A Little About MCWED I never thought I would be an editor of a magazine let alone two magazines. I am a lover of bridal fashion, good food and I love cheese. I am very passionate and have fallen in love with each of my event professionals in mcWED as well as IDoWED. It has been quite a ride this last year. I am so thankful for those who have laughed, learned, and dreamed with me. Brandi Reiland from Soiree, you have a heart of gold and gold goes with everything! Heidi Wight, your integrity reaches to the heavens. Cat Hallock, you need to eat! Thank you my friend for dreaming alongside me. Ian and Sarah Williams, creating and producing this magazine locally here in McCall brings me so much joy. I appreciate you both more than I could ever express. Frannie, you are crazy and ridiculously perfect. I have enjoyed you so much! Eddie Dunn, “The Wizard of OZ!” You are the man behind the curtain. Cheryl Meinzer, you bought a piece of heaven and I am so thankful you share it with me and have become my friend. Tana Photography, Two Bird Studio and Ampersand Studios; you three are a dream. Thank you for always going above and beyond for this project. Lindsey Yeamen from Bliss, my dear friend, you are continually a lifesaver. Chef Steven Topple, you truly are a culinary artist and I am honored to call you my friend. Laura Bettis, (Clyde and Alice), I cannot begin to express my gratitude to you. From baking cakes, to fixing my spelling errors, to just listening. I have faced many challenges and emotional struggles this year. My friends who have been my rocks—I am forever thankful to you—Ashley Elkins, Alycia Reuter, Shannon Berg, and Rachel Diaz. THANK YOU! You are beautiful! To my parents: I LOVE YOU! We hope this magazine helps you find the best resources and ideas for your event. Here’s to your “I Do” and all the happiness to follow.
Love, Sherry
mcWED came together as a company in February 2014. We published our first wedding and event directory in June of that same year. It has been a blessed year. In June, I dedicated the first issue of mcWED to two precious little souls that impacted our lives. To Gabriel and Eyrran for always reminding me to live, laugh, and love. Little did we know in the hustle and bustle of creating our first magazine that we would be where we are today. On June 18, 2014, the day mcWED launched, Gabriel left his short life here on earth. The months that followed we learned about persevering and overcoming. In November, just as I was preparing for the next issue, Eyrran joined Gabriel. It is with bittersweet thoughts that we dedicate this magazine to these two beautiful angels. LIVE, LAUGH, and LOVE!

Not your parents’ wedding video: the wedding film industry has changed BY JASON & EB BELTS-KAUFFMAN TWO BIRD STUDIO

here’s no denying the importance of pausing the special moments of your wedding day through the magic of still photography. But often the moment continues on and you want to revisit the sequence of events that add up to one of the most memorable experiences of your life.
possibilities for capturing a bride and groom’s special day in motion were thrown wide open. In the hands of skilled cinematographers, those tired out camcorder home movies have been replaced by a motion picture experience that truly captures the intensity and drama of the day.
The past six years have seen far-reaching changes in the wedding film industry. With the advent of high-definition video features on handheld DSLR cameras in 2008, the cinematic
So what should you consider when you’re in the market for a wedding film?
film style
When auditioning prospective videographers, make sure their styles match your desires. Are you more interested in a classic storytelling approach that simply documents your day from beginning to end? Or do you desire a more artistically edited feature film? Set aside a date with your fiancé to watch wedding films produced by your list of potential videographers.
coordination
It’s important to communicate the meaningful aspects of your day that you’d like to see captured in your wedding film. Ask your videographer what they need from you to ensure they don’t miss significant moments and details. And finally, make sure to schedule a call with your videographer to talk about day-of schedule, video team needs and anything else that will affect your day.
camera crew
We suggest either hiring the same company for both video and stills or hiring a photographer and videographer who have worked together in the past. Not only does it ensure your photo and video have a similar look and feel, but it also ensures the crew knows each other’s shooting styles. If you do hire separately, ask the two companies how they plan to work and coordinate with each other so they’re not competing for shots and creating a tense atmosphere.
sound of your day
It’s easy to forget that a wedding film is not simply about the gorgeous footage. Also important are the sounds of your big day. Make sure your videographer is prepared to capture professional quality audio from your ceremony, the speeches at the reception and anything else you’ll want to relive in the years to come.
song licensing
You should insist on hiring a professional videographer who only uses licensed music in their wedding films. Most likely you’re going to want to share your film online—doing so with unlicensed music is risky business.
why a wedding film?
