n Wednesday, december 21, 2011, governor John Kasich signed Amended substitute house Bill 243 (Am. sub. hB 243). As introduced, hB 243 sought to change the number of A-3a permits that may be issued. When originally conceived, the A-3a permit was for a “micro-distiller� and there could be no more than one issued in any county with a population in excess of 800,000. From the original introduction, hB 243 took on various amendments. these changes were sought by many within the industry to promote job growth and creation, support for small businesses, and opportunity for the responsible promotion of various products. As an on premise permit holder, there may appear at first glance no direct changes to your business; however, Am sub hB 243 should allow for everyone involved in the alcohol beverage industry an opportunity to educate consumers on all of the products that are available to them . . . . and that you likely sell! Following is a brief recap of the final version of Am sub hB 243: 1. samples at an A-3a permit premises: in addition to allowing for an increased number of A-3a permits to be issued to businesses looking to become a distiller of less than 10,000 gallons of spirituous liquor per year, the bill also allows for the distiller to allow for samples of their product on their premises. the tastings are limited to four per person and to only a quarter ounce of spirituous liquor for reach taste. 2. F-9: the City of Columbus recently redeveloped the space where the City Center mall sat on into a Park and outdoor Amphitheater. As part of that redevelopment, orchestral performances are held at the amphitheater and the City wanted to ensure that the possession of beer or intoxicating liquor could be

hB 243 sOUght tO ChANge the NUmBeR OF A-3A PeRmits thAt mAY Be issUed 4. tastings of spirituous liquor: in order to bring the ability to taste spirituous liquor in line with laws and rules allowing for the tasting of beer or wine, the legislature has provided for the ability of state liquor agency stores to obtain a d-8 permit for tastings, including spirituous liquor. Requirements for such tastings, similar to beer and wine, include limitations on the length of the tasting (2 hours), the size of the serving (a quarter ounce of spirituous liquor), the number or samples per tasting (4 per customer) and other restrictions. Allowing for these tastings will allow for consumers to be exposed to greater variety of products and opportunities to experience new and innovative products. 5. growler: a growler is a one gallon glass container that is intended for consumption not on the premises. many grocery store and specialty beer and wine shops sought to have the ability to pour beer into a container from a keg; however, due to open container laws, this was not

possible. the new law will allow for the dispensing of beer into the growler for consumers to take home for consumption. Again, there are additional requirements, but this allows consumers, like tastings above, to try new product or in a different manner (i.e. draft beer at home). these opportunities allow the alcohol beverage industry to better understand consumer wants and help establishments, like bars, have a better base of knowledge to tap into to determine the proper inventory for their customers. several other changes were included in the bill (i.e. limitations on who may apply for a d-5l revitalization district permit; sale of beer for on premise consumption on the premises of an A-1 (beer manufacturer) for on premise consumption, similar to wineries; and, technical changes to the transfer of permits for economic development purposes. the above is, again, simply a recap. if you have questions about any of the details or how any of the changes impact your business, please do not hesitate to contact the OlBA state Office.

i and welcome back to the last Call! happy New Year! this month’s topic is proper amounts of inventory to carry. here is the situation we often find ourselves in. how much do we order and how much should i carry as back up stock? And when a new product comes out, how much should i order of it? And to a lesser degree, what’s the best way to stock the product? how you handle these issues will help your business be profitable and efficient. Bars often have one of two delivery schedules. either the all the product ordered comes in on one or maybe two days. Or, there are orders that come in throughout the week. Often this is something that you are at the mercy of the distributors. i personally think there is only really one tough day for a bar to get beer delivery’s on, and that’s Friday. Beer needs about 24 hours to get nice and cold. if your stock is down on beer, the last thing you need to is to be getting restocked on one of a bars traditionally busiest of days. most bars count their stock to determine their pars (the amount of inventory you need to have in stock to make it through until the next time you order) on either monday, tuesday or Wednesday for delivery on the next day or the day following. On that day of counting, you should be at your lowest inventory levels. the overall ideal level to have on that day is a ratio of the amount of inventory used for one week to the amount of inventory on hand for that day of 1 to 1. this means if you use $2,500 worth of inventory to generate $10,000 in sales, you should have about $2,500 worth of inventory on hand on the day you count your stock. We often see bars with ratio’s over 4 to 1 or even 5 to 1. this means they could conceivably go 4 to 5 weeks without even ordering. this is tying up way too much money up in inventory that is essentially not being used. Your money either needs to be working doing something else, such as advertising or paying off other debt. how bars get caught up in this vicious cycle stems from several reasons. the first reason is bar operators don’t want

to run out of stock. Another reason is they over-order on a new product. Another reason occurs when they don’t stock their product neatly and in an organized manner. this leads to not really knowing how much you have on hand, which leads to over-ordering. that situation can occur with bottled beer. it can also happen with liquor. there are certainly exceptions. Bars with lots of wine will often have larger inventory carrying values. As will bars that carry a full compliment of fine scotches for example. For marketing purposes a bar might want every year and style of a scotch, which means that you don’t go through any one single brand by more than 1 shot for the week, if that.

