Well Beyond The Stoves Rick Stein’s hectic schedule has him crossing continents like other people cross neighbourhoods – yet decades on, nothing about his love of food and travel has diminished. It’s a stunning afternoon overlooking the ocean from ‘Rick’s Place’, the P&O style beach house at Bannisters boutique hotel on the NSW South Coast -bought and refurbished in 2009 by Rick and Australian wife, Sarah. Both look relaxed enough to be settling in for a holiday but their event-stacked schedule tells a very different story. “I thrive on it really. Though left to my own devices Sarah says I’d just stuff around and do bugger all!” Rick laughs, “but it’s endlessly interesting and we do relax.” This time Sarah laughs, explaining Rick considers the one night they recently spent in Melbourne as a break. “But it was such a lovely night,” Rick counters sincerely. These days it is rare to find Rick, a self-taught chef, behind the stoves at his restaurants. “Last time I did a service they were on tender-hooks, worried I’d do something wrong! I’m sure they were thinking ‘get the old man out of here’,” he laughs. Nonetheless he is busy enough travelling between restaurants, meeting with his teams talking business, writing books and working with Director/Producer, David Pritchard on their popular television series. Spanning two decades, their work headed the epic rise in cooking shows, although Rick credits the concept to David’s earlier work with chef, Keith Floyd. “Actually Keith 5

once said I stole all his ideas and, well, I probably did! It certainly never occurred to us to do studio cooking.” A naturally affable presenter, Rick’s genuine interest encapsulates the places and people he encounters, making the programs uniquely engaging. “It’s dead easy just to point out tourist things. You’ve really got to say what it means to you and what makes it special. When you do that, then it becomes interesting,” he explains.

Considering the stunning coastlines he has travelled, it’s hard not to feel a little chuffed Rick chose an Australian coast for his restaurant and hotel. Having holidayed in the area for years, it was Sarah who introduced Rick to this particular coastline. “So many tourist areas are exploited. It’s very nice to find somewhere real,“ Rick explains. “I was also very keen on the local seafood. When the opportunity came to take a share in Bannisters and my head chef from Padstow was keen to come to Australia, it all just seemed to fit.” As he has done in Padstow (UK), Rick captures the essence of Mollymook’s rural seaside location, attracting locals and out-of-towners with an appealing combination of boutique accommodation and simple local food. “There is something special about buying locally,” he says. Whilst simple dishes featuring locally grown produce is a fast growing trend on 6

menus worldwide, it is something Rick has enjoyed since childhood. “My mother was a simple but good cook and we always had fresh local fish. It’s still the best way,” says Rick. Whilst he believes every food movement is in some way necessary, the fashion for small overworked dishes popular in the 1980’s is one he’d rather not see again. “The day I woke up and thought I don’t have cook like this anymore was the day I started to do well!” With his enduring curiosity for food, Rick is content having no retirement plans. “What would I retire to? Everyday one is hungry. I take pleasure thinking what I’d like to eat and what I‘d like to cook for people. It’s an everlasting pleasure that just keeps renewing your enthusiasm.” A good thing, given Rick is soon to release his twentieth cookbook and a television series on India, before


heading to Germany to film then through Europe making another series – all while writing his memoir, ‘Under A Mackerel Sky’.
