To risk a timeworn cliché—the possibilities are endless. And, it doesn’t necessarily mean sitting in a classroom taking endless notes are part of the equation (although drawing with Crayons can be fun at any age). You’ll thank yourself for making the effort, we promise!

For students in Japan, the school year started in April. The Japanese school year is made up of three terms: April to July, September to December and January to March. A four- or five-week summer vacation is usually enjoyed in August (complete with homework, boo!), along with a similar spring break at the end of the school year after graduation. With a literacy rate of 99 percent, learning is taken very seriously in Japan. Learning is also important when it comes to your home away from home. Learning more about the local culture will not only benefit you, as it’ll make your stay on the island a more enjoyable one, it leaves a better impression on our hosts. What is there to learn you ask? How about learning enough Japanese to say “hello” and “thank you” to the nice old Okinawan lady that rakes the leaves and cleans up the trash in the local park your children play in every afternoon? Or, how about learning a martial art? Okinawa is the birthplace of karate, and there’s no better place to learn this art that teaches about self-mastery—which enables karate practitioners to harness immense power, blinding speed and an almost inhuman resilience.

The Camp Schwab [Power Dome] Fitness Center has been an exceptional facility for the duration of our UDP. While impossible to re-write the past, learning the history of world-changing events can help shape the future. And the most engaging way to discuss the details of the Battle of Okinawa is by signing up for one of Tours+ Battle Sites tours.

BATTLE SITES TOUR I

t’s hard to imagine that several decades ago sunny Okinawa (and surrounding islets) were once ravaged by the atrocities of war. And even more unfathomable, the Battle of Okinawa (April 1–June 22, 1945), the final major land battle of WWII, is named as one of history’s most cataclysmal fights.

Some of the fighting took place at a rocky pinnacle known as Hacksaw Ridge, or Maeda Escarpment, which is located atop a 400-foot vertical cliff. It was this cliff that would present the 77th Infantry Division with the most problems. However, once cargo nets (provided by the Navy) were fastened to the escarpment, the unit could pro ceed as they were ordered to make it to the top of the ridge and clear out the bunkers. But, there was one man that distinguished himself from his peers during the battle—Private First Class (PFC) Desmond Doss. PFC Doss noticed that the unit was looking nervous, so he went to the Company Commander and said, “sir, the boys are looking skittish, I think you should give them time to say a prayer” stated Joe Groves, one of MCCS Tours+ knowledgeable tour guides. With a short prayer and settled nerves, they as cended the ridge line, securing eight or nine of the 12 bunkers within an hour with no losses and only one injury. The second unit, however, did not fare as well. The second unit dropped a phosphorus grenade into one of the unsecured bunkers only to discover that “it was the ammo dump for the whole ridge line,” says Mr.“EveryoneGroves. got out of the area except for Doss,” continues Mr. Groves, PFC Doss stayed to aid wounded soldiers (from both sides) and lowered them off the ridge line. While the semantics of how many people he managed to save was unverified, “the official after-action review and his Medal of Honor certificate will say that he saved 75 people.” Mr. Groves emphatically stated.

In addition to above-ground fortifications in Naha, the Japanese forces dug an elaborate system of underground tunnels that fortified the irregular, hilly southern terrain. This system of tunnels housed most of the Japanese 32nd Army, their ammunition weapons and provisions.

One of Mr. Groves’ favorite donated artifacts is a signed Japanese imperial flag donated by Lt. Don Sinn. “Lt. Sinn actually mailed the Japanese flag back to us…that particular Japanese flag is the actual flag that flew over Shuri Castle in 1945,” he informed everyone on the tour.

In 1970, roughly 300 of the 450 meters of original tunnels opened to the public. They are one of Okinawa’s most evocative war museums. After descending a set of steep steps, the limestone passageways lead you to a number of rooms used by the Japanese navy such as the petty officers’ room, staff officers’ room, commanding officers’ room and medical room.

