Top chefs cook their favourite recipes in the La Española Theatre. Register for free entry at the Registration Desk. Tickets are released throughout the day and subject to availability.

SALMOREJO WITH JAMÓN IBÉRICO TOMATO DIP WITH IBERIAN HAM

Salmorejo is a cold Spanish soup which is also used as a dip. It comes from the Andalucia region and is served all year around. Salmorejo is the perfect dish for hot summer days!

Serves 4

Preparation time: 5 minutes

Cooking time: 15 minutes

Ingredients:

200g stale white bread, crusts removed and cut into cubes

750g ripe, mellow tomatoes, roughly chopped

1 clove garlic

250ml La Española Extra Virgin Olive Oil

3 tbsp sherry vinegar

Salt and freshly ground black pepper

To serve:

La Española Extra Virgin Olive Oil, to drizzle

50g of Jamon Iberico de bellota

1 boiled egg, chopped Crusty bread

Place the bread in a large bowl and pour over enough cold water to cover. Leave to soak for 3-4 minutes.

Squeeze the water from the bread, and place in a blender with the tomatoes, garlic, olive oil and sherry vinegar. Blend, until you have obtained a thick

and smooth texture. Season to taste.

Pour into bowls and serve with a drizzle of La Española Extra Virgin Olive Oil, slices of Iberico ham and chopped egg.

Serve with chunks of bread for dipping.

KOREAN FRIED CHICKEN WITH CUCUMBER KIMCHI AND GREEN CHUTNEY MAYO

For the chicken marinade

3 chicken breasts/wings

240ml buttermilk

1 tsp salt

1 tsp white pepper

1/2 tsp garlic powder

For the crispy coating

180g plain flour

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

2 tsp celery salt

1 tsp dry thyme

1 tsp paprika

1 tsp baking powder

For the Korean sauce

2 tbsp gochujang paste

2 tbsp honey

4 tbsp brown sugar

4 tbsp soy sauce

2 garlic cloves minced

2 tsp minced ginger

1 tbsp veggie oil

1 tbsp sesame oil

For the cucumber kimchi

For the green chutney mayo

2 egg yolks

1 tbsp Dijon mustard

250ml rapeseed oil

2 tsp white wine vinegar

1/2 lemon, juiced

2 tsp honey

15g coriander

1 clove garlic

1 inch ginger

2 green chillies

Salt

For the chicken marinade, place 240ml buttermilk in a bowl along with salt, white pepper, garlic powder and paprika. Mix well until combined then add the chicken and allow to marinate for at least 1 hour. For the best results, leave overnight.

For the cucumber kimchi, first slice your cucumber and sprinkle with salt and set aside until later.

Prep the flour mixture for the crispy coating. Place flour in a bowl along with salt, black pepper, garlic powder, celery salt, dry thyme, paprika, baking powder. Mix well and set aside.

Prepare the ingredients for the spicy sticky sauce. In a saucepan add the gochujang paste, honey, brown sugar, soy sauce, minced garlic, minced ginger and sesame oil. Mix thoroughly and heat on a low heat until the sauce combines and thickens.

Set aside to cool.

Heat your oil to 170ºC. While the oil is heating, drain excess buttermilk off the wings and coat in the flour mixture. Top tip: for an even crispier coating repeat this process - dip the wings back into the buttermilk and then into the flour mixture, pat off the excess flour and start cooking in batches.

Leave the chicken in the oil cooking until it reaches an internal temp of 79ºC. Once all wings are cooked, crank the heat up on the oil until it reaches a temperature between 200210ºC.

While the oil is coming to temp, chop all ingredients for the kimchi and rinse the excess salt from the cucumber.

By now the oil should be to temperature again. In batches, place the wings into the oil but this time keep a close eye on them. This step is to create an amazing crispy external texture but not overcook the meat. They should only need a minute or so at this temperature.

Once all the wings are cooked set aside and allow to cool slightly. During this time we are going to make the green chilli mayo. Simply place all the ingredients into a blender and blend until smooth and thick.

Now all components are ready to plate, don’t forget to toss the wings into that amazing sauce before serving. Plate up and enjoy.

MEXICAN HALLOUMI TACO BOWLS

Serves 4

Olive oil

4 large tortilla wraps 2 peppers

1 red onion

200g tinned chickpeas

1 tbsp smoked paprika

1 tbsp Cajun seasoning

Salt and pepper

225g halloumi

1 pack pre-cooked Mexican rice

100g cherry tomatoes

150g guacamole or 1 avocado

To serve

4 tbsp natural yoghurt

1 tsp smoked paprika

1 tsp Cajun seasoning

Chopped fresh coriander

Hot sauce (optional)

To make the tortilla bowls, rub oil all over the outside of a small round oven-safe bowl. Make sure it’s really oily all over.

Place your bowl upside down, then place a whole flour tortilla wrap over it. Press the tortilla tightly around the shape of the bowl, then wrap the whole thing in foil. Repeat with the rest of the tortillas, then place either in an air fryer on 200°C for 10 minutes, or in a preheated oven at 180°C fan for 10 minutes, or until golden.

