hanges in Ohio liquor law this past year opened up new opportunities for alcohol manufactures to put the sense of taste to the test. Offering tasting samples is a great way of introducing customers to new brands, products, flavors, or just something different than their usual purchase. Whether its beer, wine or spirits, Ohio consumers are not necessarily drinking more, but want to try new and unique items. The opportunity to taste products helps inform and educate customers, and provides a vehicle for business growth in Ohio. Ohio’s 175 wineries have offered tasting samples for many years, and it’s proven invaluable for showcasing their world-class wines. Now thanks to support from Governor Kasich’s Common Sense Initiative, visitors can sample the products at Ohio’s 82 breweries. This was especially beneficial to small, craft breweries, an industry that is growing significantly. Beer and wine samples are offered at many local wine shops, carryouts, grocery and convenient stores. Microdistilleries are 6 OHIO BeveRAGe MONTHLY JANUARY 2013

OFFeRING TASTING SAMPLeS IS A GReAT WAY OF INTRODUCING CUSTOMeRS TO NeW BRANDS, PRODUCTS, FLAvORS, OR JUST SOMeTHING DIFFeReNT THAN THeIR USUAL PURCHASe Until the last year’s law changes, spirits samples weren’t allowed by any Ohio retailers. Now customers can taste various spirits products at Contract Liquor Agencies throughout Ohio. With a tasting permit, the 460 private Ohio Contract Liquor Agencies can host five events each month offering the sale of limited tasting samples of spirituous liquor products. This provides a venue for manufacturers to introduce new products and an enhanced shopping experience for customers. Tasting events must be approved by the Division of Liquor Control, and can last no longer than two hours. A sample size is .25 ounces, and not more than four samples (totaling one ounce) per person. They are limited to the spirituous liquor sales area of the store, conducted by marketing professionals representing the spirits supplier

or manufacture who have received alcohol server training to ensure compliance with Ohio’s liquor laws. Tasting events all over the state have been very successful. In less than a year, almost 1,200 tasting events have been conducted and more than 9,000 Ohio consumers participated. Some of the new and unique items sampled included: Pinnacle Cookie Dough, Cotton Candy, and Pumpkin Pie; Red Stag Spiced; Oyo vodka & Oyo vodka flavors; Bacardi Wolfberry; Fireball Cinnamon Whiskey; Hennessy vS and Black; and Rogue Malt Whiskey just to name a few. I anticipate the number of tasting events and locations will increase in 2013 as more new items are introduced. We take pride in listing a wide and diverse selection of spirits for our customers and in being at the forefront of the marketplace when it comes to new items and innovation. I was interviewed by a host of media outlets about this program and was able to put some light on important things to remember about DUI’s from the OLBA perspective. Here are some of my points:

This is a program that will investigate death and other severe cases where a someone is found to be under the influence (either for drugs or alcohol). attention. A few months ago Foursquare added to its service something called Local Updates, which is designed specifically for businesses. Local Updates gives you the ability to connect with Foursquare users in ways which were previously unavailable. Foremost among them is the ability to create special messages that will be seen by loyal customers when they are nearby your business. The messages can either be a deal of some kind (similar to a Groupon), or simply an image or text. Foursquare will determine who sees the messages – people they define as your “best customers” – based on frequency of check-in, how recently they’ve checked-in and whether they’ve liked your business. The site will determine “nearby”

based on a combination of GPS and its knowledge of an area’s density. Two miles away may be considered nearby in the suburbs, but not the city. The result is that Foursquare now gives you the ability to broadcast in a manner somewhat similar to platforms like Twitter or Facebook. What is so exciting about Local Updates is the variety of ways in which owners and managers can capitalize on the service. On warm days you can remind customers the patio is open and you’re serving a new warm weather cocktail. You might send out a picture of the way your TVs are setup for a particularly busy day of sports. The Local Updates program is ideal because it allows you to flex your social media muscles in a more proactive way. So get out there and start flexing!

PUBLIC SAFETY PRIORITY Don't Sell Intoxicants To An Already Intoxicated Patron! By Dave Raber

A

ll permit holders know that selling alcohol to a person under 21 years of age is prohibited by Ohio law. To make certain sales of alcohol are not made to persons under the age of 21, responsible permit holders properly train employees to verify the age of the purchasers at the time of sale. Yet, there are other circumstances when the sale of alcohol to a person is likewise unlawful. The Ohio Revised Code states “No permit

holder and no agent or employee of a permit holder shall sell or furnish beer or intoxicating liquor to an intoxicated person.” Therefore, servers must not only verify age, they also must make certain that no intoxicants are sold to someone who is already intoxicated. The Ohio Supreme Court has ruled that “actual knowledge” of intoxication is a necessary prerequisite to showing a violation of selling to an intoxicated patron. However, although there may be no direct evidence that a server had actual knowledge of a patron’s intoxicated condition, there may be sufficient circumstantial evidence to support a finding that a server did have knowledge of the patron’s inebriated condition. Such circumstantial evidence may include slurred speech, stumbling around, passing out at the bar, etc. This is significant for all permit holders to note because the Department of Public Safety (“Public Safety”) now has what it calls a “trace-back” program. The program generally will assign an investigator to a case, for example, where there has been a fatal accident involving a driver who has consumed alcohol. The Investigator will trace-back the evidence until

