Surveying over 1,000 beverage consumers, Mike ginley and his associates reported the emergence of a new kind of bar patron: a consumer who may care more about the service he receives than the drink he consumes. The study revealed a number of statistics that may be useful as we approach a more digitized age, with an influx of millennial consumers: -25% of consumers have ordered from an electronic menu. -Over 50% are interested in the offering of electronic menus at the establishments they frequent. -58% of consumers reported that the variety of cocktails was important to them on a menu. -80% of consumers expected beverage prices to be listed. -Over 50% would refuse to order if there was no clear pricing on a drink.

ith Colorado and Washington leading the way on marijuana legalization and many other states decriminalizing possession and legalizing the medical use of marijuana, many Ohioans

are paying close attention to how the once illegal, sociallysensitive product may be regulated and come to market. Some proponents of marijuana legalization believe that the regulation of marijuana should be modeled after alcohol standards - at the state and federal level. all facets of the alcohol industry are watching how the decriminalization and legalization efforts unfold. Congressional action will be needed to legalize marijuana and clear the path for federally chartered banks to engage in commerce with legal marijuana businesses. Congressional interest in legalizing marijuana is on the rise as reflected by the proliferation of bills in the house of representatives. however, the horizon for federal marijuana legalization appears to remain somewhat distant. On august 29, 2013 the Department of Justice (DOJ) issued a memorandum outlining the DOJ’s stance on marijuana enforcement in states where it has been legalized. While the DOJ reiterated that it will continue to enforce the Controlled Substances act with regard to marijuana in furtherance of its enforcement objectives regarding sales to minors, organized crime, weapons trafficking and use on public lands, the memorandum appears to clear the way for states to lead enforcement activities in most instances. going forward,
this means DOJ is unlikely to get involvement in marijuana enforcement unless the case involves one of the priorities mentioned above. however, it is important to note that DOJ memorandum is not law and does not limit the DOJ from prosecuting cases that fall outside the eight priorities listed in the august guidance. as such, most marijuana businesses continue to see federal legislation as the only mechanism that can ensure long-term certainty The Wholesale Beer & Wine Association of Ohio regarding the legality of their businesses under federal law. What To Expect In 2015

redicting some of the issues that will be discussed in 2015 is, unfortunately, my only ability when seeing into the future (why could it not be lottery numbers!!!). In my last article, I highlighted several issues that were discussed in the waning days of the last General Assembly. As a new General Assembly begins and

the Budget becomes the focus of the Legislature’s efforts, there are several issues that you can expect to hear about over the next several months. First, the ban on the sale of powdered alcohol will be discussed immediately. In fact, it has already been introduced (HB 14 for those keeping score at home). Powdered alcohol is a product that by merely adding water, you can have spirituous liquor (rum or vodka) or a mixed drink (cosmopolitan). Several states have already acted to ban these type of products due to concerns about concentration of alcohol, accessibility issues for minors and many other issues facing an unknown product. Second, the discussion regarding outdoor refreshment areas (ORA) will be an early issue in 2015. ORAs would be Ohio’s version of Bourbon Street, 4th Street Live and other venues where a public
area with several permit holders allows for alcoholic beverages to be purchased on premise and taken out into the street to be consumed. Ohio’s initial plan would have allowed for roughly 45 of these type of districts throughout Ohio. As this is something many would like to see for the Major League Baseball All Star Game this July in Cincinnati, it will likely see prominent discussions early in the year. Third, the Governor is focused on reducing Ohio’s income tax. In order to do so, other taxes will be under consideration to be increased. This includes a potential increase in the state sales tax, an almost doubling of the cigarette tax, and an expansion of the sales tax to many services not currently subject to the state sales tax. Stay tuned to see how accurate these predictions are . . . and how your business could be impacted!

