Rim a martini glass by running a lemon wedge around the rim and dipping it into the crushed candy canes. 2. Fill your cocktail shaker with ice, add your vanilla vodka, crème de menthe and peppermint schnapps and shake vigorously until chilled. 3. Strain it into your prepared glass and garnish with a candy cane.

1. Make jelly and chill until set. Cut sponge into 2.5cm cubes and place in the bottom of 6 large dessert cups. Add a layer of raspberry jam above the sponge cake layer. 2. Combine sweet cherry and orange juice, sprinkle over cake and jam layers and leave until the liquid is absorbed. Chop jelly into small pieces. 3. Add a jelly layer, followed by a custard layer then a cream layer and repeat till dessert cups are almost full. 4. Finish with cream and fresh raspberries after being chilled.

Spicy Roast Chicken HERE IS A QUICK AND EASY ROAST CHICKEN RECIPE THAT HAS A SPICY TWIST.

METHOD:

INGREDIENTS: 1 whole chicken 4 tbsp butter 1 head of garlic 1 lemon 1 tsp paprika Salt and pepper 2 tbsp chopped fresh rosemary

1. Zest the lemon and crush all of the garlic cloves from the head of garlic. Mix these together with the butter, lemon zest, paprika, rosemary and a good pinch of salt and pepper. 2. Rub the butter all over the breasts, legs and wings, as well as inside the cavity and some of the butter mixture under the skin. Season well. Cut the lemon into quarters and pop into the cavity and then bind the legs with kitchen string. Tuck the wings into the leg joints. 3. Heat the oven to 180°C. Cook chicken in a casserole dish, breast side up, for 60–80 minutes or until the juices run clear when you cut into the thigh. 4. Allow to rest for 10 minutes before carving. Can be served with roasted potatoes, beans and salads.

Fluffy, flavour-filled pancakes CHRISTMAS PANCAKES ARE A DELIGHTFUL AND FESTIVE BREAKFAST OR BRUNCH OPTION FOR THE HOLIDAY SEASON. HERE’S A RECIPE FOR CHRISTMAS-THEMED PANCAKES THAT YOU CAN PREPARE WITH EASE.

INGREDIENTS: For the pancakes: 1 cup plain flour 2 tbsp sugar 1 tsp baking powder ½ teaspoon baking soda ¼ teaspoon salt 1 cup milk 1 large egg 2 tbsp unsalted butter, melted ½ tsp vanilla extract For the Christmas twist: ¼ cup white chocolate chips Zest of 1 orange ½ tsp ground cinnamon METHOD: 1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. 2. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. 3. Pour the wet ingredients into the dry ingredients and stir until just combined. 4. Gently fold in the white chocolate chips, orange zest, and ground cinnamon. 5. Heat a non-stick fry pan over medium heat and lightly grease it with butter or cooking spray. 6. Pour ¼ cup of the pancake batter onto the fry pan for each pancake. Cook until bubbles form on the surface, then flip and cook until the pancakes are golden brown on both sides. 7. Repeat the process for the remaining batter. Serve your Christmas pancakes with a dusting of powdered sugar, a dollop of whipped cream, fresh fruits or orange zest for garnish. You can also drizzle maple syrup over the top for added sweetness. Feel free to get creative with your Christmas pancake toppings. You can use whipped cream to create Santa Claus faces, add a sprinkle of green and red coloured sugar for a festive touch, or even use cookie cutters to shape the pancakes into Christmas trees or stars. Cinnamon Rolls CINNAMON ROLLS CAN MAKE A PERFECT MORNING TREAT OR DESSERT ON CHRISTMAS DAY. FILLED WITH CINNAMON AND FROSTED WITH CREAM CHEESE, THEY MAKE A DECADENT TREAT THAT WILL BE A HIT WITH YOUR GUESTS.

