hat’s the most memorable meal you’ve ever eaten? Maybe it was some freshly caught fish devoured on a sunny beach, or a fine-dining dinner by candlelight in a swoon-worthy setting, or maybe even a simple roast dinner in your nan’s house with all your family around you. Whatever it is, I’m betting that at least part of the reason that it’s stuck in your mind is because of the location. And if you’re up for making another foodie memory then you definitely won’t want to miss the mega dining experience coming to Cardiff next month – Cardiff in the Sky – which is taking adventurous eating to a whole new level. You could eat a meal, or drink cocktails, created by some of the city’s most fabulous flavour-smiths, while suspended 100ft up in the air in front of City Hall with Cardiff, quite literally, at your feet. And if you want to find out more about the chefs taking part, and what persuaded them to do such a crazy thing, turn to page 50.

Living history

A brand new, permanent immersive exhibition has opened at Insole Court. This House is a Stage is an experiential exhibition that brings local history to life in the form of a dramatic rendition of the rise and fall of the Insole Family, who built and inhabited the mansion, spanning an entire century from their arrival in Cardiff in the 19th century. Insole Court chairman, Sir Norman Lloyd-Edwards says, “As a Trust, we are committed to the preservation and protection of Insole Court and its gardens for public benefit, education, well-being, social welfare and recreation. It’s a night at the museum (kinda)

Cancer Research Wales has raised more than £17,000 after 19 fundraisers from Whitchurch had their heads shaved for the cancer charity. The team of fundraisers joined forces in April this year to take part in a Close Shave II at The Malsters Arms, Whitchurch, and raised more than £12,000, while two more fundraisers helped boost the total a further £5,000 after running the London Marathon this year. Cancer Research Wales was presented with a cheque for £17,100, which will be used to fund research that can result in vital developments into early diagnosis, treatments and cures for cancer right here in Wales. Techniquest’s popular adult-only After Hours events are returning with time-travelling fun, code-breaking challenges and under-the sea-adventures. On 18 October, After Hours will return by delving into the futuristic world of science and technology with its highly anticipated After Hours: Into the Future night. The evening will immerse visitors in emerging technologies and cutting-edge virtual and augmented reality experiences, allowing them to get a tantalising glimpse into the future. Then in December, Techniquest will be transformed into an escape room unlike any other. On 6 December, Techniquest will join forces with Breakout Cardiff for the intriguing After Hours: Codebreaker event, which will challenge visitors to crack codes, unravel mysteries, and collect clues as part of the exciting evening. In the new year, the science centre is taking a dip in the deep with its After Hours: Under the Sea evening on 7 February. ON THE FRINGE

There will be an array of exciting events celebrating young local musical talent and showcasing community groups at Cowbridge Music Festival’s first ever Festival Fringe. From suppers and brunches accompanied by sultry jazz sounds, to Brazilian beats taking over the high street there will be plenty of toe-tapping action for all musical tastes. Among those on the line-up will be Welsh soprano Elin Manahan Thomas (who serenaded guests at Harry and Meghan’s wedding) ahead of her performance as part of the main programme. Festival director Mary Elliott Rose says, “We’re thrilled to announce Cowbridge Music Festival Fringe and celebrate the talent of local young musicians and showcase the tremendous work of local music groups. The Cardiff Book Festival returns to the city and we’ve got the lowdown…..

ig names and local talent from the worlds of fiction, non-fiction, prose and poetry will descend upon Cardiff for a three-day celebration of the written word from 7 – 9 September. This will be the third time the city has hosted the literary jamboree, and this year will see events taking place across three stages, all at Jurys Inn on Park Place. Jurys Inn is a particularly apt venue to hold the festival due to its strong literary associations. Back when it was The Park Hotel guests included Welsh bards, the first African Nobel Prize for Literature winner Wole Soyinka, performance poet Roger McGough, Swiss author and dramatist Friedrich Dürrenmatt, French Avant-garde theatre leading light Eugène Ionesco, and the civil rights activist Michael X, whose bail for arson was infamously paid by John Lennon in 1971. In the early 60s, the hotel hosted the Commonwealth Poetry Festival where famously a live pig was put up as a performance poet and

drunken bards threw guests’ shoes down the lift shaft! Cerith Mathias, who has organised the event along with Brian Meechan and Dan Tyte, says, “We have created a weekend of events that we hope people will find inspiring and entertaining, that celebrate Wales’ incredible literary talent, as well as bringing in fantastic authors from across the UK. “2018 marks the centenary of the first women in Britain gaining the vote, and we have a series of events celebrating this milestone, along with the literary achievements of women past and present. Britain’s most trusted beauty writer Sali Hughes returns home to Wales to coincide with the paperback launch of her bestselling book, Pretty Iconic: A Look at Beauty Products that Changed the World. Author of Sheepshagger, Niall Griffiths, discusses how his work was inspired by the wilds of Ceredigion, and how his novel has been reinterpreted as a sound/art work alongside the collective Locus (led by Richard James of Gorky’s Zygotic Mynci), in a pairing brought about by the online Literary Atlas Wales project. Cardiff-born literary agent Cathryn Summerhayes from Curtis Brown will be hosting A Pitch in Time session where aspiring writers can pitch their future bestsellers over Twitter and in person. National Poet of Wales Ifor ap Glyn brings his popular BBC Radio Cymru series, A History of the Welsh Language in 50 Words, to the stage, while he’s joined by Culture, Tourism and Sport Minister, Lord Elis-Thomas and Literature Wales’ CEO Lleucu Siencyn to discuss the Year of the Sea, and Wales’ connection with words and waves.