RememBeR tO KeeP YOUR stORAge ORgANiZed Also carrying a lot of craft and import beer can lead to that same situation. But you can still not let it get out of control. A par system should be set up with a software program that analyzes your recent usage and recalculates your pars based on that recent usage history. the next best thing is to establish a par that causes you to order what you went through the previous week. this method is predicated on you maintaining enough back up so that on ordering day you would still have about 25% to 50% of what you need to get through the week. if you find that on ordering day, you have enough inventory to get you through for the week, order less than what it would take to get you through to help you reduce your overstocked situation. it’s important when ordering for bottled beer that you include in your counts and pars the amount of beer stored in the coolers in the bar and not just counting the beer in the walk-in. storing import and craft beer is also an important issue. this can easily get out of hand due to the fact that most imports are only displayed in sets of 6 to 12 beers, usually in some sort of glass doored cooler. it’s important to have shelving in the walk-in cooler to put the remaining six packs or twelve packs

in an organized manner so that the barbacks are not continually opening a new case to pull out 3 beers to restock the front, when there is already a six pack open to take from. imports should be pulled from the shelving first, with the shelving replaced with stock from a full case. the shelving should be large enough to hold 3 six packs, so that when a new case is broken into, its remaining contents can go on the shelf. Remember to keep your storage organized. Keep the back up stock quantities low and don’t over order a new product in the beginning. MAKE THE MOST OF SOCIAL MEDIA The Secret To An Effective Social Media Promotion! By Barry CHandler

nsanity: Doing the same thing over and over again and expecting different results. It is a quote applicable to many things, one of which is making the best use of social media within your restaurant ’s marking efforts.

service. Leaving the same “dead deal” on the table isn’t going to get you anywhere. The phrase “Build it and they will come” will not get you anywhere with online promotion. The most impor tant factor when considering a promotion is self-awareness. Who are you? What do you do well? Why do customers frequent your establishment? If you are primarily a watering hole, offering a big discount off a large food tab probably won’t get you anywhere. If you’re a spot for hot wings, a soup/salad special is probably not going to move the meter.

The most important factor when considering a promotion is selfawareness. We occasionally come across clients who seem surprised they ’ve been having difficulty getting traction with a promotion on one of their social media platforms. That is particularly true with the Social Media Service Foursquare or Facebook Places where your customers can “check-in” to your bar on their smart phones alerting their friends of their activities. Owners will be confused as to why a promotion they’ve connected to a checkin isn’t generating the kind of interest they’d hoped for. Here’s the cold, hard truth: just because you are on Foursquare/Facebook and have an offer out there doesn’t necessarily mean you’re effectively harnessing the

You are intimately familiar with what patrons love best about you. So try and give the Foursquare/Facebook user a taste of what keeps those regulars coming back. If you put a deal out there and see unlocked items that aren’t being redeemed, or deals that are viewed but not unlocked, think about making tweaks to the offer or playing around with a different idea. It’s possible that users in your area aren’t interested in that particular special. Sometimes the issue is that an offer isn’t lucrative enough to attract attention. Make sure to ask yourself “What’s in it for me?” since that is exactly the criteria customers will use to decide whether to check-in or unlock.

You’re doing yourself a disservice if you don’t monitor how the promotion is resonating. A business must work hard to make a special work, as customers who claim deals are likely to report their experience to friends. The beauty of the digital age is that we are almost always provided the ability to pivot very quickly.

Now as nice as it would be, customers aren’t going to slowly drop off in volume week to week so that you can fine tune your inventory and get back to a steady pace. No, one Monday you will step into your walk-in cooler and say “why do I have 60 pounds of ground beef from Friday still sitting here and what in the Sam Hill am I going to do with it.”

busy season is winding down. Sure we have a few spurts left such as the super bowl and St. Patrick’s Day but for the most part the tide is going back out. So how will you handle the adjustments? And are you aware of all the adjustments that need to be made? The best part about the busy times of the year is that incredibly high turnover rate. You can buy all of the product that you want, but you still can’t keep anything in stock. You can staff all the employees you can find, but there is always someone waiting on a drink or a meal. Now that the holidays have concluded and people are waiting on their tax returns, the

There are many precautions to take when scaling down your inventory to avoid unpleasant surprises such as mentioned above. The first thing to do, and something that you should be doing week to week if not day to day is, check your numbers and records in the past years to see when business started to decline. Not always specific dates, but which week of the month. The week is a better way to look at it because dates can fall on different days of the week. This will give you your general idea of when to pump the brakes. Another step that will help fight against product loss is to get fresh product more often. Don’t just get your usual order for a busy time of the year and skip your second order just to use up the inventory you over ordered earlier in the week. Get an order several times in one week so that you can check your inventory on a constant basis to see what is moving and what is sitting. The numbers may

be erratic at first but nothing is clean cut at the start of a change. It will be hard to look at your labor cost and food cost during the transition time because you undoubtedly will be over staffed and over stocked. The good thing about staff is you can cut them on a whim to keep labor low. The bad thing about food is, your provider is not going to honor a receipt on your two cases of week old romaine lettuce. Many of the problems faced due to an abrupt change in customer volume can be avoided by keeping a close watch on your inventory and mobility of menu items. Keeping a close eye on perishables is always necessary to stay ahead of the curve. Nothing stings more than throwing dollar bills one by one into the trash can. Although keeping a tight inventory requires more human labor on the basis of monitoring and multiple small quantity orders, what it saves is money and piece of mind that your customers are getting top quality fresh ingredients every time they have a dish set in front of them. And when it comes down to it; that may turn your “crawl” season into more of a “gallop.” So keep thinking, and keep cooking, the holidays will be back before you know it!

BIG BOLD C Cask-Strength Variations are Creating New Opportunities to Reward Spirits Lovers O

I

n the simplest terms, the proof of a distilled spirit in the U.S. is the percentage of ethanol in the solution multiplied by two: 40% alcohol by volume = 80 proof. But beyond the basic math, proof can be an factor in flavor, a mark of value, a marketing strategy and even a defining characteristic for some spirits.

