s 2012 comes to a close, it’s time for businesses and nonprofit organizations to start thinking about their charitable events for next year. Special events where alcohol will be sold require advanced planning to make sure they’re done correctly. retail businesses can benefit and help their communities by raising funds for local charities at the same time. We have a knowledgeable staff with many years of experience ready and willing to provide assistance getting the right temporary liquor permits for these events. Temporary permits are issued year round, but the busy season starts early in the year. There are nine different temporary permit classes and it’s sometimes difficult to figure out which one fits a particular situation. It takes time for us to review and process the large volume of

You don’t have to be a not-forprofit organization to be part of an event to help your local charities. While you can’t temporarily expand your retail permit premises, you can allow charitable events to use your parking lot. just make sure the boundaries for the temporary permit are clearly defined to ensure that no alcoholic beverages are carried between your premises and the temporary permit area. most of these events use an F or F-2 temporary permits. The alcohol sales are conducted by the non-profit organization, but the retail permit holder can sell food, provide staff and other services to the event. another great way to support local charities is to partner with
a not-for-profit organization and file jointly for the F-2 permit. Holders of a d-3, d-4 or d-5 permit may host an event at their permit premises and help conduct alcohol sales. The most important point to remember: when a permit is issued jointly, and the event is on the premises of the issued permit, the retail permit holder must suspend its alcohol sales for that portion of the premises while the F-2 permit is in effect. The temporary permit holder must buy the alcohol from a licensed manufacturer or wholesale distributor. The division often conducts compliance checks and citations may be issued for violations which could affect your permit and an organization’s reputation, including the ability to obtain temporary permits for future events. If you’re unsure of how certain regulations apply to your event or business, please contact the division for guidance. The best advice is to follow the instructions carefully and complete each section of the application. What Does This Mean For The Hospitality Industry? BY PHILIP A. CRAIG

hile it was important to focus on the campaign for President of the United States and our Senior US Senator, maybe the most important hospitality issue in the country was decided in the states of Washington and Colorado. I am speaking about the approval of issues that make “recreational” possession of marijuana and the ability to grow a small number of plants legal in those two states. What does this mean to the hospitality industry? Well, we aren’t sure. Think of it this way. If you are selling three products now (beer, wine and spirits), a fourth completely new product that you don’t know how to sell comes in to your offering. You may be great at marketing the new product,
but most likely you are not. Having a product in your establishment that doesn’t sell takes money out of your pocket. Offering a product that turns off people that are buying other products is not good business. Finally, what about smoking regulations? Yes, they would govern the consumption of any plant that you burn.

What about federal regulations that still don’t allow for the sale of marijuana? The answers to these and other questions could have an impact on your business. do to our industry right here in Ohio. Some of you may think that it can’t happen here. But there are 17 states with “medical” marijuana. From Alaska to Vermont, each of the 17 passed statewide issues. The earliest was passed in 1996 (California, of course). Here are the states that allow “medical” marijuana: Alaska, Arizona, California, Connecticut, Delaware, District of Columbia, Hawaii, Maine, Massachusetts, Michigan, Montana, Nevada, New Jersey, New Mexico, Oregon, Rhode Island and Vermont. So, if the topic comes up, think before you sign a petition or encourage this happening in Ohio. Be careful that you don’t lose what you have because of something new. It may be the worst mistake possible.

ermit holders should be aware of the requirements of Rule 45 that may be used in connection with Holiday sales. Rule 45 states that unless authorized under R.C. Chapter 4301 or 4303, or the rules adopted and promulgated thereunder, “no merchandise or thing of value shall be given away in connection with the purchase of an alcoholic beverage.” Rule 45(A). The

rule, however, authorizes a “manufacturer or supplier of alcoholic beverages, their registered solicitor, or a third party acting on behalf of the manufacturer or supplier, excluding a wholesale distributor or retail permit holder, [to] offer contests, prizes, sales incentive programs, rebates, or other promotions” in conjunction with the sale of alcoholic beverages. Under this rule, a manufacturer or supplier of alcoholic beverages may offer, in conjunction with the purchase of an alcoholic beverage, a mail in rebate for a discount on a product to consumers, provided the cost of an alcoholic beverage is not reduced at the point of sale. Under Rule 45(B)(5), a sales incentive program or other type of sales promotion may not discriminate between permit holders within the same permit class: “No manufacturer, supplier, or wholesale distributor shall discriminate between permit holders within the same permit class, based upon size or purchases of a particular brand, when distributing entry or mail in
rebate forms or point-of-sale materials nor in any way restrict or limit participation in such promotions to one or more specific retail permit holders.” No purchase of alcoholic beverages shall be required to participate in a contest, prize, sales incentive program, or other promotion; however, the purchase of alcoholic beverages may be required to participate in a rebate. Alcoholic beverages shall not be a prize or be given to any participant in any contest, prize, sales incentive program, mail in rebate offer, or other promotion. No coupon, prize, sales incentive program, mail in rebates, discount, or similar device involving reducing the cost of the alcoholic beverages at the point of sale shall be permitted. The plain language of the rule permits a person to claim an award, prize or rebate, which, includes a discount pursuant to a coupon, “by mail or other means that are not located at a retail permit holder’s or wholesale distributor’s permit premises.” (Emphasis added.) Therefore, it follows that Rule 45(E)(1) permits a manufacturer or supplier of alcoholic beverages to offer consumers an award, prize or rebate when it may be claimed or redeemed at a location other than at the point of sale or a retail permit holder’s or wholesale distributor’s permit premises. As noted above, Rule 45(A) expressly prohibits the giving of merchandise or a “thing of value” in connection with the purchase of an alcoholic beverage unless it is authorized under R.C. Chapter 4301 or 4303 or the rules adopted and promulgated under these chapters. Nothing in the language of Rule 45 indicates that the phrase “thing of value” is to be construed to mean something other than a thing that has monetary value to the purchaser of an alcoholic beverage.

