AMUSE-BOUCHE “SURPRISE POP” POOKIE STYLE For the sodium alginate bath 1 litre distilled water 5g sodium alginate For the yoghurt mix 150ml yoghurt of your choice, plain or fruity 25ml milk 25ml fruit flavour purée or syrup 4g calcium lactate A few drops of food colouring of your desired colour l For the sodium alginate bath, blend the ingredients in a blender. Cover and set aside for 30 minutes or until the bubbles are gone. l Blend all the yoghurt mix ingredients together until the calcium dissolves. Pour into an ice cube mould and freeze for 2-3 hours. l Pop the frozen yogurt cube out and drop into the sodium alginate bath for 3-5 minutes. l Rinse twice in a bowl of plain water, then serve in as an amuse-bouche or palate-cleanser.

PORK AND PRAWN DUMPLINGS Serves 2-4 8 gyoza pastry cases 120g pork mince 6 large peeled king prawns ½ inch ginger 3 spring onions 1 tbsp coriander, chopped 2 dry shiitake mushrooms, soaked to rehydrate 1 dry wood ear mushroom, soaked to rehydrate 2 tbsp light soy sauce 2 tbsp fish sauce 1 tsp sugar ½ tsp MSG l Roughly chop your king

prawns into large chunks, and place to one side. l Strain off your rehydrated mushrooms, remove the stalk www.foodiesfestival.com

from the shiitake. Finely chop both types of mushrooms and add to a mixing bowl. l Add pork mince, ginger, spring onions. Start to mix together with your hand, being quite rough as you want to break down the pork mince as much as possible (a kitchen mixer with a paddle attachment works well for this). l Once the pork mince has broken down almost to a paste, add in your king prawns, fish sauce, soy sauce and sugar, then mix well so it is all combined. Weigh out the dumpling mixture into 22g portions and place to one side. l To fill your dumplings, make a circle with your index finger and thumb, place a gyoza

pastry central to your circle and rub water around the edges. Place a dumpling portion in the centre, then, using your finger and thumb, pinch together the edges to make your desired dumpling shape. Continue with the rest of the mix. l Bring a pan of water to the boil and cook the dumplings for 6 minutes. Strain then serve with crispy chilli oil, crispy shallots and sliced spring onion.

GASPACHO “ARJA-MOLHO”, PRAWNS, PICKLED CUCUMBER AND CROUTONS Serves 4-6 For the gaspacho 1.5kg very ripe plum tomatoes 300g peeled and diced cucumbers, peeled and deseeded 340g grilled red pepper, skinless and deseeded 1 white onion 13g garlic 75ml olive oil 10ml Worcestershire sauce 5 drops Tabasco 6g sugar 6g ground black pepper 5g sherry vinegar 5g salt 10g basil 20g coriander 150g fresh bread, sliced and crusts cut off For the prawns 12 fresh prawns Salt to taste For the mayonnaise 3 eggs 100g Dijon mustard 4 tbsp water 2 garlic cloves 40g white balsamic 400g vegetable oil Salt to taste

For the pickled cucumbers 1 cucumber 100g white wine vinegar 100g water 100g sugar ¼ bunch lemon thyme 2 bay leaves For the croutons: 400g soft white tin bread 150g butter To finish the plate: Good quality olive oil Chopped chives Daterino tomatoes sliced in half – 3 per plate (6 halves) l For the gaspacho, cut all the

fresh ingredients very fine. The smaller they are, the easier they will break down when macerated, and the better result you will achieve. Mix the chopped ingredients with the liquids and seasonings. Macerate for a minimum of 4 hours, and, If you have time, a day in advance. Reserve extra liquid from this process. Blend the ingredients until smooth, then pass through a fine sieve. l For the mayonnaise, separate the egg yolks and discard the whites. Add all