Much of the current trend of higher proof spirits can be attributed to producers of single malt Scotch and small-batch bourbon. In an effort to present the distillate in its most authentic form, producers began offering “cask strength” and “single barrel” offerings, bottled at full strength rather than customarily diluted at the distillery, just before bottling, to a tidy round number, like 80, 86 or 90 proof. These higher proofs are usually the domain of collectors and connoisseurs. “I don’t have market data, but everything I’ve been exposed to suggests that bourbon drinkers buy 100 proof and higher because they like more flavor—a whiskey that is stronger, richer and deeper in flavor, with more bourbon and less water,”

says Harlen Wheatley, master distiller of Buffalo Trace and Sazerac.

Standing Out from the Crowd Proof can be helpful in differentiating between similar products in a large portfolio like Sazerac’s, with standard 80 and 90 proof spirits at the entry and 93.7 proof Blanton’s and the latest release of George T. Stagg Kentucky Straight Bourbon Whiskey 15 year (142.6 proof) as premium offerings. Wheatley notes that most drinkers heed the distiller’s advice to dilute such spirits. “We don’t as a rule of thumb suggest drinking 145 proof whiskey. It can be consumed that strength, but it is so hot that it is an awful strong

drink. We really advocate adding water or ice,” says Wheatley. His personal taste is for bourbon watered to about 90 proof, a number that Sazerac refers to as “Kentucky proof.” In some cases, proof is so closely identified with a product that it becomes the name, as with Wild Turkey Bourbon and their core 80 proof and 101 proof iterations. In the process of reformulating the classic Wild Turkey 80 from a blend of mostly four- and five-year old bourbons to include older whiskies aged up to eight years, Wild Turkey associate distiller Eddie Russell bumped the proof from 80 to 81. “We wanted to make people understand that it is not the old 80. That means a new package and a new proof. People order the product by the proof so they will be asking for the 81,” says Russell. In addition to the standard proof blends, Wild Turkey offers Rare Breed at barrel proof (usually ranging from 108 to 110). While drinkers won’t be ordering it by proof, Beam’s new Devil’s Cut brandishes its 90 proof strength prominently on the label, suggesting it serves as an important point of differentiation.

Foolproof Flavor? The notion that fuller proof spirits offer bigger flavor spawned the idea that alcohol equals flavor. In a widely cited article, Jason Wilson in The Washington Post suggests that “alcohol delivers flavor, just as fat does in food.” It’s a logical notion, but not factually correct. “I would disagree with that idea. I don’t believe that proof gives you flavor at all. I’m sure you’ve seen white whiskey off the still, but it does not give you any flavor. To get all those good flavors you have to age it in the barrel. That’s where flavor really comes from,” says Russell. Indeed, it’s perfectly possible to have flavorful low alcohol spirits, and neutral tasting high-proof spirits, given that ethanol is essentially flavorless. It’s accurate to say that the flavors in a higher proof spirit are often less diluted, but we should be careful about telling consumers that more alcohol means more flavor. What proof does have in common with fat in food is calories, with ethanol clocking in at 7 calories per gram, just below fat’s 9. Therefore, reducing proof

Proof Positives While the idea of diverse proof levels may be well established in the world of whiskies, categories like Cognac and vodka are far more homogenous in their proof. Nearly all vodka is bottled at the minimum 80 proof, excepting a few 100 proof offerings from Absolut, Smirnoff and Stolichnaya and specialty products like Belvedere Intense and 160 proof Devil’s Springs Vodka. These products are often utilized for on-premise infusions. During its recent history as a luxury sipping spirit, nearly all Cognac, including even the highest marques, has been

bottled at 80 proof, diluted for sipping neat. Taking a cue from mixologists enraptured with higher-proof whiskey, like Rittenhouse Bottled-In-Bond Rye Whiskey 100 Proof and Wild Turkey 101, Cognac Ferrand 1840 Original Formula has been designed specifically for mixing, with 45% ABV or 90 proof. “We discovered that Cognac was drunk at higher proof back in the 19th century. We looked at many of these old bottles, which reached about 50% alcohol and we decided that the 1840 was the best representation to recreate a cocktail Cognac,” says Guillaume Lamy, vice president North America at Cognac Ferrand. According to Lamy, proof resonates with today’s bartender’s and many are eager to mix classic cocktails using the spirits as they existed. “We did not invent the product, but dragged it out of history,” says Lamy.

In Sazerac’s broad portfolio, different proof levels are used to distinguish its bourbons, which include Buffalo Trace (90 proof); Blanton’s and 1792 Ridgemont Reserve (93.7); and George T. Stagg (142.6), among others.

Top mixologists at New Yorks destination like Employee’s Only, Daniel and Apotheke are also embracing Louis Royer “Force 53,” bottled at 106 proof, according to Estelle Ngo, brand ambassador, Louis Royer Cognac. “Not only does the spirit stand up well in a cocktail, but it represents a value. The price difference from our 80 proof VSOP to the 106 proof is only $4. Consumers are very interested in the trying the product and because the price difference is not that significant,” says Ngo. Proof has traditionally played an important role in the rum category, where over-proof rums like Bacardi’s popular 151 are used for everything from pyrotechnic cooking to making fortifying tiki drinks, with the spirit’s ability to stand up to heaps of blended and shaved ice. The burgeoning spiced rum category seems to be taking hint from rum’s history pages as well. When Steven Grasse, CEO of Quaker City Mercantile in Philadelphia conceived Sailor Jerry Spiced Rum, its 92 proof was one of several points of difference from category leader Captain Morgan, along with price and flavor profile. “Sailor Jerry has a really interesting unique story and all the different parts add up to the bigger picture. We were always intrigued by the story of high-proof rum and navy rum. We combined that with Sailor Jerry the person and reflected that research in a more manly, stronger proof,” says Grasse.