what’s•in•a•name? As ‘craft’ spirits continue to grow, the term itself comes under fire By Ryan Malkin
C
raft—to the surprise of no one in the industry—is hot. Last year, American craft spirits sales were up nearly 50%, according to analysts at GuestMetrics, while domestic non-craft spirits saw a slight decline over the same period.
But what are “craft spirits” really, and how many of them are there? The answer depends, of course, on what you mean by craft. The Alcohol and Tobacco Tax and Trade Bureau (TTB) counts 1,350 distilled spirits plants (DSPs) in the United States. That number is barely relevant, though: a supplier does not need to be the distiller to bottle and market a spirit as craft. Since it is not a category, craft is officially undefined. Perhaps “flexibly defined” is a better way of looking at it. The Small Distiller Affiliate Membership program of DISCUS presently has over 100 members in 31 states and continues to grow. The American Distilling Institute’s “Certified Craft Database” is nearing 900 brands, originating in 44 states and Canada. GuestMetrics defines craft spirits as brands “(1) produced in the U.S., and (2) not owned by the top dozen or so largest spirits suppliers.” Seen through their lens, craft accounts for about 6% of the overall spirits industry volume. Interestingly, Tito’s Handmade Vodka is the largest craft spirits brand in the GuestMetrics system of data. Tito’s, circa
2015, also happens to be the subject of three lawsuits—all of which speak directly to the problems that can be created via terminology. At issue is whether Tito’s misrepresented consumers by stating on the label: “Handmade” and “Crafted in an Old Fashioned Pot Still by America’s Original Microdistillery.” Plaintiffs claim the vodka is not handmade; rather, it is “actually made via highly mechanized process devoid of human hands.” The allegations—which Tito’s vigorously disputes—are that the company knowingly sold this misbranded product to consumers with the intent to deceive them.
Pushing the legal envelope
And the lawsuits don’t end with Tito’s. Templeton Rye, Tin cup American Whiskey, Angel’s Envy and Maker’s Mark are also defendants in separate suits. The plaintiffs allege, respectively, that Templeton is not “small batch” and made in Iowa; Tincup is not a Colorado whiskey with a “unique mash bill;” and Angel’s Envy is not “handcrafted and bottled” in
Kentucky. Instead, the plaintiffs claim all of these products are distilled at MGP, a massive industrial complex in Indiana. If not for these allegedly false claims, the plaintiffs say they would not have paid higher prices or bought these brands. In the case of Maker’s Mark, origin is not the issue; plaintiffs argue that the brand creates the false impression of superior quality by virtue of being labeled “Handmade.” Collectively, these class actions—all of which are being defended actively by the brand owners—suggest that 2015 may be the year that craft spirits get dragged out of the marketing rooms and distilleries into the public arena.

Small still Beautiful?
The image of craft spirits certainly began with the notion of a small distillery with small production. In part this stems from states limits. In Illinois a “craft distiller” may produce 35,000 gallons; in New Jersey it’s 20,000 gallons; and 60,000 gallons in Washington. Therefore, local, small production has been part of the definition of craft since the beginning. Naturally, many of these distillers, even Tito’s, started small. Given the explosive growth of previously small brands, size may now be too limiting. Spirits were not first to go through these growing pains. Beer struggled first. Echoing the Brewers Association, the American Distilling Institute (ADI) identifies three pillars for certification. Craft distilled spirits: • have a TTB-approved label stating “distilled by,” followed by the name of the DSP • are no more than 25% owned by another industry member • produce less than 100,000 proof gallons. Tellingly, however, ADI has a separate certification for blenders—recognizing the reality that many artisanal spirits (gin and liqueurs in particular) begin with purchased base spirits that are then purposefully transformed. Perhaps the American Craft Spirits Association (ACSA) has it right. Rather than defining the term by size limitations, ACSA takes the approach of not defining the term at all, instead adopting a code of ethics that calls for honesty and transparency from ACSA members.
Seeing + Believing
While the ADI standards of certification emphasize the product’s provenance, the certification itself is designed to help market the brand. Craft certificate holders can use the ADI seal in promotional material and on their labels. The certification functions as it would would with other consumer goods. And it brings into the role of perception.