the ingredients in a blender, except the oil, and blend on full speed until you reach a homogenous mix. On medium speed, add the oil gradually to the mix to achieve a thick mayonnaise consistency. Check seasoning and rectify it if needed l Put the gaspacho mix in a manageable bowl and, with a hand blender, blend in 3-4 tablespoons of mayonnaise, until you have a smooth mix. Fix seasoning – sugar, salt, vinegar, olive oil, Tabasco – until balanced. l Chill in fridge, blend again with the hand blender just before serving. l Prep the prawns, removing the shell and de-veining. Cure the prawns in the natural liquid that forms when macerating the gazpacho for 30 minutes. Cut into small pieces. Season to taste. l For the pickled cucumbers, in a medium pan, boil the water, sugar, vinegar, thyme and bay leaf together. Let the liquor infuse until is cold. Peel and deseed the cucumbers and dice them into small cubes (1x1cm). Put the cucumbers in the liquor once it’s cold. www.foodiesfestival.com

l For the croutons, roll the

Dice the bread sheets into equally-sized small cubes. l On medium heat, sauté in a pan with oil, constantly stirring until you start to see some color on the bread. Drain the excess fat through a colander, allowing the fat to escape to prevent the croutons to go soggy. Lay them in kitchen paper to absorb any leftover fat l Put some soup bowls in the freezer to ensure they are really cold. On the centre of each bowl put cured prawns, pickled cucumber, Datterino halved tomatoes and croutons

on top. Then pour the gazpacho over and finish with some good quality olive oil.

STEAMED CHICKEN MOMOS WITH GINGER & CHILLI WITH A TOMATO SESAME CHUTNEY Makes 20 (allow 5 per serving) For the wrappers 200g plain flour, plus extra for dusting ¼ teaspoon baking powder 1 good pinch of salt 3 tbsp cornflour, to dust For the filling 250g free-range chicken thighs, skinned, boned and finely chopped ½ red onion, finely chopped 1 garlic clove, finely chopped 2.5-cm piece of fresh ginger, peeled and finely chopped 2 fresh green bird’s eye chillies, finely chopped 1 spring onion, finely chopped 1 small lemongrass stick, finely chopped 1 tsp black peppercorns, crushed 1 tbsp fresh coriander, chopped 30g unsalted butter, melted ¾ teaspoon salt Juice of ½ a lemon To serve: Served with any chutney. I like to pair them with a tomato sesame chutney Finely sliced red onion and chopped coriander l For the wrapper dough (if

making), sift the flour and baking powder onto a clean 8 foodies

work surface. Make a well in the centre, sprinkle in the salt and 50ml of water. Start working the dough with your hands. Add another 50ml of water and continue to work until the dough is formed. Knead the dough for about 5 minutes, until smooth and elastic. Cover with a dry dishcloth and set aside for 30 minutes. l While the dough is resting, make the filling. Place all the ingredients for the filling in a large bowl and mix until well combined. Adjust the seasoning to taste with salt and set aside. l Make the wrappers. Transfer the dough onto a tabletop well dusted with flour. Roll with your hands into a long cylindrical shape about 2.5cm in diameter. Cut into pieces about 2.5cm wide. Dust with flour and flatten each piece into a circular shape. Roll out each piece with a rolling pin until you have a circle about 8cm in diameter and the thickness of 1–2mm. Dust

the pastry with cornflour between each layer and cover the wrappers with a damp dishcloth to prevent them from getting dry. l Take a momo wrapper and wet the edge of the pastry with a little water. Place a heaped teaspoonful of the filling mixture in the centre and starting from one point on the outer edge of the wrapper, make a succession of small pleats, in a circular motion, until you come back to the starting point. Now hold all the pleats together and twist them slightly to seal the opening. Repeat the process to make the rest of the momos and keep them covered. Transfer all the momos into a large steamer basket. Steam over high heat for 10–12 minutes, until the filling is well cooked. To serve, place a dollop of chutney on a serving plate, place 5 momos on top and garnish with sliced red onion and a sprinkle of chopped coriander.