Avoiding Pitfalls Now, the category seems to be bordering on an obsession of successively high

Hundreds of years ago, a spirit’s strength was “proved” when whisky and gunpowder were mixed and ignited. If the mixture flashed, then such whisky was said to have been proved; if ignition failed, it meant that the spirit was weaker than “proof strength.” Hydrometers eventually became the standard tool to gauge alcohol percentage by volume, but the term proof has remained part of liquor nomenclature.

“There is an arms race with new entries in spiced rum and higher proof,’ says Grasse. “It risks becoming a gimmick and I think that is dangerous because the industry can get its arm slapped, like a Four Loko situation.” Indeed, the proliferation of highproof spirits carries the seeds of its own peril as some states are taking notice of extremely high-proof products and their impact. Several already have proof bans in place, including Ohio (bans 151), Minnesota (bans above 160), California (bans above 153) and Florida (bans above 153). A 2010 study the Iowa Alcoholic Beverages Commission also looked at options for limiting high-proof alcohol sales, including eliminating alcohol sales above 151 proof or limiting sizes of high proof products. These signs of pushback suggest that suppliers, marketers and re-sellers alike need to be mindful of image. Emphasis at all three tiers needs to be on character and craftsmanship, not strength alone. Coupled with consumer education, higher proof can mean greater flavor, more diversity, new usage and superior cocktails, provided the products rely on more than potency in their message. ■

Lower-Proof and Lower-Calorie Beverages Gain Traction BY ROBERT HAYNES-PETERSON

W

hile it seems a new cask-strength whisky or high-octane tequila is launched each week, there is an opposing—if not equal—trend featuring beverage alcohol designed to not blast your socks off. “There is definitely a trend toward including non-alcoholic and lower-alcohol cocktails on bar menus around the U.S. and beyond,” says Natalie Bovis, cocktail consultant and author of the mocktail bible Preggatinis. “While we all enjoy a good, strong classic cocktail, there are moments when driving home, health or fitness take priority.” Bovis is working with a hotel group to create low-alcohol options for its restaurants and bars. Her client is not alone: Steakhouse chains like Morton’s and Fleming’s each offer low-cal/lowproof options. At Saltbox, a new bar and gastropub in San Diego, “Zero Proof” and “Low Cal” categories are listed alongside full-strength original and classic cocktails. “There is a growing cocktail culture in San Diego,” says Erin-Elizabeth Williams

of Hush Cocktails, which created the Saltbox cocktail menu. “But San Diego is also a driving city. The designated driver shouldn’t miss out on all the flavor, so we added the Zero Proof menu.”

Calorie Counting Of course, step one in assessing the “skinny” trend in beverage alcohol is to remember that alcohol contributes calories; the simplest way to make a low-calorie drink is to lower the percentage of alcohol. At the same time, low-proof and lowcal don’t necessarily equate: An 80-proof shot of tequila is lower in calories than the same amount of a 30-proof Irish cream liqueur. But the target audience may be the same: young drinkers, particularly women, concerned with fitness. Bethenny Frankel’s pre-mixed Skinnygirl cocktail drinks (now owned by

Beam Inc.) have spawned an entire subculture around low-cal drinks that tend to be lower in alcohol content (Skinnygirl White Cranberry Cosmo, the latest flavor in the portfolio, clocks in at about 10% ABV). “Skinnygirl is definitely a lifestyle brand,” says Senior Brand Manager Melanie Hellenga. “It’s all about balancing everything in her life.” Most “skinny” cocktails run under 100 calories, 200 to 300 less than their traditional counterparts. “We don’t really focus on the ABV for the brand,” notes Hellenga, “But the readyto-sell segment is definitely low proof.” While Skinnygirl may have kickstarted the low-cal cocktail movement, it’s hardly alone. One of the most buzzedabout seminars at the 2011 Tales of the Cocktail involved “H2O cocktails” from Liquid Kitchen’s Kathy Casey—essentially water freshly infused with fruit and herbs and blended with vodka, creating refreshing, 80-calorie low-proof cocktails. Opting for ingredients like fresh fruit over prepared mixers instantly cuts the calorie count, as do low-proof base ingredients, like wine, saké or soju.

“Soju is distilled, but also has the koji [mold] presence in saké,” says Tara Fougner, director of marketing for Ty Ku Spirits, whose soju comes in at 24% ABV. “So it has more flavor than vodka, without the strength.” Saké and soju are also often available to venues holding a beer/ wine license “so they can bring a cocktail culture in.” When it comes to spirits, to some degree a distiller’s hands are tied: Most distilled spirits, like bourbon and vodka, have a minimum legal ABV of 40%. The workaround may be changing your spirit’s category. “There’s nothing magic about the 80 proof cutoff,” says Adam Kamenstein, CEO of Voli Spirits, which positions even its core product, Voli Lyte, as a “flavored” vodka (featuring a touch of citrus and electrolytes). Flavored vodkas are permitted to come in at 60 proof. “At that level, it gives you what you want out of alcohol, along with the viscosity and mouth feel,” he says. “It also allowed us to put in less of the flavorings, saving calories, because we didn’t have to worry about overcoming the burn of 80 proof vodka.” Like Voli, Veev Açai (officially a liqueur) runs at 30%, and touts its low-calorie health benefits (Açai berries are high in antioxidants). On the Veev website, a menu of Skinny Cocktails top out at 125 calories for the Skinny Açai Cosmo and the Skinny Superfruit Margarita (which includes an ounce of Veev and ½ oz. of blanco tequila). Health-consciousness is also a key selling point for PAMA liqueur; this pomegranate-based liqueur is buoyed not only by its antioxidants, but also its lower alcohol content (17% ABV, 34 proof alcohol). Another surefire route to lowercalorie cocktails is to focus on the mixer rather than the spirit itself. American Beverage Marketers’ Master of Mixes Lite line features three flavors—Margarita, Strawberry and Sweet N’ Sour—made

