he weather finally warming up means one thing— grillin’ season. As you head out to the beach with your gas grill or bag of charcoal, why not try some Japanese BBQ favorites? Here are a few ideas for your next cookout. Teriyaki, cooking using a glaze composed of soy sauce, mirin and sugar, gives nearly any dish an extra spring in its step. You can search the Internet for an authentic recipe, but the sauce is readily available at the commissary and almost any grocery store back in the U.S. Simply select your entrée and follow the directions on the bottle. Yakitori is a simple treat found in area restaurants, roadside food stands and Japanese grocery stores. Whether an appetizer or the main course, it’s simply chicken parts—including skins and gizzards—on a skewer and grilled. Drinking establishments may have their own special recipe, but the basics include

inside

soy sauce, a sweetener like mirin, and spices. Wash it down with a cold beverage and you’re truly following Japanese custom. Fish is a favorite of this island nation, tuna being a big part of the Japanese diet. Consider fresh tuna steaks dredged in sesame seeds for your next cookout. You’ll also find salmon and snapper quite plentiful at the seafood counter. Barbecue squid shows up on many Japanese menus and it’s pretty easy to prepare for adventurous eaters. Slice it into rings, skewer it, baste it in lemon juice and garlic butter, and put it on a medium grill for two to three minutes each side. Enjoy! Don’t have grilling supplies? Taiyo Golf Club Events

olf is a game for all seasons. The Taiyo Golf Club has events and tournaments planned all year long. Here’s what is ahead in 2015: April 8–10: there will be Junior Instructional Clinics for children between the ages of 5 and 18 to learn the rules and fundamentals of putting, chipping and the full swing applications of golf. There will be more junior clinics from June through August. April 25 & 26: Taiyo Golf Club and the Banyan Tree will go head to head in the The Home & Home Challenge for bragging rights, a trophy and more. June 13: Gather your four best buds (who play golf) for the 4 Person Best Ball tournament. July 11 & 12: Budding pros and prodigies of all levels compete at the

Junior Open Championship, an island-wide tournament. September 12: With summer in full swing, join the Red, White & Blue Scramble for a chance to win cash prizes and more. October 10–12: Compete for more great prizes in events such as the putting challenge, longest drive and more

at the Taiyo Club Championship. November 14: Be a hero on Thanksgiving by winning cash and a turkey at the Turkey Shoot. December 12: The final event of the year will be the Holiday Ham Scramble—a four-person scramble with the chance to win cash and hams.

Octopus, Squid and Ink

f you are a true culinary daredevil, your tour on Okinawa may include odorigui. That would be a piece of tentacle sliced from a live octopus and enjoyed with a little soy sauce. The challenge is to chew the rubbery limb into submission as the suction cups adhere to the roof of the mouth. Odorigui is obviously not for everyone, but there are plenty of ways to enjoy octopus, squid, and other uminomono (seafood) on Okinawa. There are three species of octopus, or tako, which are important to the Japanese fishing industry: the madako which is the most common, the mizudako and the smallest of the three, the iidako. Takoyaki is a festival food staple on Okinawa. Chopped octopus is drenched in batter and cooked in a circular iron mold. The balls are served with usutā sōsu, a condiment similar to Worcestershire sauce. If octopus balls sound a lit-

tle silly, consider the superstition that some Japanese have regarding eating octopus–that the creature must be beaten into submission with a daikon radish. The squid, or ika, is considered a delicacy by many cultures. It has been eaten dried as surume since ancient times. Surume is a traditional offering at Shinto shrines and it is still used as a gift on auspicious occasions. Only since

the invention of refrigeration has squid moved to the sushi menu. One other unusual delicacy to try is squid ink, or ikasumi. On Okinawa, ikasumi is enjoyed as a soup and considered to have a high medicinal value. It is also found on menus added to pizza or mixed as a pasta sauce. Look for squid ink bread, curry, or soba noodles as well. By Laura Aguiar
