iscal year 2013 was an extraordinary year for the Ohio Division of liquor Control. We experienced many significant and positive changes and achieved record sales. Our accomplishments reflect the Division’s renewed mission to move at the speed of business by modernizing operations for improved efficiency, providing exemplary service to its customers and stakeholders, and taking a common sense approach to regulations helping Ohio businesses grow and create jobs. SPiRiTUOUS liQUOR SalES Spirituous liquor sales reached another record high in Fiscal year 2013 totaling $868.8 million. This was an increase of $44.3 million, or 5.37 percent compared to sales in Fiscal year 2012. This increase in liquor dollar sales can be attributed primarily to the trend of consumers trading up and continuing to buy more premium priced products. gallonage sales of spirituous liquor also increased by 2.51 percent in Fiscal year 2013 to 12 million gallons. JOBSOhiO in Fiscal year 2013, the transfer of Ohio’s wholesale liquor enterprise to the non-profit JobsOhio was completed. Under a contract between JobsOhio and the Department of Commerce, the Division of liquor Control will continue to operate the distribution and merchandising of

liquor in Ohio. Ohio’s liquor profits provide JobsOhio with reliable and sustainable funding for economic development projects and job creation in Ohio. The Department of Commerce has retained all responsibility for the regulatory functions of liquor Control.
beer and sell beer products for home use, consumption on the premises where manufactured, and to retail and wholesale permit holders. The annual permit fee is $1,000, which is significantly lower than the $3,906 permit fee those manufacturers were required to pay in the past.
MODERniZaTiOn a new modernization project was launched to upgrade the Division’s computer systems and replace existing merchandising, point-ofsale and supply chain management support systems. The new systems will implement technology to provide real-time information to help meet the needs of today’s consumers. When the project is completed, it will result in increased efficiency, cost savings and greater profitability.
� Expands the locations at which a micro-distillery (a-1-a liquor permit) may be located to include a premises that is situated on a parcel or tract of land that is not more than onehalf mile from a licensed brewery or winery.
SPiRiTS innOvaTiOn PROgRaM The Spirits innovation Program (SiP) was initiated to enhance the overall shopping experience and modernize the look and feel of contract liquor agencies. The process of resetting the top 125 liquor agencies began in March 2013 using best-in-class category development practices to ensure quality customer service. BUSinESS FRiEnDly lEgiSlaTivE iniTiaTivES Senate Bill 48 was passed by the Ohio general assembly in Fiscal year 2013 and contained provisions to reduce government bureaucracy, ease regulatory burden, and help Ohio businesses succeed and grow. The new law became effective July 30, 2013. here are some of the changes Senate Bill 48 made to Ohio’s liquor laws that will benefit many different Ohio businesses: � Creates a new liquor permit called the a-1c permit for craft breweries that produce up to 31 million gallons of beer annually to manufacture
� allows a permit previously issued as an economic development project that is exempt from the permit quota (TREX) to be subsequently transferred to another location, and/ or new owner within the same city or township without qualifying as an economic development project. also amends specified factors used in determining the designation of a TREX by the Division from being mandatory to optional. � Removes a provision that required a municipal corporation that owns an airport to attempt to obtain a D class liquor permit from an existing permit holder and obtaining an order from the liquor Control Commission confirming such action prior to receiving an exemption from statutory population quota restrictions. � Removes a provision that required a premises located at a publicly owned golf course to attempt to obtain a D class liquor permit from an existing permit holder and obtaining an order from the liquor Control Commission confirming such action prior to receiving an exemption from the statutory population quota restrictions.

Several seminars, tailored to bar and/ or restaurant owner('s) and their staff, will be offered at this year's Expo. Topics include alcohol management and a review of liquor laws. "Techniques of Alcohol Management" will be presented by Max Sorensen and will be held from 9:00 a.m. to 12:00 p.m. TAM teaches servers to be more responsible in their day-to-day

activities. Additionally, they will learn the scientific processes that occur when a person becomes intoxicated and how Ohio Law dictates what the acceptable responses are for certain situations. As the summer ends this is the perfect time to train your employees. "The Do's and Don'ts of Liquor Law" will be presented by The Ohio Division of Liquor Control and will be from 12:00 p.m. to 1:00 p.m. Don't let ignorance of the law be an excuse for not following it. i
t is important for all permit holders to realize that all laws regulating a liquor permit business remain in effect seven days a week and twenty-four hours each day. The time of day when permit holders may lawfully sell and/or allow consumption of alcohol beverages on the permit premises is clearly stated in the statutes and rules of the Ohio liquor Control act.