he finds the source of the driver’s alcohol. If the driver was consuming alcohol in your bar, expect to be subjected to Public Safety’s investigation of the fatal accident. If a violation of Ohio law can be proven, criminal and administrative charges to be will filed. Actually, Public Safety has investigated fatal accidents involving alcohol in this manner; i.e. trace-back or determining the location where the impaired driver had been served alcohol. However, this is an effort to consolidate investigators to help streamline investigations and save money. This is also part of an effort to help bring closure to families of the victims. There is definitely a renewed emphasis on these tragic cases which have been and continue to be a priority for Public Safety. What should permit holders do? Well, make certain that your bar is not identified as a place which serves intoxicated patrons and thereby posing a risk to public safety. Not only will bars be subject to traceback investigations for dreadful accidents, but Public Safety will also investigate anonymous complaints alleging a bar is selling alcohol to intoxicated patrons. Public Safety will use uncover informants at such locations and if an obviously intoxicated patron is served, agents will charge the bar. The OLBA has long advocated mandatory server training, but Ohio has not seen fit to codify this concept. What all permit holders must constantly do is train servers. Training means continuously. You decide: monthly, weekly, daily reminders, etc. which is best for your operation. People in the hospitality industry, understand that most access to alcohol starts in the home, but there are instances where intoxicated persons are served in bars. Therefore, the industry needs to comply with the law and eliminate all sales to intoxicated persons. If a person arrives in your bar drunk, your properly trained and retrained employees will identify the imbibed patron and arrange for safe transportation or protective custody for them.

GAMeS OF SKILL, CHARITABLe GAMING, INTeRNeT CAFeS What Can (or Can’t) I Do?!?!? BY JACOB C. evANS

I have a machine in my bar for my patrons . . . . is it legal?” Over the last several years, and increasingly in the last two years, the OLBA State Office gets numerous calls about the various forms of entertainment that liquor permit holders may provide for their patrons. Unfortunately, the simple question below has a less than simple answer. In the closing days of the 129th General Assembly, one of the hotly debated issues was whether to regulate, ban or do nothing in regards to the Internet Cafes or sweepstakes parlors throughout Ohio. As you may recall, this legislative issue began in earnest during the Summer of 2012. While working on various gaming issues focused mainly on casino gaming and charitable gaming, a moratorium on sweepstakes parlors was included in the bill. The discussion on internet or sweepstakes parlors revolved around the local regulation versus a statewide ban. There were arguments that these parlors provide a social setting for many people to meet and that local governments have derived a great deal of revenue from the regulation of these establishments. Arguments on the other side have stressed that sweepstakes machines are, at best, operate in a gray area of law, take money away from legalized gaming, namely casinos, charitable gaming and the efforts of veterans and fraternal groups. As the General Assembly came

to a close, the Legislature was unable to pass a bill thereby making no changes in regards to sweepstakes or internet parlors. However, it does appear likely that the issue will be taken up again early in the next General Assembly beginning in January. Which brings us back to the original issue: what can you offer your patrons?

YOU NeeD TO MAKe SURe THAT YOU ARe WORKING WITH LeGAL COUNSeL THAT CAN ADvISe YOU ON THe GAMe YOU ARe OFFeRING Simply saying you have a machine is not enough to determine whether or not it is legal. You need to make sure that you are working with legal counsel that can advise you on the game you are offering. Skill based games are legal in establishments with a liquor permit so long as they follow the law: this includes limiting the amount of payout and the machine being based more upon skill than chance. Charitable gaming is permitted, again, so long as the law is followed. Some of the requirements include working with a licensed charity, properly accounting for reimbursements and ensuring that the charity receives its money. In regards to sweepstakes machines or internet parlors, the safe answer is that the

games are likely not permitted in establishments that have a liquor permit under Rule 4301:1-1-53 of the Ohio Administrative Code. This rule is deals with the operation of gambling devices on a liquor permit establishment. To be clear, there does not appear to be an agreed upon opinion as to whether sweepstakes machines are in fact gambling devices under the Rule or the Revised Code. This of course means, it is left to interpretation. The short answer to the original question of “can my patrons play this machine in my bar” is to a) make sure you are working with a coin machine operator or charitable organization licensed by the Attorney general and b) consult with your legal counsel!

How Do We Measure Our Goals With Percentages? BY CHUCK DeIBeL

H

i and welcome back to The Last Call! This month’s column will be a discussion on using costs, otherwise known in accounting circles as Cost of Goods Sold (COGS). Many people assume that using only the calculation of the actual percentage is all you have to do. That is calculated by taking the count for the beginning inventory, adding the purchases and subtracting the count of the ending inventory. Then those quantities have to be converted to their costs. The cost of the inventory used then has to be divided by the amount of the sales for the same period of time. That will give you the Pour Cost percentage or COGS percentage. There are several terms used in the business and that leads to some of the confusion. The next step is what number should the Pour Cost percentage be compared with to determine how the business is doing? There are three ways/reasons people count their inventory in their effort to establish and utilize a budget using inventory sales, costs and percentages. 1. A financially based budget. This might be something you turned into the bank or to an investor to show them how you thought the business might do. It is often done by operators for their own peace of mind. It’s something all businesses should do and update regularly. Here people are comparing their current actual percentage to a goal predetermined. 2. Placing their orders. People will take their inventory and calculate the usage so they can place their weekly orders. 3. Analyze their operations to determine if they are missing sales or inventory, along with how efficient and profitable they are. This requires using both your

ideal and actual percentages and numbers. Most people don’t do this correctly, if at all. I have found through the years that most operators use the following methods to review their operations. They might use their financial statements and compare this month’s sales and costs to last month’s, along with comparing this month’s actual Pour Cost Percentage to last month’s. They are looking for the relationship of the sales and the costs to be similar and they are looking for the PC percentage to be similar.