Back from his BBC Two show My Year With The Tribe, Will Millard looks closer to home in discussion on his beautiful memoir about fishing, family and the wilds of Britain, The Old Man and the Sand Eel. In this milestone year for female rights, Lyndall Gordon, author of Outsiders: Five Women Writers Who Changed the World and Angela V John, author of Rocking the Boat: Welsh Women who Championed Equality 1840-1990 tackle the women who changed the world. More than 20 years since the seminal The State We’re In, the former Observer editor Will Hutton will be talking on his new book, Saving Britain, which argues the answer is to change Britain, not to leave Europe. Robyn Hollingworth was living the dream in London in her mid-20s but gave up her job in fashion and her social life to become a carer for her father when he was diagnosed with Alzheimer’s. She’ll be talking through her hilarious and heartbreaking memoir My Mad Dad, about her return to Pontypool to reverse roles, looking after an idolised parent who was unable to care for themselves. Russia hasn’t been far from the headlines in 2018, so an hour with former foreign correspondents Angus Roxborough and Trevor Fishlock will share their insights into the current global situation, lifting the lid on the good, the bad and the ugly side of being the Man in Moscow. A century of saving lives For 100 years, St John Cymru has been at the heart of Welsh communities, providing a lifeline to the people of Wales… A story worth celebrating It all began for St John Cymru in 1918 after the charity’s volunteers, who were recruited into the 130th Field Ambulance, returned from France where they’d helped treated soldiers on the battlefields of World War I. It was the hard work and dedication of those volunteers, at home and overseas, that earned Wales its very own Priory, based in Cardiff. After the war, its volunteers continued to provide first aid treatment in Cardiff and the surrounding valleys, including taking care of the war wounded and rehabilitation of returning St John Cymru volunteers. Since then St John Cymru has been there for people through some of the country’s highs and lows, from providing support at the Aberfan disaster, to being pitch side as Wales won Grand Slams. As the need for first aid developed, so did St John Cymru. The organisation set up the first ambulance service for Wales and in 1974 was the first to take first aid treatments and emergency response into the heart of communities by introducing mobile treatment units – something it still provides today. The tradition of delivering first aid hasn’t wavered and while its 4,000 volunteers are no longer needed on the battlefield, they support at a different type of field – the sporting

field. As proud medical cover providers for the Principality Stadium, St John Cymru helps keep the public safe during events – including the huge events such as the Champions League Finals in 2017.

A nation of lifesavers St John Cymru believes everyone should learn basic first aid skills. Since the beginning the organisation has trained people in first aid at work and in communities. Accessibility to first aid training was improved after the Preliminary Course in First Aid and Nursing was made available in Welsh, and in 1923 the organisation set up the first Cadet Brigade in Wales meaning, for the first time, children and young people in Wales had the opportunity to learn lifesaving skills. St John Cymru Badger and Cadet Youth Programmes are now a staple of its work, teaching those aged 5-17 how to save a life and providing the perfect springboard for our healthcare professionals of the future. Today, St John Cymru is proud to train more than 30,000 people in first aid skills every year, working with everyone from school children to multi-million pound businesses, and working towards a Wales where no one dies because they needed first aid and didn’t get it. n

10am: On your way into Cowbridge take a short detour to visit the 14th century remains of St Quentin’s Castle. The twin-towered gatehouse is especially impressive, and it’s also a great vantage point for getting a view of the town.

1pm: Have a spot of lunch at The Bear Hotel, which back in the day was where mail coaches to and from London stopped to change horses – but it dates even further back than that. Look closely, and you’ll still be able to spot some medieval features. There’s light bites and heartier dishes available, but save some room for pud because we’ve got some plans for that…. 2pm: Spend a couple of hours indulging in some retail therapy among the many boutique shops. You’ll find everything from iron mongers to ice cream parlours, which brings us to dessert… Make sure you stop at Fablas ice cream parlour. Run by mother and daughter

team Michelle and Lauren Evans there’s more than 72 flavours to choose from, or you can dive into an indulgent sundae. 5pm: Once you’re all shopped out, retire to Bar 44 for a sherry (or any beverage of your choosing). Evening: If you’re looking for a spot for an evening meal, the Fox and Hounds in Llancarfan is just a 15 minute drive from Cowbridge. Not only is its location on the banks of a small stream next to St Cadoc’s Church picture perfect, but as winners of the best gastropub at the 2018 Cardiff Life Awards it comes very highly recommended.