INGREDIENTS: For the dough: 2 cups warm milk ½ cup sugar 110 g unsalted butter, melted 2¼ teaspoons active dry yeast 5 cups all-purpose flour 1 tsp baking powder 2 tsp salt For the ﬁlling: ¾ cup brown sugar 170 g unsalted butter, softened 2 tbsp ground cinnamon For the frosting: 115 g cream cheese, softened and cubed 2 tbsp unsalted butter, melted 4 tbsp milk 1 tsp vanilla extract 1 cup powdered sugar

METHOD: 1. To make the dough, whisk the warm milk, sugar and butter and sprinkle the yeast evenly over the milk mixture. Stir and let it sit in a warm place for about 10 minutes until the yeast has bloomed. 2. Add four cups of flour to the mixture and stir with a wooden spoon until combined. Cover the bowl with a kitchen towel or cling wrap and let rise in a warm place for one hour until it has nearly doubled. 3. While the dough rises, grease two 23 cm round baking pans with butter and set aside. Prepare your filling by combining the brown sugar, butter and cinnamon until well combined.

4. Uncover the dough, add the remaining flour, baking powder and salt and stir well before turning out the dough on a floured bench. Knead the dough for 10 minutes, adding more flour as necessary until the dough doesn’t stick to the bench or your hands.

7. While they are rising, preheat your oven to 180°C.

5. Roll the dough out into a large rectangle about 1 cm thick. Spread the filling evenly over the dough, and starting from one short end, roll the dough into a log and pinch the seam closed, placing it seam side down.

9. While baking, make the frosting by whisking together the cream cheese, melted butter, milk and vanilla extract until smooth. Gradually add the powdered sugar until you have reached your desired consistency.

6. Using unflavoured dental floss or a knife, cut the log into even rolls, around 8 cm thick, and place six rolls into each pan. Cover with a kitchen towel

10. Once the rolls have finished baking, let them cool slightly for 10 minutes before spreading the icing. Divide them up and enjoy!

A White Elephant gift exchange will bring extra fun to your Christmas functions and can be an entertaining alternative to the classic Secret Santa game. White Elephant, also known as Yankee Swap or Dirty Santa, is a popular Christmas game where everyone tries to leave with the best gift, whether they pick it or steal it from someone else. HOW TO PLAY: 1. Each player brings one wrapped gift to add to the pile. e night’s organiser should decide Th the type of gifts allowed. Whether that be sentimental, gag gifts, regifting, or weird, the choices are endless, and it’s up to you as the host to decide what your group would have the most fun with. 2. Players draw numbers to decide what order they will open their gift in. 3. Players should sit in a circle around the gifts. T o make things run smoother, it’s best to have people sit in the order they will pick their gift. 4. The first player will select their gift and open it. Make sure everyone can see what they get. 5. The following players can choose to take a wrapped gift from the pile or steal another player’s gift. Anyone who gets their gift stolen this way can do the same — choose a new gift or steal someone else’s. o keep things moving, there are some T limits on the gift stealing. •A gift can only be stolen once per turn, so players who have their gift stolen will have to wait to get it back. •A fter three swaps, the turn automatically comes to an end.

6. After all players have had their turn, the first player gets a chance to swap their gift for any other opened gift. Anyone whose gift is stolen may steal from someone else. The game ends when someone declines to steal a gift. or this last turn, the three-swap rule F doesn’t apply. You can keep stealing and swapping until someone doesn’t want to.

This works best when you’re with a group of people who like to get in on the joke, that way you can all have a bit of fun with it and fight for some wacky gifts. Maple Honey Mustard Glazed Ham TEMPT YOUR TASTE BUDS WITH THIS DELICIOUS GLAZED HAM RECIPE.

METHOD:

INGREDIENTS: 100 g (½ cup, firmly packed) brown sugar 80 ml (⅓ cup) maple syrup 80 ml (⅓ cup) honey 1 tbsp dijon mustard 1 (about 8 kg) whole leg ham, on the bone Whole cloves, to stud

1. Stir the sugar, maple syrup, honey and mustard in a bowl until the sugar dissolves. 2. Preheat oven to 170°C. Line a large baking dish with 2 layers of non-stick baking paper. Place an oven shelf in the lowest position. 3. Use a sharp knife to cut around the shank of the ham, about 10 cm from the end. Run a knife under the rind around the edge of ham. Gently lift the rind off in 1 piece by running your fingers between the rind and the fat. Score the fat in a diamond pattern, about 5 mm deep. Stud the centres of the diamonds with cloves. Transfer to prepared dish. 4. Brush one-third of the glaze over the ham. Bake, brushing with glaze every 25 minutes, for 1 hour 30 minutes.