“If customers believe it is a quality product, made by hand, made by an artist, with care, it is a craft spirit,” says Ryan Dettra, managing director of the Ice Plant bar in St. Augustine, FL. He says a product can be craft regardless of whether it’s blended, distilled from neutral grain spirit, distilled from grain or cane, small batch, or single barrel. In his view, “marketing has more to do with whether a spirit is accepted as a ‘craft spirit’ [than production].” For D ave Kaplan , co-own er of Proprietors, LLC, which operates bars such as Death & Co, 151 and Nitecap in New York and Honeycut in LA, the definition of craft has evolved. Kaplan originally associated craft with being a small producer. Now he sees craft as brands having complete control over the process. That means, “no matter what the volume, the brand grows or sources the ingredients, ferments, distills and bottles the product.” He believes that brands that buy distillate and redistill “fall outside the definition of craft.” Care in production process is not necessarily limited by the size of the supplier. Hangar 1 Vodka’s head distiller, Caley Shoemaker, says distilleries can maintain “the same strict quality standards as they did when they were making smaller amounts.” The key is to stay “focused on quality of craftsmanship and authenticity in ingredients.” So can large companies make craft spirits? According to Pernod Ricard USA’s
director of brand education, Chris Patino, big suppliers can “make craft spirits as long as that production is based on the quality and heritage of their brands, not the size of the supplier company.” Meanwhile, small distillers abroad are are relegated to the sidelines in most craft conversations, strictly based on their not being American. With three single-ingredient vodkas (potato, wheat, rye), Chopin Vodka certainly fits the craft mold. Owner Tad Dorda, shares a kinship with U.S. distillers in terms of “some human involvement and some human passion.” He believes people will pay more if they know the person making it. It’s certainly easier to visit a domestic distillery than Chopin in Poland. Still, “we are looking for a connection, that something extra,” he says.
Gaining Attention
In the end, of course, this all boils down to sales. Craft spirits are selling. At Bottlefork in Chicago, a farm to table restaurant operated by Rockit Ranch Productions in addition to its five other venues, customers are being more experimental and ordering craft spirits at dinner. However, when it comes to nightlife and bottle service, Rockit Ranch president Arturo Gomez says the Grey Gooses of the world are still king. “People don’t like to experiment with bottle service; they are committing to things they know and trust,” he explains. In the off premise, many shops have craft sections. Some are are even catering specifically to craft customers. Just take Ezra’s liquor store, also in Chicago. Ezra’s prides

When making a buying decision, owner Parker Newman, has a five word checklist to gauge whether a product is craft: “quality, passion, innovation, creativity, and genuineness.” He tries to find producers making a grain to glass product. Admittedly, he says, there are always exceptions; but even the exceptions are, in Neman’s opinion, “made with integrity” and not “just another massproduced product.” However, then we’re back to talking about production size.
Perhaps the true definition of craft may, like art, elude us; but we know it when we see it. Or perhaps, like art, the concept of craft is appropriately fluid—and ready to be redefined by those serving and selling. In the case of Fountainhead—a Chicago gastropub deep and broad in whiskey and beer—the menu declares “craftsmanship” as their core objective: “It’s in the drinks we serve, it’s in the food we make, and it’s in the décor we’ve chosen to surround us… [T]he crafts we’ve chosen to

Umbria’s picturesque medieval village of Montefalco

M
ontefalco is a very old wine region with a very new story to tell. The main character in that narrative is a single grape—Sagrantino. Although winemaking has been happening in this part of Umbria for over 2,000 years, and Sagrantino (which means “sacred”) has long been crafted by Franciscan monks into sweet passito wine, it wasn’t produced as a serious dry red wine until about 40 years ago. In fact, the grape had all but disappeared by the 1970s when a few committed producers resurrected it. Awarded DOCG status in 1992, the past few decades have seen a massive transformation. Outsiders have flocked to this once-sleepy region in Central Italy, bringing investment and know-how from other parts of Italy and beyond. Just 15 years ago there were a mere six wineries; now there are 74. With quality up dramatically in the last decade, as producers learn how to harness the grape’s legendary power,