10.45am: If you’re in need of some midmorning refreshment then the Elephant and Bun Kitchen is your place. The brownies and banana bread come very highly recommended, but there’s a good chance you’ll find yourself tempted by much of the menu. 11.30am: Surrounded by countryside you’re never far away from some greenery in Cowbridge, and there are a couple of very lovely gardens in which to wile away a morning. The Physic Garden was originally part of the Old Hall Gardens, laid out by the Edmondes family in the 18th century. Badly neglected in the 20th century, it was brought back to life by enthusiastic volunteers and today is a glorious array of plants and herbs that would traditionally have been used for healing, cooking and dyeing fabrics. Just next door are the Old Hall gardens, surrounded by the old town walls. 12pm: The Blue Plaque trail is a great way to get to know Cowbridge, or perhaps discover something about the town that you didn’t know before. All inclusive Chapter’s Megan Price picks out a few highlights from the upcoming autumn season that all have a focus on accessibility

A

utumn is always a busy time for us here at Chapter, and this year is no exception. Alongside our packed cinema and gallery programmes, there is a veritable feast of live performance to choose from. Within this season, there are a number of performances that have a particular focus on accessibility, both in terms of themes and content, and also in terms of how our audiences actually access those performances. On 11 and 12 September, writer, theatremaker and dramaturg Kaite O’Reilly brings her Unlimited International Commission to Chapter. Entitled And Suddenly I Disappear, Kaite’s fictionalised monologues shed light on the lived experience of being deaf or disabled in both the UK and Singapore. The public perceptions, social attitudes and national agendas, as well as the misconceptions, stigmas and barriers that empower and/or disempower the individual are explored, and the performance uses the aesthetics of access, including creative captioning and integrated audio description. On 3 –13 October, new Welsh company

Illumine Theatre bring their debut performance 2023 to us. In Cardiff, in the year 2023, a law passed in Westminster in 2005 has just come into force. Children told they were born from donated eggs or sperm, upon turning 18, are now entitled to know the identity of their donor parent. Mary seeks out sperm donor Chris, knocking his world asunder. In this new era, where racial tensions run high, she wants answers. Who are her halfsiblings? Could she have inherited her deafness? And is Chris prepared to risk his marriage and own family plans to help her feel she belongs? Developed with support from academics and researchers in the fields of gamete donation and D/ deafness, 2023 stars deaf actor Stephanie Back, will be BSL interpreted on 11 October and every performance will be captioned. On 4 and 5 October, Canoe Theatre and Theatrau Sir Gâr present writer Alan Harris’s latest comedy This Incredible Life. Mab has spent her life telling stories – incredible stories. She was a jet-setting journalist, putting people’s lives into print. As a young boy, her nephew Robert, hung on her every word. He doesn’t listen anymore. In a time when fake news has made it into the vernacular, and the line between fact and fiction becomes blurred, does truth really matter? Starring the

always fantastic Sharon Morgan and Christopher Elson, This Incredible Life has an audio described performance with touch tour on 4 October, and a dementia friendly performance supported by workshops and activities on 5 October. From 17 – 20 October, Motherlode Theatre presents its latest show Exodus, and every performance of this will also be captioned. It is Aberd’air, South Wales, the night the last factory closed. Four neighbours build a plane in an allotment and take off down the high street, past the butchers, past the curry house, and above the chapel in search of a life free from politics and the grind. Blisteringly funny, this heartwarming drama accompanied by live original score and tantalising visuals is a new adventure from the valleys that makes anything seem possible. Providing our audiences with shows, performances and events that are accessible is so important to us here at Chapter, and we’re delighted that this autumn season is a real showcase for how creative and integrated this accessibility can be. Other performance highlights of the season include: an arresting untraditional version of Macbeth from Volcano: Gwyn Emberton and Eddie Ladd in residency at Chapter creating a new piece of work which interrogates the notion of transformation from a transversal viewpoint; and a cabaret show for families that explores gender stereotypes through laughter and sing-a-longs. A new era for Twenty Nine Park Place

Twenty Nine Park Place has reopened after a £200,000 refurbishment – and with new owners. Knife and Fork Food has now taken over the city centre townhouse, making it the fifth in its portfolio, but the first in central Cardiff. The makeover has created an open kitchen, along with a large bar area, cosy drinking nooks and a small private dining room. Expect dishes like superfood risotto, scallops with cauliflower purée and pancetta sand and white chocolate terrine with strawberries and sweet pastry alongside signature classics like fish and chips and a grill menu. Sean Murphy, one of three partners who own the group, says, “Until now we’ve always considered ourselves to be a company that specialises in community pubs and to date we have been very successful at that, however, when we saw Twenty Nine Park Place we simply couldn’t resist. “Our move into town heralds the beginning of a whole new era for us, but customers from our other venues will certainly feel very much at home. New venture Chef Tommy Heaney has announced that he has left The Great House in Laleston to focus on his new Pontcanna restaurant. The chef, who is appearing on this year’s Great British Menu, raised more than £40,000 from a successful Kickstarter campaign, to fund his new venture in the site once occupied by Arbennig. The new restaurant will be split into two halves, with a relaxed 50-cover dining area and a vibrant cocktail and gin bar. The next door deli area will be used for private dining, drop-in lunches and as a venue for Tommy and the team to try out some quirkier dishes.

