Lime and be�y cheesecake tart

WITH ITS GINGER FLAVOURED BASE, CREAMY LEMONY FILLING AND TOPPED WITH FRESH BERRIES, THIS FLAN WILL BE AN INSTANT HIT.

INGREDIENTS:

250g ginger nut biscuits

100g unsalted butter, melted

½ cup thickened cream

250g cream cheese, softened

½ cup caster sugar

2 tsp finely grated lime rind

2 tbsp lime juice

2 egg whites

250g fresh mixed berries and cherries

METHOD:

1. Blend or process biscuits to fine crumbs. Add melted butter and pulse until well combined. Press mixture evenly and firmly into a 35cm x12cm rectangular loose-based fluted tart tin. Place on oven tray and bake at 180°C (160°C fan-forced) for 10 minutes. Cool for about 15 minutes, then carefully remove from tin and cool completely.

2. Beat cream until soft peaks form and set aside. Beat cream cheese, ⅓ cup of the sugar, lime rind and juice until smooth. Fold in the whipped cream.

3. Beat egg whites in a clean bowl until soft peaks form. Gradually add remaining sugar and beat until thick. Fold egg white mixture into cream cheese in two batches.

4. Spoon cheesecake mixture into cooled crumb base and refrigerate until serving time. Serve topped with fruit, dusted with icing sugar.

Panzanella & Peach Salad

INGREDIENTS:

4 slices day old sourdough, torn into pieces

2 tbsp olive oil

1 clove crushed garlic

500g medium heirloom tomatoes, roughly chopped

100g buffalo mozzarella, torn

½ a 700g jar peaches in juice, drained

2 tbsp vinegar

2 tbsp olive oil

Basil leaves, to serve

Salt and pepper

METHOD:

Preheat oven to 180C. Toss sourdough with oil and garlic. Spread on an oven tray. Bake for 15 minutes or until lightly golden.

Arrange tomatoes, sourdough, torn mozzarella and peaches on a serving platter. Drizzle with combined vinegar and oil. Sprinkle with basil leaves. Season to serve.

Shepard avocado supergreens salad with cha�ed greens

INGREDIENTS:

2 Shepard avocados, sliced into large chunks

1-2 zucchini, sliced into thick rings

1 head of broccoli, broken into florets

6-8 heads of asparagus, ends trimmed

2 tbsp olive oil

3 cups baby spinach leaves

½ cup flat-leaf parsley, roughly chopped, plus extra to garnish

2 tbsp macadamias, roughly chopped, to garnish

DRESSING:

¼ cup olive oil

¼ cup lemon or lime juice

1 tsp dried chilli flakes

METHOD:

1. Get started by preheating a chargrill, fry-pan or BBQ to medium-high heat. Coat your zucchini rings, broccoli florets and asparagus spears with a drizzle of olive oil, place on the heat and cook for 4-5 minutes on each side, until warmed through, charred and caramelised on the outside. Alternatively, you could oven-bake all of these veggies in an oven set to 200°C for 15 to 20 minutes or until cooked to your liking. Remove from the heat and allow them to cool at room temp.

2. Once your veggies are cooked and cooled, it’s time to build your salad. Start with baby spinach leaves and some roughly chopped flat-leaf parsley. Top with the charred green veg, and an extra sprinkle of parsley and some roughly chopped macadamias.

This is a good time to combine the dressing ingredients in a jar, and then give a good shake to emulsify and mix well. Either plate up now or store in a travel-safe airtight container.

3. When it comes time to serve, shake the jar well and pour dressing over your salad ingredients, giving a light toss to get all-over coverage. All ingredients are best stored in the fridge or esky until it’s time to serve.

COOL CHRISTMAS EVE TREATS FOR SANTA (NO SNOW REQUIRED!)

Christmas in Australia often means scorching hot weather, but that doesn’t mean you can’t enjoy the magical tradition of leaving out treats for Santa!

If you’re celebrating in the heat which in the Goulburn Valley is highly likely, here are some fun, festive, and cooler alternatives to the usual cookies and milk.

ICED CHRISTMAS COOKIES

Swap out hot, oven-baked cookies for iced sugar cookies that are easy to decorate and stay cool.

You can make them in festive shapes like stars, trees, or Santa’s sleigh, and top them with bright, colourful icing or sprinkles. Santa will appreciate the sweet gesture, and the kids will have a blast decorating them!

