LA CASITA IS A COMMUNITY’S AND FAMILY’S DREAM COME TRUE
When a community survey identified a need for more locally owned restaurants, particularly ones serving Mexican cuisine, Taryn Lawrence got to work building a home away from home.
“We need casual places in downtown Wilmington,” Lawrence says. “We still agree with that; the more of those little niche, hole-in-the-wall places, the better, especially for families who are looking to get away and have a casual stop to dine in this tourism area.”
Opening on Cinco de Mayo of 2017, La Casita Escondida, Spanish for “the hidden house,” met a need and fulfilled a dream.
“It was always kind of a pipe dream,” Lawrence says. “We love Mexico; we love going there. We love the cuisine, and obviously we love the drinks as well.”
La Casita now operates as a hidden gem in Wilmington’s historic downtown, focused on little details that serve up a big impact in its recipes.
Lawrence has been in the restaurant business since she was a teenager, working alongside her mother, Susan Lawrence, owner of Anchor Seafood.

“I’m a lifer,” Lawrence says. “I just love this industry. There’s nothing that compares to the hustle and bustle of the restaurant business.”
Not long after the survey results were released, a building near Anchor Seafood went up for auction. Taryn and Susan Lawrence bid on the building, tore much of it down and rebuilt it. They made efforts to keep the original footprint and reuse the original beams to maintain its character.
Lawrence says she put a lot of hands-on work into the reconstruction, and her mother was sort of the contractor for the project and leading the design of the rebuild.
A couple of years later, Lawrence and her husband, chef Sean Eckert, bought her mother’s portion of the enterprise. She runs the front of the house, and he manages the kitchen.
“Since he’s been here, the food has only become more phenomenal than it already
was,” Lawrence says. She says the attention to detail and the intricacy of the recipes, especially the sauces, makes La Casita stand apart from other Mexican restaurants.
“I think what makes us unique as a restaurant is the amount of time that goes into each dish, down to the sauces,” Lawrence says. “The chimichurri sauce is a house favorite. The salad dressing is a house favorite. Our customers are constantly asking for mason jars of our pickled items: pickled cabbage, pickled cucumber, pico de gallo. All of those items that make our dishes special, they’re asking to bring in jars back to their house.”
Frequently ordered menu items include a carne asada steak with chimichurri sauce, taco salad and carnitas pork, which is brined over a three-day process.
“Those recipes are special to us and our little secrets,” Lawrence says.
In the front of the house, Lawrence works to ensure all staff members are trained on making all the cocktail recipes Lawrence creates.

with the beach lovers. It is fresh mango puree, fresh strawberry puree, and we use a mango rum in there paired with the classic margarita breakdown as well as a base: the orange, the lime, the agave and triple sec. You can feel your
toes in the sand and the ocean in front of you when you're drinking it. And that's what we were hoping for when we made that cocktail.”
Other tequila-based cocktails are popular, too.
“We also offer Mexican mules, which is a twist on a Moscow Mule, but with tequila. We have a little fresh agave and fresh lime juice in there. So that pairs really nicely with our food,” Lawrence says. “We have a classic Paloma. ... We have a Coconut Crusher that has a nice 1800 Coconut
Tequila, with pineapple, coconut, lime and agave nectar that's nice as well, shaken up, so it has a little richness, creaminess to it.”
La Casita is tucked away on South Main Street, down a driveway between Anchor Seafood and Arthouse, a creative space in a former Greek revival church building. With just a small sign on the road, you might think advertisement for the space would be lacking, but Lawrence says things are just fine.
“We look around and we’re packed,” she says. “Food lovers are always willing to go on a hunt to find good food, and that’s what we’re hoping for. We’re close to downtown, but off the beaten path enough that you have to come and find us. It’s worth it.”
La Casita has seating for 42,
including table and bar seating. There are also a few swings next to the bar.
“We have a lot of kids that like to jump on the swings and try them out,” Lawrence says.
The restaurant is casual, with an eclectic collection of dining chairs and décor.
“When someone walks into our restaurant, I want them to feel at home. I always say the classic, ‘mi casa es su casa.’ My house is your house,” Lawrence says. “I want someone to walk in and just feel like they're in my little Mexican abode where they can have some comforting food, a nice, fresh cocktail and feel cozy and at home while they're eating and drinking.”

As the last snow melts away from the mountains and hillsides, spring launches into full motion by May with festivals intended to get you back out in nature. Whether your interest lies more with fishing or fantasy, there’s lots to see and do in the Green Mountain State.
Here’s a look at what’s happening around Vermont and some cocktails you can try at home to prepare for the frivolity and camaraderie.
Battenkill Fly Fishing Festival kicks off on May 1 and runs through May 4 in Arlington. It starts with a fundraiser cocktail party and art exhibition, followed by live performances from Kind on Bud on Friday and Mixed Roots on Saturday. Additionally, casting and fly-tying seminars led by the Northeast’s finest tyers will be available throughout the festival. Twenty-five participants will compete in the Battenkill Cup Fly Casting Championship for the trophy and an Orvis Fly Rod.

2 ounces mezcal
2 ounces lemon juice
1 ounce simple syrup
1 teaspoon finely grated ginger
1 Makrut lime leaf, crushed

Rim a large rocks glass by moistening the rim with a lemon wedge, then coat with the salt–sugar mixture.
Combine mezcal, lemon juice, simple syrup and ginger in a pint glass. Add ice and shake vigorously.
Pour the margarita into the salt-rimmed glass and garnish with a lime leaf and lemon peel.

Vermont’s capital welcomes spring in style with an array of Mayfest events that coincide with the return of the farmers market and outdoor dining. 2 cups full-fat coconut milk
1 1/3 cup pineapple juice
5 tablespoons sugar
1 ½ teaspoons orange flower water
6 ounces silver rum
Edible flowers to garnish
Combine coconut milk, pineapple juice and sugar in saucepan over medium heat, stirring constantly with a whisk to dissolve sugar. Continue til simmering.
Remove from heat and add orange flower water. Cool til close to room temperature, about 20 minutes.
Pour mixture into standard ice cube tray. Freeze until solid, about 5 hours, or overnight.
To make a cocktail, combine 5 cubes (½ cup of frozen mixture) with 1½ ounces of rum in a blender. Pulse until uniform and slushy.
Garnish with edible flowers.
