ou’ve got to get up pretty early in the morning to work at Williams Bakery — or go pretty late into the evening. The business, located in the village of Mechanicsville, is celebrating its 50th anniversary. And, while it may not be open around the clock, the schedule of baking pretty much never ends. Employees begin the
proofing process for yeastbased products in the evening, then a night baker comes in and cooks overnight. At about 3 a.m., head baker Carver Williams — a member of the fourth generation of his family in the business — rolls out of bed so he can make it in by 4 a.m. The bakery’s doors open at 6 a.m., and doughnut customers begin trickling in. Throughout the day, sales staff and managers work with customers to plan custom birthday cakes, wedding cakes