Perusing The Battle of Okinawa Historical Display (privately-owned since 1995 and located on Camp Kinser), tour-goers can see original artifacts provided by both Japanese and American veterans and a few replicas.

Mr. Groves explained that the display was in somewhat chronologi cal order, starting with articles from Japan’s Meiji Era and ending with the Battle of Okinawa.

Established in 1965, Peace Memorial Park stands as a commemoration of the Battle of Okinawa. It was this site (Mabuni Hill) where the battle came to a culmi nation, and Japanese commander, Lieutenant General Ushijima, and Chief of Staff, General Isamu Cho, took their lives by performing seppuku (a feudal Japanese suicide ritual).

A s the Ryukyu Kingdom flourished via trade with several different nations such as Siam, China, Java and others throughout Southeast Asia, it also prospered culturally—fusing technology, methodology and inspiration with cultural elements of its own to create music, cuisine and art that were distinctly Okinawan. Among these, the art of creating textiles via weaving techniques and materials from other cultures together with local materials and methodology produced clothing that still symbolize the Ryukyu Kingdom to this day. Through its hundreds of years of growth and development, this art has developed its own distinct character which is expressed via lively and vibrant colors, intricate designs and complex repeated patterns.

Although much of the tangible and intangible heritage from the Ryukyu Kingdom era has suf fered through annexation of the Ryukyu Kingdom by the Meiji government and WWII, Suikara—a textile museum nestled in the streets of Shuri above Naha proper (located just a short 3-mile walk from Shuri Castle)—works to preserve the history and educate visitors on the art forms of

The process of making bingata is laborintensive. There are two techniques of bingata dyeing: tsutsu-gaki-zome /tsutsu-biki-zome (freehand) and kata-zome (stencil dyeing). In each method, a dye-resistant paste is made from ground mochi rice, rice bran and water which is then scraped across the top of the stencil on the cloth acting as a coating to prevent the applied areas of fabric from being dyed. The paste is then steamed and washed, and different portions of the design are cov ered. Afer the fabric is dried, the ground color is painted on by brush. In the traditional stencil dyeing technique (kata-zome), mulberry papers are coated with persimmon tannin and sealed together to form a firm sheet. A design or pattern is drawn onto the paper and carved with a small blade. Dried firm tofu is used as a cutting mat, as well as to enhance cutting by preventing friction (as an incremental amount of oil is secreted by the tofu in the mat). The construction of bingata stencils has always been considered an art unto itself. Cutting the designs requires precision artistry and can take several months to complete.Thetsutsu-biki-zome method of dyeing is typically used for large items that can’t use a stencil, like celebratory furoshiki (a traditional Japanese gift wrap), curtains, stage curtains and banners. In this method, the resist and dye are applied freehand using a squeeze cone applicator or piping bag. This process requires intense concentration with the artist moving quickly and nonstop.

The process

The entire painstaking process—from the creation of the design to yarn marking, dyeing, weaving and finishing—are the product of a single pair of hands. Each example of Shuri-ori fabric is unique to its designer, giving them a level of freedom to express their own brilliance. After the the artisan conceives a design, they plot their patten using graph paper, setting up the outline and base for what will become the fabric used for kimono and other accessories such as fabric boards, cushion covers, decorative dust jackets for books and more.

Dyeing Once the design is set, the process begins with washing the thread to remove impurities and soften the strands—this step is very important to ensure that the dye is applied evenly. The thread is then colored using dyes distilled from indigenous plants such as Yeddow hawthorn, bark from fukugi trees and others. The dying/washing process is repeated until the desired color is achieved and the threads are finally dried outside to be untangled and unraveled.

Shuri-ori is woven fabric made of silk, cotton, hemp and ito-basho (fibers from a Japanese banana plant) that use traditional Shuri monori and kasuri weaving methods. Refined and sophisticated, it is said that during the era for the Ryukyu Kingdom, only those in the upper class were permitted to wear Shuri-ori. Among them, hanakura-ori (a style of Shuri weaving considered the highest level of weaving) was reserved only for those of the highest social status. The Shuri hanakura-ori fabric is used to make kimono that were worn in the summer by the queen and princess of the royal family.