Wedding films preserve the motion and sound of your wedding day just as it occurred, in its entirety. When you watch your professionally produced video, you’ll be able to relive your walk down the aisle and your first kiss, listen to all of the emotion and tenderness of your vows and the toasts of loved ones, and recall the motion and energy of your first dance. All of this will be preserved for you and your family for years to come. It may even become a family heirloom.

THE GROOM CAVE BY EDDIE DUNN October 4, 2013 changed my life. Simply put, it was the second best day of my life. She said, “Yes!” Let the planning begin. Right away, mind you. I hadn’t been engaged before, so this entire process was new to me. And boy, was it an awakening! So many things to do in so little time. And by “little time,” I mean nine months. I mean, gosh, you have the same amount of time to plan for a baby so you can plan a wedding in nine months, right? The easy part was over—getting her to say yes, now came the hard part of putting it all together. Before I go into my unbridled, enthusiastic parable about planning our wedding from my very own blue eyes, I’d like to offer the men out there a little bit of helpful, sophomoric advice when speaking with your fiancée about ALL the details: Just go with it, dude. Seriously, whatever YOU have planned in your simple, “guy brain,” it’s going to be different than what your soon-to-be wife’s plan will be. And that’s completely okay. That’s the joy of it—it’ll be okay. In the end, “Yes, Dear” goes REALLY far, and having a compromising attitude from the beginning will help you more than you’ll ever imagine. I know it may be tough at first, but all you need to do is have FUN with it.
SENIOR EDITOR
I honestly cannot remember, for the life of me, what my fiancée and I talked about first. After I finally calmed down about the fact that I would be getting married soon, my mushy brain started to settle down, and I was able to make lucid decisions, once again. Colors! That’s right, it was colors. My favorite color is blue, so I was certain we’d have it in the mix. We had figured out we’d keep it somewhat simple and just choose three colors. Blue, peach, and white. Navy blue, peach, and white. Okay, let’s try baby blue, peach, and white. Are you sensing a theme here? My point is that we didn’t know what the heck we really wanted. Final color scheme picked: gray, peach, white, and burlap. Wait, what? No blue?! Oh well. I’m a dude and got over it in about 4.5 seconds. That took about a month to figure out. A month, just for colors! After that, I finally started to understand what my life was going to be like for the next eight months. See, when you “plan” for a wedding there really isn’t, well, a plan! Imagine that. You just kind of do stuff. A lot of stuff. And it changes. All the time. After we settled on colors, it was time to go shopping for stuff that was cool and matched our color scheme. My fiancée, Caroline, is a big fan of vintage items. That meant every Saturday we had available on our schedules was spent rummaging vintage stores throughout Boise.
I was kind of a grump about it at first, but then I fell in love with looking at old, dilapidated stuff that I’d never own but kinda wanted. We struck out at finding unique treasures the first few stores, but then we discovered all the knickknacks we were desperately searching for. Oh, and during those relentless searches for stuff we’d use one day and probably throw away the day after the wedding, you must know that we bought more stuff than we needed. If you remember what I said before about our “plan,” then you can imagine what these Saturdays were like. Laugh amongst yourselves. The next few months, honestly, were a blur.Vintage shopping, wedding cake shopping, suit shopping, find the perfect tie color shopping. Shop, shop, shop. For me, I enjoy shopping as much as the next guy but wedding shopping has its own level, man.Yes, there is a skill to wedding shopping. Get engaged and you’ll see.
22
Photo Credits: Lindy Photography Springtime finally arrived and it’s truly game on. Caroline was cracking down on our checklist and reminded me daily what we had not accomplished. Oh, August 9th, our wedding date, you cannot come soon enough.
As early summer approached, the aforementioned plan, was coming into place. Caroline’s bridesmaids had all their dresses in hand and fit to perfection. Her dress was almost done, and she’s looking like an A student.
the shoes. Crap! Back to the drawing board. Ironically enough, we finally found some shoes online while we were in the store and ordered ‘em up! Thank God DSW had all sizes that we needed. Disaster averted!
And speaking of August 9th … A funny thing happened while planning our wedding date. You’d think that would be the easiest thing to do, right? Pick a day and you’re good. Well, our friends Dustin and Kameron became engaged a couple of months prior to us. However, they had yet to announce the date of their wedding.