It's Time To look at next Year bY jaCOb C. eVanS

ow that the election is upon us, or over, if you are reading this after november 6th, it is time to look at next year in the Ohio legislature. The most important bill will be introduced in the House of representatives and will be called the budget bill. This bill is usually numbered with a very small number like Hb 1 or Hb 6 or something like that, but it will be balanced and it will determine how Ohio government spends money for the two years following passage. We will be watching this bill for you because it will attract many important items. First, governor kasich and leadership in the Ohio House and Senate will be looking at tax reform. What does that mean? Well, I am not entirely sure, but it certainly means that the taxes we pay today may change after the passage of that bill. We are already getting ready to engage on your behalf to protect the Hospitality Industry from new or reformed taxes. So that we may be better prepared for that entire effort, we are asking you to keep track of the taxes you are paying so that we can use some of you as an example when it
comes time to testify in the legislature. Here are some important taxes to watch: Sales tax and employment withholding taxes (both state and federal), social security tax and real estate tax. just put together the list of taxes you are paying and set them aside. We will then be calling on you, in a future article to send us that information so that we can assess who among you may make for great testimony on these important hearings.

The abl is preparing for battle on Ignition Interlock devices. We will keep you abreast of those activities as they unfold. The Olba is already poised to join in that battle as well. The last time we had a major effort we actually flew members in to help defeat the credit card industry and keep a lid on fees. We may be in that position again. Stay vigilant and help us fight for your right to party‌ responsibly.

Why lack Of Consistency In Service Can Cost You Customers bY CHUCk deIbel

elcome back to the last Call! I hope this fall was a good one for you. This month’s article is on consistency in service. Why is consistency important? How do you achieve it and how do you manage it? WHY be COnSISTenT? Consistency is important behind the bar as much as it is for the food coming from the kitchen. The guest will come to rely on the drinks being made the same way they do the beer being cold, the wine being chilled and not spoiled and the service being timely, friendly and reliable. not being consistent in these areas will lead to your customers being dissatisfied. not only will they likely not return, but they will get on the social media sites and broadcast their dissatisfaction to everyone else. So let’s set up our bartenders for success! HOW dO YOU aCHIeVe COnSISTenCY? Consistency behind the bar is achieved by doing a number of things both with the staff and the equipment and inventory. With the inventory make sure product is rotated correctly and kept at the proper temperatures for that product. don’t buy too much product as that will contribute to the rotation of the stock. liquor has a long shelf life. Wine has a long life until it’s been opened. Once it’s been opened you have about 3 days. maybe a little longer if it’s chilled. bottles of beer have about 4 months of shelf life. Once a keg has been tapped, it has about one month. HOW dO YOU manage COnSISTenCY? like everything in business, if you
can’t measure it, you can’t manage it. You measure consistency in several ways. meaSUrIng THe OPeraTIOnS The bartenders need to be consistent in the pouring and adhering to the recipes. You can measure their accuracy and recipe adherence by using a variance report that shows how much of a certain product was used and how much of it should have been used. bevinco has such a report. The report will show if any brands are being over or under poured. The software is programmed for each of your signature drinks. You would need an inventory software program to be able to do this, as it’s nothing you can do manually.
COnSISTenCY IS ImPOrTanT beHInd THe bar aS mUCH aS IT IS FOr THe FOOd COmIng FrOm THe kITCHen Post your bevinco reports so the staff can see how they are doing. It’s very reasonable to have 97% and greater efficiencies. by having a menu item for each drink the staff makes, that also allows you to price the drink to the customer accordingly. This will assure you of having the correct cost percentages. also, have bartenders pour test before each shift to warm up. Have them pour about 4-6 shots in a measured container. Inventory - Spot check the dates on the inventory. equipment - make sure the draft beer equipment is functioning correctly. The draft beer needs to hit the glass at less than 40 degrees Fahrenheit. make sure all the pour spouts are the same and are all facing in

the same direction on the bottles. Facing to the left is preferable. Training and Testing - Provide all new hires with the recipe guide. Provide written tests on the recipes and the pricing. also do pour testing with the staff for quarter ounce increments, increasing from one quarter of an ounce up to your martini size pour, or your double pour, if you serve doubles, whichever is more. make sure the staff knows how to pour a draft beer properly, so the head on the beer is about ½ of an inch. If the draft is foaming too much and is creating a lot of issues, make sure they know how to pour off the foam as to minimize the loss of draft beer. This is done by tilting the glass with the draft spout very close to the top of the tilted glass. Provide a measure glass of wine for the wine glass pour. We recommend putting in sugar or white sand i a glass to the desired pour level and putting it at the wait stand or where the bartender would pour wine by the glass. Time To refresh and Highlight recent Changes bY dr. Steven austin Stovall

hen the Family and medical leave act (Fmla) was signed into law in 1993, few realized how far-reaching the act would become or how our definitions of “family” and “medical reason” might evolve. but now that the law is at its two-decade anniversary, it is probably time to refresh your knowledge of this legislation as well as highlight some recent changes. The objective of the Fmla was, and

remains to be, provide employees with a protected leave of absence for family or medical reasons. In other words, a person’s job would be held for them if they took time off from work for legitimate family or healthrelated concerns. Of course, as with most federal legislation, there are nuances associated with Fmla that should be explained. Fmla baSICS To qualify for up to 12 weeks of unpaid leave under Fmla, certain requirements on the part of the employer and employee must be met. For the employer, you must have at least 50 or more employees – this number includes full-time, part-time, and temporary workers. For employees, to be eligible, they must have worked for you for 12 months. They must also have worked for 1,250 hours during that counted 12-month period. In addition, an employer may require that an employee use up any paid vacation that has accrued prior to going on a Fmla-sanctioned leave. generally, a leave under Fmla is for
the employee’s own serious health condition or that of an immediate family member. events such as the birth of a child, care for a newborn child, or assisting with the medical attention of a spouse or parent are all viable reasons for leave. a “serious health condition” includes such circumstances as when the employee needs overnight medical attention, continuing treatment for three calendar days from work, pregnancy, or when the employee is incapacitated because of a chronic condition (such as asthma, epilepsy, etc.).
THe ObjeCTIVe OF THe Fmla WaS, and remaInS TO be, PrOVIde emPlOYeeS WITH a PrOTeCTed leaVe OF abSenCe FOr FamIlY Or medICal reaSOnS. UPdaTeS TO Fmla Probably the most significant recent change is the inclusion of military service as a viable reason for a leave under Fmla. In 2008, the national defense authorization act (ndaa) amended Fmla. With the passage of ndaa, an employee (who has met all other requirements mentioned earlier) can take up to 26 weeks of leave if the parent, child, or spouse is an armed Forces service member who requires medical attention. This specific leave is called “military caregiver leave” and can only be used once for any given service member and his or her injury. a “qualifying exigency leave” is one where an eligible employee may take unpaid time off for a parent, child, or spouse who is deployed militarily on short notice, engages in post-deployment activities, requires counseling, is going through physical therapy or recuperation, and so forth. However, with a qualifying exigency leave, that time off is part of the normal 12-week Fmla timeframe.
reCOrd keePIng It is prudent on your part to maintain good records and keep abreast of changes that occur with any law – not just Fmla. First, understand how the eligibility time is calculated and be clear with your employees about this. For example, do you use a fiscal year, calendar year, or rolling 12-month calendar to determine the “year” in Fmla calculations? any of these are permitted by Fmla. next, specify how you’re going to count hours worked toward the 1,250 required before an employee can take a Fmla leave. For salaried employees, this is usually a straightforward calculation as they will typically work more than 1,250 hours. but for hourly, and even more importantly, part time employees, it may be more problematic. Permitted under Fmla, you may average the hours worked per week for part timers. also, be familiar with the term “medical certification.” This is documentation provided by a health care provider that substantiates that the employee has a serious health condition requiring time away from work. Though an employee must provide notification to you that he or she is taking time off under Fmla with a 30-day advance notice, they have up to 15 calendar days to obtain the medical certification. It should be noted that the 30-day notice is when the anticipated leave is foreseeable. If it is sudden, then a verbal notice one or two days in advance is considered appropriate. Fmla has definitely impacted how we as employers treat requested time off for medical or family reasons. The information presented here is designed to keep you abreast of the law and focus your attention on some recent changes, but should not be construed as legal advice. Old World wines reflect place. New World wines come from grapes. Get set for the Next World— where wines are based on concepts.

