TANDOORI CHICKEN NAAN SANDWICH Serves 4 For the tandoori chicken 6 skinless, boneless chicken thighs, about 550g in total 3 tbsp lemon juice 1 tsp salt 250g Greek yoghurt 2 tbsp garlic-infused oil 2 tsp smoked paprika 1 tsp minced ginger paste 1 tsp ground cumin 1 tsp ground coriander ½ tsp cayenne pepper For the naan 250g gluten-free self-raising flour, plus extra for dusting 1 tbsp nigella seeds Pinch of salt 260g Greek yoghurt (or any thick, plain yoghurt) To serve 140ml mayonnaise 1½ tbsp mango chutney Handful of fresh coriander, finely chopped
l Using a sharp knife, make
3 deep slashes in each chicken thigh. Put the remaining chicken ingredients into a large mixing bowl and stir to combine. Add the chicken and stir until well coated. Place in the fridge to marinate for anywhere between 1 and 8 hours – the longer, the better! l Set your oven to a high grill setting. Place the marinated chicken on a grill pan and grill until the coating is completely dry and a little blackened in places, then flip and repeat, making sure the chicken is cooked through. Remove and keep warm. l For the naan, grab a large mixing bowl and add the flour, nigella seeds (if using), salt and yoghurt (give it a good stir before adding). Mix together using a spatula and, as it starts to combine, use your hands to bring it together into a smooth ball. l On a well-floured surface,

knead the dough briefly until no longer sticky. Dough still too sticky? Add a little more flour. Too dry and crumbly? Add a little more yoghurt. Divide the dough into 4 equal portions. l Use a floured rolling pin to roll a dough portion to a 3mm thickness, aiming for an oval shape. If the edges are a little cracked, simply use your fingers to gently shape until smooth. l Place a large frying pan over a high heat. Once hot, carefully transfer your rolledout naan to the dry pan, using a cake lifter or pizza peel. Cook for 2 minutes, or until nicely browned on the underside, then flip and cook for 1 minute on the other side. l After flipping, press down firmly using a spatula – this encourages the naan to puff up a little. Repeat with the other dough portions. l To serve, chop your chicken into bitesized cubes and place in a bowl. Add the mayonnaise and mango chutney and stir until the chicken is well coated. l Take a naan and place the filling on one side, top with coriander, then fold and enjoy. Alternatively, enjoy as an open sandwich, as pictured. www.foodiesfestival.com

SMOKED BACON, CARAMELISED ONION & RED LEICESTER TART Serves 4 – 6 150g smoked bacon lardons 150g red onions 150g Red Leicester cheese 2 tbsp balsamic vinegar 1 tbsp caster sugar 1 tbsp olive oil Salt & pepper 180ml whole milk 180ml double cream 3 large eggs 1 pack shortcrust pastry l Heat an oven to 180°C fan.
Line a loose bottom tart tin with shortcrust pastry. Top with baking paper and baking 6 foodies 4
beads and blind bake for 15 minutes or so. Remove the paper and beans and cook for a further 15 minutes until light golden brown. l In a frying pan over a medium heat, cook the bacon lardons until cooked through but not crispy. l Finely slice the red onions. In a saucepan over a medium heat, gently sweat the red onions in olive oil, with a pinch of salt, for 15 minutes. Add the balsamic vinegar and sugar, and simmer on low for a further 10 minutes until sweet and sticky.
l Whisk together the eggs,
whole milk, and double cream. Season with a pinch of salt. Scatter the cheese, bacon, and onions over the tart base, and then cover with the egg mixture. Bake at 180°C fan for 20 to 25 minutes, or until set.

