Designer nights Meet Paul Kelly, one of the defining forces behind Sydney’s evolving bar and restaurant scene. It may not be something we think about often, but the venues that form a backdrop to our days and nights out can have a huge influence on everything from the amount of fun we have to our drinking habits. Thankfully, as Sydney’s liquor licensing laws have evolved over recent years in a bid to curb anti-social
drinking behaviour, the harbour city’s bar and restaurant scene has transformed to offer a more sophisticated range of options. A huge variety of exciting new restaurants and small bars have popped up all over the city in recent years, forcing many of the traditional larger venues to 5
transform to keep up. And, in an increasingly crowded scene, a unique ambiance is one of the most important ways a venue can stand out from its competitors: which is where acclaimed interior designer Paul Kelly comes in. With more than 15 years of experience and approximately 200 projects to his name, the founder of mcgrath.com.au

Paul Kelly Design has been at the forefront of reshaping the face of Australia’s bar and restaurant scene. Kelly says one of the biggest transitions he is seeing in the
industry is a move toward more female-friendly venues, with an emphasis on creating a welcoming ambiance and providing integrated drinking and dining experiences. “The future of beverage-focused businesses is targeting food, attracting women and creating a dining experience,” he says. “Issues with responsible service of alcohol have prompted this change in the industry … [There’s a] gradual but definite shift towards female comfort and food.” And Kelly is well placed to track the evolution of Sydney’s venues. He has worked on everything from designing the look and feel of acclaimed small bars such as the White Hart in Neutral Bay, to carefully reinventing some of

Sydney’s most well known and loved establishments including the recent $4 million refurbishment of the c1885 Oaks Bar and Grill. Other notable projects include the Star’s luxurious Black by Ezard and Sokyo restaurants; the Ivanhoe of Manly; the Bourbon in Potts Point; and Darlinghurst’s Supper Club. Paul has also worked on a number of national projects including Cargo Bar in Tasmania, Miss Moneypenny’s in Noosa and Tongue & Groove in Canberra, alongside several international projects including the reworking of a high-profile Shanhainese developers personal house. Paul hopes to do more on the international scene in the future.
Evoking everything from the glamour of a London gentlemen’s club to the coastal luxury of the Hamptons, the seduction of an exclusive Oriental den, or the timeless elegance of an Amalfi Coast restaurant, the themes of the venues Kelly has designed vary widely.