ake no doubt: what’s in the bottle counts. But so does what’s on it, especially now that the proverbial wine “lake” has grown into a global ocean. And more than ever, the imagery wine suppliers are choosing to project—and which in turn merchants are compelled to embrace— involves words and art that favor a “concept” instead of, or on top of, a wine’s ampelographic information. The era of wine being labeled predictably is over. The standard formula of “Somebody’s Something from Somewhere” still works, on a boilerplate level. But traditional wine lingo has always been problematic for Americans, most of whom just want something tasty to drink. If the Old World represents wines based on place,

and the New World represents wines based on grapes, it is entirely reasonable to frame a third sort of world—one where wines project a concept. The steady growth of more expressive wine branding is a natural byproduct of both the crowded wine marketplace and modern consumer culture. Wines labeled Chateau This and Over-There Vineyards are feeling rather…20th century. The material world around us today is fueled by brands that “speak” to people, wearing their attributes as vividly as possible. Detergents are designed to look and sound clean. Electronic gadgets exude utility and efficiency. Athletic products evoke speed, strength and optimum performance. Why should wine be any different?
Concept wines are linked by their engaging of consumers on a thoroughly modern level—with a quick idea or image that grabs attention. We can debate whether marketers are getting more creative or merely being practical, but the fact is that concept wines are more sensible than radical; they speak the language of mainstream consumer brands. Concept wines are everywhere, but they are tricky to define—and analyze. Some marketers call them lifestyle wines. Some prefer thematic wines. Maybe personality wines work? There may be no one-term-fits-all moniker—and that’s one reason why this trend is unfolding outside the usual sales-tracking channels. Another reason is sheer breadth; the trend is cutting across countries, grapes, wine types and prices. But by any name, these wines are linked by their purposefully engaging consumers on a thoroughly modern level—with a quick idea and/or image that grabs attention. Genderlicious. Is the route to a woman’s wine-buying decisions through her funny bone, her psyche or her ironic sense of fashion? Maybe all of the above.
Sisterhood,” including the labels Middle Sister, Purple Cowboy, Monogamy and promisQous, among others—prefers to talk of a “story in the bottle.” Wheatley notes that the goal with the Sisterhood wines is to have shoppers “see, smile and purchase” in a three-second time frame. One of the keys to the Wine Sisterhood marketing is what Canopy does to reward and retain customers after the initial three-second sale: the multiple labels are supported by an active website and social media. The online conversation goes well beyond the individual wines, incorporating video, contests, articles, advice, etc.
Roots of a Trend While the proliferation of concept wines is relatively recent, hindsight reveals some of the trend’s roots. Consider California Chablis and California Burgundy; these names were coined to project an image (European) beyond the grapes and places they sprang from. Ditto the simple use of the words Château and Domaine adopted by American wineries last century. Speaking of chateaus, Château Mouton-Rothschild, while arguably n in need of a concept, nonetheless not ad added the dimension of fine art to its wine st starting back in the 1945 vintage (and in inspired plenty of imitators). Beaujolais N Nouveau—the first wine of the vintage, u unnaturally rushed from France to Americ in time for Thanksgiving—represents ica p perhaps the most successful concept wine o the 20th century. of
Affordable “reserves” (Glen Ellen, Kendall-Jackson, et al) that cropped up in the 1980s and ’90s qualified as concept wines, labeled as such to stand out from the plain-jane varietal crowd. Meritage began as a concept, too: the conscious effort to get Americans to recognize Bordeaux-style wines not from Bordeaux. Around the turn of the century, led by Yellow Tail, a veritable herd of colorful, kinda kooky brands came to be united as “critter wines.” Fun-poking wines, à la Cheap White/Red Wine, which have proliferated as America’s wine culture has blossomed, fit the concept bill, too. One might even frame 3L bag-in-box wines as representing a concept; while diverse, they share a conscious effort to project their value, convenience and ecofriendliness. Concept wines were/are all over the map, so to speak. The common thread— inviting consumers to think about wine on a level that transcends (or bypasses) just how a wine is made and tastes—is perfectly in tune with modern American consumer society. It should come as no surprise that some of the biggest players in the industry are tapping concepts to create new brands. Megan Kilbride, director of marketing innovation at Diageo, whose recent launches include Butterfly Kiss, Stark Raving and Rose‘N’Blum, explains, “There is a growing segment of wine consumers who tend to think of wine as a beverage not as a hobby. For some of these consumers, especially millennials who have started consuming wine earlier in their adult lives than their

