PORK AND PRAWN DUMPLINGS Serves 2-4 8 gyoza pastry cases 120g pork mince 6 large peeled king prawns ½ inch ginger 3 spring onions 1 tbsp coriander, chopped 2 dry shiitake mushrooms, soaked to rehydrate 1 dry wood ear mushroom, soaked to rehydrate 2 tbsp light soy sauce 2 tbsp fish sauce 1 tsp sugar ½ tsp MSG l Roughly chop king prawns

into chunks, and set aside. l Strain off your rehydrated mushrooms, remove the stalk 4 foodies

from the shiitake. Finely chop both types of mushrooms and add to a mixing bowl. l Add pork mince, ginger, spring onions. Start to mix together with your hand, being quite rough as you want to break down the pork mince as much as possible. l Once the pork mince has broken down almost to a paste, add in your king prawns, fish sauce, soy sauce and sugar, then mix well so it is all combined. Weigh out the dumpling mixture into 22g portions and place to one side. l To fill your dumplings, make a circle with your index finger and thumb, place a gyoza pastry central to your circle and

rub water around the edges. Place a dumpling portion in the centre, then, using your finger and thumb, pinch together the edges to make your desired dumpling shape. Continue with the rest of the mix. l Bring a pan of water to the boil and cook the dumplings for 6 minutes. Strain then serve with crispy chilli oil, crispy shallots and sliced spring onion.

PRAWN LINGUINE WITH TOMATO, CHIPOTLE AND LIME Serves 2 200g linguine 300g jumbo king prawns (shell on optional) 50g unsalted butter 2 garlic cloves, finely sliced 2tsp tomato paste 2tsp chipotle paste 250g cherry tomatoes, halved Juice of 1 lime, plus extra for serving if desired l If using shell-on prawns,

remove the shells and set to one side. Heat a pan over medium high heat and add the butter. Once foaming, add the reserved shells and cook in butter until the shells turn pink. Lightly press on the heads and shells to extract more flavour – the butter should turn orange. Remove the shells from the pan and discard, keeping as much melted butter as possible in the pan ready to start your sauce. l De-vein the prawns by making a shallow slit all the way down the back of each prawn and removing the intestinal tract. Keep about 6 of the prawns whole for presentation and roughly chop any remaining prawns. Set these aside. l Bring a large pot of water to a simmer over a medium high heat. Season well – the water should have the same seasoning as a well-seasoned www.foodiesfestival.com

Add the linguine and cook according to packet instructions, minus 1-2 minutes to allow the pasta to finish cooking in the sauce. l While the pasta is cooking, make the sauce by adding finely sliced garlic to the prawn-infused butter over a medium heat. Cook the garlic until fragrant, but not brown, about 1 minute. Next, add both the tomato paste and chipotle paste and cook for another 1-2 minutes. Add the halved cherry tomatoes, season with salt and cook until they begin to soften and break down, approximately 5 mins.

l Just before the pasta is done,

add the whole prawns to the sauce and cook for 1-2 minutes or until they are pink. Remove a cup of pasta water from the pot and drain the remaining pasta. Add the roughly chopped prawns to the sauce, followed by the drained pasta, a couple of tablespoons of pasta water and the lime juice. Toss with the sauce, adding more pasta water if required, until the sauce is thick and glossy. Check for seasoning and serve. Make sure to add the whole prawns to the top.

ROASTED HALIBUT, PIQUILLO PEPPER, FENNEL, BLACK OLIVE AND COURGETTE Serves 4 4 pieces halibut, 150g each 1 tin Piquillo peppers, 415g 10g sherry vinegar Salt Vegetable oil 4 fennel bulbs 4 courgettes 4 baby courgettes 100g black olives 2 lemons, zested 75g capers 200g shallot 300ml Pernod 250g unsalted butter

l For the roast halibut, take a

150g halibut fillet and roast in a pan until golden, turn over and after 15 seconds remove from the pan and rest. l For the Piquillo pepper purée, take a 415g tin of Piquillo peppers and roast in a pan until the moisture is cooked off. Blend with sherry vinegar and a pinch of salt. l For the roasted fennel, cut the fennel into quarters and slowly simmer in a pan of salted water until soft for approx 12 minutes. Remove and roast in the oven on one side for 15 minutes. l For the courgette purée, slice the courgette into small pieces 6 foodies

and roast in a pan with a pinch of salt until the moisture has been cooked off, for around 20 minutes. Blend until smooth. For the baby courgette, half the baby courgettes and roast on 1 side until golden. Dress with extra virgin oil and Maldon Sea Salt. l For the black olive tapenade, chop the black olives and capers. Dress with extra vinegar and lemon zest. l For the fennel butter sauce, slice shallots and fennel and cook until soft. Add Pernod and reduce by half. Strain out the fennel and shallot, add the liquid back to the pan and slowly whisk in cold butter until

thick and glossy. Finish with lemon. l To assemble, place one piece of halibut on the plate and scatter the tapenade over. Lay out one half baby courgette with a piece of fennel resting across it. Dot around the Pequillo pepper and courgette purées and serve with the fennel butter sauce.