all sales and consumption of alcohol on a permit premises is prohibited between 2:30am and 5:30am. This prohibition applies to all permit classes. however, the type of class permit that a permit holder is issued will determine when sales and consumption may lawfully be made. all sales, delivery and consumption of alcohol must cease at 1:00am if you hold a class C1, C2, C2X, D1, D2, D2X, D3. i have only included permits subject to quota restrictions. however, persons issued a D1, D2, D3 with a D3a, or if you are a holder of a class D5 permit, then the sale of alcohol beverages are permitted until 2:30am. Many citations have been issued to permit holders for serving after hours when law enforcement peered through the front windows, after 2:30am, and observed permit holders cleaning the premises while consuming an alcohol beverage. This is not permitted. Even though the bar is closed and not one patron is consuming alcohol, the prohibition includes the permit holder, the permit holder’s agents, or employees
from also consuming alcohol. a permit holder is prohibited from closing its doors to the public in order to engage in conduct that would otherwise be prohibited by law. Many permit holders believe the intent of the law is to make certain that patrons do not buy or consume alcohol after hours. They are surprised to learn that the law applies to all, not just patrons. any consumption of alcoholic beverages, on a permit premises, after the legal hour is a violation of the liquor laws and will result in the issuance of a citation. Thus, it is wise for all onpremises permit holders to establish a “last call” at a time which will provide sufficient time for all patrons to responsibly finish their drinks and be out of the premises within the legal hour. it is not unlawful to have patrons on the premises past the legal hour, but if a permit holder chooses to allow patrons on the premises after the legal hour, they should have all the alcohol beverages collected from those patrons. Off-premises permit holders should lock their refrigerator doors, if possible. if there is product on the shelves, then all C1, C2 permit holders must adequately train their employees on the “after hours” rules to make certain that no alcohol sales occur after 1:00am. This would also be an excellent time to refresh all employees to check iD’s to prevent underage sales. if you find yourself in a situation where law enforcement knocks on the door to your premises past the “legal hour,” do fully and immediately cooperate. Once the officer has presented his credentials, do not hinder the investigation. i have heard the liquor Commissioners state on many occasions to permit holders that they take hindering charges very seriously and will not tolerate any conduct from permit holders which hinders an investigation.

Combine vodka, lemon juice and ice in a cocktail shaker and shake well. Strain into glass. Top with ginger beer and garnish with lemon twist. Optional: rim glass in sugar and garnish with candied ginger.

Combine Basil Hayden’s, cherry liqueur and bitters in a mixing glass. Add ice and shake. Roll in the milk stout beer. Strain into an old fashioned glass with ice and garnish with freshly grated nutmeg and a cherry on top.

Another makes drinks after consulting with a voodoo priestess. They are many different things, in other words, but the ten people profiled here in their own words are also great bartenders; in fact, they are Ten Mixologists to Watch, a national assortment of hard-working, fast-pouring drink shakers

who, through diligence, inspiration and persistence, have managed to stand out in the crowded contemporary bar scene. Drawn annually from the list of apprentices who recently did yeoman’s duty chopping ice, juicing fruit and dispatching other behind-the-scenes barback tasks in New Orleans during “Tales of the Cocktail,” these ten exemplify what modern bartending is about: combining basic skills and a deep knowledge of ingredients and drink history with a drive to hone service and the need create something new in the glass.
For the past nine years, The Beverage Network has acknowledged the future of bartending by selecting these Mixologists to Watch. Fittingly, we gathered this year’s coterie just prior to the happy chaos of Tales in the cocktail destination Cure, which is overseen by Neal Bodenheimer and is part of the group that also features Bellocq at the Hotel Modern and the just-launched rum mecca Cane & Table. Since opening in 2009, Cure has become known for its cultured setting, civilized “house rules” and carefully curated cocktails that showcase creativity while paying homage to the craft.