FUN parents’ generation, the brand and label personality are a large driver of how they select new wines.”
Usual & Unusual Suspects Looking at the marketplace today, concepts have crept into practically every wine category, and patterns are developing. For instance, red blends with red in the name are now unofficially rampant. Red Velvet. Red Guitar. Tractor Shed Red. Adobe Red. Pillar Box Red. First Crush Red. Frontier Red. Headless Red. RedVolution. The list goes on and on; and the names reinforce that these wines are proudly off the beaten varietal path. Two new blends to keep an eye on: Montes “Twins,” a $13 50/50 blend of Malbec and Cabernet Sauvignon, combines a catchy, easy-to-recall, makesperfect-sense name with nifty Ralph Steadman art. Cryptic, from the Purple Wine Company, is pushing the envelope at the premium end of the red blend segment; its puzzling package and serious flavor profile make the SRP of $18 seem like a bargain. Zinfandel—having developed a palpable sense of fanaticism among fans as well as offering marketers the zesty letter “Z”— is still varietal, but Zinsters have helped imbue the wine with a sense of adventure, from Poizin and Sin Zin to XYZin and Zen of Zin.
Better off red. Red blends are all the rage. Purple Wine Company’s Cryptic (California) and Montes Twins (Chile) are pushing the “Splendid Blended” envelope.
Witty, Yes; Tasty, Too A handful of suppliers have emerged as kings of conceptual wine-ing. Bonny Doon Vineyard’s portfolio has long been peppered with puns and esoterica. Don & Sons (and sibling company The Other Guys) excel at creating conventional-looking wines with kitschy names like Smoking Loon, Plungerhead, MooBuzz and more. D’Arenberg, maker of Laughing Magpie, Stump Jump, Hermit Crab, etc., helped set the pace for cheeky Australian wines. At Michael David Winery, two brothers are churning out California concepts from Lust and Sloth to Incognito and Earthquake. In Washington, Charles Smith has carved out concept-wine street cred with K Syrah, Kung Fu Girl Riesling and Velvet Devil Merlot, among others. While all these folks clearly know how to serve up heapin’ helpin’s of cleverness, they have rightly earned praise for what’s in their bottles as well.
Following in the clownish footsteps of Goats Do Roam and Fat Bastard, wacky/ witty wines are still going strong. Mommy’s Time Out and MommyJuice benefited from a well-publicized spat a while back; this only helped their similar adultfun concepts reach more people. Abduction Wines hit Earth over the summer with a bang. Oreana, based in Santa Barbara, teases shoppers with Project Happiness wines featuring a yellow smiley face, plus a red blend labeled with a big orange question-mark.
Sometimes the wit manages to incorporate meaning, as in the colorful packaging for GROONER Grüner Veltliner. Chilean brands Oops and Root:1 inform about Chile’s lost grape Carmenère and phylloxera-free vineyards. And thanks to numerous fruit-centric wines, the word “naked” has come to be synonymous with unoaked in the wine arena. Then again, sometimes wine names just wanna have fun: Ménage à Trois, Mad Housewife, Rude Boy/Girl, Old Fart, Il Bastardo, Wrongo Dongo, Big Mouth New Yorkers, Pinot Evil, Oh… Schist! Riesling, Big Ass Cab, The Ball Buster, Bitch, Sexy Wine Bomb…. There are plenty of provocative labels in our midst. One concept that has made relatively recent impact is what might be called “umbrella” labels. Kobrand’s The Seeker, Tri-Vin’s Tussock Jumper and Vintage Point’s Layer Cake are singular brands that collect wines from iconic regions around the globe. On the flip side, local wineries are apt to go conceptual to give their wines a competitive, fun edge. In New York, two women in the Hudson Valley got together to create Happy Bitch rosé bubbly. Inspire Moore in the Finger Lakes makes wines called Joy, Love, Peace, Wisdom,Truth and more. Also in the Finger Lakes, Hazlitt 1852 Vineyards turned the hybrid Catawba grape into a genuine cult wine—Red Cat, a sweet red—replete with cartoon cat mascot in a hot tub on the label. Celebrity labels are a natural subgenre of concept wines. Marilyn Monroe never got to see her image on a Merlot bottle, but the ranks of musicians, actors and reality TV stars have been busy in the wine biz of late—so busy that Beverage Media will be devoting an entire article to them next month. Some concept wines take inspiration from walks of life not normally connected to viticulture. High-techy examples include TXT Cellars; Acronym GR8 Red

CONCEPT WINES Not by Name Alone Scott Gerber, co-owner of Martin Scott Wines based in Lake Success, NY, has had a hand in launching three concept wines. He’ll tell you that the hardest part may be coming up with a name. It’s one thing to have an “Aha!” moment; the real trick, however, is coming up with a name that hasn’t been used. Each of the Martin Scott concepts benefits from a very specific focus, supported by double-entendre. ■ Seamless Cabernet features a silkscreened graphic whose elegant script wraps around the bottle without a break, reflecting the idea of a perfectly balanced wine that moves seamlessly from first taste through mid-palate through to the finish. ■ The North Fork Project, a collaboration with Pellegrini Vineyards, plays off the dual meaning of “fork,” drawing attention both to the terroir of Long Island and the wine’s food-friendly character. ■ The third idea hit Gerber when he was at a lavish wedding that featured plonkish wine. “I
Wine; and Sacre Bleu, which features full-color QR codes front and center on its labels. Football teams, such as the Jets, Redskins and Chargers, have official team wines. Ed Hardy wines were inspired by the artistry of “the godfather of modern tattoo.” In Napa Valley, Judd’s Hill taps into magic for two blends—a red Magic and white Prestidigitation (that’s a big word for magic tricks)—not to be confused with Sleight of Hand Cellars in Walla Walla, Washington. We now have charity-driven wines: One Hope; Montesquieu; Wine to Water; Humanitas; Save Me, San Francisco (in conjunction with the rock band Train). Speaking of music, House Jam and House Band wines are designed specifically for crossover appeal. And the microtargeted Moscato PM, from Banfi, was created expressly for urban nightclubs. Given America’s eco-consciousness, surprisingly few wines directly invoke the concept of “green”-ness (Parducci Sustainable Red, CalNaturale, Vegan Vine are a few exceptions). Most organic and Biodynamic producers already have established brands, and are tweaking their product lines. Interestingly, “natural wines”—which have stirred much controversy in the blogosphere—are quite unaggressive in terms of promoting their “nothing added, nothing taken away” concept.
art meets marketing While wine labels have certainly gotten fancier over the past decade, there has not been an explosion of fine-art labels, perhaps because commissioning or licensing art can be expensive. One noteworthy exception is the Kenwood Artist Series Cabernet Sauvignon; 2008 (SRP $60) represents the 34th annual release and outclasses many higher-priced Cabs. Eric Kent is another Sonoma producer that has managed to pair fine art with high-end wine. Esporão releases original-art labels for their red and white Reserva blends each year; these are among the best Portuguese wines in the U.S.—and real values at under $25 SRP. There has been a wave of thematic wines aiming at female wine consumers in recent years—Treasury Wine Estates’ Be.; Deutsch Family’s Flirt; DFV’s HandCraft; Beam’s Skinnygirl; Diageo’s Butterfly Kiss and Rose‘N’Blum, to name a few. Some brands take a consciously understated approach, such as the Middle Sister wines, Little Black Dress and Cantina di Soave’s tongue-in-chic Volére, which tucks a 1.5L bag into a cardboard exterior that resembles a purse. While women would seem to be an excellent target audience, research suggests that millennials in