Remove the foil and bowl and set the tortilla bowls on a rack to cool down.

Meanwhile, slice the peppers and red onion and drain the chickpeas. Put them all on a baking tray. Coat them with half the smoked paprika and Cajun seasoning, season with salt and pepper and drizzle with oil. Bake at 200°C for 20 minutes.

Slice the halloumi and sprinkle the other half of the smoked paprika over the slices, then fry in a pan with a little oil until golden on both sides.

Place the rice, baked vegetables, chickpeas and tomatoes in separate quarters of the tortilla bowls. Add fresh avocado or guacamole and tuck the fried halloumi in the top.

Put the yoghurt into a separate bowl with the smoked paprika and Cajun seasoning and mix together to make a dressing.

Drizzle the dressing over the tacos and finish with chopped coriander and some hot sauce if you like it spicy!

SAVOURY SQUASH CAKE

Serves 6

1 small squash, peeled, deseeded and cut into 2cm cubes (about 600g prepared weight)

1 red onion, cut into 10 wedges

3 sprigs rosemary, divided

½ tsp chilli flakes

4 tbsp extra virgin olive oil, divided Butter, for greasing.

225g plain white flour

1 tsp baking powder

1 bunch spring onions, finely sliced

1 small bunch parsley

6 eggs

175g Greek yoghurt

175g extra mature cheddar cheese

1 heaped tsp nigella seeds

Salt and pepper

Preheat the oven to 200°C.

Toss the squash in a large baking tray with 1 tsp of salt, the red onion, 1 sprig of rosemary and the chilli flakes. Drizzle half the olive oil over the vegetables and stir to combine. Transfer the vegetables to the oven to roast for 25 minutes, shaking the tray twice during this time. Meanwhile, line the base of a 25cm round springform tin with baking parchment and grease the sides liberally with butter.

Once the squash has had its time, remove from the oven and set aside to cool. Reduce the oven temperature to 180°C. Sieve the flour and baking powder into a large mixing bowl. Pick the remaining rosemary leaves (discard the stalk), roughly chop and add to the flour.

Pick out three attractive parsley stems, set aside and roughly chop the rest, stalk and all. Stir the herbs through the flour along with the spring onions. In a separate bowl, stir together the eggs, yoghurt and cheese together until combined. Pour into the flour and herb mixture and fold until no dry patches are visible.

Tip in the roasted squash along with the nigella seeds and a generous pinch of salt and pepper. Fold through with a spatula until combined, then pour into the prepared tin. Cook the squash cake in the oven for 5 minutes before removing and decorating the top with the parsley stems, pressing in gently to make sure they stick. Return the cake to the oven and cook for a further 35-40 minutes, until a skewer inserted comes out clean.

Once the cake has been removed from the oven, allow it to cool in the tin for 10 minutes before releasing. Allow the cake to cool for a total of 30 minutes before slicing. It will still be warm. Serve with roasted potatoes and greens, or with salad for lunch.

FOUR-INGREDIENT FUDGY BROWNIES

Serves 8

105 kcal per serving

200g bananas (peeled)

65g tahini

4 tsp unsweetened cocoa powder

20g milk chocolate chips

Preheat the oven to 190°C. Grab yourself a baking tin (about 20 x 15cm) and line it with greaseproof paper.

In a large bowl, give the bananas a really good mashing with a fork, until you get a reasonably smooth paste. Add all the other ingredients and stir well to combine.

Pour the mixture into the lined tin and smooth over to get a nice even layer, then bake for 15–20 minutes, depending on the thickness of the layer. You want the brownie to feel a little soft when it comes out of the oven.

Leave it to cool slightly in the tin and then portion up and remove. Either serve warm, or cool and then chill in the fridge before serving. We think they taste better out of the fridge, but they are also very tasty fresh from the oven! These will keep in an airtight container in the fridge for up to 3–4 days.

Top Tip: If you’re allergic to sesame seeds, you can replace the tahini with the same amount of smooth peanut butter, dropping the calories to 100kcal per serving.

JAZZ APPLE MARINATED SALMON

Serves 2

2 salmon fillets

1 tbsp neutral oil

2 tbsp soy sauce

2 tbsp honey

1 tbsp garlic puree

60ml JAZZ Apple juice

1 lime, juice only

1 tbsp sriracha

1 tbsp sesame seeds

Mix the oil, soy sauce, honey, garlic puree, JAZZ Apple juice, lime juice and sriracha in a large mixing bowl or zip lock bag. Add the salmon and mix to combine. Leave to marinate for 30 minutes.

Transfer the salmon fillets to a baking tray, skin side down, and sprinkle over the sesame seeds. Place under the grill for 10 minutes.

While the salmon is under the grill, add the marinade ingredients to a saucepan and cook over high heat to reduce.

After 10 minutes, spoon some of the reduced marinade over the salmon then return to the grill for another 3-5 minutes until completely cooked.

Serve with salad.