from real fruit juice and featuring 20 calories or less per serving. A proprietary blend of ingredients (but no sugar) helps the Master of Mixes Lite mixers deliver mouthfeel and flavor that can hold their own in cocktails.

Variations on Established Themes Even “normal” distilled spirits are touting low-cal benefits. Partida Tequila promotes its on-premise Partida Margarita as lower in both alcohol and sugar content, in part by ditching the Triple Sec and adding water. Courvoisier recently released a new lower ABV (18% instead of 40%) iteration called Courvoisier Rosé, a blend of Cognac and red wine. According to Jay Matthew, general manager, “The lighter, lower-proof liquid enables easy drinking for any occasion. It’s also a smooth alternative to the traditional flavor profile of Cognac.” In December, ArKay Beverages, a new company, began selling ArKay, an alcohol-free whisky flavored drink designed to target those who can’t drink alcohol for health or religious reasons. The low-proof trend may also be stronger in the U.K., where low- and no-alcohol wine sales are

the rise, perhaps in the face of stringent anti-abuse ad campaigns, according to Nielsen data. Many American winemakers and marketers have also reported an increased interest in wines in the 11-12% range, as opposed to 15-16%, in part because of their ability to pair better with meals. Lou Capitao, managing partner at Touchstone Wines, which produces Ricossa Moscato d’Asti, credits alcohol content in part for the incredible recent popularity of Moscato: “When we held focus groups, we found that everyone knew Moscato d’Asti has a lower alcohol content [about 5.5%], and many knew the rough percentages. And I’ve heard that often people will drink Moscato at the end of the evening, because they don’t want a strong drink.” When it comes to menu options, determining calorie count or total proof requires some thought, says Hush Cocktails’ Williams: “It’s our job, not the customer’s, to sort out what works and what doesn’t by taking the time to look at the proofs, how many calories are in each ounce, and balancing these elements.” ■ Robert Haynes-Peterson covers wine and spirits for a variety of publications and is co-editor of the American Sommelier Association’s 24-week Vinification and Viticulture program. onsider the following: Small-batch distillers are sprouting up like mushrooms after a rain from the Hudson Valley to the Rocky Mountains and beyond. According the research firm Gomberg, Frederikson, American consumers downed more than 4 billion bottles of wine—that’s right, BILLION—in the last 365 days, solidifying our country’s leadership position as the world’s single largest wine market. Meanwhile, dozens of craft brewers across the country posted 30% growth rates in 2011, with this frothy horde of upstarts denting the sales of iconic brands (and prompting several big brewers to add small labels to their portfolios). And where else but in America in 2012 can a consumer download a free smartphone app right there in the wine aisle of a local supermarket, find out what might go best with a downloadable wild salmon recipe, and then with a few more strokes create a virtual coupon for a featured wine and cash it in at

the check-out lane? The 124-store Raley’s group in California and Nevada has made that possible, partnering with hellovino. com. Last, but not least, in markets coast-to-coast, suppliers, distributors and licensees of all stripes are amping up their multi-cultural marketing and sales efforts tto tap Hispanic, Asian aand other fast-growing d demographic groups.

Notwithstanding these good tidings for certain wines, spirits and beers, in fact the year 2011 was extremely challenging for many retailers and restaurateurs as well as for wholesalers and suppliers. They all depend on a vibrant economy to maintain healthy profitability, and for many players, margins were tightly squeezed as each tier and each player vied for sales and market share and, in some cases, their very survival. Meanwhile, political, legal and marketplace developments nationally and locally continue to raise concerns. Apparently Congress had bigger issues to tackle than interstate wine shipping; HR1161, also known as “The CARE Act,” was essentially pushed aside by the House of Representatives. However, the debates over direct shipping continue, at both the state and federal level. The passage of a sweeping privatization ballot initiative in Washington certainly means massive changes are in store, pun intended, at

the retail tier in that state. Other similar privatization measures might emerge in 2012; Pennsylvania and Oregon could be next. Faced then with a lackluster economy, stubbornly high unemployment levels and a mortgage crisis that is dragging down large swaths of the U.S. economy, 2011 will certainly not be remembered as a banner year. Nevertheless, beginning in spring, on-premise operators began to see consumers returning to bars and restaurants. Martin Crane, senior VP of sales at Pernod Ricard USA, notes: “The on-premise suffered more of a decline than the off-premise during the peak of the recession, but the on-premise definitely has rebounded over the past year. Unlike some of our competitors, Pernod Ricard USA continued its strong, targeted investment in the onpremise throughout the recession. Those ongoing investments have enabled our premium portfolio to benefit from the on-premise recovery.” Commenting on 2011 trends, Hermen Key, VP of operations of Texas-based Spec’s Wines, Spirits and Finer Foods, says, “The market is still soft, people are hunkering down.” However, for special occasions, Key adds, “Last spring, we saw our customers starting to want to enjoy themselves compared to 2010; now, they’ll splurge on premium and luxury wine, spirits and beer brands or order a name brand when they are out at a bar celebrating.” With Spec’s about to sign a lease for its 100th location in the Lone Star state, Key is optimistic about 2012 and achieving growth, especially as the company continues its recent expansion in North Texas and the Dallas / Ft. Worth market. For Bethany Frick—senior VP and general merchandising manager for Total Beverages, with $1 billion in expected 2011 sales and a presence in 11 states and plans to enter Texas and New Mexico in 2012—the premiumization