But as clever as these names may be, Gerber is quick to note that in each case, his partner, Martin Gold, told him: “If the wine is no good, we’re not touching it!” Fortunately, the wine is good—and so are sales.

particular are prone to reject marketing that is too obvious. There is no magic formula. It will also be interesting to watch how some of these seemingly just-for-girls wines fare over the coming year. Ditto Diageo’s Stark Raving label—targeting millennial men. Another seemingly ripe wine concept would be food. But perhaps it’s too obvious, given that wine in general is supposed to be aligned with food. Once Wines—created in collaboration with NYC sommeliers and named The Table, The Fork, The Spoon, etc.—is no longer around. Ditto Constellation’s Knife & Fork label; Martha Stewart Vintage; and Wine That Loves, an ultra-simplified line designed to pair with roasted chicken, pizza and so forth. On the other hand, Freixenet’s Tapeña label, which plays to Americans’ embrace of tapas, is still very much at the table, having recently gone screwtop and added a sweet red to the line of under-$10 Spanish wines. And Entwine, the collaboration between Wente and Food Network launched late in 2011, was an instant hit (even without heavy Food Network promotion). Tyler Florence has teamed up with the Michael Mondavi family to create a line of bold California bottlings that retail nationally for $20 and up.
Selling Concepts Concept wines have changed the landscape of wine in America, and it bodes well for the future of the industry. Just as the ascent of grape-labeled New World bottlings made wine more accessible for a generation of blossoming wine drinkers, the Next World of concept-based wines is giving the green light to people who like to connect with products with a
little extra emphasis on names, graphics and ideas. (If you have any doubt about the power of catchy labels, take a look at the red-hot craft beer category; funky names and graphics are the norm among craft brewers.) Perhaps even more important, concept wines are providing a fresh edge of marketability. After two decades of passively allowing wine ratings to infiltrate the retail tier of the industry, sellers and shoppers alike now have a new way to think about the inherently fun, interesting product that wine is. Americans are more primed than ever to respond to cues that appeal on a level beyond the basic juice. There is not a wine store in America that does not already have concept wines in stock, hailing from every wine region and cutting across styles and price points. The question retailers should now be asking themselves is how best to present them. Trying to group them all together would make for a big mess, but tapping their playfulness can enhance the shopping experience. Don’t be afraid to embrace concept wines. A wine doesn’t know what bottle it’s in, and chances are excellent that the wine itself is—just like traditionally presented wines—well made. Think of the concepts as points of distinction—which in turn become selling points. When considering several comparable products, stocking the one that has a story is a way to potentially attract new shoppers while not alienating traditional ones. Take Gigondas, for example: Ogier’s

And if your Zinfandel section does not have at least one or two offbeat bottles, you are missing the chance to grab the attention of browsers. The key here, of course, is knowing as much—if not more—about the concept wines as you do about the more straightforward wines on the shelves; when a customer asks, you can explain the wine’s story and describe the wine’s style. Play up the funny ones with handmade shelf talkers or other signage. Dress up a window display with some eye-candy bottles. Put a few near the register for impulse buying. Recommend concept wines as gifts that can reward on multiple levels. Looking to expand your selection of local or lesser-known wines? Stock ones with catchy labels. In short, let concept wines go to work for you, grabbing attention and making your customers feel that wine can be as much fun to shop for as it is to drink. ■

This batch of party-friendly RTS cocktails caters to younger, trend-setting enthusiasts who have developed a taste for mojitos and other popular cocktails, but may have no idea how to make them. The category is also geared toward the price-sensitive consumer who recognizes the convenience and savings of not having to purchase and make a cocktail from scratch. Tom Tesauro, partner in Massachusettsbased Yankee Spirits, says, “Many of our customers are a bit intimidated and mystified when it comes to mixology. Ready-todrink offerings help them overcome this challenge.” He adds that, as a category,

There’s a notable catalyst to the growth and innovation in the RTS category, and it can be traced back to 2008, when onpremise spirit sales declined 2.2%, the first time the industry had seen a dip since 1995. Consumers began to curtail their spending by drinking at home more often. About this time, popular reality TV star Bethenny Frankel decided to launch a calorie-conscious bottled Margarita under the brand name Skinnygirl. It was an overnight success, ultimately purchased and extended by Beam Inc. in 2011. The Skinnygirl brand grew by

RTDs are young and volatile: “There is a constant stream of new offerings as well as frequent discontinuations.” Similar to on-premise, the Margarita is the most popular cocktail among both RTS and RTD brands, followed by the Cosmopolitan. Diageo controls more than a third of the category with its offerings, most notably under the Jose Cuervo and T.G.I. Friday’s brands. Line extensions from Smirnoff and Captain Morgan continue to perform well. Bacardi has maintained a firm position with its Party Drinks and Classic Cocktails lines. Kahlúa and Jack Daniel’s are two other well-known brands joining the ready-to-party bandwagon.