One of a Kind Grape Despite the medieval walls and 12th century cobblestone streets, Montefalco vibrates with a youthful energy—and is dotted with new construction. The most visible symbol of the region’s renaissance is the ultra-modern Castelbuono winery, built by the Trentino-based Lunelli family, owners of the sparkling wine brand Ferrari. The structure, designed by the famed sculptor, Arnaldo Pomodoro, is a massive gleaming copper tortoise shell—the symbol of patience, power and longevity. Most of the conversation in Montefalco revolves around how to bring out the best in Sagrantino, a monster of a grape. There is literally no other grape like it: miraculously, Sagrantino is not related to any other known varietal. A small berry with lots of skin and large seeds, it’s one of the most tannic grapes in the world, and controlling those tannins—not to men-
tion all the polyphenols, sugars and alcohol—is incredibly tricky. (Sagrantino’s tannins have intimidated man for centuries: There was a law against picking it too early in the 1500s for fear that unripe tannins would render the wine undrinkable.) There are no shortcuts to ripe tannins, believes Devis Romanelli, whose family has farmed olives in Umbria since the late ’70s and began bottling their own Sagrantino in 2007. Romanelli was the only producer I visited who still had grapes on the vine at the end of October; he sometimes harvests into November, he told me, convinced that Sagrantino can handle the extreme ripeness because it retains naturally high acidity: “Some producers pick early and use oak and battonage [stirring the lees back into the wine] to soften the tannins, but if you want the seeds to be mature, the grapes need that extra time on the vine.” Achieving the right kind of ripeness isn’t simple, says Falesco’s Riccardo Cotarella, who consults throughout Umbria and Lazio and made his first

Sagrantino in 2006. “Extreme attention to vine management is the key to obtaining grapes that have polyphenolic ripeness without an excess of sugar ripeness,” he explains. “We need to guide the grapes so everything happens in the right time.” Both Romanelli and Cotarella agree that stressing the vines—which brings about extra sugar and flavor concentration much desired in most wine regions— would be a disaster for Sagrantino.
Sagrantino Finds its Footing “My first glass of Sagrantino was one of my worst memories ever,” says Roberto Paris, wine director at Il Buco, in downtown Manhattan. “It was the harshest wine I’d ever tasted.” Paris has since become Sagrantino’s most important ambassador in the U.S., turning Il Buco into a destination for Umbrian wine (in the early ’90s when he began, Paolo Bea and Arnaldo Caprai were the only Sagrantinos imported). “It used to be a lottery to drink Sagrantino; what has happened in the last 15 years has been astounding.” “Sagrantino was not ready for the spotlight 15 years ago,” says Filippo Antonelli, who runs his family’s winery. “It was too tannic, too green and often too oaked. It’s very different today and we see it can be truly elegant.” The Antonelli family, which purchased this 13th century estate in 1881, was instrumental in Sagrantino’s revival, yet Filippo himself admits the learning curve
has been steep. When he took over in 1986, he replanted the vines to higher density and reduced the use of new French oak in favor of large vats for aging. Like most of the best producers I’ve tasted, Antonelli hand-picks and only gently presses. He also pumps over during fermentation in his gravity-fed winery, in order to avoid excess tannin extraction. Steps like these are just now being practiced on a wider scale in the region. One advantage to having so many newcomers in Montefalco is that producers’ hands aren’t bound by long-held traditions, and there is a great willingness to experiment. At the sustainably-run and solar-powered Perticaia, which just completed its 11th vintage, young winemaker Alessdandro Meniconi is working with small oak barrels and micro-oxygenation to create wines that are softer and more approachable young. At Le Cimate winery, 32-year-old Paolo Bartoloni proudly lays claim to “the most high-tech win-
ery in the region,” complete with touch screen panels. Though the Bartoloni family isn’t new to the region, their winery is just three years old, and in addition to planting unorthodox grapes like Viognier and crafting a rosé of Sagrantino, Bartoloni constantly experiments with a wide range of French and Slovenian barrels with a variety of toasts, sizes and age. Even Montefalco’s most historic wineries are revamping their winemaking. Scacciadiavoli (which means “Devil Banisher” for an exorcism which took place here in the 17th century), one of the oldest wineries in Montefalco, switched gears in the late 90s, embracing technology, temperature control and French oak. “We decided to restart and take a more modern approach,” says Liù Pambuffetti, whose family owns the estate. “We are still a traditional winery and believe in long bottle aging, but wanted our wines to be friendlier and less rustic.” The Pambuffettis also craft two unusual yet tasty Sagrantino Spumantes. “We thought, ‘what do we do with young Sagrantino vines with northern exposure?’ The grapes have the perfect pH and acidity for sparkling wine,” she says.
The Style Spectrum