eACH OPeRATION HAS ITS OWN UNIQUe PRODUCT MIx, WHICH ReSULTS IN AN eveR-CHANGING COST OF GOODS SOLD NUMBeR AND PeRCeNTAGe A financially based budget is usually drawn from a combination of past experiences and hopeful expectations for the future. If people hit those numbers or exceed the sales in some way, they are usually happy and don’t feel they need to do better. But each operation has its own unique product mix, which results in an ever-changing Cost of Goods Sold number and percentage. The ideal percentage needs to be calculated, just like the actual cost percentage. That number has to be calculated and recalculated and the two numbers have to be compared for every period of time you are measuring and analyzing, if you want to really know if you are missing sales and inventory. We have a group of restaurants as a client that has the same products and pricing in the same metro area and each restaurant has a different ideal percentage. The group has a range of a low in the mid 20’s to the

mid 30’s for an overall percentage. The differences arise out of each restaurants unique product mix and clientele. Most operators seem to be comfortable when their overall percentages are in the mid 20’s to the very low 30’s for costs. Another great analysis ratio is the Ideal Net Profit Per Ounce number. Ideal Net Profit Per Ounce is calculated by subtracting the cost of the drink from the selling price and dividing that by the pour size to get the net profit per ounce or unit. By breaking it down to the ounce you can compare items equally. The higher this number the better. You can use this number to measure your staff’s efforts at upselling and to identify which drinks make the bar the most money. very day, you wear many different hats. You’re a manager, friend, counselor, psychologist, disciplinarian, finance expert, public relations guru, and on and on. But to wear any of those hats means having an inspired crew. Listen to the words you say and find ways to use those words in a motivating manner. Here are some

prompters to get you started on the right foot. 1. “You’re an excellent bartender.” Letting someone know you notice how well they’re working goes a long way in keeping them on track. Too often, we fail to recognize our stars. 2. “I enjoy working with you.” Camaraderie at work is important. And as a boss, telling staff you like their company says a lot about you as a manager. Find occasions to let those working around you know how much you enjoy having them alongside you. 3. “There aren’t many people who could have done this project as quickly and accurately as you did.” Again, show appreciation, while at the same time, pointing out specifically what it was that made you take notice. 4. “You’ve become a real asset to our team.” Show employees you feel confident in your decision to work with them. Team members feel welcomed and valued when their contributions to the success of the station are recognized. 5. “I don’t know what we would do without you.” Tell them they’re important. Show how the success of your establishment is directly related to their efforts. 6. “Feel free to look in the community college catalog for courses

you may be interested in. I’ll pick up the tab.” To keep staff motivated about their jobs as well as the bar and nightclub industry, give them perks that will help them perform better.

Often, they are reluctant to report these problems to you since they think it makes them sound lazy or that they’re whining. 9. “Joel greatly improved our inventory process, saving us nearly $200 a month. Way to go, Joel.” Public recognition is a very powerful motivator. In meetings or on the employee bulletin board, recognize those who have made outstanding contributions to the team’s operations. 10. “How about lunch? On me.” every now and then, treat someone who is doing a good job to lunch. even if you have associates who are only average performers, look for something good to reward. 11. “Would you be interested in going to the Buckeye Bar expo for me? Something’s come up and I won’t be able to go, but I’d like somebody from our bar to be there.” Giving employees opportunities like this indicates you have a great deal of trust in them and you think of them very highly. It’s also a fantastic way for them to keep abreast of happenings in the industry. When they return, ask them their opinion on the breakout sessions, key-note speaker, exhibitors, etc. 12. “You have a good eye for these kinds of things. What’s your opinion on this?” Involve your team in decisionmaking opportunities. You’re not necessarily asking them to make the ultimate decision, but you’re indicating how important their input is on the matter. 13. “Don’t feel that what you do goes unnoticed. I saw how well you handled that upset customer, and I

think you created a win-win situation for her and for us. Great work!” Sometimes people think that no one sees what they have to deal with. If you witness an irate customer being handled in a way that soothes her, let the associate know General praise is good, but specific praise goes much further. 14. “Thank you.” This old, simple courtesy still works. Use it often. 15. “I have a project and I want you to spearhead it. Let me know what resources you’ll need, including people, money, and time.” Assigning responsibilities and the authority to carry them out will develop a dependable staff. Projects give employees an opportunity to showcase their talents and build on budding skills. 16. “I’m impressed with how clean you keep the bar when it’s your shift.” People tend to repeat behaviors that are positively recognized. Seek opportunities to acknowledge behaviors you want to see repeated. It’s a simple tactic that works well. 17. “Congratulations! You’re bartender of the year!” Recognition programs—whether they’re yearly, monthly, or weekly—inherently force you to recognize good performance. They should be sincere and adhere to specific measures of performance. 18. “I’ve budgeted $50 this year for you to subscribe to any publications you think will help you in your work.” Assist employees in becoming more knowledgeable about their jobs. Provide subscriptions to magazines like this one and any others that will help them. 19. “I just received an email from a customer who said you found her purse and made sure she got it back. She wanted to let me know you’re awesome.” It’s always great when the manager tells staff they’re doing well, but when someone else also recognizes it (particularly a customer), it’s even more powerful. 20. “Good job!” This is probably the most lasting of the positive statements you can make to others. They’ll tell their friends and family about the kind words and always remember them. Make your team feel proud they’ve chosen to work with you. hether you realize it or not, your current and potential customers are being influenced about their choice of dining/drinking location by factors that you may not be in control of. 2010 brought social networks

You have a few options. You could choose to ignore these websites and dismiss them as a fad or you could pay attention to the conversation that is ALREADY taking place out there about your business. And

But what recommendations are your customers listening to? Are they positive or negative? Could the $5,000/month print marketing/advertising budget be destroyed by a handful of negative reviews? Not only is this possible, but it’s happening every day of the week. With so much information available to prospective customers, the onus is now on you, the business owner to convince them through your

Well it shouldn’t be. Be social online as if the audience was sitting in front of you. 4. Engage with negative reviews by thanking them and asking if you can help make it right for them. If necessary take the conversation to the telephone for added brownie points and quicker resolution. 5. Be an active participant on the social networks where your customers participate. It might have been MySpace five years ago, but it’s most likely to be Facebook today so keep up to date and earn their trust and business on THEIR terms, not just yours. It’s time to take back control of the conversation before someone else does.

t may be a dark and chilly winter in most of the country about now, but for the small distillers of the country, things definitely have the feel of spring.