81% in the first half of 2012, buoyed by the introduction of Skinnygirl vodkas and wines. Fast forward to 2012, and “skinny” is used so often on both cocktail menus and liquor bottles, it hardly needs an explanation. Nearly all the major players in the RTS category have introduced lower-calorie versions, citing this trend as a reflection of the busy, social, healthconscious female. In May, Bacardi announced actress Busy Philipps as the spokesperson for their new Bacardi Classic Cocktails Light. Christina Perez-McDowell, brand manager at Bacardi USA says the brands are “a new staple for sophisticated athome entertaining…offering [consumers] a way to enjoy more time with their guests, without sacrificing flavor or style.” At less than 95 calories for a 4 ounce serving, Bacardi promotes the line as being made with natural flavors, real juice and pure cane sugar. Campari America came out with a brightly packaged Midori Skinny Margarita as well as a RTS version of the core Midori Sour cocktail in July. Many new brands are entering the market, like
CountryGirl Cocktails, which counts on a partnership with Nashville record label Average Joe’s Entertainment to reach its core female target through product placement at concerts, in music videos and promotional contests. CountryGirl Director of Marketing Serra Justice points to the
16% ABV as being a point of distinction: “This slightly higher alcohol content gives CountryGirl Cocktails a bold taste while maintaining the sweetness desired by most RTD consumers.” According to IBISWorld, women account for 55% of RTS purchases, and most are under 30 years old. But don’t count out men in the low-calorie RTS craze—VeeV Spirits, known for its VeeV Açaí liqueur, has entered the category with VitaFrute cocktails, aimed toward both genders. Staying Power
Trading Up Cocktails are perceived as more premium to drink than beer, a point that holds true in the spirit-based RTS category as well. According to DISCUS, 20% of the category is premium, and that is a segment that is growing, especially the “skinny” brands notes Streeter at ABC. At all three Yankee Spirits locations, Tesauro says the RTD and RTS category has become highly competitive, with innovations in various packaging and flavors coming faster than most retailers can handle. “Over the last several years, we’ve seen real trade-up in this category with more premium offerings. Where value brands like Ice Box and Chi Chi’s once dominated, we now see
more premium offerings like the Cuervo Golden Margarita, Bailey’s Mudslide and the offerings from Bacardi—all of which retail in our store in the mid to high teens for a 1.75 liter. We now have 750mls of Skinnygirl flying out the door at the same price as a 1.75 liter of the value brands.”
With cocktail culture in full swing, the average consumer will continue to experiment with premade drinks. The benefits of price and convenience coupled with more at-home entertaining all point to more supplier investment in the category. Elsewhere in the world, bottled cocktails are more commonplace than in the U.S.; Australia, Russia and Japan account for 75% of the global RTD/RTS volume. The United States accounts for a mere 2%—a number that may well creep up with the more premium offerings entering the category. Keeping track of the various premade cocktail brands is no easy task. The chart we’ve compiled of some of the most common spirit-based RTS cocktails offers just a snapshot of this flavorful, growing segment. ■

ill there ever be another Cosmopolitan or Mojito? These two simple but refreshing drinks once were served everywhere, national phenomena that appeared on menus in small bars, giant nightclubs and chain restaurants across the country, draining oceans of cranberry juice and harvesting acres of mint. In some areas, those drinks still ring the register, but now that many classic cocktails from the Golden Age of American drinking have been rediscovered, neither they nor other turn-of-the-century quaffs like the Lemon Drop or the Sour Appletini are highly sought after. Instead, bartenders have turned to riffing on classic cocktail recipes and crafting new and interesting combinations in a seemingly endless profusion. Possibly as a result, it’s been some time since a single drink has created a national wildfire, so the question arises: what will

be the new classic drinks that customers clamor for and every bar and restaurant must add to their menus? Some contemporary recipes have traveled far—the Oaxacan Old Fashioned and the Gin-Gin Mule are two prime examples—appearing on cocktail menus across the country and often credited to their originators. Others,
like the Scotch-based Penicillin cocktail, have emboldened bartenders to take on neglected ingredients. (For the record, Phil Ward is credited with the mezcal-based Oaxacan, Audrey Saunders with the Gin-Gin Mule, and Sam Ross with Penicillin.) Crystal-balling the future is always risky, but in conversations with many of today’s cocktail cognoscenti, it’s clear that, while few new drinks are as ubiquitous as the Manhattan, Margarita, Martini or Piña Colada, certain cocktail techniques, drink styles and flavor profiles are becoming well established as essential components in contemporary cocktail programs.
COBBLERS AND PUNCHES AND SHRUBS (OH MY!) Take the Shrub, the fruit-vinegar-inspired refresher that emerged this summer from its cult status. Two examples:

in New Orleans at the new cocktail bar Bellocq, a handful of variations were available at any one time; and in the Denver area at Phat Thai, chef Mark Fisher merged the Shrub idea with Southeast Asian influences in his Blueberry Lemonade (blueberry vinegar, muddled lemons and vodka) and Blackberry Bramble (blackberry vinegar and honey-infused bourbon). “The one I see now everywhere is the Shrub,” says Derek Brown of Washington, DC’s The Passenger. “Simply a means of preserving fruit, it has become a standard technique/ingredient of ‘new classics,’” he says. Brown himself provides a rotating list of different Shrub variants throughout the year, including an early autumn Celery Shrub recipe that really pleased him. Like Cobblers (spirit, citrus and fruit) and Punches, Shrubs provide creative bartenders a basic framework around which to build their own particular flavor palate with favorite ingredients and serving styles. With them, guests basically know what to expect—if you don’t like fresh fruit or the tang of vinegar in your drinks, you’ll never order a Shrub or Cobbler twice—but they anticipate the personal twist a bar provides. In some ways, these three drink styles are perfect examples of the new classic cocktail—an antique drinking form refurbished by the cocktail renaissance and then tweaked with contemporary, perhaps seasonal, ingredients. No more, at least for the short term, do either customers or drink makers seem much interested in cookie-cutter beverages made exactly the same as at the bar down the road.

Taking classic drinks and swapping out secondary ingredients with inspired substitutions is common in both cocktail-centric bars and in restaurants where the drink menu needs to fit the concept. For instance, Casey consulted with two Seattle-area Volterra restaurants where she installed on the menu three different Manhattan recipes; one classic and the others made with seasonal or unexpect-
ed ingredients. Volterra’s Nocciola Manhattan is made with Woodford Reserve Bourbon, sweet vermouth, Frangelico, vermouth-plumped Bing cherries and toasted hazelnut. In another, Casey replaced orange liqueur in the traditional Margarita recipe with the Italian bitter Cocchi Barolo Chinato, resulting in a drink with more complex layers of flavor. “Some of these more interesting products, especially Italian liqueurs, add a unique twist while keeping the cocktail classic in approach,” she says. Classics like Old-Fashioneds or Collinses are perfect fits for building seasonally-based offerings, with peaches, cherries and other tree fruits adding a signature touch required on many drinks menus, she says.
FROM BITTER(S) TO FRESH Introducing a bitter quality to established classics works for others as well; in DC, Brown’s customers are avid for a Daiquiri twist he serves called The Getaway (Cruzan Black Strap Rum, Cynar, lemon, simple syrup). While bitters— both potable and aromatic—were until recently used sparingly in cocktails, bartenders have embraced both varieties for their depth of flavor and creative possibilities, and they are enjoying an