CARPACCIO OF TROUT WITH A WILD GARLIC EMULSION, LIME PONZU SAUCE AND PICKLED SHALLOTS 300g trout fillet For the wild garlic emulsion 100g wild garlic leaves 2 egg yolks Dash of apple cider vinegar Vegetable oil For the wild garlic oil 200g wild garlic leaves 100g vegetable oil For the sauce 50g lime juice 50g mirin 100g soy sauce 15g rice vinegar 5g sugar 1 kombu piece For the pickled shallots 100g apple cider vinegar 100g sugar 3 baby beetroots (peeled) 4 shallots To garnish 100g brazilian pine nut (pinhão) 100g cucamelons www.foodiesfestival.com

l For the carpaccio, roll out trout

fillets between parchment paper until very thin. Place in the freezer. l For the wild garlic emulsion, blitz wild garlic, yolks and vinegar together. Add vegetable oil (little by little) until emulsified. Season with salt. l For the wild garlic oil, blanch wild garlic by placing it in boiling water then refreshing it in cold water. Blitz it with oil until the mixture is heated and acquires a bright green colour. Pass through muslin cloth. l For the lime ponzu sauce, bring all ingredients to a boil and let it set in the fridge for at least 20 minutes l For the pickled shallots, bring all ingredients to a boil (except

shallots). slice shallots in thin circles then place it inside pickling liquid for at least 30 minutes. l To assemble, place a circle of trout carpaccio on the plate, then dot with wild garlic emulsion and scatter over pickled shallots, halved pine nuts and halved cucamelons. Serve with wild garlic oil and lime ponzu sauce.

BOBBY BEANS WITH SMASHED ROASTED TOMATOES, RED ONION, CAPERS & BASIL Serves 4 6 tomatoes, halved across the equator 4 tbsp extra-virgin olive oil, plus extra to dress 1 red onion or 2 Tropea onions, finely sliced Bunch of basil, leaves picked 30g capers 500g green beans, topped 3 tbsp red wine vinegar Sea salt flakes and black pepper l Preheat the oven to 160ºC.

Arrange the tomatoes cutside up on a baking tray. Season with salt, pour over 2 tablespoons of the oil and roast for 1 hour. They should be juicy but the flavours concentrated. I normally do a bigger batch of these as they keep well in the refrigerator and can be used in many different ways. l While the tomatoes are cooking, add the onion to a mixing bowl along with the basil leaves and capers. l Once the tomatoes are done, blanch the beans in salted boiling water for 3–5 minutes until tender. They should be cooked through but not overly floppy; test one when you feel they are almost done. I like to refresh them briefly in cold water to stop 8 foodies

the cooking but keep them at room temperature rather than ice cold. Drain. l Add the beans to the mixing bowl with the remaining olive oil. Crush the tomatoes either with your hand, if cool enough, or with the back of a wooden spoon and add to the

bowl. Season with vinegar to taste, start with a tablespoon and add to your taste. Stir everything around a few times to combine with a couple of coarse grinds of black pepper. Arrange on a serving plate. Drizzle with extra olive oil if you like.

STEAMED COD LOIN, TURNIPS, WILD RICE, WASABI & CRÈME FRAICHE Serves 2 2 cod loin portions Sea salt Nori powder For the turnips 200g turnips, peeled 500ml water 50g white wine vinegar 50g honey 1g Chinese five spice 10g salt 2g whole white peppercorns For the sauce 5g wasabi paste 75g crème fraiche 75g cooking liquid from turnips Salt and pepper For the popped rice 50g wild rice 500ml vegetable oil To garnish Sea herbs Lemon oil www.foodiesfestival.com

l Season the cod loin with sea salt

10 minutes before cooking. Place into the steamer for 5-6 minutes to gently steam. Once cooked, remove from the basket and dust with the nori powder. l Add all of the ingredients for the turnips to a pan and bring to a gentle simmer. Add the turnips into the stock and simmer until tender. l Allow to cool in the liquid and then cut to required size. l Add the ingredients for the crème fraiche and wasabi sauce to a pan and gently warm. Season to taste. l For the popped wild rice, heat the oil to 200˚c and place the rice into

the oil to pop. Remove from the oil on to kitchen paper and lightly season. l To assemble, flood the bottom of a shallow bowl with the sauce, then place the cod loin in the centre. Garnish with the turnips, sea herbs and the popped wild rice. Drop lemon oil into the sauce around the fish.