All over, little buds of growth are evident, as new ventures slowly emerge, and established small distillers expand their portfolios and survive to distill another day. The news of new small ventures is steady: in November in the Hudson Valley of New York, for instance, the Hillrock Estate Distillery welcomed nearly 600 visitors to an open house marking the release of its first spirits. Other parts of the country are finding that once states and cities relax laws prohibiting distillation, small distillers flood in. The Greenbar Collective, for instance, maker of Tru organic vodkas, is the first LA-based distillery since Prohibition. Cities from Portland, Oregon, to Portland, Maine, now boast a handful of operating distilleries. Where there were only about 70 craft distillers counted by the American Distilling Institute in 2003, today around 400 have TTB-issued licenses, with another 50 under construction, according to Bill Owens, president of ADI. Just two years ago, the group projected it would take until 2015 to reach that number. The Distilled Spirits Council of the United States (DISCUS) now boasts 63 members from 27 states in their Craft Distiller Affiliate program. The small distillers have had a significant effect on the overall spirit business in at least one way. Witness the launch in November of Jack Daniel’s Unaged Rye and Jim Beam Jacob’s Ghost White Whiskey. Without the efforts of the many small distillers who started selling unaged spirit as a way to keep income flowing during the lag time it takes to age whiskey in barrels, it’s doubtful even the modest market for unaged whiskey would exist. Who would have thought 10 or 15 years ago that moonshine would merit discussion as a craft distillate?

BIG FIRMS THINK SMALL

The major spirit companies have responded in some cases by taking on small brands in partnerships—most notably in the last two years William Grant and Sons buying the Hudson Whiskey range from New York-based Tuthilltown Spirits, and Destilerîa Serrallés making a long-term U.S. distribution and marketing agreement with Wisconsin-based Death’s Door Spirits. Seagram displayed foresight in buying Bulleit Bourbon back in 1997. Now part of Diageo, this brand fits the craft mold perfectly: it has a great backstory (1830s recipe of vanished distiller resurrected by great-greatgreat grandson), serious chops (high rye content, 90 proof); and tiny production (plus an even tinier spin-off, Bulleit Rye). Brown-Forman was similarly ahead of the curve with Woodford Reserve, introduced in 1996. Some larger companies have developed brands and divisions to participate in the new niche. Sidney Frank Importing Co.’s entrant, American Harvest, is an organic vodka with a proprietary blend of organic ingredients, produced at an independently owned distillery in Idaho. Chatham Imports created something brand new from something very old, reviving Michter’s Whiskey, whose original distillery was founded in Pennsylvania in 1753. (George Washington purchased some to fortify his men hunkered down at Valley Forge.) Now based in Kentucky, Michter’s is making a focused range of singlebarrel and “very small batch” bourbons, ryes and unblended whiskey.

Still other big firms are dipping into their inventory and putting on their thinking caps to introduce new high-end expressions of much-loved brands. At George Dickel, Master Distiller John Lunn singles out ten barrels at a time to craft George Dickel “Barrel Select,” a smooth 86-proof super-premium whisky first released in 2003 with a eye-catching package. Within the last decade, Heaven Hill Distilleries developed Bernheim (America’s only all-wheat whiskey); launched the Trybox Series of “new make” (white) whiskey; and repositioned Evan Williams 1783 as a small-batch gem. In perhaps their “craftiest” move yet, this summer Heaven Hill released Larceny, a new bourbon based on the legend of John E. Fitzgerald, who was purported to be a famous distiller but was in reality a treasury agent who used his keys to the Kentucky warehouses to pilfer bourbon from the finest barrels. More than one observer has compared the growth of micro-distillers to that of the craft beer boom and bust of the 1990s, when brands skyrocketed in public awareness and interest, with many only to fall to earth as they overextended or failed to deliver a consistent and profitable product over time. On the other hand, some craft labels have thrived and the category is hotter than ever today, prompting big brewers to respond by gobbling up small producers in some cases, or developing their own micro-sounding labels in others. Bottom line: the “small is beautiful” mindset has never held more status, in both beer and spirits.


CRAFT DISTILLING

3 RULES FOR RETAIL ✒No matter how broad or deep a position a retailer takes in spirits made by small distillers, three rules seem to make the most sense: BUY LOCAL. The farm-to-table movement that supports local vendors has become a significant part of the restaurant scene, and a farm-to-glass movement has emerged as well. Locally sourced spirits have been embraced in many restaurants. An easy first step would be starting with local products that offer a regional connection and rarity—two retail trends considered vibrant these days. Look for distillers within 100 miles and select from their products.

SELL BY HAND. Whether in a cocktail or a 500ml bottle, craft spirits don’t tend to be bargains, so information and communication are essential to selling them successfully. While the hard-core spirit enthusiast can be counted on to look for the rare and unusual, the average shopper inclined to experiment still needs help. Small suppliers are not only happy to provide data sheets and selling information, but are especially eager to participate in-store presentations. In fact, it’s often the person who actually makes or owns the brand who shows up.

Retailers looking to create a point of differentiation will find craft distillery products can punch above their weight. Christian Krogstad of House Spirits notes: “Today’s customers are open to having new and positive experiences, and if they try it and like it at your place, it increases your credibility.”