HISPI CABBAGE, BLUE CHEESE Serves 4 1 large hispi cabbage For the Caesar dressing 40g egg yolk 240g rapeseed oil 20g dijon mustard 25ml white wine vinegar 4 anchovies 1 clove garlic 60g blue cheese 5g tabasco 10g Worcestershire sauce ½ lemon juice For the broccoli puree 350g broccoli 100ml rapeseed oil 2 clove garlic 5g thyme For the garnish 20g flaked almonds 15g anchovies Dill Sea salt l Cut the cabbage lengthways

into quarters. Blanch in boiling salted water until tender, cool in ice water and dry on jay cloths. l Infuse the rapeseed oil with garlic and thyme on a low heat for 20 mins. l Cut the broccoli into florets, blanch in salted boiling water until cooked through but still green. Blend broccoli with the infused rapeseed oil until smooth. l Make a mayo by whisking the egg yolk, mustard and white wine vinegar together then slowly drizzle in the oil while 10 foodies

whisking until thick. Blend the mayo with the rest of the dressing ingredients. l Place a large frying pan on a medium heat with some oil, colour the cut sides of the cabbage, then add some butter to the pan and some garlic and thyme, spooning the foaming butter over the cabbage for a couple of minutes. Remove cabbage and dry on a jay cloth. l Toast almonds in the oven at 180ºC until golden brown. l Transfer the dressing into a piping bag or squeezy bottle l To plate, spoon the broccoli

purée on the bottom of the plate then place the cabbage on top of the purée. l Zigzag the dressing over the cabbage and lay strips of anchovies, toasted almonds, picked dill and sea salt on top.

SWAHILI PANEER CURRY Serves 4 as a sharing dish 2 tbsp sunflower oil 1 large onion, finely chopped 2 garlic cloves, chopped 2.5cm piece of fresh ginger, peeled and chopped ½ each green, red and yellow peppers, cored, deseeded and cut into bite-sized pieces 2 tbsp East African Curry Powder (below) 3 tomatoes, chopped 200g paneer, cut into bitesized pieces 4 tbsp passata 125ml coconut milk 125ml water sea salt For the East African curry powder (makes about 60g) 2 tbsp red chilli powder 1 tbsp cardamom seeds 1 tbsp ground cinnamon 1 tbsp ground turmeric 1 tsp ground ginger To finish 5 tbsp coconut milk, optional 1 long, thin green chilli, finely chopped or halved chopped coriander leaves ½ lemon

ATUL’S TIP For a vegan option, replace the paneer with chopped firm tofu. salt and fry, stirring often, until softened. Add the garlic and ginger and stir for 1 minute to cook out the rawness. Add the mixed peppers and continue stirring until they begin to soften. l Add 2 tablespoons of the curry powder and stir for 30 seconds. Add the tomatoes and give them a good stir, then stir in the paneer and passata. Stir in the coconut milk and water,

turn up the heat and bring to the boil. Reduce the heat and leave to simmer, uncovered, for 10 minutes to concentrate the flavours and reduce. Taste and adjust the salt, if necessary. l When ready to serve, spoon the 5 tablespoons coconut milk over, if using. Garnish with the green chilli and coriander leaves and squeeze in lemon juice to taste to cut through the richness.

OYAKO DON Serves 4

and nori and garnish with coriander leaves.

200g chicken thigh, boneless with skin on 4 whole eggs Cooked rice, to serve Nori, to serve Coriander leaves, to serve For the Oyako sauce: 125g dashi broth 75g soy sauce 75g mirin 85g sugar

l Mix together all of the

ingredients for the sauce in a pan and bring to the boil to dissolve the sugar. Set aside. l Cut the chicken up into small bite size pieces. Pour half of the Oyako sauce mix into a pan with the chicken. Separately, lightly whisk the eggs in a bowl. l Bring the pan to a light simmer and cook until the chicken pieces are cooked through. Then, add the egg in a thin stream all around the pan. Cover with a lid and immediately take the pan off of the flame. l Let the eggs lightly cook in the residual heat for about 2 minutes. Serve over rice. 12 foodies