ining in Cardiff is, quite literally, reaching new heights. One hundred feet high to be precise. From 12 – 15 September Dinner in the Sky will be coming to Cardiff giving foodies with a head for heights an eating experience like no other – in a restaurant suspended from a crane outside City Hall. Dinner in the Sky has become a global food phenomena and has popped up in cities all over the world including Athens, Las Vegas, Shanghai, Dubai, Sydney, Cape Town and Toronto – and now it’s adding the Welsh capital to the list. Each ‘flight’ will see 22 people, seated at two long tables with the chef in the centre creating the gastronomic masterpieces. But which Cardiff chefs are crazy enough to agree to cook in such conditions? Let’s find out…

Where can you usually be found cooking? Chapel 1877. What made you agree to cook 100ft up in the air? I’ve seen it before and have friends who have eaten on one and thought it would be a challenge and a once in a lifetime opportunity. What dishes can people expect in the sky? I’m not going to reveal all the details, but they can expect local sourced and seasonal food with a twist. How did you decide on your menu? It’s based it around some of our most popular dishes here at Chapel 1877. What do you think will be the biggest challenge about it? Probably just trying to get everything prepared and up there. What are you most looking forward to? Getting to see the city of Cardiff from a different perspective. We take it you’re not scared of heights, so what are you scared of? No I’m not afraid of heights or at least I don’t think I am. Where can you usually be found cooking? The Potted Pig. What made you agree to do something quite this crazy? It’s a unique opportunity and makes quite the difference from cooking underground in the depths of The Potted Pig – it’ll be nice to get a bit of fresh air! What can guests expect to eat? Pork of course! However we’ve tried to give a range of different dishes as we don’t exclusively offer pork at The Potted Pig, contrary to popular belief. To start we’ve soy seared and marinated tuna, Asian slaw, coriander oil. For main pork belly, pommes aligot, apple purée, seasonal greens, crispy shallot rings and for pudding, yoghurt panna cotta, granola, baked white chocolate and macerated strawberries. How did you decide what to cook? We wanted to showcase the beauty in using local, seasonal produce. It was important to create a menu that reflects what we do at the restaurant – giving those who haven’t experienced us before a taste of what The Potted Pig is all about. What do you think will be the hardest part? Certainly the limitations of space and equipment 100ft in the air. I’m also slightly concerned about the draught... What are you most excited about? The views, of course! Also hearing and seeing the responses of the customers which will all be positive I hope! We don’t get to hear it in the kitchen so it’ll be great to see the other side. If vertigo isn’t a problem for you, what are you scared of? Seagulls – can they fly 100ft high?

Where can you usually be found cooking? Behind the stove at Restaurant James Sommerin in Penarth. Why did you want to get involved in this? I was part of an event like this one in Bristol and really enjoyed it so when I was asked to take part in the event in Cardiff I jumped at the chance. What sort of food can people expect in the sky? I don’t want to give too much away but I am looking at a tomato dish, smoked eel dish, beef and then apple to finish. I

food & drink like to give an element of surprise to my dishes so it keeps the guests intrigued. How did you decide what to serve? Using local produce is important to us at the restaurant and using seasonal ingredients. I like to use ingredients that people would probably not pick if it was on a menu in front of them. What do you think will be the biggest challenge about it? I think the biggest challenge will be the weather, also the cooking facilities. I have done it before so I think I should be OK and kind of prepared! What are you most looking forward to? Being back up in the sky, it was very exhilarating being suspended 100ft in the air, also, being up close and personal with the diners, there’s not a lot of space up there so nowhere to hide. I love people seeing what we do – we have a large window looking from the dining room into the kitchen so our diners can see us in all our glory. We take it you’re not scared of heights, so what are you scared of? I used to be! I still don’t like heights but I think as I get older I feel life is too short and you need to grab any chances you get with both hands, this, is one of those chances. I think my biggest fear is failure – it means I do tend to put a lot of pressure on myself.

Where can you usually be found working? Lab 22. What made you agree to concoct cocktails 100ft up in the air? It’s never been done in Cardiff before and I love to take the chance to try new experiences and pushing the boundaries of where people can enjoy cocktails. I’m quite a competitive soul and love testing myself. What drinks can people expect in the sky? We will be showcasing a range of drinks from a nettle gin drink served in its own botanical garden to upcycled Old Fashioneds from local vineyards. They will have a running theme of sustainability and science throughout. Expect as much phrenology as mixology – from teapots to plantpots, bringing the madcap to the nightcap! How did you decide on your menu? The menu will be a flight of brand new ideas from our upcoming, and much anticipated drinks list. They will be centred on some of our favourite physicists, naturalists and all round boffins. In this case; Schrodinger, Darwin, Newton and Freud. Each drink will encapsulate the genius work and be complimented with an amuse bouche. We also wanted to champion sustainability and locality as we see this as an important theme in the future of bartending. Are you anticipating any particular challenges? We aren’t quite sure yet! This is something completely new for all of us. The logistics of setting up mobile bars can be complicated and testing at any time. without throw the height factor, wind and lack of a ‘bar back’ into the mix. What do you think will be the best bits? Probably the 20 minutes after being up in the air. It’s going to be hard work on the run up and I am predicting a post shift scotch will be on order. “If you’re going to have a wash, make it a good one!”

