Easter Buffets

he weather finally warming up means one thing— grillin’ season. As you head out to the beach with your gas grill or bag of charcoal, why not try some Japanese BBQ favorites? Here are a few ideas for your next cookout. Teriyaki, cooking using a glaze composed of soy sauce, mirin and sugar, gives nearly any dish an extra spring in its step. You can search the Internet for an authentic recipe, but the sauce is readily available at the commissary and almost any grocery store back in the U.S. Simply select your entrée and follow the directions on the bottle. Yakitori is a simple treat found in area restaurants, roadside food stands and Japanese grocery stores. Whether an appetizer or the main course, it’s simply chicken parts—including skins and gizzards—on a skewer and grilled. Drinking establishments may have their own special recipe, but the basics include

soy sauce, a sweetener like mirin, and spices. Wash it down with a cold beverage and you’re truly following Japanese custom. Fish is a favorite of this island nation, tuna being a big part of the Japanese diet. Consider fresh tuna steaks dredged in sesame seeds for your next cookout. You’ll also find salmon and snapper quite plentiful at the seafood counter. Barbecue squid shows up on many Japanese menus and it’s pretty easy to prepare for adventurous eaters. Slice it into rings, skewer it, baste it in lemon juice and garlic butter, and put it on a medium grill for two to three minutes each side. Enjoy! Don’t have grilling supplies?