Discussion over the distinct Sagrantino styles which have emerged tends to position Arnaldo Caprai and Paolo Bea at opposite ends of a spectrum. Caprai is

widely credited with reviving Sagrantino in the late 1970s, and campaigning for its DOC status in 1979. Run by son Marco today, Caprai is the largest vintner in the region, producing 800,000 bottles a year. His style is unapologetically modern, right down to his sleek tasting room, the first of its kind to host visitors in the region. A whirling dervish of energy, Marco himself is a tireless promoter for Sagrantino on the global stage, and his precise, muscular wines are some of Montefalco’s most awarded. The family has spent millions on research, and it was Caprai’s experiments with clonal selection that has provided the region with much of the Sagrantino vines now cultivated. In the winery, Caprai is experimenting with new squat tanks which give the grapes 250% more skin contact. Caprai’s ambition for the region goes far beyond winemaking at this point; his New Green Revolution aims to transform Italy’s approach to agriculture,

with an emphasis on institutional and environmental sustainability, and he has opened a technical school at his winery. Caprai has invented trucks which reduce spraying by 95%, weather stations to track mold in the vineyard, and GPS devices to monitor workers. “We must become more efficient and learn how to produce more with less,” he explains. At the other end of the style spectrum is Paolo Bea. While most producers debate how to harness, tame or control the wily Sagrantino grape, Bea takes a hands-off approach. The family has
farmed this land since the 1500s, but didn’t produce wine until 1980. Paolo’s son Giampiero is at the helm today, and has pushed the estate even father in the non-interventionist direction as an active member of the Natural Wine movement, which believes in using organically-grown grapes, and adding nothing and removing nothing once in the cellar. “I want to taste the identity of the land,” he tells me. “In every wine, you have 80% water, 12-15% alcohol—that last 5-8% is the identity of the land, and it comes from the seeds, the skins and the juice of the grapes.” Bea uses only natural yeasts present on the grape’s skins to kick-start fermentation, leaves his wines to macerate with their characterimparting skins and seeds far longer than conventional winemakers, and won’t fine or filter before bottling. “Most wines are a construction,” Bea describes. “They may be good, but they are a man-made construction.”

“Bea is like the Taliban—he won’t compromise,” says Giuseppe Rosati, wine director at NYC’s The Lamb’s Club. And there is a high price to pay when things go wrong: in 2013 and 2014, Bea, who refuses to spray copper, watched all his Sagrantino grapes rot on the vine. His conviction—and ethereal wines—have made Paolo Bea one of the most coveted producers, particularly within the American sommelier crowd. One of my favorite discoveries was newcomer Bellafonte, where Milanbusinessman Peter Heilbron hews a middle ground between modern and traditional—embracing technology, while using Bea-like techniques (no filtration, native yeasts, large Slovenian barrels, no filtration) to achieve Sagrantinos of rare complexity. “I wanted to push Sagrantino farther in terms of elegance and refinement; coming from the north, I brought a different sensibility,” Heilbron told me. His solar-powered winery is constructed with metal crates filled with stones to ensure natural humidity, an idea he took from Montalcino. “People from this region don’t know how special it is—it’s still a very hidden part of Italy,” Heilbron describes. Two big advantages Umbria has over its far more famous neighbor, Tuscany: “Tremendous biodiversity—it helps to not have a concentration of vines. And land prices are much less than Tuscany.”
Blockbusters with Grace While big-boned, blockbuster wines are out of fashion with the sommelier set today, Sagrantino walks the line where refinement meets power, offering nuance, minerality and even grace. “It is a muscular wine, but that doesn’t mean it’s not elegant,” describes Rosati. “My mission is to design wines that fit our restaurant’s food and with dishes like ragu pasta and braised lamb, you need a wine with some power.” Still, Sagrantino is not an easy-drinking wine, he maintains: “If you have not tasted a wine like this, you need to spend time to understand it. Sagrantino will not always win you over on the first time.” “There is no other wine exactly like it, which can be disorienting at first,” says Raphael Ginsburg, wine director at Manhattan’s Ai Fiori and Costata. “It’s full in body, tannin and fruit yet still shows