BURRATA & WATERMELON SALAD Serves 1 1 watermelon 1 burrata For the golden raisin puree 250g golden raisins 2 star anise 15g caster sugar 20ml chardonnay vinegar 200ml vegetable stock For the aubergine purée 100g butter 1 whole aubergine 2 shallots 1 tsp curry powder 2 tbsp crème fraiche 150ml vegetable stock For the candied walnuts 200g walnuts 100g caster sugar 150ml of water 300ml of vegetable oil For the garnish Mixed Cornish little leaves Nasturtium pads Good quality olive oil l Trim the watermelon to the

flesh and cut into 6 rectangular pieces. These should be approx. 10 cm long, 3 cm deep and 4 cm wide in size. l Juice the trim and reduce to a syrup consistency by simmering over a moderate heat. Cool down, place pieces of watermelon in this juice and leave in the fridge for later. l For the golden raisin puree, place all ingredients in the pan and slowly bring to a boil. www.foodiesfestival.com

When the raisins are soft, they are ready to blend to a smooth puree. Make sure to remove the star anise before blending. l For the aubergine purée, chop and dice the aubergine and thinly slice the shallots. Gently sweat the shallots with butter and curry powder until softened. Add the diced aubergine and cook for a further 5-8 minutes. Finally add vegetable stock and blend adding the crème fraiche. Reserve ready for plating. l For the candied walnuts, add to a pan with sugar and water and simmer until nearly all the liquid has gone. Drain the sticky walnuts onto a tray and let them dry for around 10 minutes. While drying, put the vegetable oil in the pan and bring to 180ºC. Fry the walnuts for approx. 4 minutes but be careful and use a slotted

spoon to remove the walnuts onto a padded tray to drain any access oil. l To assemble, tear the burrata and either grill or blowtorch the watermelon. Serve the watermelon on a plate and place the burrata over the top and on the side. Dot the purees on and around the dish, drizzle some good quality olive oil on the burrata and melon and decorate with small lettuce leaves and nasturtiums. Finish with the candied walnuts.

PAN-FRIED SALMON WITH DILL & FENNEL SALAD AND A TARRAGON & CAPER MAYONNAISE Serves 4 For the salmon 4 salmon portions, 150g each, descaled, and deboned 30g sunflower oil 1 lemon 4g salt For the tarragon & fennel salad 2 fennel bulbs 4 spring onions 5g salt 50g chardonnay vinegar 5g tarragon For the dill & caper mayonnaise 60g egg yolk 15g water 10g dijon mustard 20g lemon juice 15g chardonnay vinegar 5g salt 1g sugar 200g vegetable oil 100g extra virgin rapeseed oil To finish the mayonnaise 50g Greek yoghurt 10g chopped dill 30g chopped capers 30g chopped gherkins

l For the salmon, season each

portion evenly on the flesh side with the salt, then on a medium heat, fry the salmon skin-side down in a non-stick frying pan with the sunflower oil. Fry for 4 minutes, flip, then continue to cook for 2 minutes. Take the pan off the heat, add the zest and juice of the lemon, and set aside to rest until needed. l For the tarragon and fennel salad, finely slice the fennel and spring onions, then chop the tarragon. In a large bowl, mix together the fennel, spring onions, tarragon, chardonnay vinegar and salt then leave for minimum 10 minutes. l For the dill and caper mayonnaise, place all ingredients

(except the oils) in a blender, and blitz until combined. Continue blending whilst gradually adding the oils until thick and smooth. To finish, mix all ingredients into the mayonnaise and set aside in the fridge. l To serve, place a generous spoonful of both the tarragon and fennel salad, and the mayonnaise on the plate. Crown with a portion of salmon, and finish with a drizzle of rapeseed oil, and some dill sprigs. Enjoy!

BLUEBERRY, ORANGE & HONEY PLAIT Makes 1 large plait 115g warm milk, 25–30°C 1 medium egg, plus 1 egg, beaten, for glazing 14g fresh yeast, crumbled, or 7g fast-action dried yeast 250g strong white bread flour, plus extra for dusting 1 tsp salt 35g honey, plus extra for glazing Grated zest of 1 orange 35g room-temperature unsalted butter, broken up into pieces 100g blueberries Pearl sugar nibs, for sprinkling l In a large mixing bowl, whisk

together the milk, egg and yeast with a balloon whisk until the yeast has softened. Add the flour, salt, honey and orange zest, then mix with a scraper until the mixture starts to form a rough dough. Add the butter and dimple it into the dough with your fingertips. l Turn your dough out onto a clean work surface and knead for 10 minutes. l Cover the dough with a clean cloth and rest on the work surface for 5–10 minutes or so. l Dust the work surface lightly with flour and roll the dough out with a rolling pin into a

