What a great year it has been! Seems like just yesterday, we were starting the collaboration of our Flavors of Belize Cookbook and what a whirlwind of a time it has been. We've been enjoying the ride and every place it has taken us; a fantastic journey and we are thrilled at the astounding reception we received. The truth of the matter is though, this reality of our cookbook would not have been possible if it weren't for the Flavors of Belize Magazine. The magazine that started it all. It's now our third edition, and we are just bursting at the seams with joy at the success this little guide has brought with it. There is no shortage of delicious and inspiring foods in Belize and every meal is a unique and new discovery. With the release of the Cookbook, we wanted to ensure that the Guide was everything that has come to be expected of it, and more. Featuring a host of new and previous listings, the best

restaurants that Belize has to offer featuring menus from cultures that live all across our country. The foods, the people, the destinations, the atmosphere will all leave you hungry for more. When you first flip through your guide you'll find that we have expanded our listings and widened our range even more, including more information on Belize and it's service providers. Whether it be at one of our spectacular restaurants on the festive island of San Pedro or a fun, open and friendly bar down in Placencia, you'll find a spot that's perfect for you. Belize enjoys a festive palette of diverse people. Belizean society today is ethnically diverse and culturally rich. The cultures that are spread across the country's regions have combined their history and traditions with the natural offerings of Belize to produce food that is no longer defined in limited terms. The influence of our Central American neighbors and their own multicultural population compounded by the arrival of visitors with discerning palates has resulted in a higher standard of cooking throughout. The Mexican, Guatemalan, African, Caribbean, Mayan, GarĂ­funa, English, Chinese, Indian, Lebanese and American influences make it almost mandatory that Belizean cuisine is not relegated to only one or two dishes that have managed to gain the most popularity. It is impossible now to simply answer, when asked, that rice and beans is the staple Belizean dish. Instead, a few more questions need to be asked. What part of Belize? Which cultural group? What time of year?

The official language of Belize is English, but while visiting Belize you'll be sure to hear other languages spoken throughout, such as Creole, a unique variation of English, only found in our country. Spanish is the main language in towns that border Guatemala and Mexico to the north, and it's possible to run into several other languages such as Mayan, Garifuna, Chinese and Lebanese. One thing that's for sure is no matter what language your speak or what ethnicity you come from, we all have something in common ... Belizean people are known for their warmth and friendliness and we welcome visitors all year round!

As a little girl I grew up watching my mama Elvia cooking recipes that were handed down to her. Recipes you wouldn't find in cookbooks or magazines and certainly not on the Internet. She continued our family traditions with recipes that were passed down to her and she in turn passed them down to me. Our traditional Maya dishes like a robust relleno or a sweet and tangy escabeche, laden with pungent onions and native Mayan spices, to name a few. As a chef, I treasure those recipes and I honor the old ways of Belizean cooking. I see myself as a steward, a guardian of those authentic cooking traditions which I like to call Eclectic Maya. It is just one of the many Flavors of Belize. Instead of using too many European or Eastern spices and herbs, I make every attempt to use traditional local spices and techniques passed down from our Mayan ancestors. Ingredients such as native oregano and epasote help give my dishes a uniquely Belizean flavor. And in place of conventional meats, I like to include fresh seafood such as shrimp, conch and lobster to give even the most mundane dishes a distinctly Belizean twist. Coupled with fresh-cut plantains or sweet coconuts, dishes such as Mole, Pibil and Sere come to life in my kitchen, not because of any culinary skill I possess, but because I realize that we have something very special here in Belize. We are tied to the land and to the sea. And our rich culture and traditions remain largely undiminished. All we have to do is embrace our naturual resources and USE THEM! I hope that by honoring the past I can combine old and new to create very special dishes. I hope that I can remind people of this great culinary tradition that was born in one of the oldest and greatest civilizations the world has ever known. And I hope that I can, in some small way, use what I have learned to contribute to the Flavors of Belize. February San Pedro Carnival: A three-day carnival to celebrate Easter Season. This yearly celebration starts three days before Ash Wednesday. March La Ruta Maya Canoe River Challenge Race: A grueling, multi-day canoe race traveling a perilous river route across the country of Belize. The route runs west to east along the Macal and Belize Rivers, once the only link between beautiful San Ignacio, in the foothills of the Maya Mountains, and the bustling port of Belize City. Chocolate Week: Hosted by Cotton Tree Lodge, this week’s activities are centered on the history and cultivation of cacao and its transformation into craft chocolate. Maya Day: Held in the quiet area of Tumul K’in, Blue Creek Village, this day highlights the unique culture being preserved down south. April San Pedro Lagoon-Reef Eco-Challenge: This 42-mile, two-day kayak race starting on the lagoon side of Ambergris Caye, through the many lagoons in the Northern Ambergris Caye area, up to Bacalar Chico, then down to Robles Point, where all teams camp. May Cashew Festival: Held in Crooked Tree Village, this Festival celebrates the cashew harvest season, where live Punta music, cashew wine, desserts, Caribbean style dishes and games are the main attractions. National Agricultural & Trade Show: This trade show is held annually in our capital city of Belmopan. It highlights agricultural diversification, rodeo, livestock, handicraft displays, music, games, and food. Toledo Cacao Festival: The Festival opens with a wine and chocolate evening, featuring local and international wines and chocolate based cocktails. Saturday brings you the Taste of Toledo cookery and craft fair, with chocolate demonstrations and a host of cacao related activities. Monkey River Festival: This is the country’s premiere Creole event and is a fun festival with traditional games for adults and children. June San Pedro, Placencia and Caye Caulker Lobster Festivals: In celebration of the opening of the lobster season, these three locations offer a week full of activities. A wide array of dishes is showcased and activities such as fishing tournaments, bicycle races and social events take place. July Pibil Fest: Held in the village of Progresso in the Corozal District, this festival celebrates the Maya culinary tradition of cooking pork. “Pibil, ” meaning “buried, ” refers to the tradition of wrapping the pork in a banana leaf, then burying it in a fire pit for roasting.