Time to brag: What makes you a good bartender?
I am 100% hospitality first. I take my craft seriously, and I can certainly make a delicious and well-balanced cocktail, but I know my guests come back to me because they have a great experience, not just a great drink. What’s particularly interesting about the drinks in Boston?
The level of professionalism and care that goes in to the cocktails in Boston continues to blow my mind. The attitude across the board seems to be, if you are going to do something, do it well, and exceed expectations. What one thing would you change about bartending in the U.S. today?
It seems really easy to get caught up in the craft, the festivals, the media, and even the new found “idolization” of the bar-

What makes you a good bartender?
I think I am an affable person, approachable. I like to make my guests feel at ease while they are sitting at my bar. So often in the cocktail setting, if a guest is not experienced, they can be intimidated. I like to take the pretension out. It’s just drinks. Awesome drinks, to be sure. But we’re not at a fine art museum. What one thing would you change about the bar business in the U.S. today?
Many bartenders work without health insurance. I can’t count the number of benefits, Kickstarter campaigns and outright pleas for financial help I’ve seen from our fellow workers who have been injured on

When you work on crafting a new drink, what’s uppermost in your mind?

She pulls down this herb or that resin and tells me about the magical properties. I take the ingredients and try to create tasty drinks while still respecting the religion. I still have a world to learn about voodoo, but I think there is an intriguing potential relationship there and I’m hoping to pursue it further. Balance, time, place, inspiration, weather, the person or establishment that I am making it for. I see drinks as I see painting or music. Just about every tint or hue has been blended; all arrangements have been scored. Our history in the craft has set our color wheel or taught us what chords sound well together. It’s up to us to paint the picture, if you will. Take the ingredients and make them shine in new lights and familiar ones as well.
What makes you a good bartender?
I take pride in making someone else’s night better. Making connections with guests, getting an insight into what they enjoy, and crafting drinks from that information in the forms of classic and custom drinks makes my night. Having a person leave happier than when they arrived, that’s the point of what we do. Them really digging on the drinks–that’s the icing on the cake.
When not drinking cocktails, what are you drinking?

I am working with others to get the Virginia chapter of the United States Bartenders Guild up and running. We’re almost there. I take a considerable amount of pride in what we do and that we get to

lever spirits marketing has often trumped authenticity, but the revival of American craft distilleries as well as the classic cocktail renaissance have pumped up the bourbon category, a place where most brands have been doing the same thing for centuries. In essence, consumers’ thirst for genuine products made by real people has led them right back to the founding spirit of the United States.
Taken neat, bourbon aficionados enjoy the high rye content and nuances of Port-barrel finishing in Angel’s Envy. However, like all fine bourbons, it also makes a great Manhattan.
As the birthplace of bourbon, Kentucky lives and breathes whiskey. The state’s 4.3 million residents are currently outnumbered by aging bourbon barrels (4.9 million); and they lead the nation in bourbon consumption (181 cases per 1,000 adults). The Kentucky economy depends on the spirit, not only because the state’s ten distilleries employ so many people, but also because two million visitors pass through its Bourbon Trail last year. Americans’ fascination with American whiskey is part epicurean, part curiosity. Who is Pappy Van Winkle? And Booker and Elmer T. Lee, and what are their stories? Behind the labels are the personalities of proud family legacies spanning generations. In the early days, most distillers were also close friends, neighbors and collaborators. In fact, the Beams (Jim Beam) and Samuels (Maker’s Mark) families lived next door to each other for nearly 75 years; Bill Samuels Jr.’s godfather was Jim Beam himself. The Beams are also part of the history of Heaven Hill, founded in 1934 with Joseph L. Beam as an investor and Master Distiller; since then, all of Heaven Hill’s distillers have been members of the Beam family.
STAYING ON TOP OF THE SHELF With the success comes pressure on shelf space as bourbon’s popularity has fueled innovation. For retailers and on-premise operators, it means tough decisions as to what brands to carry and how best to train staff on all the variants. “It’s the little things that separate one bourbon from the next,” according the Maker’s Mark Master Distiller Greg Davis. Selling bourbon requires an appreciation for those nuances. With that in mind, below is a guide to a range of labels—separated into the leading brands and notable small-batch products—each with a story, plus a sense of style. Bourbon, as its most basic, is a whiskey distilled in the United States from a fermented mixture of hot water and grain mash containing at least 51% corn. The exact mash bill is often kept secret by the distiller, but general proportions are usually known and can be very useful when selling; when a consumer prefers a particular brand it makes sense to recommend similar styles based on the mash bill.
LEADING BRANDS Largely driven by price, these brands make up nearly half the American straight whiskey category and are growing a collective 4.8%. Jim Beam is the leader, bolstered by the runaway success of the flavored Red Stag line. Evan Williams, which just this year announced a new bottle design with Evan Williams’s signature blown into the glass, has had success with a line of flavors as well as their Single Barrel Vintage Bourbon and 1783 Small Batch. The Samuels family’s first line extension paid off: Maker’s 46 (a $10 premium to