Although some textiles are made with the hands of many, Shuri-ori is made by a single artisan.

Preparation

Warp tying is a process of marking the vertical threads (warps) stretched according to the design. Based on the design, the strings are prepared based on the number and length needed to weave a bolt of cloth. The threads are untied, aligned and stretched on the loom according to the pattern.

Weaving The actual weaving is said to be the final 20 percent of the entire process. Skilled artisans weave Shuri brocade by hand using a wood loom called takahata. The artist uses all hands and feet in a choreographed-like dance, moving the needle used to weave the weft (horizonal threads) back and forth between the warps. After the weaving, the brocade is washed, stretched out to dry and the fabric is complete.

At Suikara visitors can marvel over vibrant and intricately detailed kimono and fabrics. the museum, giving you a sense of the story behind bingata and Shuri-ori. Workshops are offered daily giving visitors the opportunity to weave their own fabric or color a pre-stenciled bingata. Magic 10 Miler

It’s time to start ramping up roadwork, fully break in those new running shoes and invest in a forehead-mounted GoPro—the Magic 10 Miler is on the horizon! Held on the second day of the Futenma Flight Line Fair (turn to p. 37 for more on the festival), this annual race will offer a truly “magic” experience at the begin ning of next month. Open to all participants island wide 12 years of age or older, competitors will be given a once-a-year opportunity to run on the runway while taking in the view of the static displays basking in the early morning light on Sunday, October 2. The race, which begins at 7 a.m., will start and end on the flight line, with the rest of the course following the perimeter of MCAS Futenma inside the gates. Awards will be given to first, second and third place in each division. Check-ins for the Magic 10 Miler will be from 5 to 6:30 a.m. on the day of the race, with a mandatory brief for all participants to be held at 6:30 a.m. Those interested can register for $40 by September 28 at 11:30 p.m. at mccsokinawa.com/adultsports. PADI Public Safety & Underwater Criminal Investigator Courses

If you have ever wanted to work with local authorities and be part of a scuba diving rescue team, conduct search and recovery dives and maybe even underwater criminal investigations, these are the courses for you!

Okinawa is one of the last dive bastions in the world. Healthy coral gardens, diverse sea life, incredible visibility—it’s no wonder throngs of people get dive certified during their stay. And with so many people learning to dive, instructors are in high demand. Remember the first time you took a breath underwater? Now you can help others experience that same sublime feeling by becoming a PADI Instructor through Camp Foster Tsunami Scuba’s PADI Instructor Development Course (IDC) starting October 10. Whether you want to become an instructor to enhance your career, supplement your income or ignite a lifelong passion of diving in others, this class will sharpen your dive demonstration skills and teach you how to control open water dives. After completing this two-part course, which consists of the Assistant Instructor course and the Open Water Scuba Instructor program, you’ll be ready to take the Instructor Examination, the final step towards earning a PADI Instructor certification. First on the docket is six holes of best ball—each player on the team plays his or her own ball throughout the round. An outspoken advocate of suicide prevention, Bryant was recently a speaker at Claritycon—an annual summit for advocates of youth mental health hosted by the Clarity Child Guidance Center.

There’s nothing like finding a new favorite food spot—especially when it’s a gem hidden in plain sight. By this, I mean that the subject of our review for this month—Original Fast Food—is only a mere 10-minute drive from Camp Foster Legion Gate (Gate 6). We were greeted by a spacious, thoughtfully designed interior and attentive owner, Ms. Reimi Delong immediately upon our arrival. A new establishment, she informed us that Original Fast Food had only opened a year ago. When I asked her what motivated her to open a restaurant, she earnestly explained that she had been inspired by the food she had while on a trip to the states.