unprecedented surge, with new versions and European classics more widely available now. Long-time bitter booster Francesco Lafranconi, executive director of mixology and spirits education, Southern Wine and Spirits of Nevada, says even hotel and chain accounts are open to taking on classic twists or craft-like drinks with bitters involved. Giving classics a fresh twist is easier now that most bars hew to the drinkmaking tenet that commercial mixes and frozen juices are to be avoided at all costs. It almost goes without saying that cocktail bars will continue to opt for fresh ingredients whenever possible, and the wave has washed over a number of chain restaurants as well. “For a chain with 205 restaurants, it’s actually quite aggressive to have all our mixes fresh now,” says Mary Melton of P.F. Chang’s China Bistro. “We decided a couple of years ago to elevate what we offer at our bars to match our food. The trick is consistency, but we worked it out so our ingredients—our sweet and sour, for instance—are simple and fresh.” While the inconsistent quality of the citrus supply nationwide and worries about execution are enough to deter many chains from in-house mixes, Melton notes that overall freshness won out in the end at P.F. Chang’s, if only to match current customer expectations.

OLD DRINKS GET NEW LIFE The notion of signature house cocktails is hardly limited to solo establishments. Paying homage to the lore of the Bloody Mary being invented—as the Red Snapper—at the original St. Regis in New York in 1934, every unit in the chain is charged with creating its own signature version of the cocktail. For instance, the St. Regis Deer Valley’s “7452” Bloody Mary is named for the altitude of the resort (7,452 feet high) and is distinguished by black lava sea salt (a nod to the ski town’s mountainous geography) and a head of wasabi-celery espuma (symbolizing abundant snow). Beverage Director Kevin Hines did not invent the 7452, but he is charged with ensuring its consistency; part of that involves

Of course, as a rum and Tiki maven, Cate keeps his eye on the growth of tropical drinks, and sees the concept of multiple rum drinks made with fresh juices and mixes built on classic models like the Mai Tai and Painkiller. “Many non-Tiki bars have Tiki drink sections on their menus, and these drinks are once again sitting alongside categories like flips, punches, juleps, etc…it’s great news in the continuing war to eradicate what happened to tropical drinks in the ’70s and ’80s,” he says. In the past few years, many bars couldn’t resist the siren call of bottling or barrel-aging their own cocktails—now, carbonating cocktails and draft service systems have caught the attention of a number of bartenders. But those techniques haven’t been road-tested enough for anyone to know whether they are a passing fancy with limited appeal, like fat washing, or indeed the next big thing. As for the dogged search for the new classic cocktail, though King Cocktail himself, Dale DeGroff, says the idea of a new classic is oxymoronic, he’s not opposed to tweaking oldies and cocktail geeks at the same time. For the launch of his new eponymous bitters, he offers the Manhattan Redux—made with Absolut Vodka, Cynar, Dale DeGroff Pimento Bitters and grapefruit zest. Sounds like it could be…a classic. ■

The Dalmore’s Day How The Dalmore Became The Fastest-Growing Single Malt Scotch in the World BY KRISTEN BIELER

ingle malts have been posting impressive numbers for years— up 10% in 2011 alone. But only The Dalmore can boast a growth rate of 73% last year, which makes it easily the fastest-growing single malt brand in the world. “The Dalmore has a very accessible taste profile, which makes its appeal wide-ranging,” explains Chris Watt, The Dalmore’s Global Head of Brand, which he believes accounts for this rise to the top. “Novices in the whisky world expect Scotch to have strong, alcoholic flavors and peaty notes. The Dalmore doesn’t have that—it is very complex, but very approachable from a taste perspective.” The Dalmore’s signature style—a combination of coffee, chocolate, spice, sweet vanilla and a distinctive orange marmalade note—is the result of maturation in small-batch American bourbon casks and Matusalem oloroso sherry casks. The latter are reserved for The Dalmore by sherry master Gonzalez Byass and are 30 years old on average, hence the single malt’s pronounced sherry flavors.

Interestingly, Watt sees a lot of single malt marketshare coming from highend bourbon drinkers, rather than blended Scotch consumers: “We witness a lot of men in their early 20s getting into the business with bourbon, and turning to single malts as they become more knowledgeable. There are more intricacies in production and aging process of single malt Scotch, which they appreciate. One important advantage The Dalmore has is unparalleled whisky
stocks. “Distillery managers 50-plus years ago had great foresight to hold casks back, and that gives us some of the oldest and rarest stocks in the industry,” says Watt.
Growth at the High End
And they put these old stocks to good use. In fact, The Dalmore is also the fastest-growing single malt brand in terms of value, thanks to the brand’s more premium expressions. “Obviously The Dalmore 12-Year Old ($50) is the driver of our growth, but increasingly we are seeing the 15- and 18-Year Old [$90 and $160 respectively] become much more important in volume,” says Watt. “It seems we are recruiting new consumers and they are trading up, which is the business model we want.” Even The Dalmore King Alexander III—a limited release matured in six different types of oak barrels with a retail price of $270—is growing in a significant way. “We have window displays in high-end retail stores, and this variant is really starting to take off,” says Watt. The Dalmore’s big presence at travel retail has also helped build the brand’s luxury image. “In the travel retail outlet it’s possible to deliver above the line visibility; we are now the fastest-growing Top 10 malt brand in travel retail with year on year value growth of +95%,” Watt describes. One such product being featured there is the just-released The Dalmore Constellation Collection, a series of 21 cask bottlings of single vintages handselected by Master Distiller Richard Paterson. “The difference between this and anything else we have ever done is that
these are all single cask, and are natural in strength and color,” says Watt. Extremely limited—and for sale at close to $250,000—the collection is selected from casks produced from 1964 through 1992 and was launched in the high-profile duty-free travel outlet World Duty Free. “Having a collection like this on display creates terrific halo effect for the entire line.” The Dalmore has also had success with its recently re-launched Cigar Malt Reserve, which had been temporarily discontinued after smoking bans in the U.S. and U.K. went into effect. “We renamed the malt Gran Reserva, but noticed that it was still listed on restaurant drink menus as ‘The Dalmore Cigar Malt’ and there was huge interest in bringing it back,” says Watt. “Bottled at 44% ABV, and finessed in Cabernet Sauvignon barriques, it truly pairs beautifully with fine cigars.”