In 1835, Old Crow bourbon became the first bourbon to use the sour mash process, invented by Dr. James C. Crow. Today, this process is a standard part of bourbon production. Old Crow was a favorite of famous historical figures like Ulysses S. Grant, Mark Twain and Jack London. OLD GRAND-DAD

The Hayden family began distilling in 1840. Colonel R.B. Hayden created Old Grand-Dad in 1882 in honor of his grandfather, Basil Hayden, who was known for using higher percentage of rye. During Prohibition, Old Grand-Dad was one of the few distilled spirits allowed to be prescribed as medicine.

SMALL BATCH BRANDS The term “small batch” was coined by the late Jim Beam Master Distiller Booker Noe in 1992 to introduce four boutique bourbons, now known as Beam’s Small Batch portfolio (Knob Creek, Basil Hayden’s, Booker’s, Baker’s). This segment grew the fastest in 2012, up roughly 12% over the previous year, led by Bulleit (+27%) and Woodford Reserve (+23%). Yet another coup for small-batch brands: Michter’s was named Distiller of the Year by Wine Enthusiast in 2012. There are dozens upon dozens of these often hard-to-find, higherpriced bourbons. President, North America of Beam Inc. The Beverage Network sits down with Beam Inc. President Bill Newlands to talk about the future of flavor, the popularity of bubbles and how to make the most of consumer trust.
ON SKINNYGIRL THE BEVERAGE NETWORK: How do you explain Skinnygirl’s runaway success, while so many other products marketed toward women have failed? BILL NEWLANDS: The Skinnygirl brand works on many different levels. First, it matches up with a lot of megatrends that are bigger than our industry: The interest in low-calorie is huge—women want to enjoy a cocktail without having to indulge in an 800-calorie Margarita. There is also the growing demand for premium as well as convenience. And there was the interest in creator Bethenny Frankel, whose following got the brand off to a tremendous start because there was a loyal group of people who were very interested in what she was doing, and why. But it has moved beyond that now, and its widespread appeal is due to the fact that it is sleek, simple and understandable. Many products aimed at women try too hard to be cute or corny. Skinnygirl does

all it needs to do to resonate with female consumers without going over-the-top about it. Our hope initially was to become the Diet Coke of cocktailing and that is how we’ve approached it. TBN: Skinnygirl has since expanded into wine and vodka. How easily does that brand equity transfer over to other categories? BN: I believe people look first to the brands they trust. We knew Skinnygirl was becoming a trusted brand, and we wanted to apply that trust across multiple scenarios women enjoy.
There are 8 million women in this country who drink margaritas, 26 million who drink vodka and 42 million who drink wine. So if you’ve created a trusted brand, then the number of occasions and the number of people that you can appeal to, if you have your megatrends right, just expands exponentially when you broaden into related categories. That’s how we thought about it as we looked at the initial brand. We recently asked ourselves: What does the Skinnygirl consumer want that we don’t currently offer? Prosecco. So we will be launching one this fall. It’s light, refreshing, tasty, and we’re pretty excited about it.
ON FLAVOR TBN: The world of flavored vodka seems so crowded. How do you believe this category will evolve? BN: The flavor consumers today are very specific about the flavor they want. If