W

ashing; your hands, your hair, your body – it’s a simple activity that we do just about every day, often without even thinking about it, but imagine if your daily ablutions could actually help make a contribution to society. That’s the vision of Mandy Powell and Kelly Davies, founders of The Goodwash Company – a luxury, ethical wash and lifestyle brand based in Barry. The pair of former professional sportswomen (Mandy is an ex Welsh International hockey and touch rugby player, while Kelly was a footballer playing for Arsenal and Liverpool as well as Wales) met at a Sport Wales dinner, and quickly discovered that they both had a desire to launch a new project that could make a tangible difference to people in need. “For nine-and-a-half years I had been running Vi-Ability, a social enterprise that takes young people off the scrap heap and teaches them how to run football clubs around Europe, and I was looking for something new to do,” says Kelly.

LOCAL HEROES “I’d been working in London for about 10 years, within a large US corporate, and it was all very profit-driven,” continues Mandy. “I wanted to come back to Wales and do something ‘good.’ So we began thinking about what could be done if people chose to back social enterprises and if they could do that by just buying an every day product, like shampoo or shower gel. What if having a wash could ultimately help homelessness? If it could do some good?” “Our Welsh nans would always tend to say before tea time or bed... ‘Make sure you have a good wash… ’, or ‘he needs a right good wash he does...’ and we thought it would resonate as it’s really simple and so the brand is what it is says it is!” says Kelly. And so, last July, The Goodwash Company was born. One hundred per cent of the profits are given to charity, and it’s already supported the Hope dog rescue charity, the RSPCA, Street Football Wales, Vi-Ability, homeless charity Llamau and even helped supply kit to a girls football team in Port Talbot, with all the funds raised by the Goodwash Foundation managed and distributed by the Community Foundation in Wales to ensure that everything complies with all the necessary rules and regulations. “It’s not just a name, it’s a philosophy,” says Mandy. “As well as supporting local projects that benefit the lives of people and animals, all our products have 100 per cent natural ingredients made in the UK. Whenever possible we use natural ingredients from our own Welsh land and sea such as lavender, sea salt and water in all our products.

“We thought it would resonate as it’s really simple and so the brand is what it says it is”

“All our products are lovingly packaged and distributed in Wales, by volunteers or employees who have previously been long term unemployed and are now transforming their own lives for the better through our support. Goodwash is committed to paying the national living wage at the very minimum. All of the plastic we use is 100 per cent recyclable, and our gift boxes are made from 95 per cent recyclable material, originally from sustainable forests.” “We buy social wherever we can,” continues Kelly. “Whenever we are looking for a new ingredient or anything our first step is always to see if there is a social enterprise that can provide it. If we’re encouraging you to buy social then we should be doing it too.” “It’s not about making money,” says Mandy. “It’s about doing the right thing.” Despite the ethical credentials, there’s zero compromise when it comes to quality. “When we first started we had a business person who gave us advice,” says Mandy, “and he said that we had to decide whether we were going to be something luxury high-end or charitable. We didn’t see why we couldn’t be both, and so that’s what we have done.” “People often assume that charity products will be low quality,” says Kelly. “But actually, often the opposite is true because they want you to keep coming back. If you buy something and it’s poor quality, the chances are you won’t buy it again.” It’s not only people that can use Goodwash products either. There’s also a Woof Wash, created specifically for poochie pals and which acts as a natural flea and tick repellent. “Our fur founders, Maisie and Duffle, are a very important part of Goodwash,” smiles Mandy. “We designed the Woof Wash for them.

We believe that the dog wash should be on the bathroom shelf along with the rest of the family’s shampoo, not hidden away under the sink or something so it’s all in exactly the same packaging as the products for people. And actually, the Woof Wash is perfectly fine for humans too!” Mandy and Kelly were keen that the brand was very firmly rooted in Wales. Not only are many of the ingredients sourced from Wales, and an old granary on Mandy’s farm has been converted into the Goodwash bottle factory, but the labels are also partly in Welsh. “We wanted some of the scents of the products to be evocative of the area so we went around asking people, ‘what smells of Wales!’” says Mandy. “Daffodils and sea salt were very popular choices, and we’ve managed to incorporate sea salt. We’ve also been asked for a beer soap, and we’re working on a gin and tonic candle, but we haven’t been able to get that quite right yet.” “We really want the community to buy into what we are doing.” And it seems that they are. Despite being in business for less than a year, The Goodwash Company was named as the Retail and Tourism Business of the Year at the South Wales Business Awards. “It was a complete shock,” says Mandy. “We were up against some really big, well-established businesses. It’s great that people really like the brand, and everything is going as well as we could possibly expect it to go.” “I think people are looking for something different,” says Kelly. “And we can offer that. A: Firstly, in circumstances where there is no court order setting out the child arrangements for your daughter, you and your wife will need each other’s permission before being able to take your daughter outside of the United Kingdom, for any period of time. If you cannot reach an agreement between you as to whether your daughter should be allowed to move abroad, with her mother and new partner, then the matter will have to be determined by the court. Broadly speaking,