15cm circle. Sprinkle 75g of the blueberries evenly all over the dough right to the edge, then press down with your palms to stick them to the dough. l Roll up your dough into a loose sausage, then turn it 90º, press it flat with your fingertips and roll up again into a short sausage. Shape the dough into a ball and place it back in the bowl. Sprinkle the top with a little flour, cover with an upturned bowl and rest at room temp for 1½–2 hours. l Dust the work surface lightly with flour and use your dough scraper to turn the dough out upside down onto it, sticky side up. Use your fingertips to flatten the dough gently into a circle. Cut it into 4 equal-sized wedges. Starting at the pointy end, roll up each wedge of dough into a loose sausage. Cover with a clean cloth and rest for 10 minutes to relax the dough ready for the next stage. l Line a large baking tray with baking parchment. Working one at a time, flatten a dough sausage and roll it up into a sausage again, then roll it with your palms on the work surface until it's about 40–45cm long. At this point some blueberries might burst, but do your best to be delicate but firm enough to roll your sausages out nice

and long, dusting any sticky patches as you go. l Line up the 4 strands vertically and pinch the tops together to join them. Working with the strands in 2 pairs and starting with the right pair, fold the right strand over the left. Repeat with the left pair, folding the right strand over the left. Next, take the 2 strands now in the middle and fold the left over the right. Repeat to the end. Press the ends together to stick and tuck them underneath the plait. Place on your lined tray. l Cover your plait loosely with cling film dusted with flour and rest for 1 hour. Towards the end of resting, preheat your oven to 180°C fan with a deep tray on the oven floor. Half fill a kettle and boil it. l Stud the plait with the remaining blueberries. Place your tray gently on to a middle shelf and carefully pour the hot water into the tray below. Bake for 30–35 minutes. Slide a knife underneath and lift to have a peep at the underside. If it’s golden, it’s done, but if it’s a little pale in the middle, bake for another 3–5 minutes at a time until it’s ready. l As soon as it’s cool enough to handle, transfer carefully to a wire rack. Place the lining paper underneath to catch any honey. Drizzle the top generously with honey while hot, then use a pastry brush to brush it all over and sprinkle over some pearl sugar nibs. www.foodiesfestival.com

Lemon and blackberry layer cake Serves 12 For the cake 200g caster sugar 3 eggs 200g self-raising flour 225g sunflower oil, plus extra for greasing 150ml milk Finely grated zest of 2 lemons ½ tsp fine sea salt For the compote 200g blackberries, fresh or frozen (defrosted if frozen) 50g caster sugar Juice of 1 lemon 1 tsp arrowroot powder For the buttercream 225g butter, softened 375g icing sugar, sifted 2 tbsp milk Finely grated zest of 1 lemon l Heat the oven to 180°C.

Brush two 20cm loosebottomed cake tins with oil and line with parchment. l To make the sponge, place

the sugar and eggs in a mixing bowl and whisk until they are light in colour and frothy. Add the remaining ingredients. Stir until combined and pour into the cake tins. l Bake for 20–25 minutes until golden brown and the sponge is just coming away from the edge of the tins. Set aside to cool for 5 minutes, then run a palette knife around the inside edge of the tins. Carefully turn the cakes out onto a cooling rack to cool completely. l To make the blackberry compote, put the blackberries, sugar and lemon juice in a saucepan. Bring to a simmer and cook over a low– medium heat for 10 minutes or until the blackberries have broken down. Push through a sieve and return to a clean saucepan. Mix the arrowroot with 1 teaspoon water to form a paste. Stir into the purée and cook over a medium heat, stirring all the time until just

Set your mixer to a low speed and gradually increase it until you have a smooth, creamy buttercream. l To assemble, place one cake upside down and spread it with some buttercream. Turn the other cake upside down and spread a generous layer of blackberry compote. Sandwich together. Spread a thick layer of buttercream on the top and sides of the cake, smoothing the edges with a palette knife (for a super smooth finish, dip the knife into hot water before you spread). Finish by swirling some compote through the buttercream on the top of the cake.