terroir and a funky earthy quality which make it quintessentially Italian.” Sagrantino was a hand-sell in the early days at Il Buco, notes Wine Director Roberto Paris, but with 10 producers on his list and two by-the-glass offerings, the wine today is a signature of the restaurant. “I recommend Sagrantino for someone who likes a big, fleshy Syrah but wants something with more interesting layers and flavors,” he says. “Almost 100% of the people who try Sagrantino will reorder.” Ginsburg lists 15 different Sagrantinos—two by the glass—and they represent one out of every 25 bottles sold at Costata, proof that “if you build it they will come,” he says. “Most importers and distributors are afraid to take on more than one or two, but I have found if you offer more the market is there.” Plus, they are competitively priced, he believes. “Compared to other full-bodied Italian wines, Sagrantino offers great value,” says Ginsburg. “A bottle might cost $100 on a list; but you would pay at least $200 for an Amarone, Brunello or a Super Tuscan for the same profile.” Just one more reason that of Italy’s thousands of indigenous varieties, Sagrantino is currently generating some of the most excitement. “Producers here today place more emphasis on crafting Sagrantinos with a greater expression of place and territory, and you can taste this in the wines,” says Cotarella. “This is ultimately what will give Umbria the dignity it deserves.” n

ver try a Tiki cocktail with not a drop of rum? Hard to imagine but there it is: the Mauser (Fino, Amontillado and Moscatel Sherries, lime, grapefruit, ginger, grenadine and two types of bitters) on the menu at Donostia, a Basquestyle pintxos restaurant in Manhattan. Getting attention for a drink menu today isn’t easy, as a thousand bars seem to bloom every month. But as cocktail culture continues to evolve, those aperitif, lower alcohol drinks like the Mauser that are neither excessively boozy nor overpoweringly complex are attracting curious attention. Tending to offer a more subtle, appetizing experience, and based frequently on Sherry, Port, amari, vermouth or other fortified or aromatized wines, these drinks provide a different sort of savory beverage experience. The trend is welcoming to both seasoned and neophyte palates, even serving as a bridge cocktail for those who tend to prefer wine.

Lower-alcohol drinks also provide some operational values—an operator can charge almost as much for something like the Bamboo (dry Sherry, vermouth and bitters) as it can for one made with full proof spirit. But four Bamboos will leave most guests compos mentis, while that many Manhattans can set the room aswirl. This isn’t a quirk in cocktail culture, but a step in awareness that not all consumers have iron palates and constitutions. It’s easy to make an impression when ingredients include a 100-proof spirit—what’s harder is the merging of more subtle spirits. Take the menu at the renowned NoMad Hotel in Manhattan, where head bartender Leo Robitschek and staff host numerous spirit and cocktail events. Even non-alcohol is well thought out here (basil-fennel house soda, anyone?) here, as well as aperitif cocktails like the Shuttlecock (Cabernet Franc, Moscatel Sherry, maraschino liqueur, yellow Chartreuse, lemon, blackberries mint and orange) and the Sippy Cup (Averna, Vermouth di Torino, ginger and lime). “Lower proof drinks have been part of the cocktail scene since the first cocktails,” says Dinah Sanders, author of The Art of the Shim: Low-Alcohol Cocktails to Keep You Level. She cites the Sherry Cobbler as an early version of the quaffable lowerproof drink once commonly served and now making a return to menus. A drink like the Sophia Loren (two ounces Aperol, 1 ounce lemon juice and ½ ounce bourbon, with rhubarb bitters), created by bartender Kim Roselle, provides a great example of a recipe that inverts the traditional main/complementary spirit proportion, providing the drink with body and depth as well as brightness, she points out.