As for me and my dudes? Not so much. Yeah, shopping for other guys’ clothing with all different sizes isn’t much fun. TWO of my groomsmen lived out of state which meant me having to purchase and then mail their suits to them so they could get them tailored— if needed—on time for the wedding. July soon made its way onto the calendar and Caroline ventured off to her bridal shower in San Diego.
Our wedding week finally arrived and family and friends started to fly in. H-O-L-Y C-R-A-P! It’s wedding week!! All the preparations, discussions, plans, changes, highs and lows, were all coming into place. The food and wine we ordered was way too much, but you can never have too much food—or wine— at a wedding.
Caroline and I had already picked our date—July, 19th, 2014 and promptly sent out the obligatory Facebook announcement. Exactly two minutes later I receive a text from my friend Dustin that reads verbatim: “Tell me you guys aren’t getting married on July, 19?!?” I laughed hysterically and knew what had just happened.Yep, we had just picked the same date as our friends did! All went smoothly after my beautiful fiancée spent a frantic 30 minutes making the necessary notifications to our friends and family that our new date of August 9, 2014 had been solidified.
That meant I had an entire weekend to myself to get some wedding stuff finalized. As the guys finally got their suits appropriately sized, it was time to find shoes. This was my plan: pick up my best man, head to the mall, find brown shoes, make purchase, leave mall. Total dude shopping, right? That didn’t happen. Here’s what did happen: we went to mall, we found brown shoes, but it wasn’t the right shade. Off we went to DSW, found another pair of brown shoes—sent a picture to my fiancée—she doesn’t like
Dresses, suits, decor, flowers, photographer, videographer, bouquets— all set to go. My lively, elated, and always expressive mother-in-law-to-be flew in that Tuesday and Saturday, our wedding day, was now palpable. It became REAL when I stopped by the venue the see my tireless fiancée and ever-so patient sister decorating and making the rooms look perfect. The rehearsal and festive rehearsal dinner went off without a hitch. Man, can you believe it? I’m getting married in less than 24 hours! August 9th, 2014: THE best day of my life.

Come Away With Me by Brandi Reiland from Soiree Weddings M
CCALL RIVERSIDE RANCH is a gorgeous private venue in McCall, and is literally a blank canvas for weddings and events. With sprawling fields of wheat grass, an iconic old barn, a bridge leading to a forest of trees and the view of a lifetime, the inspiration is endless. Our focus with our design concept was to enhance the natural beauty of the property while using color palettes and textures that would work in both fall and winter. The warm, old charm feeling the lodge evokes was a starting inspiration for everything, from the dress to the elements we used throughout. Hues of blues, purples, oranges, pinks and peaches, paired with touches of gold and a soft minty sea-foam color inspired by the flooring in the lodge created a beautiful, organic look. The colors together were a welcomed change from typical fall or winter color combinations.
In designing the details for the photo shoot, we really wanted to include ideas brides could take away for any aspect of their wedding- from the ceremony to the reception to a new take on the cocktail hour. The look for our bride and groom was soft and slightly vintage; the bride wore a champagne gown with a taupe lining designed by Laneige Bridal and the groom looked dapper in his soft gray suit. The addition of a fur bolero and rhinestone headband became a stunning bridal look for an upscale wedding in the mountains. The ceremony was sweet and simple, set in a field of wheat grass and mixed seating with fur for coziness. The aisle was marked with flowing ribbon and the altar featured our laser cut wood phrase. By letting the backdrop of trees and mountains inspire our design, even with a few pops of colors, the result was serene and romantic.
25
Our Moscow Mule and cigar bar was a way to personalize a traditional cocktail hour, complete with perfect coldweather pairings and mini-eats from Amy’s Wholefood Creations. Rather than the typical offerings of a full bar or beer and wine, selecting one signature cocktail reminiscent of the season and creating a menu around it will have guests talking and really allow them to experience the cozy vibe.
26
The dinner table was soft and romantic and included our vintage touches. A lace runner was layered with another runner made of fur for a soft, yet lodge inspired feel, while gold flatware and gorgeous silk napkins tucked in metal fox rings kept the elegance and balance with our setting. The flowers - centerpieces that were truly a work of art by Flowers At Will- completely embodied our vision for the organic, romantic look we wanted. The combination of lush greens and foliage, dahlias, chocolate cosmos, roses and more was just breathtaking.
27
Pink goblets and an eclectic mix of vintage gold chairs by Ira and Lucy finished off the look, and little nuances of the gold patterned paper were seen everywhere from the place cards to the envelope liner on the invitation suite designed by Paperie and Pen. By keeping the colors muted, the tiniest of details cohesive and continually reappearing, the entire look and feel of the day comes together and flows seamlessly.