trends are particularly noteworthy. “Our 2011 comparable store growth results are improved over 2010,” she says. “We see growth in handcrafted whiskies, across all upper-end spirits, and we are tracking above the national average for craft beers, and Moscato and chocolate-flavored wines are off the charts.”

“Era of Experimentation” Both Frick of Total and Michael Yurch, president of New York City’s SherryLehmann Wines & Spirits Merchant, have also seen a revival of consumer interest in French wines, especially Champagnes. Says Yurch: “We’ve seen our customers return to Champagne in 2011 compared to 2010. At the same time, the consumer has so many wine choices these days, it’s an era of experimentation for wines from all over the world as well as for artisanal bourbon and rye whiskies from local distillers here in New York. Yet, at the same time, traditional French wine categories remain very strong for us, especially Bordeaux.” Summing up the long history of industry periods of decline and growth, Crane of Pernod Ricard USA, says, “History shows that premiumization always comes back strongly after economic downturns, and this was proven true again in 2011. But the “Sideways effect,” though real, was always overstated. California Merlot sales rose 5.2% between 2005 and 2009, according to Impact Databank—though all wine sales rose 18.2% during the same period.

That said, Merlot is still America’s third-favorite grape, responsible for 12.4% of all varietal-wine sales, according to Impact Databank. Pinot Grigio has roared up into fourth, yet at 7.8%, it’s still far back of Merlot. And there’s still more

than 2.5 times as much Merlot sold in this country as Pinot Noir. However, there are plenty of stores that simply can’t sell much Merlot.

Easy to Drink, Tougher to Sell “Merlot. It sucks,” says Wilfred Wong, cellarmaster for Beverages & More. “People are so anti-Merlot-ish. We had a wine that we produced just for us. Under the Merlot name, it was not very popular at all. We renamed it without calling it Merlot, and then it sold.” There seem to be three key factors in Merlot sales: price, brand and region (as

ast fall, director Alexander Payne finally released a new movie, The Descendants. It’s about Hawaii, which was a relief to wine producers everywhere. Payne’s last movie was Sideways (2004); in that film, one line of dialogue from one character changed some people’s perception of Merlot overnight.

are actually up nationwide by 6.5% over the last 52 weeks. “Merlot sells more than Zinfandel and Syrah combined in the over-$20 price point,” she points out. And Merlot, once the king of by-theglass buys, is beginning to reassert itself among the cognoscenti, says Carol Teich, assistant beverage director of the threestate Napa Valley Grille restaurant chain. “We offer St. Francis Merlot as our lower price point at $11 a glass all the way to $17 a glass by Peju,” Teich says. “The midpriced Merlot at $14 a glass by Sterling Vineyards is our best seller. We are happy Merlot is back.”

in where you are, not where the Merlot is from). Price is most important. Below $20, Merlot seems to be selling as well as ever. E. & J. Gallo Winery introduced Red Rock Merlot in 2006 and it has taken off quickly, growing to a 106,000-case brand with the 2009 vintage, which has a $13 SRP. Red Rock’s success seems not tied to region at all; a company spokesperson says it sells best on both coasts and in Illinois and Texas—essentially where the most wine drinkers are. Above $20, having an established brand is crucial—and it may help to not be in a coastal “elitist” city. “Merlot is pretty strong for us,” says Justin Vann, manager of a Central Market in Houston. “At least 25% of our California red sales are Merlot. And to put it in perspective, we have about 300 different Merlots. But there are maybe five of the expensive brands that are doing well. The others are gathering dust.” Vann came to Central Market from a high-end steakhouse and says, “The high-alcohol Merlots, those are going down a little bit. We do a ton of business with Nickel and Nickel. We can’t keep that on the shelf. Duckhorn and Nickel and Nickel are my two big ones.” Carol Reber, chief marketing officer for Duckhorn, says despite popular perception, sales of over-$20 Merlots

but they did slow down. “We’ve always been around eight or nine thousand cases and it stayed there,” Shafer recalls. “Instead of selling out in nine or ten months, it was taking 12 or 13 months. But it never got to a point where it stopped selling. And now it has picked back up. “I talk to a lot of steakhouse guys and they’ve said Merlot is doing well because the guys on expense accounts. They can’t buy wines over $100 sometimes now, and they can get a really good Merlot for $80,” Shafer says. “All they want is a really good wine. Merlot fills the bill.” Shafer was one of many people to say that the style of Merlot has changed for the better since the pre-Sideways days. Today, California has nearly 7,000 fewer acres of Merlot than it did in 2004, a 13% drop, according to the USDA. Some hot weather counties like Madera (-31%) and San Joaquin (-11%) have grafted over to other varieties, which is good because indifferently grown Merlot was largely responsible for its bad reputation. “The whole bashing of Merlot really helped the varietal,” Shafer asserts. “All those negociants buying Merlot from all those bad spots—weedy, bad wines— they’ve all gone away. It was a shortterm tough deal. Long term, great for the variety.”

