Local Food System Information

W H AT I S A L O C A L F O O D S Y S T E M ? It used to be that all food was local. You grew it yourself, or purchased it from the corner store. Today, it’s the supermarket that serves as most families’ food source. The fresh food found there is far more likely to have come from the other side of the world than from down the street. Indeed, the average food item travels 1,500 miles before reaching your plate. A local food system is a community-based model where consumers buy fresh food grown by local producers. This Local Food Guide will help you find growers who sell at farmers’ markets, find a CSA (Community Supported Agriculture) group to join, or locate the stores and restaurants in your area that make a serious effort to buy products grown by local farmers. These are all features of a local food system—along with you, the consumer. Buying sustainable and organic food grown within your local area has some very real benefits: • • • • • •

Fresher food tastes better and is better for you Dollars stay in your local community Oil consumption falls Pollution and soil erosion are reduced Pastoral rural landscapes are preserved Small family farms thrive

Perhaps the greatest beneﬁt is the relationship that develops between consumer and farmer. Farm produce is no longer an easily-replaced commodity; it has personality, a story, and a sense of place. It becomes life-enriching, not just life-sustaining. There’s a lot that you can do to support the creation of your local food system. Here are 5 great ways to get started: 1. 2. 3. 4. 5.

Go to your local farmers’ market and buy from organic and sustainable farmers. Share the stories about where your food comes from with your friends and family—and bring them to the farmers’ market with you the next time you go. Ask your grocer where the produce they buy comes from, and purchase fresh, locally grown foods when stocked. Patronize the restaurants and stores that support local farmers. Get involved with Georgia Organics: become a member (see page 71), attend events, farm tours, ﬁeld days, conferences—or volunteer.

Certified Organic Organic farming is based on a system that maintains and replenishes soil fertility and does not use toxic and persistent pesticides and fertilizers. All products sold as organic must be certified. Certification includes inspections of farms and processing facilities to ensure that growers and handlers are meeting the strict uniform standards outlined under the National Organic Program. Farms that are certified are indicated with this symbol. Naturally Grown / Sustainable Some farms prefer not to pursue an organic certification, but follow organic or sustainable practices. Sustainable agriculture refers to the ability of a farm to produce food indefinitely, without causing irreversible damage to ecosystem health. Biodynamics Biodynamics is a biological non-chemical method of agriculture which seeks to actively work with the healthgiving forces of nature. Biodynamic farmers develop their farms as self-sustaining organisms within the surrounding ecosystem. Grassfed / Pastured Grassfed animals are raised naturally, on pasture, as opposed to being kept in confinement and fed an unnatural diet of high carbohydrate grains. Pasturing livestock and poultry is ecologically sustainable, humane, and produces meat, dairy and eggs that are healthier, safer, and more nutritious. Permaculture Applicable to food production, land use, and community building, permaculture is an ethical design system which aims to create sustainable habitats by following nature’s patterns. The term “permaculture” is derived from permanent agriculture, or permanent culture. Community Supported Agriculture Community Supported Agriculture (CSA) describes a relationship where consumers purchase shares of a farmer’s crop in advance of the growing season. Each week, the farmer harvests and assembles a box of fresh produce; shareholders may pick up their boxes at the farm, delivery sites, or home delivery may be offered. A CSA season typically runs from late spring through late fall. Community Garden Community gardens play an integral role in developing local food systems that build community and provide healthy food for residents. These are small plots of land allocated to individuals, families, and groups by an organization that holds title or lease to the land, sometimes for rent, sometimes simply as a grant of land. Heritage and Heirloom Heritage and heirloom both mean the same thing, though “heritage” is usually used to describe animals, while “heirloom” refers generally to kinds of plants. These terms describe varieties of animals and crops that have unique genetic traits or were grown or raised many years ago. —8—

Pickled Cucumbers and Vidalia Onions Dame Rebecca Lang, Rebecca Lang Enterprises Serves 8-10 A wonderful way to use fresh cucumbers in the middle of the summer. ¾ cup sugar 1 cup white vinegar ½ tsp. salt ½ tsp. freshly ground pepper 2 English cucumbers, thinly sliced or 3 large cucumbers, seeded and thinly sliced 1 medium Vidalia onion or other sweet onion, halved and thinly sliced ¼ cup chopped fresh dill In a large mixing bowl, whisk sugar, vinegar, pepper and salt until sugar is dissolved. Add cucumbers and onion. Stir well. Stir in fresh dill. Cover and chill 8 hours. Serve with a slotted spoon.

Chunky Italian Garden Soup Dame Barbara Petit, EventSource Serves 6 A great winter warmer. 1 large onion, diced 3 cloves garlic, minced 1 stalk celery, finely chopped 2 Tbsp. olive oil 1 bay leaf 1 lb. hot Italian sausage formed into small meat balls 10 fresh carrots, sliced 1 large can whole plum tomatoes 8 cups chicken stock, home made or canned 1 can garbanzo beans, drained and rinsed 2 cups fresh jacinto (preferred) kale, cleaned and roughly chopped Parmesan cheese to garnish Heat a sauté pan over medium heat then drop the small sausage meat balls into the pan and sauté until browned on all sides. Remove from pan with slotted spoon draining any grease and reserve the meat balls in a separate bowl. In a large soup pot or Dutch oven, heat olive oil (about two tablespoons) over medium heat and add onions, turning until they are lightly coated with oil. Sauté the onions for a few minutes, stirring occasionally until they become translucent. Do not brown. Add finely chopped celery and garlic and continue to cook and stir for a few minutes until they are softened. Add the bay leaf. Chop tomatoes roughly and add to the pot. Reserve the tomato juices for another use. Add 6 cups of chicken stock, sausage meat balls and carrots. Bring pot to a low boil, reduce heat and simmer for 20 minutes or until carrots are tender. Add the garbanzo beans and cook for 10 minutes more. If the soup needs more stock, add 1-2 additional cups now. Add the kale and continue to simmer for five minutes only so that the kale remains bright green. Ladle hot soup into bowls and garnish with freshly grated parmesan.