The first dish we tried was the Chicken Over Rice, and while its name wouldn’t immediately suggest it, it has every delectable component of a burrito bowl. The tender grilled chicken was seasoned with a robust blend of Cajun spices and accompanied by crisp lettuce, tomatoes, pinto beans, a dollop of sour cream and, of course, cheese. I reveled in delight, as I had finally found a burrito bowl on this island worthy of inhaling.Sittingat the bar, we watched as Reimi-san prepared chicken wings coated in one of her three flavors—sweet chili sauce. These wings, the kind you daydream of starting your weekend with, were crispy from the deep fryer, yet still moist beyond the crunchy exterior and bursting with flavor. They maintained a perfect balance of sweet and spicy from the Thai chili sauce with a hint of garlic. The wings come in a six-piece or nine-piece set with three flavor choices—Cajun, Sweet Chili Sauce and Habanero.

There are not a whole lot of foodstuffs worth blocking out an entire day for, however, tacos happen to be one of them. And trust me when I tell you that Original Fast Food’s Beef Tacos are the tacos for Tuesdays. The main character in these tacos is the succulent garlic butter-enhanced beef that’s folded into lightly charred tortillas. The beef was sumptuous and seemingly melted in the mouth, while the charred tortilla provided a slight smokey flavor. As an option, the beef can be swapped for Cajun Chicken (the same chicken featured in the burrito bowl) or BBQ Pork. The tacos come in either a two or threepiece set and are served with a side of fries, which were crisp and perfectly seasoned. To top everything off, Original Fast Food offers a build-your-own smoothie where you pick two main ingredients like fruit, peanut butter or oats, and a mixer (milk, milk alternative or juice). I opted for a blend of strawberry and mango with pineapple juice as the mixer, which I found complimented the full-bodied proteins. I left the restaurant pleased, not only with the mouth-watering entrées but also by the incredible service rendered by Reimi-san. All of the food is served in to-go containers, primarily because most of her customers stop by for something quick, but there are plenty of tables to dine-in including a pretty expanse bar. Although I should note that parking is a tad limited. Reimi-san also informed me that orders can be delivered via Kukatsu, an Uber Eats-like service that delivers food for a small fee. And starting this month, she will be offering a lunch special on her Chicken Over Rice bowls, and on the 10th, 20th and 30th Original Fast Food will offer a wing special where you can get eight wings for ¥800. There are two Japanese holidays that fall in September, Respect for the Aged Day, or Keiro-no-Hi, celebrated on the third Monday of September and Autumnal Equinox Day, or Shūbun-no-Hi, celebrated on September 23. However, when Respect for the Aged Day falls on September 21, the day be tween the two holidays (September 22) is declared Kokumin-no-kyūjitsu (Citizens’ Holiday) and the week is then referred to as ‘Silver Week’. kinawa is well known as a subtropical island paradise with beautiful beaches,watersports such as diving, snorkeling, jet skiing and tons of water-related fun. Yeah, been there, done that, right? How about something a little different…like communing with nature while getting a good work out on a Okinawahike?and nearby islands offer ample hiking trails and opportunities for outdoor adventure that’ll make a cool dip in the ocean a much sweeter proposition. Following are a few personal favorite trails on Okinawa and neighboring islands where you can enjoy the island’s scenic beauty while working up a sweat.

Asumui Asumui is better known as Dai Sekirinzan—a park that provides several hiking courses offering breathtaking views of Hedo Point from above, trails that wind through fascinating limestone formations estimated to be hundreds of millions of years old and sprawling banyan trees believed to contain magical powers. Local legends state that Asumui is where the god Amamikiyo first set foot on the earth. Since ancient times, noro (priestesses) from Shuri Castle journeyed to Asumui to collect sacred water for purification ceremonies in the court. This practice stopped in 1938 due to instability followed by war. However, the practice began again in 1999. Asumui is also home to thousands of banyan trees which are known locally as gajyumaru. Since the area was sparsely populated during the war, it escaped the attention of bombs and bullets. Because of this, many of the sprawling banyans survived—a few are hundreds of years old. On Okinawa, the gajyumaru is considered to embody mystical energy. Also called himpun, or “barrier against evil,” these trees are believed to be able to block evil spirits from entering homes or villages. Locals believe that this concentration of trees will protect the area in the centuries to come.