the court will take into consideration a broad range of factors, taking a ‘holistic’ approach in determining what decision to make in the best interest of your daughter. If your ex-wife abducts your daughter to the USA without your permission, particularly with an intention to remain in the country, you should consider making an application to the court as a matter of urgency. Either way, if an agreement cannot be reached you should seek independent legal advice as soon as possible as applications to remove from the jurisdiction and/or international abduction is a complex area of family law. n

What made you decide to open the store? I was looking for a change in career and I found a gap in the market for somewhere selling dog accessories so I decided to take the plunge. Where’s your favourite dog walking spot? My dog, Ted, loves the beach so we often go to Newton beach. He also loves running around at Stalling Down near Cowbridge, and anywhere really where he can run off his lead. If you were a dog, what breed would you be and why? I’d be Ted! He’s a Black Miniature Schnauzer and because he’s so cute he gets spoilt rotten by me and by my parents when they dog-sit.

What drew to you this line of work? Dogs have always been my passion/obsession. At the age of six, I had memorised every dog breed in my grandmother’s book. I started working at groomers and kennels at the age of 14, and then decided do a degree in animal science, behaviour and welfare after college. I was asked to start teaching classes by the club I attended with my own dogs when I was 21 and it went from there! It’s incredibly rewarding to help improve the life of a dog and its owner. Where do you like to go to hang out with your dogs? Kenfig Nature Reserve – nothing beats an empty beach with my pack of dogs! What dog breed do you think you’re most like? A Jack Russell terrier, because I’m small, independent, determined and spirited! ■

eing a dog owner myself I always found it quite difficult to buy everything I needed for my dog under one roof, and I would have to travel to different shops or maybe buy online. A summer of support Since 1918 St John Cymru have been working to provide first aid treatment to Cardiffians and people across Wales.

The appliance of science Science discovery centre Techniquest is awarded £3m to fund expansion plans

echniquest has secured £3m of funding to make science more accessible to the people of Wales. Awarded through the Department for Business, Energy and Industrial Strategy (BEIS) and Wellcome Trust’s Inspiring Science Fund, the funding means that Wales’ much loved educational charity can move forward with its plans to radically transform its science discovery centre in Cardiff Bay. Earlier this year, Techniquest announced plans for The Science Capital – a project which encompasses an extension of its building on Stuart Street and a repositioning exercise to extend and diversify its audiences. Taking its project name from a concept conceived by academics at

Kings College London, which is a measure of people’s engagement or relationship with science, through The Science Capital Techniquest is committed to creating society that is equipped to understand, question, and enjoy science. Making space The UK Space Agency has confirmed the new International Convention Centre Wales (ICC Wales) as the host venue for its 2019 UK Space Conference. This is the largest event so far secured for ICC Wales with more than 1,200 delegates and around 180 speakers anticipated to make exclusive use of the new centre’s stateof-the-art facilities. Swing low Children as young as two are channelling their inner Rory McIlroy and taking junior golf lessons at the Vale Resort. More than 60 children, aged from two to 16 years, are currently having golf lessons at the four-star south golfing destination near Cardiff, under the expert tutelage of Georgia Lewis – a 21-year-old assistant PGA professional who represented Wales during her amateur golf career. “I’ve always wanted to share my passion and teaching young children how to play golf is a great way of developing the next generation,” says Georgia, who started playing golf at the comparatively mature age of 11. “It’s amazing to see the response from all the youngsters as well as their parents.” While the Vale Resort has two championship courses at its disposal, in addition to a driving range, successfully teaching young children how to play golf requires more than a unique setting. Creativity, Georgia explains, is a must. “We have equipment for all ages, having cut some clubs down by two feet to suit the children’s needs,” she says. “We use sticky targets, practice throwing and rolling the ball, and play ‘silly swords’ with foam noodles, usually used for swimming, to get them moving. “I’ll get to their height, which usually involves me being on my knees, and do a lot of pointing to the areas of the golf club. I use floppy feet markers to show them where to stand and will deliberately hold clubs badly, so they can laugh and correct me. It’s probably Cardiff’s most wellhidden bar and, if the fact that it’s won Best Bar at the Cardiff Life Awards three years running is anything to go by, it’s one of the most well-loved as well. Here, general manager Mark Holmes, tells us more… So how did it feel to win a Cardiff Life Award? We were all so chuffed to win the Cardiff Life Award, especially for the third time (not to brag!). Every year has felt amazing, but especially so this year. Competition was strong, and Cardiff ’s bar scene is more vibrant than ever! Why do you think The Dead Canary won? I believe when The Dead Canary opened almost three years ago, it brought a new style of nightlife to Cardiff. It brought a place you can go to enjoy a cocktail whilst sitting back, making the most of the table service and live music. Each year, we aim to keep moving things forward, bringing new tasty drinks and exciting new events. How did you first get into cocktails and mixology? I got into this industry about 10 years ago now, after finishing university. I loved learning about all things food and drink, but cocktails and spirits took my fancy even more so as it is so varied. I’ve loved the history behind cocktails, and I love the future of