somebody wants açai, they are not really going to want to listen to you explain that grape serves the same purpose. I believe there will continue to be a proliferation of flavors. But the hot flavors—peach, coconut, whipped cream—they will dominate. (Pinnacle’s Whipped Cream flavor has a high vanilla component—surprise! The American consumer likes vanilla!) It is incumbent upon us as an industry to deliver flavors that are accurate— products need to reflect the flavor they represent. I believe in the future consumers will be even more demanding about this. We released Pinnacle Pumpkin Pie last year as a limited edition SKU, and we were blown away by how much people loved it—because it tastes exactly like pumpkin pie. TBN: People doubted your flavor pioneering the world of bourbon, yet Red Stag took off immediately. BN: It’s true—people thought we were off our rocker when we first talked about developing Red Stag. But when you think about it, it’s not so revolutionary. Cherry Garcia is Ben & Jerry’s bestselling flavor, Cherry Coke and Pepsi are huge—the consumer likes cherry. We weren’t asking them to understand some new or different concept.
LIFESTYLE BEVERAGES TBN: The term “lifestyle beverage” is used frequently today to describe an array of products across different categories. How do you define it? BN: It’s about creating situations and formats that match up with the way people are living today. People are short on time and are looking for convenience, yet they want premium—this is not unique to our industry. When people decide what they will drink, it’s no longer as simple as “I’ll

have a beer.” Consumers want a variety of flavor and intensity of flavor. Lifestyle brands fill needs often before people even realize they have them. Sauza Sparkling Margarita is a good example of a lifestyle brand that combines categories and various desirable attributes. We drink a lot of things with bubbles—soda, beer, sparkling water— because they are refreshing and cleansing on the palate. We combined this with the number one drink in the country and it’s off to an amazing start, far beyond our expectations.
ON BOURBON TBN: Bourbon is huge right now, with a growing global footprint. How do you see the American bourbon consumer evolving? BN: Bourbon really has become the single hottest category in our industry. As a subset, the craft business is very popular. We helped start that trend with Knob Creek, Booker’s and Basil Hayden’s. With the number one bourbon in the world, Jim Beam, we felt like we were in a position to show that the largest producer can also do things that are craft and unique, so this fall we are unveiling Jim Beam Signature Craft, an 86-proof small-batch bourbon. Again, we know that Jim Beam is a trusted brand, and we believe that when people
look to trade up, they gravitate to names they have confidence in. The bourbon consumer wants variety and opportunities to experiment. Before we released Maker’s 46, we saw that when people wanted to trade up, they left the brand. Now they can stay. On both Maker’s expressions we have experienced supply issues, but we recently were reminded of a very important lesson: You can’t go wrong when you listen to your consumers.
ON INNOVATION TBN: Innovation seems to be at an all-time high in the beverage alcohol business. How can retailers avoid cluttering their shelves? BN: Innovation is extremely important to us. We aim to have one quarter of our growth come from innovation. But a lot of innovation—as retailers well know— doesn’t work. We have worked very hard to achieve a success rate that is off the chart; the vast majority of the products we launch succeed. It’s a tough call for retailers, because they simply can’t take everything. They want to bet on the companies that have shown success at creating things that pull through on- and off-premise. At Beam, when we bring something new to the table, we find ways to help pull it through. ■
The Constant Push For Novelty Has Given Rise to a Whole New Breed of Beverage Alcohol BY ROBERT HAYNES-PETERSON
S
eems as if it’s becoming harder each year to innovate in the spirits category: absinthe, mezcal, moonshine, vodkas flavored like children’s dessert fantasies. What’s a brand extension-er to do? Apparently one answer is to mash up two spirits (or a spirit and a wine) and bottle them. Over the past year, an increasing number of labels—including the likes of widely distributed Malibu Red (rum and tequila), Kahlua Midnight (rum and Kahlua) and Absolut Tune (vodka and sparkling wine) have appeared on bar and store shelves, introducing what appears to be a new category of “hybrid” liquids for adults. One could argue that this category (particularly blends of spirit and wine)
is simply an extrapolation of existing vermouths, liqueurs and ready-to-drink cocktails. Unlike liqueurs and vermouths, however, these blended libations aren’t for preservation or to serve as botanical suspensions, and the liquid bases are intended to be roughly equal in their perception (unlike, say, vermouth where the primary component is wine). Unlike RTD cocktails (though many of the hybrids are designed to stand alone), most of these newbies have no mixers: no citrus, juice or extra sugar components.
Merging Concepts “The original thinking was to bring the best of the Champagne world—glamour and sophistication—and the vodka
world—fun and energy— together,” says Laurent Cutier, senior brand manager at Pernod Ricard for Absolut Tune. The 14% ABV blend of vodka and Sauvignon Blanc tastes like a tart sparkling wine with a slightly astringent aftertaste. Cutler called it a “breakthrough innovation” when it launched in late 2012. “You have a lot of fusion bottles on the market, but most fall in the liqueur category, and there’s a tendency to add sugar,” he says. The current wave seems to be more straightforward: Rum + Kahlua in the case of Kahlua Midnight; vodka + Cognac in the case of 20 Grand. Cognac + French Moscato = Courvoisier Gold. While Vodkila and VodQuila are, obviously enough, vodka-tequila mash-ups, Phillips Gin-Ka, a revived product from
the early 1970s, combines gin and vodka. In a more traditional club liqueur mold, LeSutra, backed by music producer Timbaland, is a brightly colored series of flavored liqueurs made with vodka and sparkling white wine.
Genesis of a Genre To some degree, the new wave of products seem borne more from marketing meetings than from a distiller’s twisted dream. Like Korean tacos or baconand-anything, the goal appears to be finding what’s already hot and throwing it together in a pot. Smoke, a blend of vodka, Moscato, coconut and pineapple which launched this June in New York, seems to have taken this philosophy to heart. Co-founder Zev Norotsky, who has worked all facets of the hospitality business, including opening several nightclubs, says, “I’ve become sort of a pop culture anthropologist, and we were noticing certain trends. We noticed the coconut-pineapple profile in creative waves on-premise, and Moscato was making new waves all on its own.” Cutier, meanwhile, notes a demand for multi-function products among what he calls “the iPad generation.” They seek more from a single product, like a hi-tech Swiss army knife—or a beverage that delivers on multiple levels.
Considering Precedents But were people actually imagining—if not clamoring for—a glass of rum-andtequila before Malibu Red arrived on the scene? Or a Vodka Moscato? Well, maybe so. Exclusiv Vodka creator Serge Chistov says he got the idea for Exclusiv Rosé Vodka—raspberry-flavored vodka infused with Moscato wine—from the Baltimore market, where he saw people mixing Moscato and Cîroc. Perhaps a more obscure precedent: On the British TV comedy Absolutely Fabulous, the stars drank “Stoli Bollis,” a blend of Stolichnaya vodka and Bol-