CALL IT A BOOMLET

Few micro distillers so far have experienced the market trajectory enjoyed by Tito Beveridge, who turned his “one man distillery” in Austin, TX, into a nationally recognized (and asked-for) vodka brand (called Tito’s, of course). Another success story: Marko Karakasevic’s Charbay, whose many flavored vodkas and other spirits appear in restaurants owned by Mario Batali and other high-profile operators. So far, the small distiller boom of the 2010s has been marked by a less ambitious, more localized and sustainable financial path. Most small distillers are still concentrating on building brand awareness, introducing their products to consumers, restaurants and retailers, and generally spreading the gospel of small and local when it comes to drinking. Andrew Auwerda, president of Philadelphia Distilling, maker of Bluecoat Gin, XXX Shine and other spirits, notes he’s lately been seeing a higher level of acceptance from all levels of the industry. “Distributors are creating selling teams to handle the small wares, and most importantly retailers and consumers are picking up on the concept after decades of buying only major suppliers,” he says. But there are only so many hipsters drinking gin cocktails on any given night, even in Brooklyn, he laughingly notes, pointing out the current challenge for the small distillers—getting more mainstream attention. Expanding the market beyond the niche of craft cocktail bars is uppermost in the minds of most small distillers, especially those weary of driving around with a trunkload of samples, says Christian Krogstad of Portland, Oregon’s House Spirits Distillery, source of Aviation Gin and Krogstad Aquavit. “You can do a couple of thousand cases a year with the cocktail community and small specialty retailers, but to get beyond that you need to appeal to a larger audience,” he says.

It’s a tricky situation. While these locally produced products have an undeniable appeal to consumers looking for authenticity and more connection with what they eat and drink, retailers are faced with a problem: already swamped with line extensions and well-supported new products, they have precious little room for more. But the restaurant business is now mostly a zero sum game, say distillers, as so many new niche producers are ramping up efforts and trying to get placement. The next step is focusing on retail. Those that do decide to take a position in small-distiller wares find they can provide a great business advantage. “We’ve put in probably a couple hundred small distiller products in the past few years, because there’s a tremendous interest in them,” says Burt Notarius, managing director of one of the country’s largest retailers, Premier Wine & Spirits in Amherst, NY. The argument for taking on craft spirits is perhaps best made by Dave Pickerell, former Maker’s Mark distiller who now runs his own consulting firm, working on projects including Hillrock Estate Distillery. “Most innovation in the U.S. spirits market is happening in the craft industry. There are a great many new products, new tastes and new twists that give more to work with in making cocktails, and more to discuss with the customer. Additionally, it gives the opportunity to address the trends of sustainability and buy local when they feature craft spirits made locally.” And those who’ve been in the field for a while are aware that for retailers, the flood of new products from both major and minor suppliers require support. “Retailers want to know, if they put your spirits on their shelves or create new space for you, that people will come in looking for them,” says Krogstad.

SMALLNESS BREEDS UNIQUENESS

Call them craft. Call them micro. Call them artisanal. By any name, the small practitioners bring to the business an oversized sense of personality. Faced with tough odds, the little guys (and gals) are making things work by starting with and sticking to their unique angles. Consider, for instance, Bloomery Plantation Distillery, a “farm-fresh fruit cordial” specialist that celebrated their first anniversary in September 2012. Inspired by the Italian tradition of limoncello, Baltimorean Linda Losey set up shop just over the Maryland border in Charles Town, WV. Why there? One reason: legal freedom—it’s easier to have a tasting room and to source fruit more flexibly than in neighboring states. It also helped that she found a fixer-upper property with colorful history (the site of an 1840s log cabin that was once slave quarters and the first ironworks west of the Blue Ridge Mountains). What she calls “cellos”— Cremma Lemma, Lemon Ice, Raspberry Limoncello and more—have snagged awards in international competitions.

Then there is Ransom Spirits, based in Oregon’s Willamette Valley. Founded by Tad Seestedt in 1997 “with a small life savings and a fistful of credit cards,” the distillery did not even have a permanent home until 2004 (then it moved again in 2008). Ransom spirits are aggressively different from mainstream counterparts. WhipperSnapper Whiskey, for example, combines techniques used to make bourbon, Scotch, Irish whiskey and Dutch corenwyn. They also distill grappa from Gewürztraminer pomace; vodka designed to taste like its barley base; and two gins (one amber-colored). A natural advantage of distilling over other types alcoholic beverage production is flexibility, both in terms of raw materials and final iteration. Re:Find Distillery, in Paso Robles, was spun-off by Villicana Winery founders Alex and Monica Villicana when they got the idea of re-purposing the free-run “saignée” bled off from their red wine grapes before fermentation. This otherwise discarded raw material makes their distillate like philosophical opposite of grappa (which utilizes what is left over after fermentation). The resulting spirit, technically brandy, is then left neutral or infused with botanicals. And in the happy ending (or new beginning) department, Re:Find’s unique, sustainable spirits recently landed a spot in Southern Wine & Spirits’ statewide California portfolio—perhaps a harbinger of bigger and better things to come for small distillers everywhere. ■



The A RT of the Sale ON-P PREMISE BY JIM CLARKE

ou’re salespeople, not order-takers.” Probably every server in America has heard that from their managers at some point or another. It’s a simple principle: Don’t just bring the guests what they ask for; sell them something. Upsell them. In the strictest sense, an “upsell” means convincing guests to have a higher-priced version of something they were already ordering. “If they’re looking for a martini,” says Alex Cauchon, director of wine and spirits for the BR Guest restaurant group in New York, “offer them Grey Goose and Absolut, but lead with the premium; nine out of ten times they’ll go with that.” Today, most people in the industry use “upselling” to describe a variety of techniques that help servers and bartenders up their check average.

