wine Once A Week Women Who Say It’s a Lifestyle

kind of customer service and they love the connection. One-on-one is particularly important for women and a huge factor in getting women to trade up. Women who are used to paying under $15 for a bottle of wine will spend $30 if they know the unique history of the wine.” SKIP THE SCORES: WOMEN ARE LESS CONCERNED WITH STATUS “Even at the collector level, women are less preoccupied with what critics think,” says Rapp. “They aren’t as bogged down by the showmanship aspect of wine. Learning is what is important to them.” Whether they’re loading up on a case for a party, or splurging on a special bottle, “women choose based on their taste preference, rather than the male ego of wanting to one-up the next guy,” reports Robin Kelly O’Connor, director of sales & education at Sherry-Lehmann in Manhattan. “Women are much more pragmatic in buying what they love. Retailers who list descriptions of wines—beyond just Wine Spectator scores—have a much better chance of getting their business.” FORGET THE “SWEET AND WHITE” STEREOTYPE According to a recent Vinexpo study (an online survey of 4,306 women in France, UK, Germany, USA and Japan), women prefer red and it accounts for 63.9% of the wine they drink. This goes against popular wisdom still held by much of the public and the trade, believes Brosterman: “Research has shown that women prefer red wine, although much of the industry doesn’t seem to realize it. Because women drink wine with meals, they are choosing food-friendly, balanced reds.” There are still some shops who automatically lead women to the white section, says Rapp, and they are simply “missing out on sales by underestimating women’s palates.” DON’T UNDERESTIMATE THEIR SPENDING POWER Another thing many licensees underestimate is women’s pocketbooks. “A real bright spot in the high-end wine world in recent years is the growing number of women who are getting into fine wine,”

says O’Connor. “We have female lawyers, bankers and Wall Streeters who spend as much as men.” Rapp believes that collecting means different things for women: “At Bottlenotes, we see women buying a case of wine for the birth year for their child. There has been a huge growth in wine wedding registry, too.” Wine Clubs have seen a big uptick in women members. According to Val Levey, general manager, Wine of the Month Club, “Since we started in 1972, we have felt a shift toward being more female-oriented. Back in the 1970s and ‘80s wine was typically chosen by a male demographic, purchased by men, but that has really changed.” WHERE WOMEN SHOP: ATMOSPHERE MATTERS One segment of the industry that is getting it right is the growing number of retailers who are opening well-lit, colorful, welcoming shops, shares Donaldson: “Atmosphere is probably more important to women than it is to men, and they really respond to this new generation of shops. They host tastings, they have beautiful presentation and they are fun to shop in.” Because of the way women like to explore wine—using more descriptive language—retailers that categorize by wine styles, such as “bold and red” or “rich and white” resonate particularly well with female shoppers. “Women are looking to build a consensus; for example, I liked this style of wine so I want to explore more of it, rather than say ‘I just like Bordeaux’,” says Donaldson. KEEP FOOD IN THE PICTURE “When women buy wine, it is part of an entire experience they are creating—in most households, they are the shoppers, they are cooking the meal and putting it on the table,” says Nyberg. “When men buy wine, they might not be thinking of the whole picture.” Stores that integrate cheese, crackers and food-pairing suggestions show they really understand their female customers. “At Sam’s in Chicago, they added a cheese section to their wine area which offers pairing options,” shares Rapp. “In shops
in California where they do cheese tastings next to wine SKUs, they are the wines that move the fastest.” GIVE THEM THE WINE LIST! It’s hard to believe this isn’t routine by now, but restaurants must offer female diners the wine list as part of standard service. Brosterman worked with Full Glass Research on a survey to shed light on women’s wine experiences in restaurants. The majority of women stated that when a man is seated with them in the restaurant, the man is presented with the wine list. Even more remarkable, 61% noted that even when they had taken charge of ordering the wine, half the time the staff presented the bottle to the male. “I think there are still some assumptions that men are the host; they assume the man is paying,” says Brosterman. “And I frequently notice that when a woman orders wine, the sommelier doesn’t always bring it back for tasting. Women collectors who have this happen to them don’t go back to that restaurant.” Servers and restaurants need to look for clues as to who is in charge, which is a matter of staff training, insists Salcito: “As a rule, one should always place the wine list in the center of the table. If both diners seem interested, bring a second list. Taste both people on the wine, and always start with the woman.” HIRE MORE WOMEN One of the simplest ways to boost sales amongst female consumers is to hire more women. Which is luckily easier than ever before, as the number of women wine professionals has sky-rocketed in the last

decade. At Sherry-Lehmann, O’Connor believes this has been a huge inspiration to female consumers: “Sommeliers and wine buyers like Heather Branch at Eighty One, Laura Maniec at BR Guest and Emily Wines at Kimpton Hotels & Restaurants have an enormous influence. At Sherry-Lehmann currently, almost half our sales staff is female and it makes a huge difference.” Mary Ewing Mulligan was the first American woman to obtain the prestigious Master of Wine degree in 1993. Although she never felt any disadvantage by being a women in the male dominated wine industry, she is pleased to see the ranks of women growing. She founded and runs the International Wine Center and reports that “today the majority of our students are female. Just 10 years ago, it was only about a third.” Even in vineyards and wineries, women’s ranks are growing exponentially. Heather Munsen, winemaker for St. Francis’ Wild Oak wines says, “It’s a very exciting time for women in the oncemale-dominated wine industry.” As for what distinct contribution they bring to the winery, Munsen believes it’s patience: “From grape to bottle, I feel women can show more restraint and care—when to pick, how often to top off wines in barrel and when to bottle.” One other interesting tidbit that Vinexpo’s international survey of women turned up was that 92.5% of participating American women enjoy wine at least once a week—compared to 62% of respondents from other countries. Could it be that women are leading the American charge to catch up with Europeans per capita consumption? Brenner thinks it just might be the case: “America has woken up to enjoying wine on a daily basis, and women are the ones bringing it to the table.” ■