Known simply as “Okuma” to those who have been there at least once, this 65+ year-old facility features pristine beaches, cabanas and an ample camping area for those wishing to stay a day or two (or three). Okuma is not only a beautiful place to spend time with family and friends; it can also serve as an excellent base of operations for exploring the northern reaches of Kunigami Village at your leisure—without having to worry about a 2-hour drive back to civilization after a 6-hour hike. Amenities at this joint-forces center include a small golf course, various water sports, hiking areas, a restaurant, an Exchange Express and more.

Taa Falls

Taa Falls, located on the Henan River in Ogimi Village (a hamlet north of Nago City), is an excellent place to “get your feet wet” so to speak. The forest surrounding the Henan River is home to numerous types of birds and countless other living beings which live in the nooks and crannies between rocks and the dense forest undergrowth of the river’s banks—some of which are endangered species that cannot be found anywhere else in the world. The trek up the river to reach the falls involves copious amounts of climbing and wading through the river’s cool, crystal-clear waters.

Hiji Falls, the largest waterfall on the main island of Okina wa, is also one of the most well-known to visiting Americans due to its proximity to Okuma Beach. Hiji Falls is approxi mately a 3-kilometer hike (roundtrip) from the camping area (and parking lot) located downriver from the falls. Path ways and stairs have been built so there is very little danger involved, making it a good trek for neophytes and younger (like elementary-aged) children.

A long, straight, dirt road that leads to the other end of the isle called Kabeeru offers an easy (because the island is pretty flat) hike with a breathtaking view greeting finish ers. From there, travelers can leisurely make their way back towards the port traversing “Romance Road,” (a scenic route that winds along the coastline) and stopping at Uppama Beach (which still has star sand), Shimaashi Beach, Ishiki hama, Tachihama, Ichajikihama and many more beaches on the opposite side of the island.

Mt. Gusuku is known to residents as “Tacchu,” and has been considered a sacred place since ancient times—one of the three “holiest” and most powerful spots on island alongside Sēfa Utaki in Chinen Village and the aforementioned Asumui near Cape Hedo.

Ie Island

Ie Island is a tiny islet with a permanent population numbering only in the thousands. The best hiking route on Ie Island consists of traversing the island and climbing to the top of 172-meter-high Mt. Gusuku.

Although its conical shape may suggest volcanic origin, it is theorized that the mountain was formed when older bedrock pierced the newer above due to tectonic movement. The rock that makes up the mountain is therefore several million years older than the rock that makes up the rest of the island.

Kudaka is a tiny islet with a circumference of only approximately 8 kilometers. However, this long and narrow island located off the coast of Chinen is considered to be one of the most beautiful places in the prefecture. According to local folklore, Kudaka was believed to be the first Ryukyu Island the goddess Amamikiyo created—one she crafted to mirror the beauty of heaven. To this day, certain parts of the island are forbidden to men and other special areas can only be entered by the highest-ranking noro priestesses. Not all parts of Kudaka are forbidden, however, and many are a different kind of “heaven on earth.”

Zamami is the second largest inhabited island in the small chain. For a rigorous hike on Zamami, Takatsukiyama Observatory located on the highest point of the island, offers ample rewards for hikers—a clear view of southern Okinawa on the horizon (weather permitting, of course).

Kerama Islands

The Kerama Islands are located a scant 32 kilometers southwest of Okinawa off Naha. Made up of 22 isles and islets, four of which are inhabited, the Keramas are immensely popular in the summertime for their pristine beaches and numerous world-class snorkeling and diving points. However, due to many of the islands’ mountainous (a relative term, of course) areas, the Keramas also feature several rigorous hikes that make a dip in the cool azure waters that much more pleasant.

Tokashiki Island is the largest and most populous isle in the Keramas. Rugged and hilly, the highest point of Tokashiki rises over 200 meters above sea level. Akamayama, the tallest peak on the island and most challenging hike, rises 227 meters above the ocean below and offers a stunning 360-degree view.