28
Other ways to personalize your day: •
Include your pet, and dress her up for the occasion too.
Enhance your setting and venue rather than fighting it. A rustic wedding easily turns glam with a few intentional touches, like juxtaposing fur and diamonds. •
•
Gold always marries everything together.
Hire a cinematographer. There will be so many moments you won’t remember, and you’ll love reminiscing after the day is over. •
Celebrate the season by designing your menu, table settings, cocktails, and overall vibe to reflect it, even if it’s a few nuances here and there. Your guests will be more comfortable and the day will feel more in-tune this way. •
Never forget to include personal details into your day. Your guests have come to celebrate your new lives together; don’t forget to give them a peek into what brought you together.

In emails a day and age where we are submerged in technology, social networking, and text messages, there is nothing more personal, thoughtful 32
and refreshing than getting a beautiful invitation in the mail.
A s a graphic designer and custom wedding stationer, every once in a while a potential client will utter the
unspeakable; “Why spend the money on invitations? Everyone is just going to throw them away.” I’ll excuse myself. Close my eyes for a quick second, take a deep breath and try to find that happy place (which coincidentally consists of a paper heaven where I dance on letterpressed cotton clouds, leaping to grasp beautifully lined envelopes with hand calligraphed addresses and vintage stamps) then back to reality. I get to help fellow paper lovers like myself create the perfect piece of correspondence to invite their loved ones to one of the most important days of their lives.
Registry Cards
It’s true, sometimes custom invitations can get spendy. However, even on a tight budget, as long as you stick to some old school etiquette rules, and mix in your personal wedding style, your recipients will be impressed enough to keep it. The wedding invitation is one of the few traditions we’ve kept around and in keeping with that tradition, we’ve got a cheat sheet to make sure you don’t accidentally send out 150 faux-pas; instead beautiful and tasteful invitations that are sure to impress.
Wording
Registry cards are generally a no-no and the biggest taboo in the proverbial wedding etiquette handbook. However, there is a tasteful way to include your info. We suggest a simple statement directing people to your wedding website where they can find travel info, accommodations, and of course a direct link to your bridal registry. If you do have an information card with other information on it, we think it’s acceptable to sneak it in on there - as long as it doesn’t get its own card. Just please, regretfully decline when the department store where you register offers those little business cards to insert into your perfectly planned out invitations!
The way that your invitations are worded tells people a lot more about your wedding than just the who, what, when and where. It should also tell your guests how formal the wedding will be, and, if it’s a religious ceremony, how they should dress. The way you have things worded also implies who is hosting (paying for) the wedding. There’s a little too much to dive into in this article, but be sure that you credit dear ol’ dad in the right way if he’s shelling out big bucks for the big day. If you are paying for it yourself, a simple “Together with their families” will suffice. Visit our website for a more in depth guide with examples on how to choose the perfect wording for your invitation at www.paperieandpen.com
Addressing Envelopes
Timing
There was a day in our not too ancient past where hand writing was an art. It was a sign that one was well educated and it was something that people spent their lifetimes perfecting. Today, some schools aren’t even teaching [script] handwriting so it’s important that we enjoy the art form while it’s still around at all. Budget permitting, you can hire a calligrapher to beautifully letter your envelopes. However, not all wedding budgets have the wiggle room for such a luxury itemso just be sure that your invitations are hand addressed. Even if you don’t feel you have the most beautiful handwriting, it’s more personal and traditional than printed addresses or labels. If you must do digital addressing, print it directly onto your envelope and use matching fonts and design elements to your invitation.
If you’re not having a destination wedding and the majority of your guests are in the area, 5-7 weeks ahead is an acceptable time to send out your invitation. If you are having a destination wedding or have a lot of people that will need to make travel arrangements, look more into the 7-10 week area. Consider sending out a save the date as soon as you get engaged and set a date. It’s never too early for this, but the most common time frame is 8-15 months before the big day. Save the dates can be much less formal and only need to list the date and city. Do not include specific locations or times.