CHILLED FRUIT PLATTER

In case Santa wants something to wash down his treats, why not leave him a refreshing jug of iced tea or lemonade?

Sweat treats

INGREDIENTS:

125g unsalted butter

½ cup dark brown sugar

2 tbsp molasses

1 egg

1½ cups plain flour

¾ teaspoon bicarb of soda

1 tsp ground ginger

½ tsp cinnamon

¼ tsp nutmeg

Pinch of cloves

80g dark cooking chocolate, broken into squares and each square halved

METHOD:

Cream butter and sugar with an electric mixer until light and fluffy. Beat in molasses then gradually add egg, beating well until combined. Sift in the flour, soda and spices and stir into butter mix until combined into a very soft dough.

Note: Don’t worry if the dough is really soft, it should still roll into balls easily.

Roll ½ tablespoons of mixture into balls. Take a piece of chocolate and sandwich a ball of dough on each side. Firmly press together ensuring the sides are sealed and roll into a ball.

Place balls on a baking paper lined tray about 5cm apart. Using a skewer, imprint Christmas patterns into the uncooked dough. Bake for 8-10 minutes at 180°C or until lightly browned and cooked through (they will be soft and cakey in texture). Allow to cool before removing from the baking tray and dusting with icing sugar.

PEACHY BREAKFAST SMOOTHIE

INGREDIENTS:

825g can SPC peaches sliced in juice, drained

⅔ cup vanilla yoghurt

1 banana, sliced

2 tbsp mint leaves

1 tbsp grated fresh ginger, peeled, finely grated

1 tbsp honey

1 ½ cups almond milk, chilled

Chopped strawberries, passionfruit pulp, mint leaves to serve

METHOD:

Combine peaches, yoghurt, banana, mint leaves, ginger and honey in the jug of a blender of food processor. Pour over almond milk.

Process on high until mixture is thick and smooth. Serve in tall glasses topped with chopped strawberries, passionfruit or mint leaves.

TIP:

For an extra cold smoothie, blend with a few ice cubes or freeze banana overnight. Replace honey with peach juice to taste if preferred.

CHOCOLATE AND HAZELNUT MERINGUE TORTE WITH STRAWBERRY CREAM

INGREDIENTS:

6 egg whites

1¼ cups caster sugar

¾ cup ground hazelnuts

1 tbsp cocoa powder, sifted

600ml thickened cream

185g dark chocolate, chopped

¼ tsp vanilla extract

250g punnet strawberries, hulled and chopped

Extra cocoa, for dusting

METHOD:

Beat egg whites with an electric beater until soft peaks form. Gradually beat in ¼ cup sugar until dissolved. Beat in remaining sugar a little at a time until thick and glossy. Stir in hazelnuts and cocoa.

Spread 3 (30x12cm) rectangular shapes of mixture onto baking paper lined trays.

Place into a pre-heated oven at 140°C and immediately reduce temperature to 120°C. Bake for 1¼ hours. Turn oven off and allow meringues to cool in the oven with door ajar.

Place 100ml cream in a saucepan and bring to a gentle simmer. Remove from the heat and stir in chocolate until melted. Cool slightly.

Whip remaining cream and vanilla until soft peaks form and fold through chopped strawberries. To assemble, layer meringue rectangles with chocolate and strawberry cream, finishing with chocolate. Refrigerate for at least 2 hours before serving.

To serve, dust torte with cocoa, cut into slices and serve with extra strawberries.

Butterflied lamb leg with lemon and herb cream

INGREDIENTS:

1.6kg piece boneless/butterflied lamb leg

2 lemons, zested

60ml (¼ cup) lemon juice

60ml (¼ cup) honey

3 cloves garlic, crushed

3 tsp sweet paprika

2 tbsp finely chopped rosemary

60ml (¼ cup) extra virgin olive oil

6 small sweet corn, husk removed

3 bunches asparagus, trimmed

Lemon & herb cream

360g (1½ cups) light sour cream

2 tbsp finely chopped dill

2 tbsp finely chopped mint

2 tbsp finely chopped flat-leaf parsley

1 lemon, zested, juiced

METHOD:

Preheat oven to 200°C. To make the marinade, place zest, juice, honey, garlic, paprika, rosemary and oil in a large bowl. Season to taste and whisk to combine. Add lamb and using your hands rub marinade all over lamb.

Place lamb in a large roasting pan on top of a wire rack; season lamb to taste. Roast for 45 minutes or until cooked to your liking; rest for 20 minutes loosely covered with foil in a warm place before carving to serve.