Sanders’ book helped inspire a separate section of lower alcohol Sherry– and vermouth-led drinks. “We’re very much a food focused operation and structure our beverage program to highlight the food. One really great way to do that is to feature drinks and ingredients that aren’t as boozy and palate crushing as many cocktails can be,” says Sadoian. He commonly hears from servers that guests served strong cocktails are less apt to have a second bottle of wine at the table; offering lower alcohol options has helped nudge up wine and cocktail sales.

Retro Ingredients Step Up It’s been some time since Americans commonly drank Sherry and vermouth, but Craigie on Main’s reputation for taking culinary chances means repeat customers are willing to sample unusual suggestions, he says. As a result, one of their most popular drinks is Sherrybased. Called the Grand Tour, the drink is essentially a Margarita with most of the tequila replaced with dry Amontillado Sherry, and has proven successful enough to make its way onto the standard menu. Other lower-proof drinks include the Flying Horseman (Chardonnay, Dolin blanc vermouth, Benedictine, lemon), the classic Chrysanthemum (Dolin dry vermouth, Benedictine, absinthe,

Like with Craigie’s unexpected success with the Grand Tour, when the loweralcohol Sherry- and vermouth-based drinks served at Dirty Habit in San Francisco took off, bar manager Brian Means was gratified: “I love Sherry and I wanted to make cocktails that are interesting using them, but I was really surprised when people really responded so well to the Black Flip [bianco vermouth, green Chartreuse, lime and ginger] and to the more savory Dirty Decision [chanterelle mushroom-

In St. Louis, Taste by Niche lead mixologist Kyle Mathis twice annually creates a new cocktail menu; recent lower-alcohol drinks include the Heart of Ruby (Cynar, Fruitlab Jasmine liqueur, absinthe, grapefruit, lime, grapefruit soda and Peychaud’s bitters). His favorite new cocktail is the Benelli, mixing Lambrusco with simple syrup, orange oil and thyme tincture. “The Benelli has a crisp, aromatic quality and is really a take on a Champagne cocktail. We tend toward more savory drinks, and one way we’re making cocktails slightly lower and keeping bright profiles is cutting down base spirits, say, from instead of one and a half or two ounces to just one ounce and increasing the amounts of vermouth or aromatized wines,” he says. While culinary minded operations are leading the way with lower alcohol drinks, other operations do so by concept or due to license limitations. While a full liquor license is possible at Donostia in NYC, with more than 35 Sherries and eight vermouths by the glass the original concept was to build from low alcohol and stay mainly Spanish.
“I definitely have put drinks on menus before that were more aperitif-style, but this is the first time I have had to really think about it and base an entire menu on low alcohol,” says drink creator and bartender Will Peet. As befits a Basque style restaurant, he eschews French aperitifs and Italian amari, employing only wines, beers and ciders from Spain. Lower alcohol drinks are also a logical fit for operations positioned as healthier options; at SunCafé in Studio City, CA, cocktails include the Elderflower Bellini (St.-Germain, Peychaud’s bitters, peach purée and Prosecco) and a Michelada (tomato juice, peppers, lime and spices with pale ale) and the Carosello Cooler (Cynar, sour Belgian beer, mint and lemon.) Bartender Michael Barret developed two sangrias that highlight the eatery’s organic fresh-squeezed juices: the Rosa Grenada Sangria (Languedoc red, seasonal pomegranate and rosemary) and the Sidra Blanca Sangria (Sonoma apple cider, apples, Languedoc white blend, cinnamon, nutmeg and allspice). S ays Nevin K u m a r, Su nCa f é ’s beverage director, the drinks fit well with the lighter fare served, and even with a full liquor license, most of the SunCafé customers want fresh, organic and only light alcohol when dining there. But they also want creative and interesting: “We had a lot of fun playing with beer and wine, with the template already set up for organic and vegan. It was a challenge, but with lower alcohol, the fresh flavors of our ingredients come through.” ■
