Coconut Popcorn Snowballs Popcorn plays with peppermint and coconut for some wintertime fun and flavor! Yield: 8 (4-inch) balls 2 cups shredded or flaked sweetened coconut 3 quarts popped popcorn 4 tablespoons (1/2 stick) butter or margarine 3 cups miniature marshmallows 1 teaspoon coconut or vanilla extract 8 candy canes or candy cane sticks, about 3-4 inches Directions: Place a large sheet of wax (or parchment) paper over a work surface. Spread coconut onto paper. Spray a large mixing bowl lightly with cooking spray and place popcorn inside. In a medium saucepan, melt butter over low heat. Stir in marshmallows and stir until marshmallows are melted and mixture is smooth. Pour over popcorn and mix well until coated. Spray hands with cooking spray and press firmly to form into balls. Place balls on coconut and roll and press coconut to coat. While holding popcorn ball, gently press a candy cane into each ball. Serve immediately or wrap individually in plastic wrap for storage. Baked Brie with Pecans and Cranberry Orange Chutney Recipe courtesy of the American Pecan Promotion Board Cook time: 24 minutes Servings: 8 1 bag (12 ounces) fresh cranberries 1/2 cup maple syrup, plus 1 teaspoon for garnish, divided 1/2 cup water 1 orange, zest and juice only 1 teaspoon freshly chopped thyme, plus additional for garnish, divided 1 teaspoon freshly chopped rosemary 1 tablespoon bourbon (optional) 1 round brie (13.4 ounces) 1/2 cup roasted pecan pieces crackers /toasted bread apple slices
Directions: Preheat oven to 350 F. Line baking sheet with parchment paper or silicone baking mat. In medium saucepan over medium-high heat, bring cranberries (reserving some for garnish), 1/2 cup maple syrup and water to boil. Reduce heat to medium-low and cook, stirring occasionally, until cranberries pop and mixture thickens, 8-10 minutes. Remove cranberry mixture from heat and stir in orange zest, orange juice, 1 teaspoon thyme, rosemary and bourbon, if desired. Place brie on parchment-lined baking sheet. Bake 5-7 minutes, or until inside of cheese softens while outside remains intact. Transfer brie to serving platter and top with chutney and toasted pecans. Drizzle remaining maple syrup over brie and garnish with remaining fresh thyme and reserved cranberries. Serve with crackers, toasted bread and apple slices.
Pecan Snack Mix with Cranberries and Chocolate Recipe courtesy of Jess Larson and the American Pecan Promotion Board Prep time: 10 minutes Cook time: 5 minutes, plus 10 minutes cooling time 1 cup pecan halves 1 cup rice squares cereal (wheat or cinnamon) 1/2 cup pretzels 2 tablespoons unsalted butter 1 tablespoon brown sugar 1 1/2 tablespoons pure maple syrup 1/2 teaspoon kosher salt 1/4 teaspoon ground nutmeg 1/2 cup dried cranberries 1/2 cup dark chocolate chips Directions: In large, microwave-safe bowl, add pecans, rice squares cereal and pretzels. In small, microwave-safe bowl, add butter, brown sugar, maple syrup, salt and nutmeg. Microwave butter mixture 1-2 minutes until melted then pour over dry mix. Toss well to combine. Microwave snack mix in 45-second intervals, about 4-5 intervals total, until mix is fragrant, golden and toasty. High school district offers limited open enrollment News release The El Dorado Union High School District recently announced that limited open enrollment at El Dorado, Ponderosa and Union Mine high schools for the 2024-25 school year will be offered to incoming ninth-grade students who reside within the El Dorado Union High School District attendance boundaries. The enrollment projection for the school’s permanent capacity will allow for 35 transfers at El Dorado, Union Mine and Ponderosa. Applicants may obtain the limited open enrollment request packets at the front office at each high school within the district, online at eduhsd.k12.ca.us/Resources/ Student-Transfers or at the district office located at 4675 Missouri Flat Road, Placerville. The district will consider only those request forms submitted during the limited open enrollment period (now through Jan. 31, 2024) with requests received no later than 4 p.m. on the final day.
The district will perform a computer-generated random selection from all of the valid requests received by the enrollment deadline. A list will be developed based on this randomized numerical ranking and the first 35 requests for El Dorado High School, Union Mine High School and Ponderosa High School will be offered enrollment at their requested site. If one of the initial 35 requests should decline the offer of enrollment, then the next request on the ranked list will be offered enrollment. Applicants should thoroughly read the instructions for limited open enrollment for additional information regarding submission of forms, district policy regarding siblings, sports eligibility and parent/ guardian responsibility for transportation to and from school. Equine When Winter Comes Here are some tips so you’ll be know what to do when it gets cold and snowy. Start the winter season off right with these six practices every day: 1. Provide your horse with warm water. (45º to 65º F.) Clean the ice out of the water trough regularly to ensure that your horse has all the drinking water it needs. 2. Feed additional hay during extreme cold. A horse eats typically 2% of its weight in food. If a horse weighs 1,000 lbs, then it will consume 20 lbs. of food a day during the warmer period of the year. However, during the winter, the rate of food needed can increase to 3% for most horses (25-30%). 3. Make sure there is access to shelter. Your horse will want somewhere that it can retreat to get away from the snow and rain, somewhere it can stay dry and warm. 4. Perform regular hoof care. If your horse is out in the pasture all day, check its hooves several times a day to make sure no ice or snow clumps are building up. Lumps can cause significant pain and damage to a horse’s hoof. 5. Assess your horse’s body condition regularly. 6. Evaluate your stable’s stability and ventilation.

A: In a forensics lab! When Assembly Bill 96 was signed (now Fish and Game Code section 2022), it made the commercialization of ivory and rhinoceros horn illegal in California, with limited exceptions. Passage of AB 96 prompted a number of dedicated wildlife officers, legal staff and a wildlife forensic specialist to work on issues related to the illegal trade of ivory and rhinoceros horn. The law also created funding to support the creation of the California Department of Fish and Wildlife Genetics Research Laboratory. The laboratory staff are federally certified in the morphological or structural identification of ivory using physical and chemical characteristics. Forensic specialists utilize these techniques to compare against a database of known ivory specimens (tusks and teeth) from ivorybearing species as well as synthetic ivory items (bones, plastics, resins, etc.) to help identify suspected ivory items. Since the passing of AB 96, CDFW’s wildlife forensic “Digging for Gold!”

Q: What’s the purpose of putting tags in salmon that are released from hatcheries? A: CDFW implants millions cation a few years later, CDFW scientists collect that important information. The fish are about five months old, living and growing in a hatchery raceway, when they’re brought in for tagging. The adipose fin on the fish (between the dorsal fin and tail fin) is also clipped, which is a visual indicator of which fish have the metal tags and which ones do not. The tagging happens at several CDFW hatcheries each year. At the Nimbus Fish Hatchery, east of Sacramento, about a million fish are tagged annually.