For example, “Don’t automatically get the wine order right away. If you get a round of specialty cocktails first, that’s $60 on the check,” says Ramsey Metcalf, an experienced server at Edison Food + Drink Lab in Tampa, FL. That $60 is only part of the story; it gets drinks in the guests’ hands while at the same time slowing down the need to decide on a bottle of wine, so guests can get deeper into the list and Metcalf can take his time guiding—and perhaps upselling—them. Wine, cocktails and beer are all fair game. Today’s drinkers are open to splurging on single malt and other esoteric whiskies, Cauchon says, and the craft beer movement has made beer an easy place to upsell. “If the guest normally drinks Sam Adams, say, ‘Try Avery’s Ellie’s Brown.’ People are receptive to it. Sometimes it might not be a dollar upsell, but it might be a quality upsell, that wins a guest’s confidence.”

ECONOMIC REALITIES Some guests upsell themselves: “A big shot banker looking to throw down,” says Cauchon, “you’ve got to let them do it.” So the skill sometimes lies in recognizing the guest’s intentions and getting out of the way—not recommending items so much as making sure the guest knows their options. Of course, that doesn’t happen as much as it used to; Cauchon says BR Guest has changed their approach to upselling since the economy began struggling in 2008. “We’re not putting our palates, our opinions out there as much,” he says. “Instead we’re giving people something they’re comfortable with. We’re having success leaning toward mainstream brands.” In San Francisco, Petra Polakovicova, wine director at Epic Roasthouse, says the faltering economy certainly affected the size of the jump guests were willing to entertain. “We used to upsell even $100 more and people would go for it; people would jump from $150 to $260 if you told them it was a great bottle of wine. Now half don’t want to listen at all. It’s $60 to $90, $90 to $100.” She says it takes multiple bottles and working the smaller


angles to make the same check averages these days. Those angles can mean filling in the other parts of a guest’s experience rather than focusing on a landing a high-price bottle. “We have a decent half-bottle selection,” says Polakovicova, which gives her staff something pricier than by-theglass selections when people want to start with white wine or bubbly. At least once a night she finds herself working for that second bottle by reminding a guest, “You don’t have to finish the whole bottle; you can take the rest of the bottle home with you. Good wines will be even better the next day.” It makes the sale, even though Polakovicova says, “99% of the time they finish it here anyway.” (Note: not all states permit guests to take home unfinished bottles.) She says dessert is also often a missed opportunity: “Two desserts and after-dinner drinks can be another $50 or $60 on the check.”

A N C H O R E D BY T H E L I S T A lot of upselling is being prepared with a well-organized, smartly priced wine list. “We try to underprice items people know,” says Cauchon. “It gives the perception of value.” That makes it easier for servers to upsell less familiar brands: “Say you’ve got Honig Cab from Napa Valley for $75, a brand that’s not unheard of, then you put something at $10-$15 more that’s a natural upsell. Mount Eden, for example, for a more Bordeaux style, a more elegant wine,” he explains. Once the right wines are on the list at the right prices, the staff needs to know about them. Cauchon says at Strip House, their newest property, they taste one or two wines each day, and he follows up: “I’ll ask, ‘Who was here yesterday? Talk us through the Beaux Freres Pinot Noir we tasted.’ It puts peer pressure on them to do a good job. At the end of the process we agree on how we’re going to present it; it’s important that guests get same answer from different people.” Polakovicova says she recently sourced 25 samples from suppliers, all high-end

handsells, and did a massive staff training session on them. “If you get every single server passionate about a wine, it’s going to sell,” she notes. Metcalf says product knowledge gives a server confidence, which allows him/her to win a guest’s trust. He adds that it helps to dress like you know what you’re talking about. He’s worked in a suit, and in a T-shirt; wearing the latter he notes, “you have to do more to convince people you have the knowledge and ability.” Ultimately, “product knowledge is everything when it comes to selling or upselling,” says Kristie Petrullo of Petrullo Wine Consulting. “Gaining the trust of a

guest is extremely important, and you do that by letting them know that you are an expert in your field.” That said, the concept of upselling sticks in her craw. “I find that upselling to every guest is shortsighted. Understanding what they are really asking for is more important, as in the type of experience they want. This establishes a relationship between you and the guest and usually means that they will come back. That is more important to the bottom line. One good night in sales is less important than a guest that comes back once a week because they know that you’ll have what they want and not try to gouge them.” ■

■ When two or more guests order the same wine by-the-glass, upsell them to a half-bottle or bottle of the same or a similar wine. ■ Ask questions and recommend what you think the guests will like, not your own favorites. ■ A quality upsell—recommending a better product at the same price—or even a downsell to a lower price point can improve the guest’s experience and increase the tip percentage and likelihood a guest will return, even if it doesn’t increase the actual check.

■ When feasible, upsell wines that will pair better with the guests’ food; even if they’re not interested in pairing, they will likely drink it more quickly, enabling second glass/bottle sales.

■ Keep in mind the possibility of selling two bottles of a cheaper wine rather than one expensive bottle—though two expensive bottles is even better!

■ Favor sparkling wines; people tend to drink them more quickly.

■ Know your products so your guests learn they can trust your advice.

H

ere in the U.S., we largely view Bordeaux as an elite category of wine. No doubt this maritime region in southwest France produces some of the globe’s most coveted bottles. Yet, as the world’s largest wine-producing region, most of its juice is produced for everyday drinking. There are good reasons to change the American paradigm as Bordeaux rouge can display multitudes of flavors and palate profiles, offer good value and pair well with a broad array of dishes.