Cutier says he’s found the same blend in Italy served up with Prosecco. And of course there are classic cocktails— the Negroni, the Manhattan, the Long Island Iced Tea—that are all-spirits. Most of the new products seem to be positioned as ready to serve neat or over ice, though they all offer up cocktail recipes on their websites and promotional materials (generally mixed with juice, or elderflower liqueur or even Red Bull).
Lounge Factor Many of these new products target the nightclub crowd, and bartenders are seeing them find an audience. At Pure Ultra Lounge in Columbia, SC, Matthias “Mickey” Copeland Copeland is able to introduce guests to new concepts, including 20 Grand, Malibu Red and Absolut Tune. “I am an introducer, a social mixologist,” he explains. “With Malibu Red, I tend to push it more to tequila drinkers than rum drinkers, since people unfamiliar with the Malibu label will tend to assume it’s another tropical flavored rum. I love the agave notes.” Megan Mayhem, head bartender at Jersey City’s Powerhouse Lounge, says, “With Courvosier Gold, it seems to be mostly corporate guys ordering it on ice. They know what they want, and ask what brands of whiskey or Cognac

we carry. Malibu Red, I notice, is mostly ordered by a younger, hip-hop crowd. They see it promoted somewhere and will ask for it. Men mostly, but lately the girls have been asking for it in cocktails.”
WINE MASH H-UPS S When it comes to wine, the hybridization situation is all about fruit, fruit and more fruit. Soleil Mimosa, a RTD blend of premium wine and freshsqueezed orange juice (8% ABV), V),, has shown explosive growth, and steady expansion into new w markets. It is available in both bottles and cans—plus flavor extensions (pineapple, mango, pomegranate). Moscato, not surprisingly, is at the core of several bubbly hybrids. The successful 2012 debut of MoscaMango led Bedford d International to launch two more re variations, MoscaBerri (strawberry) and MoscaPesca (peach). Myx Fusions—a line of singleserve Moscatos, powered by rapper Nicki Minaj and released this summer— includes coconut and peach. Even newer: having tested Riunite Peach Moscato in five markets, Banfi plans to roll out this iteration nationally by the holidays.