It should be noted, however, that San Joaquin County, in the hot Central Valley, still has more Merlot planted than any other county in the state. Surprisingly, Napa (-10%) and Sonoma (-17%) counties have also dropped in Merlot acreage since 2004, which is a reflection of two things: the big money from there is in Cabernet Sauvignon, and Merlot takes more work to sell. “We’ve been having modest growth in Merlot since the end of ’08,” says Peter Mondavi Jr., whose family owns Charles Krug Winery. “But it’s definitely not an easy sell.” Mondavi notes something Duckhorn and Shafer would agree with: that the style of Merlot Charles Krug makes— very Cabernet-like—is a big help. Charles Krug has Merlot vineyards in St. Helena, Yountville and Carneros, and is able to blend each vintage differently to keep the bigger, heavier style consistent. “In Carneros, you get a little more hang time so it gives you more intensity of fruit,” Mondavi says. “I wouldn’t say it gives you a great vintage every year. It’s on the margin sometimes, but most of the world’s great wine regions are on the margin. Fortunately we do have vineyards in the warmer parts of the valley.” How does Charles Krug’s sales staff convince skeptical buyers? “They pop the cork,” according to Mondavi. “There’s no substitute for popping the cork. Merlot By Any Other Name To be fair, many skeptical wine buyers are just speaking for their customers who haven’t gotten past Sideways. Jennifer Frank is co-owner of California Wine Merchants in lower Manhattan’s Financial District. The store sells 95% California wine, yet Frank says,

“When we first opened, nobody wanted anything to do with Merlot. As a California store, we had to represent it, but it was a really tough sell. It might be a New York thing. It’s easier when it’s disguised in a Bordeaux blend.” Frank says she holds tastings every Friday night and that has helped to change some customers’ minds. But she says she still has better results selling higher-end Merlot-based wines like Blackbird that don’t say “Merlot” on the label. “Blackbird is really good wine. People love it,” she says. “It’s kind of the same thing for us with Syrah, which is a tough sell, but as soon as it’s part of a Rhône blend, they’re interested.” Beverages & More’s Wong agrees with Frank: proprietary names sell better in his stores. Wong says the new trendy red varietal is Malbec. But a look at the USDA’s California Grape Acreage report quickly quashes any thoughts that it will replace Merlot anytime soon in California. There are only 1,600 acres of Malbec planted in the entire state. Nine separate counties have more than that much Merlot. “The hit that Merlot took is history,” says wine industry analyst Vic Motto, CEO of Global Wine Partners. “When you’re looking at premium Merlot, it seems to be doing fine.” ■ W. During breakfast, Michael McCarty’s Midtown destination will be filled with New York’s powerful washing down California omelets with coffee. A few hours later, deals will be made over salade niçoise and La Caravelle Champagne. Now, thanks to the arrival of Michael Flannery behind the stick, weekday evenings have spawned a lively bar scene around cocktails like the Parisian Negroni. THE BEVERAGE NETWORK: Creating a cocktail program at a wine-centric restaurant as legendary as Michael’s is both exciting and challenging. What was your and Michael McCarty’s vision for building the drinks menu? MICHAEL FLANNERY: To be completely honest it is very humbling to be working in a restaurant such as Michael’s. Throughout my career I have opened many restaurants and hotels, but building a program for a 22-year-old restaurant in midtown Manhattan has a completely different feeling. My priority was to focus on the classics while being able to offer anything a modern cocktail drinker enjoys. I’ve stocked the bar with the best tools and now proudly can refer to any classic anybody desires to create something fresh for adventurous guests. TBN: I bet a lot of the regulars are used to their traditional martinis, yet you’re also whipping up

cocktails with, say, Santa Teresa Venezuelan rum and Louis Royer Cognac. What has reception for the bar program been like?

some great cocktail prices, we get to have some of the other office workers come in, not just the bosses who are known to lunch at Michael’s.

MF: Incredibly positive, even from the guests who will still get their vodka sodas. Guests might be conservative but they still want a fun experience while they are in our restaurant to dine. They love Chef Kyung’s menu and his specials and they have an adventurous side.

TBN: I think another part of the program that is exciting is the bar food. How do the cocktails complement the experience?

TBN: How do you encourage guests to go beyond their comfort zone? MF: One of my first nights, I started a gentleman with his usual vodka soda but he said I could be creative for his next drink. I made him an Aviation and he loved it. After that he was more intrigued and said he was not afraid of whiskey, so then I had that same gentleman drinking a deep purple highball with whiskey, maple syrup and fresh blackberries. He loved it! Today he still always starts with his vodka soda, but continues to try new drinks afterwards. TBN: One way the restaurant has successfully introduced cocktails to bar patrons is Mixology Wednesdays. What is the goal of that program? MF: Mixology Wednesdays started as a way for me to come into the restaurant one night per week to get a feel for the establishment and the clientele I would be entertaining. It has developed into our busiest bar night and along with our special bar menu from Chef Kyung, and

MF: Chef Kyung has developed a great menu of bar bites that allow us to offer a more affordable evening. Matching cocktails with food is like pairing wine with food. So whatever the guest wants, from our market crudo which is light and savory to our Korean tacos that are spicy and rich, I will match for them a cocktail varying from something with sour and citrus to my personal favorite being a stirred spirit-forward cocktail like a Manhattan. TBN: I like that you’re using some classic brands like Campari as well as the increasingly popular Del Maguey mezcal. Is this an opportunity to engage customers? MF: Absolutely. Just as the guests are trying new cocktails (with lots of classics, too) I tell them about what spirits are in their drink. So many brands have great history—a little education gives the guest a bit of knowledge and will ultimately bring them back again for more. I’ve been making my cocktails to the flavors that are in the bottles, so working with great brands is important and leads to giving our guests something they possibly have not heard of before. ■