Not every wine contains all three primary grapes. Interestingly, while we often think of Cabernet Sauvignon as the player, Merlot is actually the most common variety in Bordeaux, except among Classified Growths (aka Cru Classé wines). Here are basic guidelines on blend composition based on appel-

lation, with grapes listed in descending proportions: • Classified Growths (Left Bank): Cabernet Sauvignon, Merlot, Cabernet Franc • St. Émilion (Right Bank): Merlot, Cabernet Franc • Pomerol (Right Bank): Merlot, Cabernet Franc • Other Appellations: Merlot, Cabernet Franc, Cabernet Sauvignon

Why These Blends Can Taste So Different Red Bordeaux are blended wines, often called claret by traditionalist (the term claret originated in England). Six red grapes are authorized in Bordeaux: Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Petit Verdot and Carmenère. The latter three have fallen out of favor though some châteaux are reconsidering them in salt-and-pepper quantities (a percent or two of the final blend) as the region’s climate gradually warms. It is the first three grapes that dominate red Bordeaux, and their varied combinations in turn impart stylistic distinctions. Here is what each grape variety contributes to the classic claret blends: >>>

CABERNET SAUVIGNON: • deep color, often purple and even black • overt aromatics with notes of blackcurrant, cassis, cedar and eucalyptus • powerful, yet elegant and fine-grained, tannins • dense weight, or body • refreshing acidity

MERLOT: • mid-depth color, excepting top cuvées, often with blue tinges • moderate fragrance with red plums, mulberries, fruitcake and oolong tea • gentle tannins with little bitterness or astringency • soft acidity

CABERNET FRANC: • average color concentration that can sometimes seem too pale in cool climate Bordeaux • generous aromatics of raspberry, blueberry, twigs and hard-stemmed herbs • subtle and finessed tannins • mouthwatering acidity

BANK ON IT BORDEAUX WINE REGIONS

WHILE NEW WORLD-STYLE WINES TEND TO BE PLEASANT TO SIP ALONE, BORDEAUX REDS OFTEN NEED FOOD TO BALANCE THEIR LEANNESS.

Underrated Food Wine Aside from top wines, red Bordeaux’s style tends to be restrained and lean in fruit character, juicy in acidity and lightly bracing in tannin. This poses quite a contrast to New World, Bordeaux-style wines (like those from Napa and Washington), which usually have rich fruit, moderate acidity, creamy tannins and toasty notes from wood aging. While New World—style wines tend to be as pleasant to sip alone as they are with food. Bordeaux reds often need food to balance their leanness. Claret can be an ideal “go-to” wine for shoppers en route home to prepare dinner.

Selling – Communes, Styles, Prices and Vintages Bottom line: there’s the question of what to stock for your customers. I suggest selecting primarily by style and price. Then, vary the communes. Focus on recent, easy-drinking vintages since U.S. shoppers are most accustomed to youthful wines. Here are some profiles I suggest and why: ~ Easy Sipping, $12-$18 SRP: Lalande de Pomerol

These wines possess the soft tannins and Merlot-suppleness of big sister Pomerol

yet carry a more petit price tag. They can usually be enjoyed with or without food. ~ Value for European-Style Wine Lovers, $10-20: Moulis or Graves

These are Left Bank communes based on Cabernet Sauvignon and offering moderate weight wines with finessed aromas. Moulis is north of Bordeaux, and like its well-known neighbors Margaux and Saint Julien, it offers firmer structure than wines from the southerly Graves region.

✒The terms Left Bank and Right Bank are central to the geography of Bordeaux. The region is naturally divided by the Gironde Estuary. The Right Bank (shown in green) is known best for the communes of St. Émilion and Pomerol. The Left Bank (maroon shades) includes the Médoc peninsula and Graves. The region of Entre-Deux-Mers (literally “between two seas”) lies between the Garonne and Dordogne rivers, which combine to form the Gironde. A rather new designation, Côtes de Bordeaux—encompassing a handful of perimeter appellations, including Blaye, Côtes de Blaye, Premières Côtes de Blaye, Côtes de Bourg, Premières Côtes de Bordeaux, Côtes de Castillon, Côtes de Francs and Graves de Vayres—actually stretches across 60 miles of land. This umbrella name was created for maketing purposes, to raise the visibility of the regions as a whole as they are not well understood individually. The wines are primarily red and only 15% of these wines are exported.

FRANCE

~ Value for American-Style Wine Lovers, $10-20: Côtes de Francs and Côtes de Castillon

These are neighboring appellations on the Right Bank, northeast of the famous Pomerol and St. Émilion communes. Many young and well-trained winemakers are crafting clean, ripe and exciting wines based on Merlot and Cabernet Franc. There are good values and discoveries to be found here! ~ More Than Everyday, $20-30: Second Labels of Left Bank Cru Classé wines, especially from St. Julien

These wines offer the Bordelais character and finesse expected from top châteaux at a reasonable price. St. Julien, in particular, offers that magic combination of the Left Bank’s finesse and power. Also,

second labels from recent vintages are less oaky than their big brothers, making them more pleasant to drink earlier and better for pairing with food. Depending on the property, either Cabernet Sauvignon or Merlot may dominate. ~ Special Occasion for Merlot Lovers, $35+: St. Émilion Grands Crus Classés

St. Émilion exhibits more subtlety than its more imposing neighbor Pomerol. St. Émilion’s Grands Crus Classés usually aren’t aged as long in or in as much new oak as the hefty Pomerols, making them more food-friendly and more attractive early on.

