ushi etiquette can differ from other types of cuisine, and many aspects can be quite obscure— from always placing the chopsticks directly on hashioki (chopsticks holders) and refraining from creating a “wasabi broth” (made of three parts wasabi and one part soy sauce). Following are a few common questions: Is using your hands to eat sushi an etiquette violation? Although using one’s hands to bring each delightful morsel to one’s lips is acceptable, real veterans use chopsticks. Also, when serving another, always use the back end of the chopsticks to place the sushi on the other’s plate. Do not pass food from chopstick to chopstick—a social faux pas. Every time I dip my sushi into the soy sauce, the rice falls apart. Is there a way to remedy this problem? The proper way to dip nigiri-zushi is by placing the fish-side down. It is considered bad manners to dip the rice side. I never seem to have enough ginger left after only a few sushi. How do I order more?

The vinegary ginger slices called gari that accompanies sushi is for cleansing the palate in between orders. Although some pile the ginger on top of their sushi, this is tantamount to brushing one’s teeth and eating at the same time—not a good thing. How do I find out what kind of fish are “in season?” Always ask the chef—they are the fish experts. Asking the sushi chef is not only a sign of respect, it can also positively affect the dining experience as well. However, never hand the chef money to pay the bill—this is considered disrespectful towards other customers. Do any sushi restaurants offer knives and forks instead of chopsticks? Most definitely not—most reputable sushi chefs would probably feel insulted if they were asked for a knife. POW/MIA & 9/11 Memorial Run

emembering and honoring service members who are prisoners of war (POW), as well as those who are missing in action (MIA), comes in many forms. This month, take a moment to remember these service members by participating in a 5K run on National POW/MIA Recognition Day. The Recreational POW/MIA 5K Run, starting at 8:05 a.m. on September 4, at the Camp Hansen House of Pain Fitness Center, is open to all SOFA status personnel. Register for this FREE run at the House of Pain on September 4 from 6 to 7:30 a.m. A mandatory participants’ brief will be given at 7:45 p.m. On September 10, the MCAS Futenma 9/11 Memorial Run is an

event for participants to commemorate the sacrifices that our service members and civilians made on September 11. All SOFA status personnel are invited and no registration is required. The run starts at

The Fuss About Bags & Tape

ourtney: I’m attempting to reduce my carbon footprint while shopping. I always stash a few “my bags” (the cute way the Japanese refer to reusable shopping bags) in my purse, even though the store clerks still find it necessary to put certain items in separate plastic bags. Why do my tofu and eggs need to be segregated by plastic within my “my bag?” Even when I buy one or two items and tell the clerk to leave them unbagged, they slap a sticker on my purchases. Is this unavoidable in Japan? Ryan: I personally have always appreciated the way Japan organizes my groceries, no matter how much waste it produces. I believe one part is simply

organizational—to me it’s unthinkable to have tofu and eggs together. What if the tofu leaks? Today, most Japanese grocery stores try to encourage “my bags,” thanking customers for bringing one and charging an extra ¥3 for patrons that want “reji-bukuro,” or plastic bags for their groceries. The tape on the other hand, has a more interesting history. C: Do tell. R: When supermarkets first became popular in Japan in the 70s, entire families would come and spend a lot of time shopping together. Children would often want things and could not wait for their parents to finish shopping to have it. The par-

ent would buy the item for their child and go back to shopping. This posed a problem for the stores since they didn’t know what had been paid for and what hadn’t. The simple solution was to apply a piece of tape on the purchased item. At first it was only used for fussy children but now all of us wear this mark. By the way, the separating of some items with smaller plastic bags is considered a courtesy and a part of customer service.