I don’t know about you, but I always wanted to ride the Polar Express as a kid just to experience that amazing hot chocolate. This heartwarming classic’s simple message of believing will keep the kids believing in Mr Claus. And honestly, you need to watch it for the hot chocolate scene alone.

Like Home Alone, this trilogy’s first one is the best. Divorced dad Scott Calvin, portrayed by Tim Allen, accidentally becomes Santa Clause after he puts on his jolly red suit on Christmas Eve. We follow his hilarious transition into Santa himself as he navigates his new role and look. It’s sure to keep the kids laughing along.

While the whole trilogy is a must-watch, nothing beats the first Home Alone movie. When Kevin McCallister is forgotten on his family’s Christmas vacation, mayhem ensues when two burglars try to rob his house.

Jim Carrey transforms himself into the grouchy and greenfurred Grinch who is hellbent on destroying Christmas for the Whos in Whoville. The Grinch despises the holiday season and schemes to steal their Christmas and ruin the festivities.

How lovely is it when you arrive at someone’s home and are greeted by their stunning Christmas wreath, proudly hanging at their front door like a masterpiece staring you in the eyes?

I think it’s impressive. I love it, I love them, but I also love Christmas. However, doors aren’t the only place Christmas wreaths are adorning spaces.

So, in saying that, let’s dive into a stepby-step guide as if you were Santa making your way down a chimney with grace, calmness and a touch of magic.

Remember to personalise your wreath to match your holiday décor and style, and be creative with your colour schemes, themes, and materials to create a wreath that suits your home. MATERIALS YOU’LL NEED: Wreath base: You can use a pre-made wreath base purchased from a craft store or create your own using materials like a wire coat hanger. Greenery: Gather fresh or artificial greenery like pine branches, or eucalyptus.

Decorative additions: Collect ornaments, pine cones, bows, and any other decorations you’d like to include — be as creative as you like. Wire: You’ll need this to attach the greenery and decorations to the wreath base.

Pruning shears or wire cutters: For trimming and cutting the greenery and wire. Ribbon or string: This is optional, but can be used for hanging the wreath and used within the design.

STEPS: Prepare your work area: Lay out all your materials and tools in a clean and well-lit workspace. Select and trim greenery: Trim your greenery into smaller, manageable pieces. You’ll want them to be around 15cm to 20cm long. Attach greenery to the base: Take a piece of greenery and attach it to the wreath base using wire. You can either wrap the wire around the base or use floral pins to secure it. Overlap the greenery slightly as you go around the wreath base. Add decorations: Once you have a base layer of greenery, start adding your decorative items. Secure these items to the wreath using wire or hot glue if you’re working with an artificial wreath. Create a focal point: Consider placing a larger decoration or bow at the top, bottom, or centre of the wreath to create a focal point. Fill in gaps: Continue adding greenery and decorations, filling in any gaps or bare spots as you go along. Make sure the wreath looks balanced and full. Check for symmetry: Step back and check for symmetry and balance in your wreath. Adjust as needed. Secure loose ends: Once you’re satisfied with the arrangement, make sure all wire ends are securely fastened and trim any excess. Add a hanging loop: If you’d like to hang your wreath, attach a loop of ribbon or string to the back of the wreath for hanging. Hang and enjoy: Find a suitable spot to hang your beautiful Christmas wreath, whether it’s on your front door, above the fireplace, or as a centrepiece on your dining table.