LEMON SWISS ROLL AND AMARETTI TRIFLE Serves 20 For the Swiss rolls 4 large free-range eggs 100g caster sugar, plus extra for dusting 100g self-raising flour, sieved Butter, for greasing

For the amaretti biscuits 2 free-range egg whites 170g caster sugar 170g ground almonds 1 tbsp amaretto Butter or oil, for greasing

For the lemon curd 4 large free-range egg yolks 135g granulated sugar 85g salted butter, softened 1 lemon, zest only 80ml lemon juice

For the chunky mandarin coulis 4 tins mandarins, around 300g each 45g caster sugar 16g arrowroot (2 sachets) ½ lemon, juice only

For the St Clement’s jelly 6 gelatine leaves 4 unwaxed lemons 3 oranges 150g golden caster sugar For the custard 425ml double cream 3 large free-range egg yolks 25g golden caster sugar 1 tbsp cornflour 1 tsp lemon extract 10 foodies

l To make the Swiss rolls,

preheat the oven to 180ºC. Grease and line two Swiss roll tins with baking paper. In a large bowl, beat the egg and sugar together with an electric hand whisk for approximately 5 minutes or until light and pale. Using a metal spoon, gently fold in the flour. Divide between the two tins and bake for 10–12 minutes or until the sponges are lightly golden and cooked through. l Sprinkle some extra caster sugar on two sheets of baking paper then turn the sponges out onto the sugared paper. Peel off the paper from the underside and, while still warm, roll them both up from the 12 foodies

Leave to cool. l To make the lemon curd, place the egg yolks, granulated sugar, butter, lemon zest and lemon juice in a glass bowl over a saucepan of simmering water (don’t let the bowl touch the water). Whisk until combined and whisk continuously as the curd cooks until thickened. This should take about 15 minutes. Pour into a clean bowl and set aside to cool. l To make the St Clement’s jelly, soak the gelatine leaves in cold water for 5 minutes to soften. Using a vegetable peeler, peel 6 strips from a

lemon and 6 strips from an orange and put these into a saucepan with the sugar and 400ml water. Bring to a simmer over a medium heat, stirring occasionally until the sugar has dissolved. Remove from the heat and discard the peel. Squeeze the water out of the gelatine and stir into the pan until dissolved then leave to cool. Squeeze the lemons and oranges, so you have 150ml of both lemon and orange juice. Stir into the pan then strain the jelly through a fine sieve into a jug and chill until cool but not set. l To make the custard, place the cream in a saucepan over a gentle heat and bring it up to simmer, stirring occasionally with a wooden spoon. In a bowl, whisk together the egg yolks, sugar, cornflour and lemon extract, then gradually pour the hot cream into the bowl whilst whisking continuously. Immediately return the whole lot back to the saucepan and continue whisking over a gentle heat until the custard is thick and smooth. Pour the custard into a jug or bowl, cover the surface with greaseproof paper and leave to cool. l To make the amaretti biscuits, preheat the oven to 180ºC. In a large bowl, beat the egg whites until firm. Mix the sugar and almonds gently into it. Add the amaretto and fold in gently until you have a smooth paste. www.foodiesfestival.com

l Place some baking paper

on a baking tray and lightly brush with butter or oil. Using a teaspoon, place small heaps of the mixture approximately 2cmapart, as they will expand during cooking. Bake for approximately 15–20 minutes or until golden brown. Remove from the oven and set aside to cool. l To make the chunky mandarin coulis, strain two tins of mandarins. Discard the juice and put the fruit into a saucepan with the sugar and heat gently until broken down. Remove from the heat. In a small bowl, slake the arrowroot with 2 tbsp cold water then add to the warm mandarins. Add the lemon juice and mix well before pouring into a large bowl. Strain the remaining two tins of mandarins and add the fruit to the bowl then leave to cool completely. l To make the jewelled chocolate bark, if the peel feels wet or sticky, roll in the caster sugar to absorb any moisture. Melt the white chocolate in a bowl sitting over a saucepan of gently simmering water. Pour the white chocolate onto a baking tray lined with baking paper and scatter over the mixed peel. Leave to set then break into shards. l To assemble, unroll the cooled Swiss rolls and spread with the lemon curd. Roll back up again and slice one into 2.5cmslices and place upright around the bottom edge of the www.foodiesfestival.com

Slice the other Swiss roll into thicker pieces and use these to fill the bottom of the dish, ensuring the top is roughly the same level as the slices that line the edge. Use off-cuts of sponge to fill any gaps. l Pour the St Clement’s jelly over the Swiss roll layer and set aside in the fridge to completely set. This will take approximately 3 hours. Once set, pour over the custard then arrange a single layer of amaretti biscuits, keeping a few back for the top. Pour over the mandarin coulis. In a large bowl, whip the double cream until soft peaks form then spoon this over the coulis. Crumble over the reserved amaretti biscuits and decorate with the chocolate bark shards.