Aka and Geruma Islands also offer spectacular views with observatories such as Nishibama, Nakadake, Fukaji and Amagusuku. If you are quiet on either Aka or Geruma islands, you may run into a creature you would least expect to encounter on Okinawa—deer. Kerama deer were imported over 400 years ago from southern mainland Japan and are now permanent and protected residents of the island chain.

The Okinawan “banana spider” is the largest spider in Japan. However, this arachnid—which is actually known as the giant wood spider or o-jyorō gumo in Japanese and Nephila pilipes to scientists—is not the largest in the world. The female giant wood spider, which is an orb-weaver (a relative of the banana spider), has a max leg span of around 20 centimeters. The goliath birdeater tarantula of South America owns the honor of being the largest in the world—growing up to 30 centimeters from one tip of its hairy leg to the other on the opposite side and weighing up to 170 grams—usually reaching the same body mass of a hamster. While the giant wood spider is as impressive as it is intimidating, these spiders (along with other members of the orb-weaver family) are not aggressive in the least—they’re far more famous for their silk than they are for their fangs. Their webs can reach sizes of up to 2 meters in diameter or more and are quite stout. And unlike the somewhat fragile webs of other spiders, can last for weeks and even months. It is said that the silk used to build these webs is so strong, that it can trap small birds (which neither the giant wood spider nor the goliath tarantula actually eat).

Snakes

The best strategy is to leave the snake alone—even if you’re positively sure that they aren’t venomous.

Okinawa is home to a vast variety of reptiles, from the tiny gecko to venomous snakes such as the Okinawan habu, hime habu, Sakishima habu, and the non-venomous, but sometimes aggressive, akamata. Most habu that inhabit the Ryukyu Archipeago have triangular-shaped heads, narrow necks that broaden into a thick muscular body, and long hypodermic needle-like fangs. The Okinawan habu, or Protobothrops flavoviridis (which grow to lengths of 2.4 meters), can be distinguished by its yellowish-green color, which alternates with dark brown splotches on its back. The hime habu’s back is dark brown with gray or darker brown splotches; and the Sakishima habu has a dark gray back with yellow and orange markings. Akamata aren’t venomous so they don’t have fangs. Their heads don’t have the distinct triangular viper shape, and they have yellow, orange, and reddish bands alternating with dark brown patches on their backs. While the differences between species are distinctive, you probably won’t want to hang around for a closer look.

When you were a child, did you believe that the moon was made out of a lunar variety of Swiss cheese? Or, did the shadowy shapes repre sent the face of the “man in the moon?” In Japan, many children see a different shape on the surface of Luna: a rabbit. And not just a bor ing old rabbit, but a large lunar hare pounding rice into dumplings called mochi with a wooden hammer. Although the patterns on a full moon are pretty much the same throughout the world, oftentimes, people see different things depending on their country of origin. For example, people from parts of the world see a human face and others see a crab. Many Chinese see the same rabbit that Japanese children describe; only the hare is grinding herbs.

The people of Japan have been admiring the moon since ancient times, celebrating with moon-viewing parties called tsukimi during mid- to late-September every year. These parties were especially popular during the days of the Ryukyu Kingdom and took place high above Naha on the ramparts of Shuri Castle. While tsukimi were more solemn occasions during the days of old—a time in which farmers prayed to the moon for a bountiful harvest by offering mochi dumplings with pampas grasses—modern day tsukimi are a lighter affair for friends to enjoy the beautiful moon together.

Instructions 1. Whisk the oil, lime juice, garlic, paprika, cumin, chili powder and cayenne together in a small bowl.

4. In an oiled pan over medium-high heat, cook the mahi mahi fillets for about 4 minutes on each side (may vary depending on thickness).

2. Season the mahi mahi on both sides with salt and pepper.

3. Place fish and marinade in a large ziplock bag, then seal and let sit for 30 minutes.