This fall will see the release of a trio of fruitinfused wines under the new Frusions label, featuring peach and pear as well as orange.

Of course, the question with any trend is staying power. Too early to say with hybrids in general, and it may well be that some soar and some sink. But the products keep coming. Earlier this year saw another big player enterthe hybrid arena—Skyy Moscato, a vodka-Moscato fusion. And the young genre shows signs of flexing in new ways. Coco Mambú is the first tropically inspired spirit made from rum, tropical fruit juices and 20% coconut water; the two flavors, Orange Mango and Watermelon Lime, are both 18% ABV and promoted to be enjoyed over ice or mixed. Yes, Coco Mambú is not an all-spirits or spirit-wine combo, but it wears its hybrid identity front and center. And in a current marketplace that has grown accustomed to mash-ups and crossovers in all sorts of consumer goods, and with a food scene that has made fusion of cuisines common, at the very least it would seem that beverage-alcohol hybrids will not shock Americans and may even have an edge of novelty in terms of attracting attention. ■

Malbec on the Move: But In Which Direction? Having Gained Household-Name Status, Argentina’s Signature Red Aims to Keep Momentum BY CHRISTY CANTERBURY MW
albec is much-loved. It’s easy to see—and taste—why. Five years ago, I described it as the next Merlot. After all, Malbec has a plump mid-palate and chunky, generous red plum and berry flavors like Merlot. Varietal Malbec wines are medium- to full-bodied and they often sport some chewy viscosity. All of these factors deliver immediate satisfaction to most consumers.

lowed by Cabernet Sauvignon at 17%. Argentina’s signature white grape, Torrontes, accounts for 24% of total vineyard surface area. But, Torrontes, for now at least, doesn’t have the complexity to draw much attention, let alone name recognition.
Stuck in Place? Like the Kiwis with Sauvignon Blanc, the Argentinians have—in less than 20 years—created a new, classic wine style. There is no question that Argentina has over-delivered on in this category. A January 2013 Wine Opinions report shows that consumers rated 90% of under-$20 Argentinian reds (note this includes all reds, not just Malbec) as “good” or “outstanding”. Of course, Daniel Taytslin, a wine and spirits consultant at Manhattan’s Astor Wines and Spirits, says “Argentinian red” is synonomous with “Malbec” for nine out of ten customers.
With such a high quality-to-price ratio, however, the question arises as to how much Americans are willing to pay for a bottle of Malbec. Is it possible that Argentinians might follow the footsteps of their other Southern Hemisphere brethren…the Aussies with their Shiraz? Were Argentinian Malbec to go the way of the “just a Tuesday night pizza wine,” the country’s producers could be in serious trouble. According to Wines of Argentina, in 2011 Malbec represented 34% of black grape plantings. Bonarda trails well behind at 18%, fol-

Astor’s Taytslin says, “Extremely rare is the customer who wants to splurge on a bottle of Malbec specifically. Over the past six months, I could count them on one hand.” Still, Taytslin makes the case that it’s not a lack of willingness to spend more on wine. It’s that because so much good juice is delivered in the $10 range, consumers feel they don’t need to pay more. He also mentioned that people know Malbec well enough that when they want something “interesting” they’re looking into different territories. So, has Argentinian Malbec become a one-hit, budget-friendly wonder? It seems so, but it depends with whom you speak. Adam LaPierre MW, the national sales manager of the fine wine division at Frederick Wildman and Sons, thinks the big brand domination of $8-15 range could mean it is growing a bit stale. However, Malbec is on fire off-premise in the $3-$8 and $15+ ranges. He posits that the variety is accepted so widely now that larger companies are creating even greater-value propositions. I can’t help but wonder if the entry of even lower-priced Malbecs will stretch the quality of the $8-15 category. Or, will better fruit be transitioning down the chain if movement continues to be slower in the higher-priced categories?
Malbec Dining Out On-premise, a few things seem to be happening. Jason Mabile, director of key accounts in the New York metro area at Lauber Imports, reports that for by-the-