Blending is the New Game in South Africa BY JIM CLARKE

W

ith more than 350 years of winemaking under their belts, it’s easy to suppose that South Africans’ predilection for blending had old roots, perhaps stemming to the Huguenots arrival from France in the late 17th century. In fact, Constantia, the South African dessert wine that was the toast of Europe’s aristocracy in the 18th century, was primarily Muscat, and early in the 19th century, blending would have been uncommon simply because over 90% of the vineyards were planted to one variety: Semillon. Today the Rainbow Nation possibly produces more blends at a wider variety of price points than anywhere else in the New World, but it is a matter of innovation than tradition. Emil den Dulk, owner of De Toren in Stellenbosch, says interest in blending only began to appear in South Africa around the time apartheid was ending: “Before that, blends were cheap, with a few flagship wines” serving as the exception to the rule. In 1999 De Toren introduced Fusion V, the country’s first five-variety Bordeaux blend. Today it’s hard to find a producer in Stellenbosch who doesn’t make at least one Bordeaux-style blend. “Bordeaux blends are seen as the presti-

Fidelity to French models, however, is hardly obligatory in the Cape, even to the French. Glenelly, a young estate founded by May de Lencquesaing, the former owner of Chateau Pichon-Lalande in Bordeaux, planted Shiraz right from the start; it is typically the leading variety in their Grand Vin alongside Cabernet Sauvignon and Merlot. Nor is Bordeaux the only model, especially outside Stellenbosch. “Ten years ago there were no Rhône blends in this country,” says Anthony de Jager, winemaker at Fairview in Paarl. The winery’s punning Goats Do Roam brand (inaugural vintage 1998) introduced many wine drinkers to South Africa’s potential with the style. Today Rhônestyle blends are common in Paarl and warmer, more inland regions like Swartland, fueled by the re-discovery of old vine plantings there.

Playing Off Variety Given the Mediterranean climate, it’s no surprise that growers have planted varieties associated with other parts of France and even Italy. Fairview’s “The Goatfather” is predominantly Sangiovese and Barbera, with a smaller contribution from Cabernet Sauvignon. Other blends go further afield; Waterford’s “The Jem,” is an unorthodox mix of about 65% Bordeaux varieties with the rest “Mediterranean” grapes. Similarly, Bouchard-Finlayson’s “Hannibal” aspires to follow the Carthaginian leader’s route, picking up Sangiovese, Pinot Noir, Nebbiolo, Mourvedre, Barbera, and Shiraz on the way. Blending has also given the Cape’s winemakers a means to tame and make the most of the country’s “indigenous” variety, Pinotage. Many producers find it difficult and inconsistent as a varietal wine, but it seems to play well with oth-

ers. Warwick’s Three Cape Ladies, for example, blends Cabernet Sauvignon, Pinotage and Syrah. (According to South African wine regulations, 85% is the threshold at which a wine can be named after its primary variety.) If there can be said to be a white “Cape Blend,” it probably includes Chenin Blanc, the country’s most planted grape, as a base; supplemented most typically by white Rhone varieties, these full-bodied but still fresh whites are rising stars, led again by producers the Swartland region. Boekenhoutskloof’s Wolftrap White is a blend of Viognier, Chenin Blanc and Grenache Blanc, with the proportions varying each vintage. Black Rock White melds Chenin Blanc, Viognier, Chardonnay and Clairette Blanc. In both cases the Chenin provides acidity and structure, while the other varieties bring palate weight, aroma and complexity.

Antidote to Variety Why do South Africa’s winemakers saddle themselves with the extra challenge of selling blends? In many cases it’s an acknowledgement of what the land is giving them. Variety is the rule, as the different sorts of blends suggests. In the Helderberg, one of Stellenbosch’s wards (i.e. the smallest unit in South Africa’s Wine of origin system), the ground is a patchwork of decomposed granite, coffee stone, and other soils. The mountainous terrain means sun exposure and wind can also change dramatically within a small area. So winemakers grow a wide range of grape varieties, and are forced to either market a broad selection of varietal wines, or blend them into something unified. Kevin Arnold, winemaker at Waterford, says the diverse conditions are reflected in the natural vegetation; the Cape Floral Kingdom, essentially contiguous with the winegrowing areas, is

SOUTH AFRICAN WINE REGIONS the smallest botanical area in the world geographically, but the most diverse in terms of species. Nonetheless, blends aren’t just a concession to a local conditions. “It’s always been my belief that blended reds have been have been South Africa’s strength,” says Arnold. Nicolas Bureau, export director at Glenelly, says, “We feel that a good blend is more than the sum of its parts; the challenge is educating the public.” Arco Laarman, winemaker at Glen Carlou, says including the percentages of each variety on the label, as they do for their Grand Classique, another Bordeaux blend, is a great help in reaching

wine drinkers. Nonetheless, for some producers, sidestepping the varietal issue has helped them capitalize on a proprietary name. Fairview’s Goat series is one example at a lower price point, but their pricier Spice Route winery’s Malabar or Chakalaka have strong followings as well. Similarly, Boekenhoutskloof may be a tongue-twisting hindrance for that winery’s varietal wines, but their proprietary blends The Wolftrap and The Chocolate Block are well known and popular. And once a wine drinker has been turned on to a proprietary name and blend, he’s not going to find it anywhere else. ■