~ Special Occasion for Cabernet Sauvignon Lovers, $35+: St. Estèphe and Pauillac Cru Classé

For any of these profiles, it is very easy to suggest the recent vintages of 2008, 2009 and 2010. These are available now, show ripe fruit and possess good

balance. Cooler years like 2006 and 2007 can be tough in their youth, and Americans tend to dislike such wines. Another vintage still available for your More Than Everyday and Special Occasion categories is the much-loved 2005. These wines are impressively ripe, so they are easy-to-understand for more palates. Bordeaux is a dynamic region that is changing dramatically. By focusing on U.S. Bordeaux-style blends, we miss out on the mother region’s diverse styles and good values. It gets harder by the day to find value in Napa, so why not look to Napa’s original inspiration? ■

said, retailers looking to tweak or augment their French wine offerings may want to examine the “Today’s Bordeaux” campaign, whose focus on value is right in step with today’s American wine lover. Now in its seventh year, the campaign highlights a range of 100 affordable ($9-$35 SRP) Bordeaux (red, white rosé and sweet) available in the U.S.; and this year’s selection featured a few adjustments designed to make the results more trade- and consumer-friendly. A team of Bordeaux Wine Councilappointed wine educators and three guest judges blind-tasted 300-plus wines submitted by importers. The scoring method used this year was derived from the New Wine Fundamentals Wine Evaluation Protocol developed by Tim Hanni MW. The system

features a 0-7 ranking that focuses on assessing the wines at a more hedonic level that is closer to the way in which consumers experience wine. In addition, to ensure better availability of recommended wines, the Today’s Bordeaux criteria required that the wine be sold in one or more of the following U.S. regions: Northeast (CT, MA, NH, NJ, NY, PA, RI, DC); South (FL, TX); Midwest (IL, IN, OH, MI); and West (AZ, CA, CO, NV, WA). All 100 wines can be found at www. bordeaux.com/us/wines, where they are categorized by color and tasting notes as well as occasions such as wines for gifts or dinner parties. A variety of generic Bordeaux on- and off-premise POS materials (posters, maps, drop-stops, table tents, etc.) are available from the Sopexa office in New York (sopexa.com).

These two Left Bank communes show the blockbuster power of Cabernet Sauvignon. At the Cru Classé level, they will have significant oak notes of chocolate and coffee bean, so advise your clients that they are best enjoyed with rich steak or lamb dishes. ~ Vintages: 2008, 2009, 2010 and 2005

PROMOTIONAL PARADOX One of the challenges faced by Bordeaux in the 21st century involves promotion. With so many producers, and with importers handling multiple estates, few estates are in a position to merit their own promotion in the U.S. Moreover, to the American eye, the bulk of clarets appear the same—with labels projecting a château name, traditional graphic and just-the-facts appellation data. The complicated nomenclature and sense of sameness (sans visual bells and whistles) can put them at a disadvantage on retail shelves—not to mention make the somewhat subtle but important distinctions among sub-regions harder to grasp. Generic promotion of Bordeaux is difficult as well; clarets are essentially regionally defined wines living in a branded world. That

About two hours outside of New Orleans, arguably one of the nation’s foremost cocktail destinations, is Hattiesburg, home of the University of Southern Mississippi, and where you’ll find the Purple Parrot Café, part of chef Robert St. John’s New South Restaurant Group, which also encompasses Crescent City Grill, Tabella, Mahogany Bar and the forthcoming Branch, devoted solely to serving spirits. Purple Parrot’s general manager and wine director, Dusty Frierson, is making Hattiesburg a worthy tippling detour en route to the Big Easy.

now it’s the opposite: they are saying we can be more adventurous. Recently, I was really into making infusions with the restaurant’s immersion circulator. We’re still riding the trend of bacon cocktails, infusing bourbon with Benton’s bacon. Our list skews towards more boozy, stirred cocktails and features bitters that were once outside the norm, like Aperol and Cynar. The Morning Call, for example, is bourbon with coffee-infused Cynar. And The Sour and the Glory—I’m a Graham Greene fan—has bourbon, bitters and strawberry basil shrub. TBN: You make your own shrubs?

THE BEVERAGE NETWORK: Your background is primarily in wine. What turned you on to cocktails and beer, too? DUSTY FRIERSON: I’d been a wine director and sommelier for a number of years, overseeing nearly a thousand labels for the company. Sometimes, you start looking for other fun stuff to do. About five years ago I really got into the cocktail scene and traveled to explore the trends. The Purple Parrot is not any one thing, and that plays in our favor: we’re not just a beer bar, a wine bar or a cocktail bar. TBN: What do you think makes your cocktail program stand out now? DF: A couple of years ago, I was introducing cocktails to the list and my bartenders said they were too out there. And

DF: We make a whole line of drinking vinegars here, like one with hops and ruby red grapefruit. They are great for non-alcoholic drinks, too, which are becoming more important to cocktail lists. TBN: It remains challenging in big cities to get customers to delve beyond their comfort zone. So, in Mississippi, is it even harder getting your guests to embrace a beverage menu unlike any other they will find locally? DF: I would say it’s new for most people. Some will send back a drink and say it’s too bitter; they don’t know what Campari is when they order it. But for every one of those, we have 15 customers who think what we are doing is cool. We are in a college town, so people are looking for something different. It’s up to us as bartenders to create a bond of trust

with our guests so for their next drink, or their next time in, we can push the limits. If people are used to sweetness we need to take baby steps to get them to move past that. But cocktail sales are up; we’re selling more and more. TBN: And a lot of that has to do with your staff being so well educatedwhen it comes to beer, too. DF: Our goal is by the end of January to have our entire bar staff be at least first level certified cicerones. We feel that it is going to make us better, and push our beer knowledge and sales. Some of those guys will then go on to the next level. TBN: Your beer program seems to be just as bold. You’re even serving it in a French press. DF: We have around 120 beers, but our draft selection is small, about a dozen, on purpose. We like to keep things moving and as fresh as possible. Lazy Magnolia, a local brewery in Kiln, is doing really well here. Now that we can sell high-gravity beers in this state, their Timber Beast Rye Double IPA is quite popular. It’s nice for us to be ahead of the curve. And yes, we are doing something different by putting beer into a French press and letting it infuse with hops and pouring it tableside. I want people who are passing through Hattiesburg to New Orleans to hopefully discover a gem here. ■
