t has been claimed that the first Japanese ramenya, or ramen shop, opened its doors to serve its inaugural bowl of ramen in 1910. Not to be confused with its sister noodle, soba, ramen is a crinkly noodle but is also made straight and thin. Ramen noodles are made from wheat, flour, and egg, which creates the perfect foundation for an assortment of broths and flavors. Each region of Japan has a unique way of preparing the stock and adding their signature to ramen. Shio, or salt, ramen is a heavily salted, yellowishclear broth with veggies and sometimes fish, chicken or seaweed. Shio is made with straight, thin noodles. The broth of shoyu, or soy sauce, ramen is made from its namesake and has a dark-brown color. And because soy sauce is such a versatile condiment, there are many variations of the dish. Shoyu ramen can be found topped with hardboiled eggs, bamboo shoots, nori (seaweed), kamaboko, or fish cakes, bean sprouts and slices of pork. Most shio and

shoyu ramen fall into the assari, or light, category. Tonkotsu ramen’s broth is made with pork or chicken bone stock. This white and creamy soup is said to be the most prestigious most difficult to create. Tonkotsu ramen is widely known as the product of Kyushu, the third largest island of Japan. Miso, or soybean paste, ramen has a distinctive flavor. This heavy, brown broth commonly contains nori and many other typical ramen toppings. Tonkotsu and miso ramen are commonly considered, heavy. A quick Internet search would turn up dozens upon dozens of ramen recipes, but many who have attempted to recreate ramen in their own kitchen advise to save yourself the time and frustration by visiting the local ramenya instead. On Saturday, July 11, join MCCS to enjoy this beautiful feat of nature at the Kin Blue Beach Bash from 9 a.m. to 7 p.m. The day will be filled with kayak races, banana boat rides, treasure hunts, snorkeling, food booths and FREE entertainment. Or if you’re looking for a challenge, try your hand at one of the game booths or compete against your friends at the chip-shot golf challenge, horseshoes or a rousing game of Cornhole. It’s the ultimate beach day—without having to drag along a heap of beach gear. Due to limited parking at Kin Blue Beach, DoD personnel must park at designated areas on Camp Hansen and ride the FREE shuttle to the event site. ourtney: I went hiking near Nago and felt like I was on the set for Jurassic World. I had no idea such lush locales were on this island. Ryan: Where did you go? C: A trail that led to Fukugawa Falls. It was a little tricky to find and the trailhead wasn’t well-marked, but half the fun is sometimes finding the way. It makes me feel like I’m on a treasure hunt. You take Route 58 toward Nago. Turn right at the sign directing you to Haneji Dam. Then turn left just past the radio tower. Turn right at the small stone shrine and follow the road until you come to an awkward T-intersection. Make a right here and about 20 meters to your left will be the chained off

trailhead. Do you know of any other places I could explore? R: Fukugawa Falls is a fun trail. A couple other ones I’ve heard of are Aha Falls and Tadake Falls. Tadake Falls is past Nago. Take Route 58 up to Henan Bridge. Immediately after crossing the bridge, take a right. If you continue down this road, you will see a house with a gray concrete wall—across from that is a spot for you to park. There will be a sign in Japanese that says Tadake Falls. Aha Falls is also past Nago. To get there, go a little past Okuma and turn right onto Route 2. Keep going until you are able to turn right onto Route 70. Go about 3.5 kilometers and you’ll come across a sign for the trail.

C: Are there any other jungle creatures I should be on the lookout for while hiking up north? R: Did you see any Yanbaru Kuina (Okinawan rail)? They’re an endangered species of flightless bird with red feet. The Ryukyu Spiny Rat is another endangered species. They look more like mice than rats. You might also find the largest beetle in Japan, the Gold Beetle. C: I saw a Yanbaru Kuina for a fleeting moment while it was crossing the road. I’d like to see one in an asphalt-free setting. I didn’t see any rat-mice or golden beetles. I was too busy looking out for spider webs to avoid on my hike. But next time I’ll keep my eyes to the ground.

Junior Open Golf Championship

he best way to excel at golf is to start young. For some of us it’s too late to turn back the clock, but junior golfers have time on their side. Taiyo Golf Club is hosting the perfect platform for some friendly competition for young golfers—the Junior Open Championship. On July 11 and 12, Taiyo Golf Club will host the annual Junior Open Championship for all golfers ages 7 to 18. This tournament will consist

of 36-hole play and no handicaps. There will be three divisions for boys and girls, and crystal trophies will be awarded to the top three winners in each flight. Flights are divided by age, from 15 to 18, 11 to 14 and 7 to 10. Golfers in the 11 to 14 age group may compete in the 15 to 18 class if they feel they have the ability. weeklyhealthtip Nuts, in general, are known as a “health food” but their direct effect on athletic performance has never been studied until now. Athletes ate three ounces of nuts before and during training, and found that their 75km bike time slowed by nearly 5% after two weeks of pistachio consumption. Although the nut is known for aiding oxidative stress, the study found that pre-exercise pistachios increased stress during training and led to mitochondrial dysfunction.