SPIKED HOT COCOA Ever wanted to experience a hot chocolate as good as the ones in The Polar Express? Then this boozy alternative is exactly what you need to accompany you on your next festive movie marathon. Serves two. INGREDIENTS: 2 cups milk ½ cup heavy cream ¼ cup sugar ¼ cup unsweetened cocoa powder ½ cup chocolate chips or chunks ½ tsp vanilla extract A pinch of salt ½ cup of either Baileys, peppermint schnapps, Kahúla or bourbon (adjust to taste) TO SERVE: Whipped cream Mini marshmallows Crushed candy canes Shaved chocolate METHOD: 1. Combine the milk, cream, sugar, cocoa powder, chocolate chips or chunks, and salt in a medium-sized saucepan. 2. Heat the mixture over medium-low heat, stirring constantly until the chocolate is melted and the mixture is hot, but not boiling. 3. Remove from the heat, stir in the vanilla extract, and add your choice (or choices) of liqueur. 4. Serve in two mugs, and top them with whipped cream and your choice of marshmallows, candy canes or chocolate shavings.

MAPLE ESPRESSO MARTINI Inspired by Buddy’s extremely sweet coffee from Elf, this espresso martini features all the fix-ins that Buddy would want. Perfect to pair with some chocolate spaghetti (or maybe you could just watch him eat that in the film, your choice). Serves one. INGREDIENTS: 45 ml vanilla vodka 30 ml coffee liqueur 30 ml freshly brewed espresso 30 ml maple syrup (adjust to taste) Ice Red and green m&m’s to garnish Crushed candy canes to garnish (optional) METHOD: 1. In a cocktail shaker, add the vanilla vodka, coffee liqueur, espresso, maple syrup and ice. Shake vigorously until well chilled. 2. Strain the cocktail into your glass, and top with three m&m’s as you would with coffee beans. Or,, add some crushed candy canes too and make Buddy proud.

This very green cocktail is your perfect accompaniment with your next rewatch of everyone’s favourite holiday classic, How the Grinch Stole Christmas. Serves one. INGREDIENTS: 60 ml Midori melon liqueur 30 ml lemon juice 15 ml sugar syrup 1 maraschino cherry Red-coloured sugar Ice METHOD: 1. Rim your glass of choice by running a lemon wedge around the rim and dipping it into a plate full of red-coloured sugar. 2. Fill a cocktail shaker with ice and add the melon liqueur, lemon juice and sugar syrup to the shaker. 3. Shake vigorously until chilled, and strain into your prepared martini glass. 4. Garnish with a maraschino cherry. Drink responsibly and enjoy.

METHOD:

A CLASSIC GINGERBREAD RECIPE TO BRIGHTEN YOUR CHRISTMAS. INGREDIENTS: 125 g butter room temperature ½ cup brown sugar ½ cup golden syrup 1 egg yolk 2½ cups plain flour ½ tsp ground nutmeg 1 tsp mixed spice 1 tbsp ground ginger 1 tsp bicarbonate of soda 1 egg white 1 tsp lemon juice 1½ cups pure icing sugar sifted

1. Beat butter and sugar in a small bowl with an electric mixer until combined then beat in the golden syrup and egg yolk. 2. Transfer mixture to a large bowl, stir in the sifted dry ingredients. Turn the dough onto a floured surface, knead until smooth. Divide the dough in half. Enclose in cling wrap. Refrigerate for 30 minutes. 3. Preheat the oven to 160°C (140°C fan-forced). Grease and line two oven trays with baking paper. 4. Roll each dough half between sheets of baking paper until 5 mm thick. Using a 13 cm gingerbread man cutter, cut out shapes and place on trays about 2.5 cm apart. Bake for 10 minutes, or until lightly golden. Remove from oven and cool. 5. For icing, lightly beat egg white and lemon juice in a small electric mixer. Gradually beat in sifted icing sugar until firm peaks form. 6. Spoon icing into a small piping bag fitted with a small plain nozzle and decorate.