Belize International Film Festival: This festival showcases Central American and Caribbean films. August International Costa Maya Festival: Held in Ambergris Caye. The festival hosts Central American and Mexican music groups, as well as cultural dances, international cuisine and arts and crafts. September Carnival Road March: This yearly march through the streets of Belize highlights our many cultures and history. September 10th: This public and bank holiday is the celebration of the Battle of St. George’s Caye Day. Official ceremonies, citizens’ parades and street festivals are held nationwide, which include food, live music and a re-enactment of the actual site. September 21st: The official Independence Day ceremonies and parade are held. This public and bank holiday is the celebration of the country’s Independence. Official Independence Day ceremonies and parades are held as well as numerous cultural, religious and sporting events. November Battle of the Drums: A celebration of Garifuna music and culture with live performances by some of the foremost musicians at work today. Garifuna Settlement Day: November 19th marks the arrival of the Garifuna people to Stann Creek and is mainly celebrated in Southern Belize. The reenactment of their arrival is the main attraction, with religious, cultural and parade activities continuing for the rest of the day. December Holiday Boat Lighting Parade: During the holiday season, boats are decorated and sail from Boca del Rio to Coconuts Hotel in San Pedro. Seafood Wontons

Riverside Tavern, Belize City

Ingredients

½ cup shrimp, peeled, deveined ½ cup fish filet ¼ cup carrots ¼ cup onion 2 cloves garlic 2 tablespoons cilantro ½ teaspoon habanero pepper, deseeded ½ cup mushrooms 1 egg 1 tablespoon soy sauce Salt and freshly ground black pepper, to taste 1 teaspoon sesame oil 2 tablespoons cream cheese 8 wonton wraps Directions

Mince shrimp, fish, carrots, onion, garlic, cilantro, habanero and mushrooms in food processor. Combine with an egg to bind together. Add soy sauce, salt, black pepper, sesame oil and cream cheese to mixture and combine. Place wonton wrap on prep table and place one tablespoon of seafood mixture inside each wrap. Wet edges of the wrap with water and bring all corners together to meet and form a pocket or triangle shape wrap. Place prepared wontons into a deep fryer at high heat for 3 minutes or until golden brown. Serve on a bed of shredded lettuce. Makes 8 wontons Lissette’s Secret Sauce is produced locally on the Gallon Jug Estate, Orange Walk District. This may be substituted with a spicy, sweet and sour sauce.

Belize Recipes Although I knew very little about Belize recipes, I love learning about other cultures and foods in other countries. I treat cookbooks as not only a source for great, new recipes but as a way to learn about places that I’ll probably never visit. When I learned about Flavors of Belize The Cookbook: An Ancient History, Diverse Culture, Exotic Cuisine, I was instantly intrigued. Belize is located in Central America so it only makes sense that some of their recipes would have a Caribbean flavor. What I didn’t expect was that this Belize cookbook includes recipes from cultures like the Maya, British, Mestizo, Creole, Chinese, Lebanese, Garifuna and more. There are over 120 different recipes included. Flavors of Belize Recipe chapters include Starters, Soups, Seafood; Pork, Chicken, and Meat; Salads and Vegetables; Breads, Grains, and Legumes, Finishing Touches and Desserts. Each chapter begins with a look back into the history of Belize and an explanation of the different cultures that create a foundation of Belizean heritage. Each alternating page in the cookbook is a full page photograph which makes this cookbook a real joy to read. Photographs are from renowned food photographer Matt Armendariz. The recipes themselves are quite varied in experience level. I found a number of recipes that could easily be prepared by someone without a lot of experience in the kitchen (like the Habanero Salsa). Also included are recipes that are more challenging including the Lobster Robert and the Tamales. This cookbook has a wonderful selection of recipes you can enjoy at every meal of the day. You may need to head to a larger grocery store or ethnic market for some of the ingredients needed in Flavors of Belize. I know that my grocery store doesn’t carry things like chaya leaves, red racado, or cow foot. Many of the recipes can be prepared without ethnic ingredients and I’m looking forward to trying the Pork Chops with Pineapple Salsa and the Maya Chocolate Cake. Lobster and Avocado Salad

Red Ginger Restaurant, Ambergris Caye

Ingredients

3 medium lobster tails 4 cups mixed greens 6 tablespoons red bell peppers, deseeded, diced 1 cup heart of palm, sliced 1 avocado, sliced Directions

Boil lobster in salted water for 20 minutes. Remove and place in an ice bath. Remove meat from shell and cut into bite-size pieces. In a bowl, gently toss mixed greens, bell peppers and hearts of palm with the lime chili vinaigrette. Serve mixed greens with lobster and avocado on top and add a little more vinaigrette, if desired. Drizzle balsamic reduction on top. Lime Chili Vinaigrette

3 tablespoons chili powder 1 tablespoon dijon mustard ½ cup fresh lime juice ½ cup red wine vinegar 1 cup olive oil 1 tablespoon lime zest Salt and freshly ground black pepper, to taste Whisk chili powder, mustard, lime juice and vinegar. Incorporate olive oil slowly to emulsify. Add lime zest and season with salt and pepper to taste. Balsamic Reduction

1 cup balsamic vinegar ½ cup sugar

Boil gently, stirring occasionally until reduced to ½ cup. Serves 3 to 4