There are actually five large oases within Mendoza: North, East, Center, South and Uco Valley (Valle de Uco); and while each is further divided into many subregions, producers have wisely chosen to favor the general region, Mendoza, for labeling. In turn, Mendoza has gained household-name status—right alongside Malbec—among American red wine fans. Scarce rainfall and pure meltwater irrigation make the difference for mendoza, as they allow growers to regulate vine and grape growth, as well as sugar and tannin concentration.
glass lists 95% of restaurant wine buyers want a Malbec for wholesale bottle price of $8 or less. Those 5% who could trade up, for example the Michelin-starred restaurants, simply ignore the variety. That posture seems not unlike the one often taken toward Pinot Grigio. However, this could be New York snobbery at work. LaPierre has been excited to watch many independent and national restaurant chains pick up lesser-known producers without hesitation as the variety is so widely accepted. Whatever your position on Argentinian Malbec, the category is at a pivotal point. If you support it, do so now! Here is a sampling of a few personal favorites to discover or revisit:

n 2002 a friend of Ignacio Carballido told him he needed to meet Guillermo Olguín. Though Carballido was living in New York working in the fashion business, and Olguín was a painter based in Oaxaca, both were Mexican natives with a unifying passion: Mezcal.

The two became fast friends over a Mezcal-fueled weekend in Oaxaca and set out on a journey to change the way Americans view the underappreciated agave spirit. Soon they had partnered with a thirdgeneration Mezcal producer, and were scouring countless small Oaxacan villages in search of quality spirit. In 2004 they launched Los Amantes (“the lovers”) with a Joven ($54) and a Reposado ($64), both pitsmoked in the traditional style, and triple distilled. But they didn’t stop there. “We were determined to make Americans take Mezcal seriously, and we believed the best way to do it was not simply by crafting our own brand, but to open a bar in New York City where people would come to drink Mezcal and talk about it,” shares Carballido. After seven years of permit issues and painstaking construction (they sent a 20-foot container of Mexican tiles, clay pots and artwork on a boat from Vera Cruz), Casa Mezcal opened its doors in 2010. The bar showcases dozens of different Mezcals, in addition to Los Amantes, and it’s fair to say that much of Carballido’s mission has been accomplished. “Today people have a very different view of Mezcal,” he says. The overall quality from the region has skyrocketed and scores of new producers have entered the U.S. market, adding vibrancy and diversity to the category which Carballido celebrates. “Even in Mexico Mezcal is rivaling tequila as the spirit of choice in the hottest bars in Mexico City,” he notes. Los Amantes joined the Palm Bay Spirits portfolio in 2010, a partnership which
exposed the brand to a wider national audience. “There is tremendous interest all over in Mezcal,” reports Carballido, who notes that it often comes from less obvious places: Seattle, for instance, has emerged as one of the best markets for the brand. “A handful of years ago, Astor Wines in NYC had two Mezcals and a very large shelf full of tequila. They now have an entire section devoted to Mezcal.”
LOS AMANTES COCKTAILS
The Single Malt of Agave Carballido isn’t the only one to make the comparison: Mezcal is in many ways more like Single Malt Scotch than tequila—and Single Malt fans are driving Mezcal’s growth. Whereas tequila production is highly regulated as to how and where it is produced, and required to utilize only one type of agave (Blue Weber), Mezcal is produced in seven different Mexican states from over 30 different types of agave. The harvested agave piñas are cooked with mesquite, which infuses the spirit with a smoky, earthy flavor that beautifully complements the fresh, salty-citrusy agave character. Carballido observes that the number of people sipping Mezcal “Scotch-style” has dramatically increased since he opened Casa Mezcal. That smoky character works wonders in cocktails, too. “When mixologists want the complexity of smoke in a cocktail, they have two choices—Scotch or Mezcal, and the latter has more versatility,” says Carballido. This fall, Los Amantes will be debuting an elegant new look, designed by Carballido’s business partner, Guillermo Olguin. Los Amantes Añejo will also hit the market for the first time. Aged 2½ years in white oak, it is earthy, smooth and sweet with subtle notes of vanilla and butterscotch that in no way overshadow the fresh, ripe agave taste. While Los Amantes has a lot more company on Mezcal menus nationwide, Carballido feels anything but threatened by the competition: “Mezcal was neglected for so long, I’m just so happy people are finally showing it the respect it deserves.” ■