l To make the Swiss rolls,

preheat the oven to 180ºC. Grease and line two Swiss roll tins with baking paper. In a large bowl, beat the egg and sugar together with an electric hand whisk for approximately 5 minutes or until light and pale. Using a metal spoon, gently fold in the flour. Divide between the two tins and bake for 10–12 minutes or until the sponges are lightly golden and cooked through. l Sprinkle some extra caster sugar on two sheets of baking paper then turn the sponges out onto the sugared paper. Peel off the paper from the underside and, while still warm, roll them both up from the 22 foodies

short end into a tight spiral using the paper to help. Leave to cool. l To make the lemon curd, place the egg yolks, granulated sugar, butter, lemon zest and lemon juice in a glass bowl over a saucepan of simmering water (don’t let the bowl touch the water). Whisk until combined and whisk continuously as the curd cooks until thickened. This should take about 15 minutes. Pour into a clean bowl and set aside to cool. l To make the St Clement’s jelly, soak the gelatine leaves in cold water for 5 minutes to soften. Using a vegetable peeler, peel 6 strips from a

lemon and 6 strips from an orange and put these into a saucepan with the sugar and 400ml water. Bring to a simmer over a medium heat, stirring occasionally until the sugar has dissolved. Remove from the heat and discard the peel. Squeeze the water out of the gelatine and stir into the pan until dissolved then leave to cool. Squeeze the lemons and oranges, so you have 150ml of both lemon and orange juice. Stir into the pan then strain the jelly through a fine sieve into a jug and chill until cool but not set. l To make the custard, place the cream in a saucepan over a gentle heat and bring it up to simmer, stirring occasionally with a wooden spoon. In a bowl, whisk together the egg yolks, sugar, cornflour and lemon extract, then gradually pour the hot cream into the bowl whilst whisking continuously. Immediately return the whole lot back to the saucepan and continue whisking over a gentle heat until the custard is thick and smooth. Pour the custard into a jug or bowl, cover the surface with greaseproof paper and leave to cool. l To make the amaretti biscuits, preheat the oven to 180ºC. In a large bowl, beat the egg whites until firm. Mix the sugar and almonds gently into it. Add the amaretto and fold in gently until you have a smooth paste. www.foodiesfestival.com

l Place some baking paper

on a baking tray and lightly brush with butter or oil. Using a teaspoon, place small heaps of the mixture approximately 2cmapart, as they will expand during cooking. Bake for approximately 15–20 minutes or until golden brown. Remove from the oven and set aside to cool. l To make the chunky mandarin coulis, strain two tins of mandarins. Discard the juice and put the fruit into a saucepan with the sugar and heat gently until broken down. Remove from the heat. In a small bowl, slake the arrowroot with 2 tbsp cold water then add to the warm mandarins. Add the lemon juice and mix well before pouring into a large bowl. Strain the remaining two tins of mandarins and add the fruit to the bowl then leave to cool completely. l To make the jewelled chocolate bark, if the peel feels wet or sticky, roll in the caster sugar to absorb any moisture. Melt the white chocolate in a bowl sitting over a saucepan of gently simmering water. Pour the white chocolate onto a baking tray lined with baking paper and scatter over the mixed peel. Leave to set then break into shards. l To assemble, unroll the cooled Swiss rolls and spread with the lemon curd. Roll back up again and slice one into 2.5cmslices and place upright around the bottom edge of the www.foodiesfestival.com

Slice the other Swiss roll into thicker pieces and use these to fill the bottom of the dish, ensuring the top is roughly the same level as the slices that line the edge. Use off-cuts of sponge to fill any gaps. l Pour the St Clement’s jelly over the Swiss roll layer and set aside in the fridge to completely set. This will take approximately 3 hours. Once set, pour over the custard then arrange a single layer of amaretti biscuits, keeping a few back for the top. Pour over the mandarin coulis. In a large bowl, whip the double cream until soft peaks form then spoon this over the coulis. Crumble over the reserved amaretti biscuits and decorate with the chocolate bark shards.
