M
oving when ice and snow are in the daily forecast isn’t a popular choice for many Canadians. It’s cold and slippery; but with some extra safety precautions, winter moving also has many advantages. Moving last minute? No problem, if it’s during the cold months. Choosing to move in the “off season” – sometime between November and March – can save you time and money. Summer is the busiest season for moving companies. This means you must be well prepared, booking 6 to 8 weeks in advance to ensure your preferred moving company is available. Not only are they higher in demand but generally their rates are also more expensive. Some companies may be more willing to negotiate their rates during the winter months as they’re competing for business during the slow season. Likewise, less rush and stress for companies in the winter means you get their best employees resulting in a higher quality of service.
With everything booked, now comes the packing. Follow these tips for a relaxed and toasty move – no matter what’s going on outside those frosted windows. • Have a contingency plan. Keep up to date with local weather forecasts and change your plans accordingly. If a big snowfall or freezing rain is expected the morning of your move day, don’t risk it. • Keep cozy. Carry extra warm clothes for you and your family – including hats, gloves and snow pants. Pack these ahead of time and clearly label them so you can locate them immediately. • Remember your items will be in a non-heated environment for a while. Ensure your plants, electronics and liquids are properly packed and protected from the cold. • Allow extra time on the move day – cold weather slows things down. Additionally, rushing in the winter can lead to accidents and injuries. • Have driveways and sidewalks cleared of snow before the movers arrive. Your driveway needs to be ploughed wider than usual – enough to allow the moving truck’s loading ramp to be positioned as close to your front door as possible. Lay plywood down on muddy or
slushy areas. Slipping can not only lead to dropped boxes and broken possessions but also personal injury. • Quality movers will use floor runners to protect your floors in high traffic area but for extra protection inside, cover your floors to protect them from tracked-in snow, mud, and salt. • Drive safe. Make sure maintenance and service on your vehicles are current. Check the air pressure in your tires and ensure the trunk is equipped with emergency kits (matches, flashlight, food), blankets, and shovels. Drive slowly with extra caution. • Be certain that your heating company for your new home is aware of your move in day. Wintertime moving doesn’t have to be wet and miserable. With these reminders, you’ll be packed up, moved and basking in the warmth of your new home before you know it. ■

his classic dessert is sure to be a conversation piece in your holiday dinner. The sugared cranberries are a pretty garnish and take this cake to the next level. “A classic Bûche de Noël, or French yule log cake, is one of the most impressive holiday desserts you can make,” says Michelle Pennock,
executive chef for President’s Choice test kitchen. “The key to rolling the sponge cake without having it crack is to keep it moist, so be sure to cover it with a damp towel as directed once it comes out of the oven and use the towel to guide the cake as you roll it. Don’t be concerned if the cake cracks a little –
you can cover it up with the hazelnut frosting.” Use jelly roll pans, which are smaller and taller versions of baking sheets and are perfect for making both rolled and slab cakes, as well as roasting smaller batches of vegetables and nuts. ■ — News Canada
Chocolate Hazelnut Bûche de Noël Prep time: 50 minutes
Total time: 10 minutes
Ingredients: • 1 ¼ cup (300 mL) chopped 70% cocoa solids dark chocolate • 5 large eggs, yolks and whites separated
Serves: 14
• ½ cup (125 mL) granulated sugar • ½ tsp (2 mL) salt • 1 tbsp (15 mL) cocoa powder • 1 jar (375 g) crunchy hazelnut spread, divided
Directions: 1. Preheat oven to 400°F (200°C). Line 15 x 10-inch (38 x 25 cm) metal jelly roll pan with parchment paper; mist with cooking spray. Set aside. 2. Place chocolate in microwave-safe bowl. Microwave 20 seconds, then stir and repeat until melted; 1 to 1 ½ minutes total. Stir until smooth. Let cool slightly. 3. Beat together egg yolks, sugar and salt in large bowl using electric hand mixer until pale yellow. Beat in melted chocolate until smooth. Set aside. 4. Beat egg whites in separate large bowl using electric hand mixer until soft peaks form. Fold a quarter of egg whites into chocolate mixture using rubber spatula; fold in remaining egg whites. Transfer to prepared pan, spreading evenly and smoothing top. 5. Bake until cake springs back when lightly touched in centre; about 10 minutes. Run paring knife around edges of cake to loosen. Cover cake with clean damp kitchen towel; let cool completely. 6. Arrange same damp towel on work surface with long side facing you; dust with cocoa powder. Carefully invert cake onto towel with long side facing you; remove pan and gently peel off parchment. Trim edges of cake. Set aside.
• 2 cups (500 mL) mascarpone pone e cheese, drained and at room temperature • Sugared cranberries (optional) • Fresh mint (optional)
7. Stir ½ cup hazelnut spread with mascarpone in separate large bowl until well combined. Spread over surface of cake. Beginning at long side closest to you and lifting and guiding cake with towel, roll up cake lengthwise. Arrange, seam-side down, on work surface. 8. Diagonally slice 5-inch (13 cm) long piece off one end of cake. Arrange longer piece of cake on serving platter; place cut end of short piece adjacent to long piece to make a “Y” shape. Spread remaining hazelnut spread all over cake. Refrigerate uncovered until hazelnut spread is set; about 1 hour or up to 24 hours. 9 Let stand at room temperature for 15 minutes. If using, top with sugared cranberries and mint. Chef’s tip: To make sugared cranberries, bring ½ cup each granulated sugar and water to a boil in small saucepan; cook, stirring, until sugar dissolves. Add 1 cup frozen cranberries; simmer 1 minute. Pour cranberries and liquid into bowl or liquid measure; refrigerate 1 hour. Strain cranberries; transfer to small baking dish or rimmed baking sheet. Sprinkle with ½ cup granulated sugar; toss to coat. Spread in single layer; let stand uncovered at room temperature for three hours or up to 24 hours.

mployers check references, landlords check references, and if you’re considering someone as a roommate, you should check their references, too. A person can seem charming initially, then later on turn into a nightmare. Do your homework and avoid such situations. Have a rental application form that’s appropriate for your province. It will cover all the bases. Discuss how your potential roommate feels about overnight visitors, smoking, pets, sharing household chores, etc. Asking why they left their last place and how long they lived there is important. The application form will have a spot for references. Ask for references from their current employer, a previous landlord and at least one previous roommate. Tell them that you will call these people to verify em-

ployment status and their previous housing history. By providing contact information for these references, the prospective roommate is giving you permission to contact them. Check your province’s privacy and human rights laws for what you are allowed to ask and what isn’t okay. When calling an employer, state that you are verifying the potential roommate’s employment status and character, not doing an employment check for another job. When calling a previous landlord, find out how long the person lived there, whether they paid their rent on time or if there were any other pertinent issues, and why they left. If this information doesn’t match what the person told you, you may need to clarify. Previous roommates can be revealing. Ask how long they have known

the person and how long they lived together. Then ask, “What did you like about living with __?” and “What didn’t you like about living with __?” Ask why they are no longer living together. If someone cannot provide any references or if none of their references are forthcoming, beware. You will be living with this person in close quarters, sharing a space and relying on them to fulfil their responsibilities. You need to have a reasonable comfort level with them – they will have access to all of your personal possessions and be privy to much of your private life.