This November, The Dalmore rolled out its new standardized package on all expressions nationwide, featuring a new stag (the brand’s iconic royal symbol). Each box will highlight a maturation statement—“Matured in American White Oak and Oloroso Sherry Wood” for example—intending to make things ultra-clear for the consumer. “Our package has always stood out, and now it will have a more consistent look and feel. People often purchase The Dalmore for gifting reasons, but they buy it again for the taste,” Watt says. ■

iven that Champagne is already a niche within the sparkling wine niche, it may seem odd to focus on blanc de blancs—a very small subset of Champagne. The overwhelming majority of Champagnes are non-vintage blends of Pinot Noir, Pinot Meunier and Chardonnay; only about 5% of all Champagnes are blanc de blancs— made entirely from Chardonnay. However, this focus makes perfect sense in that blanc de blancs represent the Champagne genre at its finest, and by carrying and selling these elegant cuvées, merchants and fine restaurants can be assured that they are fulfilling the expectations of their customers who prize quality above all.

It might surprise some wine drinkers that great Champagne wines can be made entirely from the Chardonnay grape variety. We have all had our share of mediocre Chardonnay wines, many tasting (and smelling) more of oak than of fruit, and some tasting too sweet and/or over-ripe. Chardonnay’s image has suffered from such wines. But when Chardonnay grapes grow in suitable places in a cool climate, the resulting wines can be magnificent.
Built from Better Chard Three of the finest areas for Chardonnay happen to be in the country of its birthplace, France (the grape apparently originated in the Burgundy region). Chardonnay wines are at their best in the Côte de Beaune district of Burgundy—home of such magnificent wines as Montrachet and Corton-Charlemagne; Chablis (especially Grand Cru and Premier Cru Chablis); and in the Côte des Blancs district, located just southeast of the town of Epernay in Champagne. The Côte des Blancs might be the very best site for Chardonnay. Not all white Burgundies and Chablis (both also 100 percent Chardonnay, by the way) are truly great wines, but I’ve seldom if ever tasted a blanc de blancs Champagne that was not at least very good, and at its best, truly sublime. All blanc de blancs Champagnes do not originate from grapes growing in the Côte des Blancs, but certainly the best ones do. And fortunately for us, most blanc de blancs Champagnes available in the U.S. are made from grapes grown in Côte des Blancs vineyards. Six Grand Cru–rated villages and one very good Premier Cru village make up the heart of the Côte des Blancs. North to south, the Grand Cru villages are Oiry (the smallest), Chouilly (the largest), Cramant, Avize, Oger and Le Mesnil-surOger. Vertus, on the southern end of the Côte des Blancs, is the Premier Cru village. Why is the Côte des Blancs sacred ground for Chardonnay? The cool climate of the Champagne region in general, where grapes struggle to ripen each year,
seems to bring out the greatness (minerality, lively acidity) of Chardonnay; and specifically, the region’s very chalky, limestone soil, hundreds of feet deep in the Côte des Blancs, makes the vines dig deep for nourishment. This type of soil is also ideal for water drainage—very necessary for the vines. In short, this soil, really suitable for growing nothing but grapes, has proven to be ideal for Chardonnay.

Light-bodied, very dry and elegant, blanc de blancs Champagne makes an ideal apéritif—just what you need to whet your appetite. For those who love caviar, these bubblies are never too heavy to obscure caviar’s delicate flavor. They are also an ideal match for sushi; or if seafood is on the menu— perhaps a delicately flavored fish, or a light fish soup—blanc de blancs can ably continue into dinner. Its style also works fabulously with vegetable dishes, egg dishes and Asian cuisine that’s not too hot and spicy. Medium to-full-bodied vintage blanc de blancs Champagnes, especially those from Cramant, Avize or Le Mesnil-sur-Oger, are heavy enough to accompany lobster, game birds and full-flavored poultry or pork dishes.
Blanc de blancs Champagne is a relatively new type of Champagne. Although Champagne has been made for over 300 years, commercially made blanc de blancs Champagne began in the 1920s, when Eugène-Aimé Salon (founder of Salon Champagne) released his first vintage in 1921. During the Roaring ’20s, Salon Champagne became the rage of Paris. However, the Depression, World War II and Salon’s death in 1943 practically caused blanc de blancs Champagne to disappear. Then, in 1957, the house of Taittinger released the 1952 vintage of its now-famous Comtes de Champagne Blanc de Blancs. Other producers soon jumped on the blanc-wagon, in a big way. Somewhat surprisingly, many large Champagne houses—such as Moët & Chandon, Veuve Clicquot, Laurent-Perrier, Piper-Heidsieck and Bollinger—still do not make a blanc de blancs Champagne. I once asked Richard Geoffroy, chief winemaker of Moët & Chandon, and in personal charge of its gem, Dom Pérignon, why Moët does not make a blanc de blancs. Geoffroy cited two reasons: He does not find blanc de blancs Champagnes balanced in the way he envisions Champagne to be; and (perhaps

more importantly), he prefers to use the best Chardonnay grapes to blend in with Dom Pérignon. A huge amount of Dom Pérignon is produced; Chardonnay is the scarcest and most expensive of the three main Champagne grape varieties. It makes up only 25 percent of the three varieties planted in the region, and considerably less than that amount comes from the best area, the Côte des Blancs.
Recommended Wines Blanc de blancs Champagnes are made as nonvintage or vintage Champagnes. The non-vintage blanc de blancs tend to be less expensive, and are generally lighter-bodied. Below is a list of recommended wines, with specific origin (indicated in pa-
rentheses), and approximate retail prices. The Under $50 category is the smallest group; good blanc de blancs Champagnes tend to be more expensive than other Champagnes. Some are made by the established houses; some by small grower-producers (also indicated). Grower Champagnes are typically among the driest of all Champagnes—although most houses, such as Ayala, are producing much drier Champagnes today than in the past. In general, the renowned vintage blanc de blancs Champagnes, such as Krug Clos du Mesnil, Salon, Dom Ruinart Blanc de Blancs and Taittinger Comtes de Champagne, are at their peak when aged for 15 or more years. The best blanc de blancs Champagnes are among the longest-lived of all Champagnes. ■