cocktails and the different trends which are happening. It’s an exciting sub sector of hospitality. How did The Dead Canary come about? The Dead Canary was a concept developed from bringing Welsh culture to a New York styled speakeasy. We wanted to open a bar with a Welsh theme, without being too obvious, ‘The Dead Canary’ – the name of the bar – has derived from the mining industry, to reference the canaries that would go into the mines to ensure that there wasn’t dangerous gases such as carbon monoxide collecting. The style of bar is something I believe was lacking in Cardiff before. What’s the best piece of career advice you’ve ever been given? Being told I wasn’t suited to a previous job, and not getting the promotion that I wanted. It actually helped drive me towards a much better role suited to me and new opportunities which have now landed me at The Dead Canary. Rejection always feels horrible, but most of the time, it works out for the best.

What plans do you have for The Dead Canary? We were incredibly happy to make the Top 50 bars in the UK this year coming in at number 24. Our aim is to really push ourselves to make the top 10 next year so we are planning on making even tastier drinks, delivering even better service and planning more exciting events. Who are your cocktail making/ bar tending heroes? I got in to cocktails around 10 years ago at a point when decent blogs and videos weren’t widely available, so I guess the bar tenders I learnt a lot from were the second guard of the revival bartenders. Particular favourites were two American bar tenders who kept excellent blogs, those being Jamie Boudreau from Seattle and Jeffrey Morgenthaler from Portland. What advice would you give someone looking to go into this sector? My advice for anyone wanting to get in to cocktail bar tending would be to get hands on experience and read a lot! There’s plenty of bar tending schools available, but none of them will beat some real life experience. Background knowledge is also essential, so pick up a load of books and hit up some blogs. The choice of decent reads these days is ten fold of what it was when I started, so there’s plenty to get your teeth stuck into.

What’s your favourite cocktail on your menu at the moment and why? The new cocktail menu launched in June, and is focusing on Welsh stars and legends and creating them their own cocktail business card. My personal favourite is currently the Joe Calzaghe. With his Italian heritage, we have taken the classic Negroni and given it the most delicious twist with coconut-infused gin, Campari Cask Tales, byrrh, lemon and egg white. What do you love most about being in Cardiff? I love the community in Cardiff. Especially the community within the hospitality sector, everyone is great friends and always encourage each other to, not only help their own venues, but to help make Cardiff a more vibrant scene.

We find out more from co-owner Craig Pugh… So how did it feel to win a Cardiff Life Award? It was incredible, such a shock! It’s done fantastic things for us since – we’ve had a lot of new custom due to the coverage of our win! Why do you think Compass Coffee won? I think it’s our custom service and locally sourced produce. We pride ourselves on using as many locally produced items as possible. We also take a very hands on approach with our customers. Hard work really does pay off ! How did you first get into the coffee business? Both Marcus (Hill) and I have worked within the catering industry for 15 years each. This was our first venture together and so far so good as Compass Coffee is going from strength to strength. How did Compass Coffee come about? Compass Coffee 2.0 started on 1 January 2016. We completely changed the whole company down to staff, produce, layout of shop etc. It’s been a long hard journey but well worth

every minute, we are blessed to be within a industry we love. What’s the best piece of career advice you’ve ever been given? Never drop the ball always be one step ahead. And look after your staff as they are the backbone of your company. What plans do you have for Compass Coffee? We have numerous opportunities ahead! We don’t want to open up a load of shops as we feel it loses its appeal, but we have a few areas we would be interested in expanding into and there’s also a very exciting opportunity in the pipeline which I’m sure you will hear about very soon! Is there anyone who you really admire professionally? There are a number of local cafés we really look up to, like Milk & Sugar, The Deck, Kin & Ilk to name a just few. We have to mention our coffee supplier Fat Dragon Coffee owned by Cardiff Blues’ very own Dillon Lewis and Brad Thyer. They not only work full time as professional rugby players but also have their own coffee company. We try to support as many

t can be hard enough when you live locally to one another and share children but what if one of you wants to move away from the area or the country and take the children with them? The law of England and Wales requires that consent is given by everyone who holds parental responsibility for a child before that child is able to permanently leave either of the countries (most parents now hold parental responsibility for a child if they are named on the birth certificate). Within England and Wales moves can be just as complicated and fraught with dispute. Firstly, tell the other parent as soon as you know the move is a possibility so that there is plenty of time to try and sort things out. Secondly, if you know it’s not agreed by both parents you

may need to apply to the court straight away as decisions can take a long time and should not be hurried. Thirdly, if you are the parent moving or staying, have a plan to put forward about how it could all work wherever your child will be living. This might include where will he/she go to school, who will help with child care locally, how will school holidays be split and what are the realistic plans for visits with the other parent during term time and holidays? Delay in these sorts of cases is really problematic especially if there are school term dates and job start dates to factor in on top of visa regulations and flights to book. It is difficult as there are so many places that I love in Cardiff, having lived here all my life. Roath Park is within walking distance from home, so it would have to be there. There’s nothing better than spending time with my wife and two children and seeing how it changes in all seasons.