Brian & Whitney Scott IT WAS THE WEEK OF WINTER CARNIVAL in McCall, Idaho where thousands of people travel to see local snow artistry and enjoy all of the amenities the beautiful mountain town offers. This week in January was also home to one of the snowiest of celebrations the town has hosted—the wedding of Brian and Whitney. A professional driver for NASCAR®, Brian’s ten month schedule only allowed for a winter wedding, but we can’t imagine a better time of year for such a happy occasion. 36
What started with three simple requests: chandeliers, chandeliers and more chandeliers, seven months of whirlwind planning began to bring Whitney’s vision of her romantic, vintage, shabby chic affair to life. The ceremony at Shore Lodge was all white, with white flowers and pearls dripping off of all the chandeliers, white chiavari chairs, two perfectly rustic church pews and an altar built out of old porch posts. The ceremony was an absolute dream, full of meaningful vows the couple wrote to each other and a special ring given to Whitney’s daughter by Brian. There wasn’t a dry eye in the house!
After the ceremony the bride and groom rode off in a horse drawn carriage and guests were shuttled over to Whitetail Club for the reception, where we had completely transformed the inside of the club’s tennis pavilion to a beautiful, tented space. A mixture of blush and sequin linens, farm tables, and lots of gold accents really brought the romantic, shabby chic vibe to life. Small nods to the town and the lodge Brian had grown up with included gold antlers on the invitations, cake, and even down to the wooden drink stirs, but we kept things glamorous for Whitney with touches like custom bars and the cake linen flocked in thousands of gold magnolia leaves. The lounge areas featured vintage and distressed furniture and white fur, while the cigar area around the fire pit out back was a retreat to take a break from dancing to mingle. And we can’t forget the chandeliers—over 30 sparkly, beautiful chandeliers graced the tent and created such a dreamy atmosphere for the evening.
37
As beautiful as the wedding was, Brian and Whitney made sure their day was just as meaningful. They wanted their guests to experience McCall, and they wanted to express their love and lives together as a family surrounded by their closest friends and family. From the personalized Idaho menu the couple selected, to the vows they shared with each other, we were truly grateful to be able to share and be a part of such a beautiful celebration.

“JR and I wanted our wedding to be a summer gathering with lawn games, great food, tasty drinks, and good company. Welcoming the majority of our guests to Idaho for the first time, we knew Blackhawk on the River in McCall, was the perfect venue to showcase the picturesque beauty of Idaho.” We chose an airy color palette of grey, blush and cream to compliment the natural backdrop of the mountains. Soiree, created the perfect wedding canvas, highlighting details that spoke to our style as a couple and ensured an inviting and playful atmosphere for our guests to enjoy throughout the evening. Dinner was presented ‘family style’; a perfect platform to share our belief that the table is not only about the food that is served, but about the fellowship it ignites. We both tapped into our inner-artist and had a blast creating DIY details for our special day, which included a painted map of McCall that was the centerpiece of our beautiful invitations created by Paperie & Pen. A beautifully crafted wood bar, custom built lawn games, painted wooden signs, and hand-written recipe cards for our guests featuring all of the homemade desserts served at our gorgeous dessert bar. Two Birds Studio worked with an unparalleled sense of artistry and craftsmanship, capturing the true essence of our magical day. Jr and I feel so lucky to have had the opportunity to work with such an amazing group of vendors, their vision and talents made our dream wedding come true.

Erin and Brandon easily chose McCall for their wedding location after countless weekend getaways and having been engaged there. The rugged charm, intimate feel, and friendly camp atmosphere of Pilgrim Cove proved the perfect venue for their festive and casual wedding. Views of the lake and close proximity to town were huge selling points and the couple loved the ease of walking from ceremony to reception. The relaxed mood was set immediately as guests were guided to the day’s events by hand painted signs, rustic farm tables, and wine barrels. Fresh arrangements of succulents, peonies, and wild flowers enhanced the natural setting by lining the aisle, topping the wine barrels, and adorning the ceremony arch. The purposeful décor and lush floral design were the perfect complement to the sprawling Payette Lake backdrop.
Beautifully muted, mint dresses paired with vibrant, peach pashminas (a thoughtful gift from the bride to keep the bridesmaids warm on the chilly summer night). Each girl was allowed to select her own style of dress and pair with her favorite sandals. The men looked dapper in their grey vests and pants—their plaid ties adding a bit of whimsy. Erin’s father walked her down the aisle while Brandon escorted both of his parents. At the ceremony’s conclusion, guests filed to the adjacent Old Rice building for a cocktail hour on the patio. A table filled with mason jar mugs (and brightly colored, plastic versions for the children) provided guests their glass for the evening and a take home keepsake. Custom Mad Libs were a huge hit as guests were encouraged to tease the beloved couple. Meanwhile, family and friends were able to come together by enjoying lawn games sprinkled throughout the grounds.