TERIYAKI-GLAZED SIRLOIN For the teriyaki glaze 500ml beef stock 1 star anise 1 tsp Sichuan peppercorns 4 tbsp dark brown sugar 5 tbsp mirin 5 tbsp sake 5 tbsp dark soy sauce 500g sirloin, in one piece 2 tbsp vegetable oil 1 tsp sea salt 2 spring onions, very thinly sliced 4 tsp sesame seeds l Preheat the oven to 200°C. Pour the
stock into a pan and add the star anise and Sichuan peppercorns. Bring to the boil and leave to simmer for 20–30 minutes, until the liquid has reduced considerably. You should end up with about 50–100ml concentrated beef stock. Strain and discard the spices. l Mix the stock with the remaining glaze ingredients and bring to the boil. Allow to simmer for 10 minutes and then remove from the heat. l Place a griddle or frying pan over a high heat until it is smoking hot. Meanwhile rub the sirloin with the vegetable oil and season with sea salt. When the pan is really hot, place the beef, fat side down, in the pan and leave for 2–3 minutes. Turn and sear for 2 minutes on all other sides. l Place the beef in a roasting tin and cook in the oven for 12–15 minutes, then remove and allow to rest. After 15 minutes, add the resting juices to the teriyaki glaze. l Slice the beef into thin slices, arrange on a plate and pour over the teriyaki glaze. Scatter over the sliced spring onions and sesame seeds and serve. www.foodiesfestival.com

BOBBY BEANS WITH SMASHED ROASTED TOMATOES, RED ONION, CAPERS & BASIL Serves 4 6 tomatoes, halved across the equator 4 tbsp extra-virgin olive oil, plus extra to dress 1 red onion or 2 Tropea onions, finely sliced Bunch of basil, leaves picked 30g capers 500g green beans, topped 3 tbsp red wine vinegar Sea salt flakes and black pepper l Preheat the oven to 160ºC.
Arrange the tomatoes cutside up on a baking tray. Season with salt, pour over 2 tablespoons of the oil and roast for 1 hour. They should be juicy but the flavours concentrated. I normally do a bigger batch of these as they keep well in the refrigerator and can be used in many different ways. l While the tomatoes are cooking, add the onion to a mixing bowl along with the basil leaves and capers. l Once the tomatoes are done, blanch the beans in salted boiling water for 3–5 minutes until tender. They should be cooked through but not overly floppy; test one when you feel they are almost done. I like to refresh them briefly in cold water to stop 8 foodies
the cooking but keep them at room temperature rather than ice cold. Drain. l Add the beans to the mixing bowl with the remaining olive oil. Crush the tomatoes either with your hand, if cool enough, or with the back of a wooden spoon and add to the
bowl. Season with vinegar to taste, start with a tablespoon and add to your taste. Stir everything around a few times to combine with a couple of coarse grinds of black pepper. Arrange on a serving plate. Drizzle with extra olive oil if you like.

CRISPY CHILLI BEEF Serves 2 300 g Sirloin steak 2 tbsp cornflour 1 tbsp Chinese five spice 1 large red pepper, sliced 1 bunch of spring onion, sliced 1 handful of bean sprouts 1 tbsp ginger paste 1 tbsp garlic paste 2 red chillies, sliced 3 tbsp rice wine vinegar 1 tbsp soy sauce 2 tbsp tomato ketchup 2 tbsp sweet chilli sauce 240g fresh egg noodles 150ml sunflower oil l Cut the sirloin steak into
thin strips. Place in a bowl then add the cornflour and Chinese five spice. Mix to completely coat the beef. l Heat the sunflower oil in a frying pan or a wok, add the beef and fry until crisp and golden. l Remove the beef from the pan and place it onto kitchen paper to soak up any excess oil. l Get rid of most of the oil www.foodiesfestival.com

Add the red pepper, one chilli, two thirds of the spring onions, the beansprouts, the garlic and ginger into the pan and stir fry for 3-4 minutes. l Whilst the veg is frying, make the sauce. Mix the rice wine vinegar, soy sauce, sweet chilli sauce and tomato ketchup along with a splash of water. l Pour it into the pan and stir well. Let it bubble over a medium-high heat for 2-3 minutes until it starts to look
sticky. Add the beef back into the pan and coat in the sauce. l Cook the noodles as per packet instructions. Dish up the noodles, spoon the crispy chilli beef over the top. Finish with the remaining sliced chilli and spring onion.