What services does your media and entertainment team offer? We deal with all aspects of development, funding, production, co-production and distribution of film, television and digital content, talent agreements and chain of title checking. We also advise on sports media rights, sponsorship, athlete and celebrity endorsement arrangements, so-called image rights, trade mark licensing, event staging, agency and management agreements, website and app development agreements, and much more. What is the most common question you are asked? Clients normally ask pretty quickly about cost! They are naturally concerned to control their expenditure and sometimes have a limited budget for legal fees, particularly until their film or TV project has been given a green light. We offer a level of media and entertainment and sports expertise which can be found amongst a few specialist teams in London law

firms, but we offer these services at a much reduced cost. Wherever possible we give a fixed price quotation for the work involved and aim to provide value for money with no nasty shocks. What are the biggest legal issues in the industry at the moment? The way in which people consume video content is clearly changing fast, particularly amongst children and young adults. OFCOM has a battle on its hands to keep the UK regulatory regime fit for purpose. How has the legal landscape in this area changed over the past few years? It has become more highly regulated and sophisticated. This, along with technological advances, has led to more specialism within the sector. Why did you choose to specialise in this area? I spent a couple of years specialising in intellectual property when I first qualified as a solicitor. Copyright underpins all content produced for TV and digital media platforms, so I jumped at the chance to work as an in-house lawyer at public service broadcaster S4C, where I remained head of legal for many years. What do you enjoy most about your job? Rapid changes in technology mean that the job never remains the same. Beth ForbesSimpson The fantastic florist talks sunrise swimming, why she’d be a terrible teacher and where she likes to spend her time off Beth owns and runs Forbesfield, a floral design studio that specialises in wedding and event work and large scale installations. When she’s not at the studio working and developing ideas she can be found at her home by the sea with her husband, daughter and animals; usually planning another big adventure….

Where in Cardiff do you live and what makes it special? I actually live in Barry, in The Vale right by the sea – which is the answer to that question right there! It’s a real privilege to live so close to it especially when I see that my daughter thinks her beach life is completely normal; as if everybody goes for a dip at sundown or sunrise every day through the summer. It’s an

inspiring place – the peculiar mix of fading seaside town and new wave cool makes it a really interesting place to be living right now. What has been the highlight of your career so far? I became a Chapel Designer a few years back which means I am part of an international collective of florists and floral designers at the top of their game. And my god was I honoured by that! Being able to count incredible talents such as Holly Chapple and Susan McLeary as my contemporaries makes me so incredibly proud. Who would you invite to your dream dinner party? I love a party so there could be quite a few on the list. I’m intrigued and inspired mainly

by women and so it’s all the girls that come to mind. I reckon a mix of Dame Judi Dench, Serena Williams, Melissa McCarthy, Billie Holiday, Michelle Obama, Amy Poehler, Jennifer Saunders and Dolly Parton would be an amazing evening of fun and revelations. When did you last cry, and why? I cry all the time. I’m quite emotional which may surprise people because I’m bossy and shouty too. I do remember a particular instance recently when I watched Blue Planet and saw the whale eating plastic thinking it was a food source. We watched it as a family and it was probably tears tinged with disgust at what we do to our beautiful planet. We can’t really go on that like this can we? What job would you be terrible at? Teaching; patience is not my virtue so teaching would drive me crazy! Hats off to those guys who do! What’s on your bookshelf at the moment? I’ve recently had my birthday and my mum managed to find an old book of mine that I was given years ago as a child which I thought was long lost. It’s a book called Catwalk and it’s a coffee table book I guess. It’s about the life of model Marie Helvin and lots of it is shot by David Bailey and Helmut Newton. It’s like the best nostalgia trip looking through it now and I have spent

the last few weeks going back through it. I remember poring over the pages with Helvin being shot for Vogue covers and loved the far away exotica of it . What’s your guiltiest pleasure? Eating peanut butter. With a spoon. From the jar. What are your favourite places to eat/drink and shop in Cardiff? For food and drinks we love Bar 44. It’s our tried and tested and never gets old. The menu changes often enough to keep it fresh and seasonal and service is always first class. Shopping for gifts has to go to my number one girl HomeByKirsty. Yes she’s a great friend of mine but she curates such a beautiful little haul of treasures that I can’t ever resist. Tell us about a secret/ underrated Cardiff spot we might not be aware of… The not so secret Secret Garden Café in Bute park run by Mel who also owns Penylan Pantry. What a location and the food is so delicious! We’d better let you get on…. What are you doing as soon as you’ve done this? An afternoon of dirty work.