A friend and co-worker at Boise State provided adorable, camp themed graphics and signage for the special day. The seating chart displayed on vintage windows led guests to tablescapes of custom burlap/lace runners, wooden stumps, and gorgeous florals. Framed menus detailed the buffet and dessert selections. Overhead, café lights and hand-made bunting hung from rafters, building on the festive theme. The couple’s light-hearted attitude and love for the outdoors were assets when a chipmunk made off with a cupcake and a deer enjoyed some greenery from the ceremony arch. It was the perfect culmination of the couple’s love for one other and McCall when the bride and groom stole a moment at sunset aboard a vintage canoe. As the chilly evening progressed, hot cocoa was served and a fire was lit for making S’mores. Dancing commenced beneath a canopy of lights while the DJ kept the dance floor hopping all night long
The flawless day concluded with sparklers as the couple made their way to Shore Lodge. The celebration continued the next morning when family and friends met at the Pancake House for a “good bye breakfast,” sending Erin and Brandon to a week-long Bahamas get away!

When a couple envisions what an intimate, do-it-yourself winter wedding may look and feel like, I think ours is a sweet representation. Our special day was with a small group of close family members and took place at a cozy lodge in the Idaho mountains.
What started off as a vision for a simple wedding turned into so much more. A lot of hands-on love was poured into creating our special day. First we designed the invitations to set the rustic and wintery style and feel, then handmade the programs and menus to match. My sister, also my maid of honor, made our wedding cake from scratch, and my dad surprised me with a handmade cake server (with sweet engravings) he found on Etsy with matching forks. Our 18 guests received welcome bags filled with champagne, hot chocolate, homemade Mexican wedding cookies, and a few other Idaho treats. We wanted the tables to sparkle and be festive, but not scream Christmas time, so we layered several kinds of evergreens, hurricanes (re-used from my sister’s wedding) filled with faux snow and cranberries, mercury glass, and pinecones. Instead of traditional flowers, we opted to use larger pinecones as the centerpieces that we spray painted gold.
One of my favorite touches of the weekend was a lovely hanging “chandelier” that my sister made. She and my best friend filled large, clear ornaments with faux snow and then hung them from a suspended tree branch over the center of the table. It was a beautiful, delicate fixture that my sister envisioned and made happen for the wedding day. In honor of my grandmother, who was unable to make the journey across the country for the wedding, I wore her vintage fur shawl. She loved that. It truly was an intimate and special day that we will always remember.
CULINARY CORNER
Featuring Chef Steven Topple
introducing a new monthly column on the blog www.idahowed.com
By Kyla Sawyer
featuring chefs across the state of idaho
Whether it’s a lavish buffet for hundreds or a plate presentation with an intimate guest list, Executive Chef Steven Topple of Shore Lodge has perfected the art of rustic yet elegant seasonal dishes that highlight local and regional ingredients. “No matter the size of the wedding from 15 to 150 or more, it’s such a thrill to poke my head out and see everyone enjoying the food,” said Topple, who is best known to his clientele and friends simply as “Chef Steve”. Juicy, handpicked huckleberries. Scrumptious, local Valley County mushrooms. These are just a few of Chef Steve’s favorite seasonal selections that delight the palates of Shore Lodge bridal parties and guests. Fresh salmon and trout, succulent Double R Ranch beef from the nearby Okanogan region of Washington as well as lamb, elk, venison and buffalo are some of the great Pacific Northwest choices Chef Steve has mastered for his bridal party menus. “I love to prepare great seafood and steak items,” said Chef Steve. “My scallop dish is a great crowd pleaser, also the duo of beets with local goat cheese, arugula salad and port dressing is another big hit.” Paring food selections with a couple’s chosen wedding style is priority when Chef Steve first sits down with a bride and groom to plan their menu. “Some want a buffet, some want a 5-star, top notch, plated dinner,” said Chef Steve. “We have a really nice banquet menu with lots of incredible options, but sometimes brides are looking for a little something extra special so that’s when sitting down with them to figure that out works well.” Topple started his delicious career at age 16 and graduated from the culinary school of Highbury College. The Portsmouth, England native gained valuable culinary knowledge cooking for prestigious restaurant properties in London, Scotland, New York, San Francisco and Vail, Colorado before taking over as Executive Chef of Shore Lodge in the spring of 2013.