Christmas Topside Beef Roast PREPARE YOUR TASTE BUDS FOR A SYMPHONY OF SUCCULENT FLAVOURS AND INDULGENCE, AS WE GUIDE YOU THROUGH THE ULTIMATE CHRISTMAS TOPSIDE BEEF ROAST. INGREDIENTS: 1 boned and rolled 2.5 kg topside of beef 6 garlic cloves A handful of rosemary 3 onions Olive oil Sea salt and freshly ground pepper

METHOD: 1. Take your beef out of the fridge one hour before you cook it. Heat your oven to 190°C. 2. Peel and finely chop the garlic. Pick the leaves off a few rosemary sprigs. Finely chop the leaves. Peel and finely slice the onions. 3. Pop the onions in a bowl. Drizzle with a little olive oil. Season. Toss together. Spread them on the bottom of a large roasting tin. 4. Drizzle a little oil on top of the beef. Season it. Sprinkle on the garlic and rosemary. Rub the oil, seasoning and herbs all over the beef. 5. Sit the beef on top of the onions so it’s sitting snugly in the tin. 6. Pop the beef in the oven on the middle shelf. Roast 1 hour for medium rare, 1 hour 10 mins for medium or 1 hour 20 mins for well done. Lift the beef out of the pan. Wrap it loosely in two layers of foil. Rest it for 45 mins. Serve and enjoy.

Seasonal sweets RUM BALLS

(WITHOUT THE RUM) INGREDIENTS: 250 g Arnott’s Milk Arrowroot biscuits — crushed 395 g NESTLE Sweetened Condensed Milk 1 cup coconut ¼ cup cocoa 1 cup coconut — to decorate METHOD: 1. Combine all ingredients. 2. Wet hands and roll mixture into small balls then coat in coconut. 3. Refrigerate or freeze for later.

FRUIT AND WHITE CHOCOLATE FUDGE INGREDIENTS: 340 g white chocolate, chopped ¾ cups Sweetened Condensed Milk 1 tsp vanilla essence ⅔ cup chopped shelled pistachios ⅔ cup chopped dried apricots ⅔ cup chopped dried cherries ½ cup chopped almonds

METHOD: 1. Grease a 23 cm square cake pan or rimmed baking sheet and line with baking paper.

3. Stir in remaining pistachios, apricots, cherries and almonds until combined.

2. In a heatproof bowl set over a saucepan of gently simmering water, melt chocolate with condensed milk, stirring until smooth, about 5 minutes; remove from heat. Stir in vanilla. Reserve 1 tbsp each of pistachios, apricots and almonds and set aside.

4. Scrape mixture into prepared pan, smoothing top. Sprinkle reserved nuts, cherries, and apricots over top, pressing gently to adhere; refrigerate until firm, about 4 hours. 5. Using a hot knife, cut into squares.

Make a tree sparkle WANT TO KNOW HOW TO DECORATE YOUR CHRISTMAS TREE LIKE A PRO? Four-year-old Kensi Moon helping decorate a tree in Sabac on High.

the perfect tree, we caught up with Sabac on High owner Tracy Hayward for her ultimate tree decorating tips this season. “First, you need to pick your tree and then your theme,” Tracy said. “Non-traditional colours remain popular this year with pinks, blues, snow-flocked whites, silvers and even gold. “All the colours are stunning, and every tree has the potential to be spectacular.” If you haven’t been to Sabac on High, it’s an opportunity to be inspired. Whichever way you look, it’s like a magical Christmas wonderland. Different coloured themes adorn the store, and the variety of decorations and ornaments is impressive. Tracy said that after picking your theme, the next step was ensuring you had enough decorations. “There are so many unique and different options available for ornaments, and again, they need to match your theme,” she said. “When it comes to their actual placement, however, I always tell people to put all the balls and little ornaments first, and wherever there are gaps, you set the bigger pieces. “The top doesn’t have to be an angel or a star.

The Christmas tree is the centrepiece of any home during the festive season.

“It’s your tree, don’t be scared to go wild.”

It’s often a job done as a whole family, usually on December 1 to kick off the magical month of December.

For Tracy, Christmas is her favourite time of the year. Not only because of all the glorious things surrounding her, she said the people make her smile.

With so many decorating options available, knowing where to start is often challenging.

“I love it when people come in, and you can see their face light up, it’s magical,” she said.

With that in mind, alongside all of us wanting to decorate