Acorn Squash with Pecans & Goat Cheese

Dame Gena Berry, Culinary Works Serves 6 Serve with a side of salad greens for a colorful summer meal. 9 inch pre-baked pie crust (tart pan with removable bottom works perfect for this) 2 large heirloom tomatoes, peeled, sliced ¼” thick and well drained 1½ cup fresh basil, chiffonade* 2 Tbsp. fresh thyme, removed from the stem 8 green onions, thinly sliced Kosher salt and freshly ground black pepper 1½ cup fresh goat cheese, crumbled (grated fresh mozzarella will work as well) ¼ cup grated Parmigiano Reggiano 2 3 cup mayonnaise Heat oven to 350º. Prepare the tomatoes and place on paper towels to drain. Layer the onions, basil, thyme and then the tomatoes on the pie crust. Season with salt and pepper. Mix together the cheeses and mayonnaise and spread over the tomatoes. Bake for 30-35 minutes or until top is slightly brown. Let stand at least 15 minutes before cutting. (You can substitute ricotta cheese for the mayonnaise but be sure to adjust seasoning, adding a little lemon juice, a drizzle of balsamic and salt and pepper.) * Cut into long, thin strips

Dame Virginia Willis, Virginia Willis Culinary Productions Serves 4 A delicious way to add excitement to winter squash. 2 acorn squash, halved crosswise and seeded 3 Tbsp. butter, melted 2 3 cup Georgia pecans, chopped 2 Tbsp. sorghum syrup, plus more to drizzle 2 sprigs fresh thyme, leaves picked 4 oz. fresh goat cheese Coarse salt and freshly ground black pepper Heat oven to 375°. Sprinkle inside of squash with salt and brush with butter. Turn upside down on baking sheet and bake until tender, about 30-45 minutes. Using a small bowl, combine pecans, syrup and thyme. Turn squash upright on baking sheet. Fill hollow of each squash with pecan mixture, reserving about 3 tablespoons. Divide goat cheese between the squash halves. Sprinkle with reserved pecans and season with salt and pepper. Bake an additional 10 minutes more or until the goat cheese is warm and melted. Drizzle with additional syrup if desired and serve immediately. English Pea and Corn Succotash Dame Gina Hopkins, Restaurant Eugene Serves 8 In Georgia, English peas are at their peak in late spring. 1 lb. cooked English peas 1 Vidalia onion, diced 1 clove spring garlic 1½ cup chicken stock 1 cup cooked corn niblets 2 Tbsp. butter 4 Tbsp. chopped parsley Salt to taste In a deep sauté pan, add butter and sauté onions until soft. Add chopped garlic and stir. Add corn, then stock, and cook until stock is reduced to a glaze. Toss in peas and warm thoroughly, being careful not to overcook. Adjust seasoning and sprinkle with parsley.

Recipes Fresh Strawberry Rhubarb Hi-Pie Dame Sonya Jones, Sweet Auburn Bread Company Yield: one 9-inch pie

and sprinkle with 2 tablespoons of sugar. Chill for 15 minutes in the refrigerator. Bake in preheated oven for 1 hour or until crust is golden brown and pie is bubbly. Let cool for 15 minutes before serving.

A sweet finish to a scrumptious meal! Double Crust Pastry Dough 2 cups unbleached all-purpose flour 1 tsp. salt 2 3 cup unsalted butter 5-6 Tbsp. cold milk Combine flour and salt, cut in butter using a pastry blender or your finger tips until the mixture resembles coarse meal. Evenly sprinkle 4 tablespoons of cold milk over the mixture. Stir with a fork until flour mixture is moistened, using more milk if needed Use your hands to form the dough into a ball. Divide the dough in half, press it flat, and then wrap with plastic. Chill in the refrigerator at least 30 minutes. To make the bottom crust, remove one half of the dough from refrigerator. Place on lightly floured surface and gently roll to 1/8 inch thickness. Place the dough in a 9-inch pie pan and trim the excess dough to 1/2 inch beyond the edge of the pie pan. Roll the remaining dough to 1/8 inch thickness and 10 inch diameter. Set aside for top crust. Strawberry Rhubarb Filling 4 cups fresh rhubarb, cut into 1/2 inch pieces 2 cups fresh strawberries, stems removed, cut in half 4 Tbsp. unbleached all-purpose flour 1½ cups sugar 1 tsp. nutmeg, freshly grated 1 tsp. pure vanilla 3 Tbsp. unsalted butter, cut into ¼ inch pieces 2 Tbsp. milk 2 Tbsp. sugar Preheat oven to 375º. Place rhubarb and strawberries in large bowl. Sprinkle vanilla across top of fruit. Combine flour, sugar and nutmeg. Add to fruit bowl and gently toss mixture to coat, taking care not to bruise the fruits. Spoon the fruit mixture into the lined pie shell, piling high in the center. Dot with butter. Gently cover the top of the pie filling with remaining prepared dough. Turn the excess bottom dough over the top dough and crimp the edges to seal. With a sharp knife, cut several slits along the top for steam to escape. Brush the top lightly with milk