Meanwhile, to make the lemon & herb cream, place all ingredients in a small bowl and stir to combine; season to taste.

When lamb is resting, preheat a lightly greased char-grill pan or barbecue to high. Cook corn, turning frequently, for 12 minutes or until corn is cooked. Cook asparagus, turning frequently, for 2 minutes or until just cooked; season corn and asparagus to taste.

To make the lemon and herb cream, place all ingredients in a bowl and mix well.

Carve lamb and divide among plates. Serve with lemon and herb cream, salad, asparagus and barbecued corn.

TIPS

Substitute sour cream with crème fraiche or yoghurt. If time permits, marinate lamb for 3 hours or overnight. Butterflied lamb leg cooks quicker than a bone in lamb leg. Substitute with butterflied shoulder or boned and rolled shoulder.

Alternatively, cook in a preheated moderate barbecue oven.

The lamb leg is a versatile and economical cut of meat. Tender and full of flavour there are many cuts that come from the leg and can be turned into a variety of meals to keep the family happy. These cuts include traditional leg roasts, mini roasts, butterflied legs, leg steaks, bone less leg and easy carve legs.

Take the roast out of the oven 15 mins before serving to allow it to cook evenly.

Use a meat thermometer to check when you lamb is done (medium recommended).

Leave lamb to rest once it comes out of the oven to allow juices to redistribute throughout the roast.

Christmas is full of interesting history and quirky traditions. These fun facts just scratch the surface of Christmas history, but hopefully, they add a little extra holiday cheer to your celebrations.

THE FIRST CHRISTMAS CARD

The first commercial Christmas card was created in London in 1843 by Sir Henry Cole.

It featured a family drinking wine and helping the poor. It was designed by artist John Calcott Horsley.

THE ORIGIN OF “XMAS”

Many people wonder why “Xmas” is used instead of “Christmas.”

The “X” comes from the Greek letter “Chi,” which is the first letter of the Greek word for Christ.

So, “Xmas” is actually an abbreviation, not an abbreviation of “Christ” or anything disrespectful.

CHRISTMAS TREES

THE WORLD’S LARGEST CHRISTMAS STOCKING

The largest Christmas stocking ever made was over 106 feet long! It was made in Italy in 2011, and it could fit an entire family’s worth of presents.

CHRISTMAS CAROLS WERE ONCE SUNG IN THE STREETS

Christmas carols started as “waits,” where groups of people would travel door-to-door to sing festive songs.

Over time, carolling became a more organised activity, with familiar carols sung in churches and public spaces.

There’s a place called Christmas Island, located in the Indian Ocean, which is part of Australia.

It was named by Captain William Mynors, who landed on it on Christmas Day in 1643.

MISTLETOE HAS A MYSTERIOUS PAST

The tradition of decorating Christmas trees originated in Germany in the 16th century.

The first tree decorated with candles is often credited to Martin Luther, the Protestant reformer, who added candles to a tree to replicate the stars shining through the trees on a winter night.

TINSEL WAS ONCE MADE OF REAL SILVER

Tinsel, the shiny decoration that drapes over Christmas trees, was originally made from real silver in the 1600s in Germany.

Silver was used to create the glittering effect, but it was later replaced by aluminium to make it more affordable and practical.

THE CHRISTMAS PICKLE

Mistletoe has a long history as a symbol of fertility and good fortune.

The tradition of kissing under the mistletoe was popularised in 18th-century England.

Originally, anyone standing under the mistletoe had to kiss, but the practice eventually evolved into the more romantic custom we know today.

In Germany, there’s a tradition of hiding a glass pickle ornament on the Christmas tree.

The first person to find it gets an extra present or a year of good luck.

Although, this tradition is often more popular in the US than in Germany itself!

JINGLE BELLS WAS FIRST WRITTEN FOR THANKSGIVING

The song “Jingle Bells” was written by James Lord Pierpont in 1857, but it was originally meant for Thanksgiving, not Christmas!

The tune became associated with Christmas later on, as its catchy melody was perfect for the season.

CHRISTMAS WAS ONCE BANNED IN ENGLAND

Christmas was actually banned in England for a time during the 17th century.

In 1647, the Puritans under Oliver Cromwell took over and prohibited Christmas celebrations, citing them as “pagan.”

The ban was lifted in 1660, and Christmas returned to being widely celebrated.
